<title><![CDATA[What is ahead after Dow 10500?]]></title>

<content:encoded><![CDATA[<div class='snap_preview'><p>Now that we have touched Dow 10500, we probably will take a little breather in the coming day or days. If not then the markets will be in overheated grounds and there will be an even bigger profit taking on Thursday or Friday. One stock that seems overvalued at this point is Microsoft (<a href="http://www.google.com/finance?q=msft">MSFT</a>). Considering the lack luster Windows 7 buzz and the fact that it is at $30 (finally!), people should really analyze what the company has to offer for the next quarters in terms of growth.</p>
<p>God forbids Apple (<a href="http://www.google.com/finance?q=aapl">AAPL</a>)comes up with a Christmas surprise!</p>
<p>The markets are very stable at this point, judging by the Bollinger band widths of several indices or stocks.</p>
<p>VArious indicators pointed to a sluggish next quarter. Now that corporations have milked all the possible way of cutting costs, it will be very interesting to see the next earnings.</p>

<p><a href="http://mylifeitalian.blogspot.com"><strong>Tracie B</strong></a> and I are going to have a hard time topping the wedding guest welcome gifts left for us by betrothed Eileen and Greg. When we arrived last night at 2 a.m. to our hotel in West Orange, NJ, we found a chilled bottle of Bollinger Special Cuvée (the official wine of the band that both Greg and I play in, Nous Non Plus) waiting in our room. Today, as we are primping for the wedding and I am practicing the Beatles songs I am to perform during the ceremony, Tracie B ordered peperoni pizza and broccoli raab from Enzo&#8217;s in West Orange and we popped the cork on that bottle. Who could want for more? (A funny thing: Tracie B grew up in West Orange, <em>Texas</em>. No genuine Italian-American pizza there!)</p>
<p>We&#8217;re really looking forward to the wedding tonight and celebrating with Eileen and Greg!</p>

<p>Sin embargo no se preocupe, es probable que si ha escuchado la palabra volatilidad, volatilidad del mercado, volatilidad del precio,  ya esta familiarizado con el tema, ya que volatilidad  lo podemos connotar  como  movimiento, y significa  lo mismo que desviación estándar sino que esta última palabra es usada en  estricto sentido matemático</p>
<p><strong>Que es desviación estándar?</strong></p>
<p>Justamente la desviación Estándar, en un conjunto de datos (precios en el caso del mercado de valores)  es una medida de dispersión, que nos indica cuánto pueden alejarse los valores respecto al promedio (media), por lo tanto es  útil para buscar probabilidades de que un evento ocurra, o en el caso del mercado bursátil, determinar entre que  rango de precios puede moverse un determinado activo, y determinar que tipo de activos pueden ser mas volátiles que otros.</p>
<p>Los operadores del  mercado están interesados en la dirección del precio de un activo y en la velocidad de los movimientos del subyacente para determinar  que tan riesgoso o vólatil puede llegar a ser un activo. Los mercados cuyos precios se mueven lentamente son mercados de baja volatilidad,  los mercados cuyos precios se mueven a alta velocidad son mercados de alta volatilidad.</p>
<p>Existen varias maneras de estimar la volatilidad, y el mundo ideal sería aquel donde se pueda determinar la volatilidad de todo el conjunto de datos existentes, sin embargo teniendo en cuenta que se cuentan con recursos (información, costos, etc) limitados, la desviación estándar se pude tomar sobre un determinado conjunto de datos que se ajusten a nuestros requerimientos, mediante la siguiente fórmula:</p>

<p><strong>Cómo se interpreta y se analiza?</strong></p>
<p>Ya dijimos que los operadores y los inversores estarían muy interesados en saber cual puede ser la dirección del precio, y también poder determinar un rango de precios en el cual el activo pueda moverse. Veamos entonces un ejemplo de cómo calcular la desviación  y su interpretación:</p>
<p>Si definimos  la desviación como  una medida de la variación de los precios, esta medida se basará en los cambios porcentuales que sufren los mismos. Sin embargo existen dos formas de calcular estos cambios porcentuales:</p>

