Ever since the launch of Scribbos at our annual conference, Innovation in Amsterdam, the team has been hard at work working with our customers and their business partners. So what have we been up to? We launched a successful campaign to support the Susan G. Komen foundation, we’ve delivered 3 new versions of the SaaS platform with new features, we’ve been talking to media about security needs in healthcare, finalized several key partnerships and our MFT platform Infitran was recognized in the Gartner Magic Quadrant as a Visionary for Managed File Transfer. More or less, we’ve just been having a fun time since the launch of Scribbos.

We’ve definitely been busy and the community of users grows bigger every day. Even though we’ve had this much excitement, we continue to look at ways to improve the service and every month we are bringing new capabilities and customer driven enhancements to the platform. When working with our customers, we have identified a need for our customers who only send a few messages and files a month to better support our current user community. To that end, a new slimmed down free version has been launched to accommodate users who need to send large files quickly and communicate with all of our customers easily.

This new offering isn’t just to benefit our existing users. This new option is available for anyone, including users who aren’t using Scribbos with our customers and provides access to our secure communications offering to a whole new community of users who may not be using secure solutions for large files and messages. After working with our customers who were previously using other free services for sending files, it became apparent that other services don’t encrypt your data at rest or provide the tracking capabilities to ensure your file was received by the intended recipients which is an issue for everyone who sends confidential information.

When Would You Need to Use a Secure Messaging Service?

The simple answer is anytime you need to keep the information you are sending confidential and when you need to ensure they received the message or file. Many users of Scribbos today leverage the platform for sending big files which can’t be sent through email or they need to move sensitive information for their business such as healthcare plan enrollments for new employees, tax information to your CPA or other regulated information such as that covered by HIPAA or PCI information.

Scribbos for Free provides the same level of security and auditing as our other plans with some usage limits. Scribbos leverages SSL encryption of the session and encrypts all your data at rest within our secure cloud platform which is not the case from many providers who you may send files with today for free. If you need to send files bigger than 200MB or need more than 25 messages a month, Scribbos provides other upgraded options for your use which include the following capabilities:

Company and Detailed Usage Reporting for all your users

The ability to send files up to 2GB through your browser

Managed users and recipients

Group Management and Reporting for Internal Departments chargebacks

Ability to export all the auditing and reporting information for internal analysis and long term retention

Block Domains to ensure no information is sent to unauthorized users/receivers

Customize your Messages and Notifications for your Company’s needs

Custom message signatures

Detailed message tracking

To find out all the options, features and plans for your business to securely send information you can look at our plan chart. Enjoy the holidays!

Reporting Services 2008 is no longer dependant on Internet Information Services (IIS). Reports are h

Reporting Services 2008 is no longer dependant on Internet Information Services (IIS). Reports are hosted within reporting services itself, levaraging HTTP.sys from the operating system.

This removal reduces the total cost of ownership for maintaining reporting services and makes it easier to configure. Furthermore, it reduces the attack surface of the report server.

Thresholds can be defined on whether Reporting Services is under low-, medium-, or heavy-memory pressure. This control allows the report server to respond in a more timely fashion to periods of high-reporting demands

Exploring Report Designer Components

Taken from the Microsoft Office 2007 product range, ribbons within the Report Designer provide three context sensitive Ribbons.

The Home ribbon provides common office and formatting functions such as Clipboard tools and Formatting options such as Fonts, Alignments and Borders tab. There is also an Arrange tab that allows that management of objects on the designer canvass such as ‘Send to Front ’ and ‘Send to Back’ buttons. There is finally a Preview button.

On the Insert Ribbon there is a notable absence of the Tablix button on the Data Region tab. The Tablix data region is a combination of the best features of the Table and Matrix data region. Therefore Tablix capabilities are available once a Table or Matrix data region is placed on the canvass designer. This can be seen when right clicking over a table or matrix data region as Tablix properties is shown in the menu. A Chart and List data region also appear on this tab. An Additional tab include Report Items tab containing line, rectangle, image and textbox – which now support rich text formatting – items. There is also a Subreport and Header & Footer tab.

The View ribbon consists of the Report Views tab which allows the user to switch between design and preview view as shown by the buttons. There is also a Show\Hide tab that allows the user to control the elements that can be shown in the Report Designer such as rulers and properties pane.

Features of Microsoft SQL Server 2008 Reporting Services Authoring

A grouping pane is located at the bottom of the Report Designer. This provides a quick way of managing groups of data in the canvas designer, without the need for entering into dialog boxes

Enhanced Visualization using Gauges

Gauges provide high visualization for key performance indicators (KPIs) that can be embedded not only in reports, but also within individual cells of a data region, providing useful reports that impart key information to the consumer in an instant.

There are four types of gauges that are supported in Reporting Services 2008 as shown in the following exhibit.

·         Circular gauges

·         Linear gauges

·         Numeric indicators

·         State indicators

The gauges are fully editable to the smallest detail depending on the gauge that is chosen. An expression can be set to define the goal within the gauge that specifies the KPI to measure and whether performance is deemed to be good or bad at a simple level. Like charts, right clicking an area of the gauge allows you to set properties on that particular attribute of the gauge.

