This is the easiest and most delicious jam for your toast (paleo, glutenous or banana bread). You can also use it as a topping for yogurt, cheesecake or ice cream!

2 cups of frozen blueberries

juice of 1 lemon

4 tbsp chia seeds

(add a small amount of maple syrup if you require more sweetness, but honestly you don’t need it)

Directions:

1. Add the blueberries and lemon juice to a a small sauce pan and over medium heat melt the blueberries (boiling not required). Remove from heat, add chia seeds and stir well. Serve hot or chill in the fridge for an hour. Keeps for a couple days. Enjoy!
