<content:encoded><![CDATA[<div class='snap_preview'><p>Since this is going to be a short work week because of Thanksgiving, this was an opportunity for me to try out a new recipe for my Dinner of the Week series. I spotted this recipe in the December issue of <a href="http://www.foodandwine.com/">Food &#38; Wine</a>. Cookbook author Eugenia Bone (<em><a href="http://www.foodandwine.com/blogs/mouthing-off/2009/5/27/New-Cookbook-WellPreserved">Well-Preserved</a></em>) shares her recipe of meatballs with peas.</p>

<p>The thing I really love about this recipe is that the meatballs are served with rice instead of pasta. It just seemed like the perfect pairing. Instead of sliding off the slippery pasta, the marinara sauce gets soaked up by the rice. The idea of rice and peas gives me a wonderful homey, comforting feeling. I think that adults and kids alike will enjoy this dish. I&#8217;m going to add this to my repertoire so that one day I can make this for my very own mini Tarte Titous.</p>
<p>I tweaked the original recipe slightly. So instead of broiling the meatballs in the oven, I seared them in a skillet over stove top. I swapped the golden raisins for a 1/2 cup of pine nuts and tripled the amount of Parmigiano-Regiano cheese and added more garlic&#8211;who needs a reason to add more cheese?</p>
<p style="text-align:center;">
<p style="text-align:center;"><strong><span style="color:#008080;">Meatballs with Peas and Rice</span></strong></p>
<p style="text-align:center;"><em>Makes 3-4 servings</em></p>
<p style="text-align:center;"><em>Ingredients</em></p>
<p style="text-align:center;">For the meatballs:</p>
<p style="text-align:center;">1/2 lb. ground beef chuck</p>
<p style="text-align:center;">1/2 lb. ground pork</p>
<p style="text-align:center;">1/2 cup pine nuts</p>
<p style="text-align:center;">1 large egg, beaten</p>
<p style="text-align:center;">1 medium onion, minced</p>
<p style="text-align:center;">2 garlic cloves, minced</p>
<p style="text-align:center;">2 Tbsp. dry bread crumbs</p>
<p style="text-align:center;">6 Tbsp. freshly grated Parmigiano-Regiano cheese</p>
<p style="text-align:center;">1 Tbsp. chopped fresh thyme</p>
<p style="text-align:center;">1 Tbsp. chopped fresh flat-leaf parsley</p>
<p style="text-align:center;">1 Tbsp. water</p>
<p style="text-align:center;">1 1/4 tsp. salt</p>
<p style="text-align:center;">1/2 tsp. freshly ground black pepper</p>
<p style="text-align:center;">1 Tbsp. extra-virgin olive oil</p>
<p style="text-align:center;">
<p style="text-align:center;">For the marinara sauce:</p>
<p style="text-align:center;">1 Tbsp. extra-virgin olive oil</p>
<p style="text-align:center;">1 medium minced onion</p>
<p style="text-align:center;">2 garlic cloves, minced</p>
<p style="text-align:center;">One 16-0z. can whole peeled, San Marzano tomatoes</p>
<p style="text-align:center;">1/2 cup white wine</p>
<p style="text-align:center;">2 sprigs fresh oregano</p>
<p style="text-align:center;">1  1/2 cups frozen petite peas, thawed</p>
<p style="text-align:center;">Salt and fresh ground black pepper, to taste</p>
<p style="text-align:center;"><span style="text-decoration:underline;">Special Equipment:</span> medium baking dish</p>
<p>1. Make the meatballs: preheat the oven to 400 degrees. In a large bowl, mix the beef, pork, pine  nuts, egg, onions, bread crumbs, cheese, thyme, parsley, water, salt and pepper with your hands. Mix well. Form about 15-20 meatballs.</p>
<p>2. Heat the oil in a skillet over medium-high heat. Sear the meatballs, rolling a few times to lightly brown all sides. Transfer the meatballs to a baking dish.</p>
<p>3. Make the sauce: in a medium saucepan, heat the oil over medium heat. Add the onions, garlic and cook for 5 minutes. Add the wine and cook for 2 minutes. Add the tomatoes and oregano and cook for an additional 5 minutes. Season with salt and pepper.</p>
<p>4. Sprinkle the peas into the baking dish with the meatballs. Pour the sauce into the baking dish and bake for 20-30 minutes, until the sauce is bubbling. let rest for 10 minutes, then serve with rice. <span style="color:#800000;"><em>Bon Appetit!</em></span></p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Today Lacey was a barker from morning to night.Part of it was due to other dogs in the neighborhood barking.Others were when Aunty Betsy and Uncle Sherman came to check on their plants.We took Lacey outside after putting her leash and collar on to visit with Aunty betsy in the front yard.sure enough that&#8217;s what Lacey wanted.She just wanted to say hi to one of her favorite people.Lacey had her first interaction with a dog today.When we were outside we passed by the dog who was on the other side of the wall(our neighbor)and Lacey peaked inside the holes of the gate and looked for a few seconds.The other dog just looked at her also for a few seconds.Of course they sniffed the front of each other(through the open spots of the gated fence)then they went into play mode.There was a few growling from  both dogs but then it was time to go back to the front.Lacey also got a rawhide that is flavored from Hartz.I knew that it was one of the healthier brands but I can&#8217;t say everything is within health reasoning.Although most of it is.There is no by products of any type in it but there is coloring in the rawhide.Otherwise it&#8217;s healthy.We went shopping tonight to get ready for thanksgiving cookings.Tomorrow I am going to make Lacey&#8217;s Pumpkin Patch Dog Biscuits for her Thanksgiving treat.Either Tuesday or Wednesday I will make her main meal for Thanksgiving.Aunty Betsy and Uncle Sherman are also going to be bringing over their two dogs.Mom wants to try snap a picture of all three dogs(Ours:Lacey maltipoo:maltese/toy poodle)Emi(Shiba Inu)and Mochi(Samoyed).Lacey is the youngest of all three.Lacey 8 months Emi is about 4-6 years old Mochi is about 2-3 years old.</p>