Microsoft SQL Server 2008 Reporting Services Management and Delivery

Memory configuration

Configuration settings can now be specified to set an upper limit on the amount of memory that is used by Reporting Services application giving greater control over server resources. Furthermore, thresholds can be set that cause the report server to change how it prioritizes and processes requests depending on whether it is under low, medium, or heavy memory pressure . Configuration involves setting the boundaries for each of the memory pressure bandings in the RSReportServer.config file. This control allows the report server to respond in a more timely fashion to periods of high reporting demands.

Configuration settings that control memory allocation for the report server include

WorkingSetMaximum

WorkingSetMinimum

MemorySafetyMargin

MemoryThreshold

The WorkingSetMinimum and WorkingSetMaximum are used to define the availbale memory to Report Server application. This is a useful feature if the server hosts multiple applications

The MemorySafetyMargin and MemoryThreshold set the boundaries for low, medium, and high levels of memory pressure is displayed in the graphic.

SharePoint Integration

Reporting services installation now includes the option for SharePoint Integration mode. This option provides the deep integration that allows users to browse SharePoint libraries for reports. The reports can take advantage of the document management features such as versioning control and document change alerts. The rendering, data processing and delivery is dealt by the report server.

The followin g additional functionality is available when Reporting Services is deployed in SharePoint Integrated Mode

Use document management and collaboration features, including alerts and version control.

Use SharePoint permissions and authentication providers to control access to reports, models, and other items.

Subscribe to and deliver reports to a SharePoint library using a new SharePoint delivery extension.

Create ad hoc reports using report models and Report Builder.

Manage reports, models, data sources, schedules, and report history in custom application pages on a SharePoint site.

View a report in a new customizable Report Viewer Web Part.

Publish or upload reports, report models, resources, and shared data source files to a SharePoint library, including Report Center in Office SharePoint Server.

Connect a Report Viewer Web Part to a Filter Web Part or a Library Web Part in dashboards or Web Part pages.

Use SharePoint deployment topologies to distribute reports over an Internet connection outside the firewall.

Pre Installation Considerations

Security Considerations

Follow Security Best Practise.

Best practises for security considerations for Microsoft SQL Server 2008 should be adhered to in the following areas

Physical Security

Ensuring that the SQL Server and backup devices are physically secure

Firewall Configuration

Ensuring that only the relevant ports are open and inside a Windows domain, configure interior firewalls to permit Windows Authentication

Service Isolation

Avoid installing SQL Server on a domain controller and use different service accounts for each SQL Server components

Disable NetBIOS and Server Message Block

Within environments that use just DNS, security threats can be mitigated by disabling NetBIOS and Server Message Blocks

Report Server Service Account

Microsoft SQL Server 2008 Reporting Services is now managed as a single service that defines the security context under which Report Manager, Report Server Web service, and a background processing application run under.

The Report Server service account can be defined during the installation and can also be changed using Reporting Services Configuration tool. As the service account is stored in many different locations within Reporting Services always use this tool for changing the service account as it will automatically place the defined service account in the relevant locations.

One of four account types can be chosen for defining the Reporting Server service account. Each type has its own advantages and limitations.

A dedicated domain account.

Local system account.

Local service account.

Network Service account.

Best practise for a production environment is to use a dedicated domain account as this account can be centrally audited, have the required permissions manually assigned to the account and allows access to resources beyong the SQL Server box.

Reporting Services Components

Microsoft SQL Server 2008 Report Services consist of both server-side and client-side components that can be installed multiple times.

The server-side report server must be installed on a machine that hosts a SQL Server database and have a valid license as this hosts

The Report Server database.

Report Manager, now held as a SQL CLR object within the Report Server

Report Builder

Report Server Configuration Tool

Command line tools RSconfig.exe, RS.exe and RSkeymgmt.exe

Background processing applications.

The client-side tools can be hosted on any machine and does not require a valid license. These tools include

SQL Server Management Studio

Business Intelligence Development studio.

All components are available as options in the Components to Install screen in setup. Server components are installed by selecting Reporting Services and the client tools are installed by selecting Workstation components, Books Online and development tools. Within this area there is an Advanced button to allow the selection of specific client tools.

Post Installation Tasks

Verify that the report server is installed and running.

Run the Reporting Services Configuration tool, connect to the report server instance you just installed, and review the status indicator for each setting to verify that it is configured.

Open the Services window and verify that the Report Server Windows service is running. To view the status of the Report Server Windows service, click Start, point to Control Panel, double-click Administrative Tools, and then double-click Services. When the list of services appears, scroll to Report Server (MSSQLSERVER). The status should be Started.

Open a browser and type the report server URL in the address bar. The address consists of the server name and the virtual directory name that you specified for the report server during setup. By default, the report server virtual directory is named ReportServer. You can use the following URL to verify report server installation: http://<computer name>/ReportServer<instance name>. The URL will be different if you installed the report server as a named instance.

Run reports to test report server operations. For this step, you can install and publish the sample reports if you do not have any reports available. For instructions on how to install sample databases, applications, and data files that are used in Reporting Services tutorials.

Verify that Report Manager is installed and running

Open a browser and type the Report Manager URL in the address bar. The address consists of the server name and the virtual directory name that you specified for the Report Manager during setup. By default, the Report Manager virtual directory is Reports. You can use the following URL to verify Report Manager installation: http://<computer name>/Reports<instance name>.

Use Report Manager to create a new folder or upload a file to test whether definitions are passed back to the report server database. If these operations are successful, the connection is functional.

Verify that Report Designer is installed and running

Reporting Services Configuration

For post installation configuration, the Reporting Services Configuaration tool will provide easier management, particularly for those moving from Microsoft SQL Server 2000 Reporting Services.

