<title><![CDATA[Bird Eating]]></title>

<content:encoded><![CDATA[<div class='snap_preview'><p>Sure it’s turkey season.  Everyone is gearing up towards Thursday.  They are picking up their pre-ordered fresh birds, defrosting frozen ones, getting a brine bath ready, or attempting a <a title="As mentioned last week by Mr. Barnes" href="http://blog.timesunion.com/tablehopping/11503/something-to-try-this-year-dry-brine-the-turkey/" target="_blank">dry-brine</a> possibly for the first time.</p>
<p>I prefer to be a guest and bring wine for the holiday.  But this year because of family illness I may be sitting this one out.</p>
<p>So I am contemplating what to make for a small informal thanksgiving at home.  And really the answer could not be clearer to me.  Roast chicken.  Chicken, especially a smaller 3-3 ½ pound chicken, is really the perfect balance between meat and skin.  You might be able to make a case for slightly smaller game birds, but it would be difficult.</p>
<p>Turkeys clearly don’t have enough skin.  It’s just a sad and regrettable fact.  Even a smaller turkey will yield piles of meat, but only a few precious strips of crisp delicious skin.  I’m no slave to convention.  Besides, anyone who tells you that Thanksgiving is all about the turkey is full of poppycock.  The turkey is beautiful eye candy.  It is a great symbol of abundance, and at one point was a strong contender for our national bird.</p>
<p>But turkey itself is merely the canvas for the rest of the meal: the stuffing, the cranberry sauce, the gravy, the potatoes, etcetera.  Tomorrow I will tell you what single item I believe to be the centerpiece of the meal.</p>
<p>For now I would rather focus on my chicken.</p>
<p><!--more-->I do not have just any roast chicken in mind.  A special meal calls for the Christopher Kimball Slow Roast Chicken (as featured on pages 220 and 221 of <a title="My dedication to the book." href="http://fussylittleblog.com/2009/06/02/one-book-shall-outfuss-them-all/" target="_blank"><em>The Cook’s Bible</em></a>).</p>
<p>When done correctly, the fat underneath the skin melts away, enriching the flesh, and the skin itself crisps up with a cracker-like snap.  It’s truly remarkable.  And the white meat stays juicy, even as the dark meat is thoroughly cooked through.  The downside to all this alchemy is that the process probably isn’t approved by any government organization responsible for food safety.</p>
<p>So, you have been warned.  And even Mr. Kimball says, “A slow roasted chicken should never be stuffed or trussed.”  Again, I would highly recommend that you <a title="From the FUSSYlittleSTORE or elsewhere." href="http://astore.amazon.com/f0534-20/detail/0316493716" target="_blank">buy this book</a>.  It is a great read and a great resource.</p>
<p>This is not a chicken obscured by other competing flavors.  There are no herbs under the skin.  There isn’t a special marinade.  Besides the 3 – 3½ pound chicken the only other ingredients are melted butter, salt and freshly ground black pepper.</p>
<p>This is a technique for making the chicken taste its best.</p>
<p>And it starts with making sure the chicken is perfectly dry, inside and out.  Did I say perfectly?  That means perfectly.  Paper towels are your friend here.  You will a lot of them.  And they will be covered with lovely raw chicken juices.  So have a big empty trash can nearby.</p>
<p>Preheat the oven to 375 degrees.</p>
<p>Brush the perfectly dry chicken with melted butter, and then the book says to “sprinkle it liberally with salt and freshly ground black pepper.”  If you have a high tolerance for salt, I would suggest you sprinkle it generously.</p>
<p>Put the chicken breast side up in the rack of a shallow baking pan.<br />
Cook the chicken like this for half an hour.<br />
Turn down the temperature to 200 degrees and cook for one more hour.<br />
Then crank the oven up to 400 degrees and cook for a quarter hour.</p>
<p>Now it is time to take the bird’s temperature.  It’s done when the thigh is between 170 and 175 degrees and the breast is 175 to 180 degrees.</p>
<p>Take the chicken out of the oven, and let it rest for 20 minutes before carving it.  If you tent this beautiful bird and steam that marvelous crispy skin into a soft mushy mess, I may have to get violent.</p>
<p>I don’t know why I’m giving you this recipe now.  Most of you will have turkey this week.  The lucky few will have goose.  But when your leftovers are finished, remember this post, and make this chicken, and tell me I am wrong.</p>