I tried to take the picture from my camera in such a way that it should look like I took the original shot. I hope I have succeeded in my attempt.</p>

Pues bien, al poco tiempo le compramos una jaula nueva con la que está encantado. Temía que no le gustase y se sintise incómodo, pero que va, está encantado de la vida.</p>
<p>Dije que más adelante os pondría unas cuantas fografías para que lo vieseis, y el otro día por fin se las hice:</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>I am trying Lacey on 1 Tablespoon of Wellness to see how she does.While her bowels are not diarrhea  it is on the soft side.I&#8217;d hate to take away a favorite food of hers if I can help it&#8230;If I mix it she gets soft bowels.If I give her 1/4 cup of Wellness she gets soft bowels(It&#8217;s still formed not like literally watered down bowels)Now I am trying combination of  1 T of Wellness + 1 T Solid Gold,1 T Wellness or 1 T Solid Gold..So far she hasn&#8217;t eaten since yesterday early morning so I can&#8217;t say if it will work or not but we&#8217;ll see.<br />
Update:Lacey has ate.Her first bowel was good.the second time it was on the softer side.Yup,I will have to call Wellness today and see what they recommend trying for Lacey.Otherwise back to the drawing board we go.Can&#8217;t have soft bowels.I prefer firm instead of soft even through it&#8217;s not loose stools.</p>