Introduced in Microsoft SQL Server 2005 Reporting Services, the notable change to this version; apart from the look, is the fact that there is only one service account that needs to be configured now the dependancy on Internet Information Services (IIS) is removed. Previous version required a windows service account and web service account to be configured. Below is a summary of options.

Server Node Provides the ability to stop and start the reporting services.

Service Account Provides the ability the change the security context under which the Report Service runs.

Web Service URL Configures the URL access to the Report Server by creating a URL reservation. An URL reservation defines the virtual directory, IP address, TCP port and optionally a SSL certificate. HTTP.sys uses the URL reservation to direct users requests and allow access to the URL.

Database Provides the ability to change the location of the Report Server database and to change the credentials for connecting to the Report Server database.

Report Manager Creates an URL reservation to access the Report Manager website.

Email Settings Provides the ability to integrate with email by defining a Server address and an email address that has the ability to send email from the Report Server.

Execution Account Provides the ability to specify an account to use against report data souces that do not require credentials or to access remote servers.

Encryption Keys Allows the management of the keys that are used to encrypt the sensitive data stored in the reporting services database. There is the ability to backup and restore the encryption keys. Change encryption keys and delete the encrypted content within the database.

Scale-out Deployment Provides the ability to manage multiple instances of Reporting Services that share the same Reportserver database such as a clustered instanced. Microsoft SQL Server 2005 Reporting Services refered to scale-out deployment as Initialization

I am old enough to remember when the advertising industry spawned first, creative hotshops (remember

I am old enough to remember when the advertising industry spawned first, creative hotshops (remember Cramer and Saatchi?), then media independents and it wasn’t long before the discussions began to rage between the comparative value of buying full-service vs ad hoc. Later, when digital media first reared its interactive head it was seen as a separate service. Now, digital has been embraced as part of the marketing and communications scene and the old argument (in a slightly different guise) appears again.

We could spend a lot of time discussing whether ad agencies have sufficient digital expertise or fully recognise the possibilities, or if specialist digital agencies have a sufficiently broad marketing base – but in what is still an immature sector the discussion is rather pointless as the offering is so varied and patchy as to provide no obvious answers.

To compound matters, specialisms within the digital arena are growing and replicating faster than a swine-flu virus. We now have SEO, PPC, mobile, content, ecommerce, content production, international, email, research specialists and many, many more.

Nobody but the biggest digital agencies (big bucks) can keep the depth of expertise on their books to bring together the right mix of specialisms required for even moderately complex solutions. But few clients, particularly SMEs, have either the physical resource or the knowledge to assemble the right team of suppliers for an à la carte solution. The instinct of a big agency is do as much internally as they can; it maintains control and maximises revenue. But to provide a client with the most effective, and cost-effective programme, they need to take a more project management role.

The alternative is for clients to employ a digital project manager to manage the best possible team of disciplines to achieve their strategy.

I’ve been playing a little catch up lately with posts and orginally I wanted to feature these

I’ve been playing a little catch up lately with posts and orginally I wanted to feature these books separately but I don’t have the time to right now. So here is a quick burst of three books that I recently purchased that are guiding me in the right direction. If you haven’t noticed that my cooking has started to become a little more extravagant over the last month or so then I guess I need to read more!

Thomas Keller is the man. I wrote a paper on him for class and I have read all of his books (French Laundry, Bouchon, Underpressure and now Ad Hoc). When I found out he was coming out with a home-style cookbook based off of his family-style restaurant Ad-Hoc I immediately snapped up a copy. The guy is a genius and I wanted to see what he would do with traditional home recipes. Well, he did exactly what I was looking for. He took those everyday recipes that we all love and know, then refined them, explains why, then makes them perfect.

The best part is there are tons of pictures! I especially like how he deconstructs salads, dressings, and other meals to show the simplicity of them. A few ingredients here and there and you have a great food item!

If you cook at home then you should definitely buy this book. Thomas Keller is a master Chef and one of the people I look up to the most in the culinary world.

David Chang has released his much awaited cookbook featuring the stories and recipes of his four restaurants in New York (Momofuku Noodle Bar, Momofuku Ssam Bar, Momofuku Ko, and Momofuku Bakery and Milk Bar). He talks about abandoning the world he used to live and then devoting himself to food. He worked in some of the best restaurants in New York then gave it up to work in noodle houses in Japan…..that is some serious dedication. He came back and opened Noodle Bar and after a year or so of struggles his restaurant took off which then lead to the success/struggles in his other restaurants.

Reading his story of how he made his transition from normal dude to kick ass cussing Chef made me feel like all the stuff I’m doing is worth it. I’ll shut up now and let you look at the food!

That is not even scratching the surface with this book. It is amazing and definitely worth picking up. DROOL!

I hope you can read some names on the front cover. Serious culinary masters choosing their favorite 100 contemporary chefs (David Chang is on the list!). I bought this book at Costco after I remember my first quarter Chef instructor telling me that sometimes you can find great cooking books there. I have been searching for about two months now and then I stumbled on this and while the cover doesn’t really do anything for me, the names do. So I snapped it up, got home and busted the cover open and instantly shocked my self back to reality. I have a looooooooooong way to go and I realized this when I started flipping through the pages of this book.