<p><strong>Dan Mangan &#8211; Nice, Nice, Very Nice [9.8/10]<br />
</strong><em>I think this is my favourite album from this year</em>. Cute, teddy-bear-ish-looking singer-songwriter from Canada. He makes you feel loved inside. Good, strong and dynamic songs, nice vocals, good instrumental work, wonderful lyrics. The best indie pop album from this year. It&#8217;s unbelievable that he&#8217;s just 25 (date-material! haha!). Dan&#8217;s a keeper and you should keep your eye on him!</p>
<p><strong>Andrew Bird &#8211; Noble Beast/Useless Creatures [9.5/10]</strong><br />
Again, a masterpiece made by Andrew Bird. It&#8217;s balanced, beautiful and unique. It&#8217;s pop, folk, it&#8217;s wonderfull. I only miss the electric guitar a bit. Still, great lyrics, interesting, wonderfull compositions and vocally pretty strong. Useless Creatures is the best instrumental CD I&#8217;ve ever heard, might have even listened more to that one than to Noble Beast. Good Stuff.</p>
<p><strong>St. Vincent &#8211; Actor [9/10]</strong><br />
Annie Clark manages to float above her instrumental chaos. Or at least, it looks like that. Her compositions are actually well made. Vocally, Clark is really strong. It&#8217;s a pretty unique CD that you&#8217;ll love or you&#8217;ll hate. I love it.</p>
<p><strong>Jesca Hoop &#8211; Hunting My Dress [8.8/10]</strong><br />
To me, she&#8217;s live even stronger. Hoop mixes various styles and makes them her own. Great guitar work, great vocals. It might sound weird during your first listen, but it will grow. Especially &#8216;Murder of Birds&#8217; is a wonderful track.</p>
<p><strong>A.A. Bondy &#8211; When The Devil&#8217;s Loose[8/10]</strong><br />
I know I didn&#8217;t give A.A. Bondy such a high mark in my review. But the album did really grow on me. I listen to it a lot, so points for that!</p>
<p><strong>Franz Ferdinand &#8211; Tonight[7.2/10]</strong><br />
Surprising new album from Franz Ferdinand. Still the have their own Franz sound. Good stuff. Typical Franz.</p>
<p><strong>Grizzly Bear &#8211; Veckatimest[7/10]</strong><br />
Pretty interesting album, on moments to difficult for me to understand maybe. There are some &#8216;killer-tracks&#8217; on it, but overall it&#8217;s just a pretty solid, nice, album that isn&#8217;t really my cup of tea at moments</p>
<p><strong>Regina Spektor &#8211; Far [7/10]</strong><br />
Not as strong as Begin to Hope, but again a very good album. Spektor goes from weird classical stuff to pop, not being afraid of sounding &#8217;silly&#8217;. Vocally strong, but you have to love her voice. No complains about her instrumental stuff, but it&#8217;s not really &#8216;new&#8217;. (Best tracks of the album are simply<em> &#8216;Laughing With&#8217;</em> and <em>&#8216;Folding Chair&#8217;</em>, these are perfect songs)</p>
<p><strong>Wilco &#8211; Wilco(the album) [7/10]</strong><br />
Wilco deliverd another good album. Still, it can&#8217;t beat Yankee Hotel Foxtrot, but it&#8217;s a good try. It&#8217;s again the typical Wilco sound(that isn&#8217;t really my sound). But it&#8217;s a strong, balanced album.</p>