<p>After reading Lindsay’s “China’s Three Gorges Dam,” I could not refrain myself from writing about one of the most important monuments in China’s history, <a href="http://www.greatwall-of-china.com/">The Great Wall of China</a>. Because the Great Wall is not nearly as new as the Three Gorges Dam, it poses subtler questions about its effects on nature. It in fact is so old that it seems like a part of nature itself, much like how we consider the Stonehenge to be a part of nature. But in actuality, it is the product of the human hand, literally.</p>
<p>I cannot help to wonder how such a huge structure, over <em>five thousand miles </em>long, would have affected nature and its animals. How many habitats were destroyed with the construction of this unthinkably massive wall? Such questions inundate my mind, for I would never have thought that this revered structure, built to prevent destruction of humanity from war, ironically, could have caused major damage to nature. I am very surprised that I had never thought of this topic before, but then again, the Great Wall successfully shrouded itself with its blanket of grass and trees in order to blend into nature.</p>
<p>I wonder why there is always controversy about recent technological structures that could harm nature such as the Three Gorges Dam but not about things of the past such as the Great Wall. Is destroying nature with human technology a concept strictly limited to the present and the future? Why do we not talk about things of the distant past and their effects? Is it because humans were not harmful before, but are becoming increasingly so as we progress through time? And if this is true, how are we evolving so quickly? What are our outlooks for the future? I don’t know about you, but my mind is sufficiently blown.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>After weeks of squatting extremely uncomfortably in front of the food i leave for stray cats, I finally gained one&#8217;s trust enough to pet it. It must not have been a stray as much as a don&#8217;t-feel-like-going-home-er, since it promptly started to twine around my ankles and purr outrageously. Sigh. My attempts at single handedly rescuing the homeless feline population has been reduced to a large black cat that may or may not be the tom we owned a few years ago, and a small black kitten not yet at the gangly stage. So far, my efforts aren&#8217;t that impressive.</p>

<p>He&#8217;s the biggest sweetie, but if he doesn&#8217;t get his daily exercise, he turns into a demon dog at night time and he still has razor sharp puppy teeth.</p>

<p><strong>Next time you head out to your favorite sushi restaurant</strong>, you might want to think twice about ordering the tuna. There’s a good chance the fish on your plate could be an endangered species.</p>
<p>A new study by the American Museum of Natural History conducted DNA investigations on tuna at restaurants in New York City and Denver and found that nearly 30 percent of the tuna tested was actually endangered bluefin, and less than half of that was labeled as such.</p>
<p>A single bluefin tuna can sell for tens of thousands of dollars at market, a popular draw for the fishing industry. But that popularity comes with a price. Western stocks of northern bluefin tuna now hover around 10 percent of their “pre-exploitation” numbers. And last October, the country of Monaco nominated northern bluefin tuna for a listing under a complete international trade ban by the Convention on International Trade in Endangered Species (CITES), according to a press release.</p>
<p>The serving up of a critically endangered fish is not necessarily on the shoulders of the restaurants. They might not know they’re doing it, just as consumers might not know they’re eating it. This is because the eight species of tuna are so genetically similar – closer than humans are to chimpanzees – that even with DNA testing, it’s hard to distinguish the difference, and once tuna arrives to the U.S. market, the U.S. Food and Drug Administration-approved marketing label is simply “tuna.” A new and improved method of genetic detective work just might help change all that.</p>
<p>&#8220;When you eat sushi, you can unknowingly get a critically endangered species on your plate,&#8221; says Jacob Lowenstein, a graduate student affiliated with the Museum and Columbia University in the press release. &#8220;But with an increasingly popular technique, DNA barcoding, it is a simple process for researchers to see just what species are eaten at a sushi bar.&#8221;</p>
<p>DNA barcoding can be used to identify what animal became which product, even down to the origin of a leather handbag, according to the press release. In the case of the bluefin tuna, DNA barcoding defines a genetic key of 14 nucleotides exclusive enough to identify whether the tuna being served is bluefin. A similar method has been used to identify endangered whales on the Asian market and wildlife being sold in the African bushmeat trade.</p>
<p>With any luck, researchers will develop a handheld barcoding machine that can be used to identify fish on-site.</p>
<p>This study can be found in the current issue of <em>PLoS ONE.</em></p>