100 Chefs from around the world……all on top of their game…….all great stuff.

There is so much in this book and I haven’t been through it all but I have made this my gold standard. One day I want to be in this book, there I said it. I need to go work on a few things so stay tuned!

Eric

It probably goes without saying what a complete thrill it was to see Thomas Keller speak live and in person tonight at the Toronto Reference Library. If you’re not certain who the heck Thomas Keller is, see if these names ring any bells: The French Laundry, per se, Bouchon, Bouchon Bakery, ad hoc, Michelin Three Stars, and on and on and on. I had the foodgasmic pleasure of dining at ad hoc (whose tag line is “for temporary relief of hunger”. Indeed.) in the Spring of 2008 during my first trip to Napa Valley. My very best friend in the whole wide world for the last 18 years was getting married and we had dinner at ad hoc to celebrate. Ad hoc is all about comfort food and *I* am all about comfort food, which means we were a match made in heaven from the word “go”. I mean, any restaurant that has “Buttermilk fried chicken with brussels sprout hash, autumn squash, cippolini onions, chive biscuits and peppered anson mills grits” is, without a doubt, my kinda place. In fact, prior to eating at ad hoc, I wasn’t a huge duck fan, but being the adventurous eater I like to be, tried it there. Essentially, I could have put my face in the dish from the sheer goodness were I not afraid that my mug would end up splashed across TMZ.com for the world to see1. Let me just say that the smells were so good in that place that I could have possibly married them.

The Cookbook Shop had apparently been “stalking” Chef Keller for ten years. Ten years spent trying to get him to Canada, to no avail. Until tonight. His new cookbook, ad hoc at home, was recently published and he is touring in support of the book on, you guessed it, comfort food. I was ticket #65 and thought it would be a small, intimate group listeners, but there were more than 450 others who had the same idea I did — it was packed! The price of the ticket included a signed copy of the book and when I walked in, he was surrounded by about ten people, with boxes everywhere, signing the books. I found my spot and he casually walked to the front to begin the chat. He said more than once how nervous he was and that his comfortable place was next to the stove, which I totally get being the expert chef I am2. He spoke at length about how kitchens are all about teamwork, and rituals3, and how he enjoys eating seasonal foods because he hates eating the same thing all year. I tend to agree — it’s no different than loving the changing of the actual seasons — food seasons are just as much fun to anticipate! He told a little anecdote about going into Pusateri’s today and seeing a lady buying peaches. He walked up to her and said “Don’t buy those peaches. They’re all dehydrated and don’t even have a smell”, to which she apparently stared at him and bought it anyway. He said she was also buying cherries. Cherriesand peaches in November? His point was that we should think about the seasons when we eat just like we think of the trees changing or the snow beginning.

Chef Keller was sweetly nervous and was much more reserved than I expected he’d be. There was a Q&A session and, of course, someone asked him what he thought about Canada and the Canadian food scene4, where he answered that he didn’t know much about it, but that he wanted to eat at The Black Hoof — and so do I, because who wouldn’t want to eat a horse tongue sandwich?! I ate beef tongue in Montréal, so why not horse tongue in Toronto? But I digress. The announced that Chef Keller would stay and personalize the books afterwards and so I sprinted to the back, after having sat myself in the front. The line-forming was mayhem and I had flashbacks to the five hours — FIVE — I stood in line to meet David Sedaris. David Sedaris is one thing — I would stand in a -30C blizzard with snow up to my eyeballs for the chance to speak to David Sedaris for even ten seconds (well, I would pretty much do *anything* to see David Sedaris), but, while Chef Keller is widely regarded as the best chef in America, I wasn’t about to spend the next four hours waiting for him to sign my book “To Carmen”. So home I went, happy as a lark, to eat my comfort food of a fried egg sandwich.

Speaking of food, this week’s New Yorker is their annual “Food Issue”, which means lots of foodie goodness. I was perusing the mag on the way to Chicago and nearly fell off my very comfortable Air Canada flight with economy class in-seat TV when I saw that Calvin Trillin contributed an article on the national food of Québec, poutine!! Firstly, it’s the New Yorker. Enough said. Secondly, Calvin Trillin. Calvin Trillin ranks up there as one of my all-time favourite writers extraordinaire and humourist who wrote one of my all-time favourite books called Travels with Alice. Thirdly, an article on the infamous snack food known as poutine in my beloved adopted country written by Calvin Trillin in the New Yorker. Z.O.M.G. It couldn’t possibly be any better unless David Sedaris was his writing partner, at which point I’d probably roll up into the fetal position on my floor and simply cry out of sheer happiness. For your reading, and listening, pleasure, I’m linking to an exerpt5 of the article in the mag and a clip of the podcast of Mr. Trillin speaking about the article. As good as it gets, fo realz.

And that, my friends, officially brings me to the end of this daily blogging madness for which I signed up called NaBloPoMo. My writing muscles have officially been flexed and it was awesome! Through sleep-deprivation, traveling, and a creative writing class that required me to write entire 1,000 word articles weekly (!) in addition to my daily blog posts, I still managed to accomplish blogging every single day for 30 days (check the badge on the right, yo)!! Let me just say that it takes brass balls to achieve this, and although I know all of you at least one of you6 out there will miss my daily posts, fret not! I’ll be back soon enough, but this time without the mad dash to the finish line whereby I’m wheezing and puffing like a 97 year-old woman. Because you deserve better.