Last Sunday <a href="http://www.realclearpolitics.com/video/2009/11/15/fox_news_sunday_panel_on_putting_911_conspirators_on_trial.html">Liz Cheney praised</a> “<em>Going Rogue</em>” as “<em>well-written</em>” on Fox News even though, by her own account, she had sampled only “<em>parts</em>” of it. On Tuesday, Ana Marie Cox, a correspondent for Air America, <a href="http://www.washingtonpost.com/wp-dyn/content/article/2009/11/16/AR2009111603752.html">belittled the book in <em>The Washington Post</em></a> while confessing that she couldn’t claim to have “<em>completely</em>” read it.</p>
<p>“<em>Going Rogue</em>” will hardly be the first best seller embraced by millions for talismanic rather than literary ends. And I am not recommending that others follow my example and slog through its 400-plus pages, especially since its supposed revelations have been picked through 24/7 for a week. But sometimes I wonder if anyone has read all of what Palin would call the “<em>dang</em>” thing. Some of the book’s most illuminating tics have been mentioned barely — if at all — by either its fans or foes. Palin is far and away the most important brand in American politics after Barack Obama, and attention must be paid. Those who wishfully think her 15 minutes are up are deluding themselves.</p>
<p>The book’s biggest surprise is Palin’s wide-eyed infatuation with show-business celebrities. You get nearly as much face time with Tina Fey and the cast of “<em>Saturday Night Live</em>” in “<em>Going Rogue</em>” as you do with John McCain. We learn how happy Palin was to receive calls from Bono and Warren Beatty “<em>to share ideas and insights</em>.” We wade through star-struck lists of campaign cameos by Robert Duvall, Jon Voight (who “<em>blew us away</em>”), Naomi Judd, Gary Sinise and Kelsey Grammer, among many others. Then <a href="http://washingtonindependent.com/68108/sarah-palin-thanks-glenn-beck-rush-limbaugh">there are the acknowledgments</a> at the book’s end, where Palin reveals that her intimacy with media stars is such that she can air-kiss them on a first-name basis, from Greta to Laura to Rush.</p>
<p><a href="http://www.nytimes.com/2009/11/22/opinion/22rich.html?_r=1&#38;adxnnl=1&#38;ref=opinion&#38;adxnnlx=1258870202-3tD0btFQR8VqVqjq1hVlmg"><img src="http://the44diaries.wordpress.com/files/2009/11/steverussell.jpg?w=110" alt="" title="steverussell" width="110" height="150" class="alignright size-medium wp-image-15508" /></a>Equally revealing is the one boldfaced name conspicuously left unmentioned in the book: Levi Johnston, the father of Palin’s grandchild. Though Palin and McCain <a href="http://thecaucus.blogs.nytimes.com/2008/09/03/palin-family-welcomes-mccain-to-twin-cities/">milked him for photo ops</a> at the Republican convention, he is persona non grata now that he’s taking off his campaign wardrobe. Is Johnston’s fledgling porn career the problem, or is it his public threats to strip bare Palin family secrets as well? “<em>She knows what I got on her</em>” is <a href="http://www.nydailynews.com/news/politics/2009/11/12/2009-11-12_levi_johnston_at_fleshbot_awards_sarah_palin_smart_for_not_trashing_me_on_oprah.html">how he put it</a>. In Palin’s interview with Oprah last week, it was questioning about Johnston, not Katie Couric, that made her nervous. </p>
<p>The book’s most frequently dropped names, predictably enough, are the Lord and Ronald Reagan (though not necessarily in that order). Easily the most startling passage in “<em>Going Rogue</em>,” running more than two pages, collates extended excerpts from a prayerful letter Palin wrote to mark the birth of Trig, her child with Down syndrome. This missive’s understandable goal was to reassert Palin’s faith and trust in God. But Palin did not write her letter <em>to </em>God; she wrote the letter <em>from</em> God, assuming His role and voice herself and signing it “<em>Trig’s Creator, Your Heavenly Father.</em>” If I may say so —<em> Oy!</em></p>

When it comes to setting your Thanksgiving table, options for the adventurous host are limitless. What are the hottest trends for you to bring to your table this year? Here are a few ideas that will take your Thanksgiving table from ordinary to extraordinary:</p>
<p>Color, Texture and Mix &#8211; Match:</p>
<p>In table linens and accessories, this year we are seeing rich, saturated colours. We are also seeing a lot of texture and the mixing and matching of patterns with solids. There are a lot of options out there to do something warm and inviting.</p>
<p>Color Trends</p>
<p>Warm tones have always been popular for Fall and that continues with some of the biggest trends in colour combinations this year. Some of those include:<br />
- Deep Spice and Aubergine with muted Gold accents &#8211; Dark Chocolate with Blues and Gray accents &#8211; Olive Green, Aubergine and softer greens as accents &#8211; Dark Chocolate, Taupe and Natural</p>

Fill three or four vases and/or glass bowls with different colors and sizes of ornaments, fruits, leaves &#8211; anything with color and texture that will create visual excitement.</p>
<p>- Your guests are all unique &#8211; why not celebrate their individuality? Use different patterns and/or colors of napkin rings that match their unique personalities. Are they simple or sophisticated? Fun or formal? Unpredictable or conservative? Show them you care with a little customization to complement your table linens.</p>
<p>- Candles are always a dramatic and cost effective way to make a statement &#8211; use votives at each place setting with a name card and emphasize beautiful table linens for a classy and simple look. Or go more dramatic and cluster your favourite candle sticks of varying heights and looks as a centerpiece. Use colors that complement or match your dishes, glasses and table linens.</p>
<p>- Nothing brings subtle sophistication to your table like a well-selected runner. Use one the length of the table plus 12 inches to hang over the edge (usually a 90&#8243; or longer) as the perfect centerpiece. If you are using a solid tablecloth or placemats, make sure to jazz it up with a festive pattern. If you have a patterned look already, use a vibrant solid runner that picks up on one of the colors in your runner.</p>
<p>- Use 2 napkins instead of one with a napkin ring. With a solid napkin inside, and a more decorative napkin on the outside.</p>
<p>When setting your table, just remember: do what feels right for the mood. A casual gathering calls for a relaxed setting. A formal meal should feel that way at the table. Either way, it doesn&#8217;t take much to elevate your in-home dining experience. Replacing an old tablecloth with something fresh an exciting, and adding a few simple table accessories can go a long way to impressing your guests.