Now that NaBloPoMo is kaput, there are about eleventy-thousand things I’m going to do. I’m going to a) decorate my Christmas tree, b) eat before 10pm, c) sleep, d) reconnect with friends who thought I’d fallen off the face of the planet, e) not lose my job, f) tidy up my house that is in complete disarray, g) take a leisurely bath so as to finally use my favourite Lush bathbombs7 and h) go on the date I’ve been putting off for 30 days, which may or may not include ”g”. ;-)

To those of you who stuck this out with me, thank you for reading my occasionally narcissistic drivel (but also some good posts, too!). I’ll miss seeing y’all here every day, but the next time I bring this kind of cockamamie idea up, please call the po-po – I will seriously need to be arrested. For now, I need a big blogging break. Don’t wait up!

1 Think headlines such as “maid of honour starves herself for so long just to fit in her bridesmaid dress that she chows down like a pig in a trough”. Or something like that.
2 Not!
3 And of which I am also a HUGE fan — maybe I missed my calling, after all.
4 A question I’m asked *all* the time and one I just don’t get. Why is it so important for Canadians to know what Americans think of Canada? You’re a lovely, beautiful place, so stop looking for constant approval from your next-door neighbour, already!
5 Because I’m not a subscriber (yet…Santa!), I can’t download the article in its entirety. Sorry.
6 You know who you are.

We hosted a potluck dinner with some friends on Saturday. Hosting a dinner party can be fun and enjo

We hosted a potluck dinner with some friends on Saturday. Hosting a dinner party can be fun and enjoyable when your guests are just as enthusiastic about eating as they are about cooking. It was so much more fun to plan the menu as a group and to divide up the cooking. Since DC/SC were going to Turkey for Thanksgiving, we thought a Thanksgiving theme was apropos.

We all agreed to pass on roasting a colossal Turkey, but were unanimous on having stuffing–a must. For the protein, DC prepared Pretzel Chicken, which was also the first meal he cooked for SC when they were dating. SC made a delicious cranberry relish that added just the perfect touch of zing to our meal. I made a chanterelle and lemon parsley stuffing which was based on Eric Ripert’s grandmother’s recipe. For starters, DC made a savory red lentil soup that not only tasted good, but was beautiful to behold, with its golden hue and flecks of orange from the carrots.

For the sides, I made a sweet corn souffle that was airy, custard-like, and creamy. To add a fresh raw element to the mix, we served a hearts of romaine salad interspersed with parsley leaves with a Buttermilk Dressing (recipe below). Last but not least, SC baked a decadent Italian chocolate nut tart.

Last week I made fresh goats milk cheese successfully for the first time, so I was excited to make it again for the party. As the chicken was baking, we nibbled on the herb infused cheese and olive oil crackers and sipped on a lovely 2007 Gewurztraminer Grape Juice that DC/SC picked up from Navarro Vineyards after tasting it at Alice Waters’ Chez Panisse. All in all it was a memorable feast!

Here are some of the recipes from the potluck. Hope you enjoy making them as much as we did. Bon Appetit!

Red Lentil Soup

Makes 4 servings

Ingredients

3 Tbsp. olive oil

1 large Onion, chopped

2 Garlic cloves, minced

1 Tbsp. Tomato Paste

1 tsp. Cumin

Kosher Salt and freshly ground black pepper, to taste

Chili powder or cayenne, to taste

1 quart chicken stock

1 cup Red Lentils

1 large Carrot, peeled and diced

Lemon juice, to taste

3 Tbsp. fresh parsley, chopped

Special Equipment: immersion/stick blender or food processor

1. In a large stock pot, heat the olive oil over high, add onions, garlic, and saute until golden.

2. Stir in tomato paste, cumin, salt, pepper, chili/cayenne, and saute for 2 minutes.

3. Add stock, 2 cups water, lentils and carrot. Cook to a simmer and turn to medium-low heat. Simmer until lentils are soft, about 30 minutes. Add salt to taste.

4. Use an immersion blender or food processor to puree half the soup and then add it back to the pot. The consistency should be coarse and chunky.

5. Add lemon juice to taste. Garnish with fresh parsley.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Pretzel Chicken with Mustard Sauce
(original recipe from Food & Wine)
Makes 6 servings
Ingredients
4 c. hard pretzels, crushed (Martin’s Pretzels from the Union Square Farmer’s Market)
1/2 c. whole-grain mustard
2 Tbsp. Dijon mustard
1/4 c. water
3 Tbsp. Red Wine Vinegar
Salt and freshly ground black pepper, to taste
6 skinless, boneless chicken breast halves
1. Preheat oven to 400 degrees. Pulse pretzels in food processor until coursley ground, and transfer to a large shallow bowl.
2. Wipe clean the food processor. Add the oil, mustards, water and vinegar and process until smooth. Season with salt and pepper.
3. Pour half of the mustard dressing into a large shallow bowl. Add the chicken and turn to coat. Dredge the chicken in the pretzel crumbs and transfer to a baking sheet. Bake in the oven for 20-25 minutes, or until cooked through. Slice chicken and serve warm with the remaining mustard dressing.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Creamy Corn Souffle

(original recipe from Saveur)

Makes 6-8 servings

Ingredients

6 Tbsp. butter

1/3 cup Panko (or dried bread crumbs)

2 bags of frozen sweet and white corn (or 8 ears of freshly shucked corn)

1 – 1 1/2 cups whole milk

6 Tbsp. AP flour

Salt and freshly ground black pepper, to taste

8 egg yolks

10 egg whites

1 c. grated cheddar cheese

Special Equipment: 10″ cast-iron pot, large souffle dish

1. Preheat oven to 400 degrees. Butter souffle dish with 1 Tbsp. butter. Sprinkle with bread crumbs to coat bottom and sides. Tap out excess and set aside. If using fresh corn, cut corn kernels from the ears and scrape cobs with side of a spoon to release corn milk. Transfer corn and corn milk to a strainer set over a bowl and press to release corn milk, and set aside. Transfer corn milk to a measuring cup and add enough milk to make 2 cups of liquid. If using frozen corn, just measure out 2 cups of milk.

2. Melt remaining butter in a medium saucepan over medium-low heat. Add flour and cook, stirring with a wooden spoon, for 2 minutes. Remove saucepan from heat and slowly whisk in milk mixture, then return to medium heat and cook, stirring constantly, until thick enough to coat the back of a spoon, 2-3 minutes.

3. Remove from heat and season generously with salt and pepper. Beat in egg yolks, one at a time. Add reserved corn, mix well, and set aside.

4. Put egg whites in a clean bowl of a standing mixer fitted with a whisk, add a pinch of salt, and beat until stiff but not dry peaks form. Add 1/3 of egg whites into corn mixture, gently folding with a rubber spatula, then fold remaining egg whites, adding cheese in alternating folds.

5. Spoon mixture into prepared souffle pan. Bake until puffed and deep golden, 30-40 minutes. Serve while hot!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Thomas Keller’s Buttermilk Salad Dressing
(from his latest cookbook, Ad Hoc at Home)
Makes about 2 cups
Ingredients:
1 cup Aioli
1/4 to 1/2 cup buttermilk
1/2 cup creme fraiche
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
3/4 teaspoon fresh lemon juice
1 teaspoon minced chives
1 teaspoon minced flat-leaf parsley
1 teaspoon minced mint
Kosher salt
Put the aioli in a large bowl. Whisk in 1/4 cup buttermilk and all the remaining ingredients. The dressing can be used now or refrigerated. Before serving, lift up a spoonful of dressing and pour it back into the bowl — it should run freely. If it is too thick, add additional buttermilk as necessary. Refrigerate in a covered container for up to 1 week (the herbs may darken after 1 day).
Jaringan nirkabel Anda   dengan peralatan komputer yang sederhana dan membuat peralatan Anda lebih   berguna dan portabel.
Jaringan LAN nirkabel mengacu pada menghubungkan   dua atau lebih komputer untuk membuat jaringan area lokal (LAN) dengan   menggunakan pemancar / penerima (kadang-kadang disebut transceiver). Komputer   mengirimkan data melalui gelombang radio, yang memungkinkan berbagi printer,   dokumen, dan berbagi akses internet pada setiap komputer dalam jaringan. Anda   dapat memindahkan komponen jaringan LAN nirkabel Anda tanpa kehilangan koneksi   ke jaringan.
Manfaat Jaringan Nirkabel
Jaringan LAN nirkabel   menawarkan beberapa manfaat yang jelas (tanpa kabel) dan beberapa bahwa Anda   mungkin tidak dipertimbangkan. Yang paling jelas adalah portabilitas. Secara   khusus, jika Anda mengkonfigurasi sebuah laptop untuk jaringan nirkabel, Anda   dapat berkeliaran di sekitar rumah atau di sekitar warung kopi.
Topologi Jaringan Nirkabel
Dalam jaringan komputer, topologi istilah biasanya   merujuk pada pola kabel digunakan untuk menghubungkan komputer. Jaringan LAN   nirkabel tidak menggunakan kabel, namun mereka masih memiliki topologi, yang   mendefinisikan bagaimana berinteraksi perangkat nirkabel pada layer fisik. Di   lapisan fisik, Wireless LAN IEEE 802.11b menggunakan urutan langsung komunikasi   spread spectrum pada frekuensi 2.4 GHz, dan perangkat dapat saling berkomunikasi   dengan menggunakan dua topologi dasar: ad hoc dan infrastruktur.
Wireless Network – Ad-Hoc
Jaringan ad hoc terdiri dari dua atau   lebih perangkat nirkabel berkomunikasi secara langsung dengan satu sama lain.   Sinyal yang dihasilkan oleh jaringan LAN nirkabel adapter yang Omni-directional   untuk rentang yang diatur oleh faktor lingkungan, serta sifat dari peralatan   yang terlibat. Kisaran ini disebut wilayah layanan dasar (BSA). Ketika dua   perangkat nirkabel datang dalam jangkauan satu sama lain, mereka dapat terhubung   dan berkomunikasi, segera membentuk dua-simpul jaringan. Perangkat nirkabel di   dalam area pelayanan dasar yang sama disebut layanan dasar set (BSS).
Perangkat nirkabel lain yang datang dalam jangkauan transmisi dua yang   pertama juga dapat berpartisipasi dalam jaringan. Jaringan ad hoc tidak   transitif, namun. Perangkat nirkabel dalam jangkauan yang berasal dari perangkat   lain, tetapi masih berada di luar jangkauan ketiga, hanya dapat berkomunikasi   dengan perangkat dalam jangkauan.
Infrastruktur Jaringan Wireless
Sebuah jaringan infrastruktur perangkat nirkabel menggunakan jalur akses   yang disebut sebagai jembatan antara perangkat nirkabel dan jaringan kabel   standar. Jalur akses adalah unit kecil yang terhubung ke jaringan Ethernet (atau   jaringan kabel lain) dengan kabel, tetapi yang juga berisi nirkabel   802.11b-compliant transceiver. Perangkat nirkabel lain yang datang dalam   jangkauan jalur akses dapat berkomunikasi dengan jaringan kabel, hanya   seolah-olah mereka terhubung dengan kabel sendiri. Jalur akses yang berfungsi   sebagai jembatan yang transparan, efektif memperpanjang kabel jaringan area   lokal (LAN) untuk menyertakan perangkat nirkabel.
Pada jaringan   infrastruktur, perangkat nirkabel berkomunikasi hanya dengan jalur akses, mereka   tidak berkomunikasi satu sama lain secara langsung. Oleh karena itu, bahkan jika   dua komputer nirkabel berada dalam jangkauan satu sama lain, mereka harus tetap   menggunakan jalur akses untuk berkomunikasi.
Ada beberapa teknologi   nirkabel di pasar saat ini yang memanfaatkan berbagai standar nirkabel. Hari ini   bersama teknologi jaringan LAN nirkabel sekarang dapat menawarkan pilihan   konektivitas fleksibel pada 108 Mbps atau lebih kecepatan hingga 300 Mbps dan   mendukung terhalang jarak hingga 500 meter.
Perhatian utama penggelaran   Jaringan LAN Nirkabel adalah keamanan. Karena siaran Jaringan LAN Nirkabel data   melalui udara dengan menggunakan gelombang radio (elektromagnetik frekuensi),   hampir semua klien LAN nirkabel di sekitar dilayani oleh pemancar dapat   mengakses media komunikasi. Hal ini membuat berpotensi sangat mudah untuk   menguping percakapan dan mendapatkan akses ke jaringan pribadi melalui titik   akses nirkabel.
Jika teknologi LAN nirkabel yang akan digunakan itu harus   mendukung persyaratan keamanan yang diperlukan, termasuk enkripsi kuat. Ini   harus mencakup kebijakan keamanan mendidik pengguna yang tidak terhubung secara   ilegal Jaringan LAN nirkabel ke jaringan internal.
Teknologi ini dan   keterbatasan keamanan harus diteliti dan dikemudikan sebelum dilaksanakan untuk   mengidentifikasi risiko ini.
Persyaratan minimum yang berkaitan dengan   Wireless LAN Network adalah:
    * Wi-Fi certified   IEEE 802.11g produk nirkabel harus hanya digunakan.
    Jalur akses Wireless tidak boleh lebih dari   sub-scribed.
    * Semua titik akses jaringan nirkabel   harus aman dan hanya menerima data dienkripsi berwenang.
    * Sebuah protokol enkripsi dengan kunci dinamis   harus digunakan untuk mengakses jaringan LAN nirkabel.
Persyaratan yang   direkomendasikan berkaitan dengan Wireless LAN Network adalah:
    * Seperti di atas plus berikut
    * Semua titik akses nirkabel harus aman terletak   pada firewall terpisah segmen jaringan ke jaringan internal.
    * Sebuah firewall sesuai kebijakan keamanan harus   digunakan untuk membatasi akses ke LAN internal.
    *   Peta nirkabel jaringan harus dilakukan untuk menentukan batas-batas dan   karakteristik kinerja jaringan LAN Nirkabel
Klien menggunakan radio dan   / atau berdasarkan frekuensi gelombang mikro untuk menyambung ke jaringan swasta   melalui kartu jaringan nirkabel di PC. Kartu jaringan nirkabel ini berkomunikasi   dengan titik akses nirkabel yang terletak di dekat ke PC klien. Karena   multi-sifat akses jaringan LAN nirkabel bandwidth hanya berbagi diperbolehkan,   sementara kebijakan seperti Quality of Service (QoS) dan IP multicast tidak   dapat sepenuhnya didukung.
Utama hari ini adalah protokol nirkabel IEEE   802.11g yang merupakan perluasan ke lebih lambat asli standar IEEE 802.11. Lain   mengembangkan standar nirkabel IEEE draft 2.0 adalah 802.1n yang akan memberikan   hingga 300 Mbps dan menawarkan untuk menjaga kompatibilitas dengan 802.1b / g   peralatan bersertifikat.
LAN nirkabel produk yang membawa logo Wi-Fi   IEEE 802.11b sepenuhnya memenuhi persyaratan dan telah disertifikasi oleh   Wireless Ethernet Compatibility Alliance (WECA).
Wi-Fi mendefinisikan   spesifikasi global, standar LAN nirkabel yang akan beroperasi dengan Wi-Fi lain   produk-produk bersertifikat.
Sementara jaringan LAN nirkabel memberikan   akses jaringan transparan kepada pengguna roaming, mereka membuka jaringan   hingga banyak risiko keamanan. Frekuensi radio dapat dengan mudah bocor hingga   500 meter (atau lebih) dari daerah langsung jalur akses jaringan. Protokol   seperti enkripsi wired equivalent privacy (WEP) dapat digunakan untuk   mengamankan LAN nirkabel. Penggunaan kunci dinamis dengan WEP dapat digunakan   untuk mengatasi keterbatasan keamanan yang diketahui dari protokol 802.11b WEP.   Industri terbaru keamanan koneksi nirkabel Wi-Fi Protected Access (WPA/WPA2).
Untuk lebih jaringan LAN nirkabel aman sangat disarankan bahwa titik   akses nirkabel dijamin api yang terpisah berdinding segmen jaringan. Kebijakan   keamanan yang sesuai (termasuk enkripsi yang kuat) harus diberlakukan untuk   mengurangi ancaman pelanggaran keamanan jaringan. Karena jaringan LAN nirkabel   adalah sebuah teknologi baru analisis keamanan yang terus-menerus diperlukan.   Pengguna harus dididik di pulau tidak menyiapkan jaringan nirkabel yang mengelak   dari segala kebijakan keamanan nirkabel.
Dengan menerapkan jaringan LAN   nirkabel tanpa bentuk keamanan jaringan sangat berbahaya. Itu tidak sah   eksternal berpotensi memungkinkan pengguna untuk dengan mudah mendapatkan akses   ke jaringan internal melalui titik akses nirkabel. LAN nirkabel harus dienkripsi   dan risiko yang terkait dengan akses di luar harus dibahas.
Karena sifat   bersama media nirkabel Quality of Service (QoS) dan keterbatasan bandwidth yang   ada. Dalam rangka untuk memberikan prioritas QoS data apapun (misalnya suara   atau video secara realtime) bersama segmen nirkabel harus tetap di   bawah-berlangganan. Bahkan dalam kasus ini mungkin kinerja aplikasi dapat   diandalkan
Over in Japan, multiplayer on the PSP is not really a problem.  People gather in groups with PSP in hand with their copy of Monster Hunter: Freedom Unite or Phantasy Star Portable and play via ad hoc (essentially wireless local multiplayer) for hours on end.  Over here in North  America, finding other PSP owners with the same game within your social circle is a bit more far between.    Japanese PSP players with a PS3 also had the luxury of the adhocParty feature that allows you to connect to your PS3 and play ad-hoc multiplayer games via the internet (in lament terms, making your PSP think there are other PSP players with the same game in your proximity through the PS3 internet connection).  Today Sony announced one less reason to be jealous of Japanese gamers now that the adhocParty feature will become available by month’s end in North America.  Bringing new life to your collection, you can now finally tryout the ad-hoc multiplayer modes on most of your games that you never had the opportunity play only for the reason you did not know anybody with the same game. At the very least, if you do know people with the same game with ad-hoc multiplayer,  adhocParty will make playing with them that much more convenient .  Sean C.
November 13, 2009 – Sony Computer Entertainment America (SCEA) today announced the availability of the online service, “adhocParty for the PSP® (PlayStation®Portable) system,” coming to North America in November. The service, which launched in Japan last year, enables PSP system owners to play select online multiplayer games featuring Ad Hoc mode over the Internet through the PlayStation®3 (PS3™) computer entertainment system. PSP titles with Ad Hoc mode traditionally require users to play within close proximity to each other, but with “adhocParty,” PSP owners with a PS3 system can play one another through the PlayStation®Network.
“The PlayStation brand is synonymous with creating exciting new gameplay experiences that connect and challenge people in ways they never thought possible,” said Scott A. Steinberg, vice president, product marketing, SCEA. “AdhocParty for the PSP system creates an avenue for gamers to connect, strategize, and compete with each other – Gran Turismo is a great example of this. Polyphony Digital developed robust Ad Hoc features within the game, which are now even more accessible through adhocParty. We saw this as a tremendous opportunity to enhance the PSP system’s online gaming experience and bring the service to our North American consumers.”
Popular titles such as SCEA’s Gran Turismo® for PSP and Monster Hunter Freedom Unite from Capcom® will soon have access to this new social gaming service.
“The secret to Monster Hunter’s fantastic success on PSP around the world has been the social aspect of the game, which brings together players from all walks of life,” said Mark Beaumont, chief operating officer, North America and Europe, Capcom. “AdhocParty for the PSP system will connect gamers to the content they love as well as to those who share the same passion for gaming. At last, Monster Hunter fans will be able to adventure together, regardless of where they are in North America.”
Interoperability between the PSP and PS3 systems through features such as “adhocParty for the PSP system” enable users to interact with other PlayStation gamers in new and innovative ways – all of which is only possible on the PlayStation platform.
If you haven’t already baked these cookies that have taken the food blog world by storm, you must drop everything and make them NOW. Seriously, they caused an existential crisis in me. They are that GOOD.
At first, you take a bite and think: “it’s a chocolate chip cookie. it’s good” and then the flavor hits. AMAZING. It’s like an EVIL TWIN of the standard chocolate chip cookie. A little darker, a little mysterious, and very irresistible. And I’ve always been drawn to the bad boys. The recipe uses special dark (molasses) brown sugar, no vanilla, and makes you sift your chopped chocolate (two kinds: I used 41% milk and 70%)  to make sure there is no chocolate dust in the cookie.
In celebration of the opening of Bouchon Beverly Hills this month, I made Thomas Keller’s Chocolate Chip Cookies from his new cookbook Ad Hoc.
If you don’t know by now, I am a big fan of Bouchon. And that’s putting it mildly. I’ve been counting down the days for the local branch of Bouchon to open…but because of my travel and the holidays I probably won’t make it to the restaurant until  after the New Year.
Of course, now that I’ve tried the cookies I really want to go to Ad Hoc the restaurant.
You can find the recipe for these bad boys HERE. The recipe says to place 8 per sheet, I baked six per sheet and would suggest that number because they do spread.