<p>La manera correcta de tomar el % es en cambios logarítmicos, ya que es una manera de interpretar que los precios no pueden tomar valores negativos, y  por lo tanto considera mayores los movimientos al alza que los movimientos a la baja.</p>
<p>Lo importante no es  saber cómo se calcula cada uno de estos parámetros, lo que importa es la interpretación,  más concretamente, qué sugieren la media y la desviación estándar en términos de probabilidad del movimiento del precio.</p>
<p>En  nuestro ejemplo la media nos indica un promedio de resultados. Si sumamos todos los resultados y los dividimos entre el número de datos, nos da un promedio de -0.4741% es decir, el retorno promedio de resultados en estos días fue -0.4741%</p>
<p>Si calculamos la desviación de acuerdo a la fórmula presentada anteriormente nos da que la Desviación Estándar o volatilidad es 1.13%, hay que tener en cuenta que los datos tomados son datos diarios, por lo tanto el dato obtenido es de una volatilidad diaria de 1.3%.</p>
<p>Esto nos quiere decir que si el precio del activo cotiza a $158,  el precio de este activo puede moverse hacia arriba o hacia abajo::</p>
<p>$158,1 x 1,129677% = ±1,786019166 diario</p>

<p>Este simple numerito aunque  nos dice una aproximacion del movimiento, nos puede resultar útil para interpretarlo en términos de probabilidad, es decir cuál es la probabilidad de que el activo cotice a determinado precio, pero este tema  lo trataremos  en la segunda parte de este articulo.</p>

<p>Igår kväll höll jag en provning baserad på <a href="http://www.mynewsdesk.com/se/pressroom/arvid_nordquist_hb/pressrelease/view/svensk-skrev-vaerldens-bok-om-franska-viner-326132" target="_blank">&#8220;Lilla boken om champagne och ost&#8221;</a>. Det är en fin liten bok framtagen i samarbete mellan Arvid Nordquist (importör av Ayala och Bollinger) och <a href="http://www.androuet.nu/" target="_blank">Androuet Osthus</a>. Deltog själv vid den provning där boken lanserades i samband med senaste Vinordic. Mycket intressant koncept.</p>
<p>Inför gårdagens provning hade jag valt ut sex av champagnerna och sex ostar som skulle passa särskilt bra till respektive vin. Resultatet blev inte &#8220;enligt boken&#8221;. Detta visar bara på hur känsliga smakkombinationer är. Vinerna som vi provade var inte av samma årgång eller befann sig i ett annat utvecklingsstadium som de som beskrivs i boken. Ostarna var inte heller av exakt samma mognad och inte heller från samma producent. Små skillnader som ger stor påverkan.</p>
<p><a href="http://systembolaget.se/SokDrycker/Produkt?VaruNr=81438&#38;Butik=0&#38;SokStrangar=" target="_blank">Ayala Zero Dosage</a> domineras av citrustoner, lime och grape och är mycket lätt, knastertorr, tydlig kritig mineralitet och med en hög fin syra. En champagne helt utan <em>dosage</em> (tillsatt socker). Var tänkt att passa till den pyramidformade, ganska milda getosten <strong>Petit Pouligny St Pierre AOC</strong> från Loire. Det fungerad inte alls, vinet tappade all karaktär och kändes tunt och vattniget.</p>
<p><a href="http://systembolaget.se/SokDrycker/Produkt?VaruNr=81978&#38;Butik=0&#38;SokStrangar=" target="_blank">2001 Ayala Blanc de Blancs</a> domineras också av citrustoner men hade mer fyllighet, fruktighet och komplexitet parad med mycket fin syra och elegans. Den rekommenderade kombinationen till den ganska milda, lite nötiga <strong>Morbier Extra AOC</strong> med sin typiska sotrand fungerade fint. Osten har en liten bitterhet som dämpades av syran i champagnen. Samma ost till <em>Perle de Ayala</em> nedan var en rysare. Vinet lyfte fram beskan och det blev en riktigt obehaglig reaktion.</p>
<p><a href="http://systembolaget.se/SokDrycker/Produkt?VaruNr=84901&#38;Butik=0&#38;SokStrangar=" target="_blank">Ayala Cuvée Rosé Nature</a> är en charddonnaydominerad rosé med en tillsatts av 8% rött vin. Doften har toner av smultron, hallon, lime, mineral och rök. Smaken är helt torr (ingen dosage), mycket frisk och fruktig, smakrik och med en antydan till strävhet och aromerna drar mot röda bär som hallon. Rosén skulle passa den lite stalliga, men välbalanserade och smakrika <strong>Camembert AOC</strong>, vilket den också gjorde. En helt OK kombination. Den passade dock mycket bättre till getosten <strong>Petit Pouligny St Pierre </strong>som lyfte fram fruktigheten och bärigheten i vinet.</p>
<p><a href="http://systembolaget.se/SokDrycker/Produkt?VaruNr=87754&#38;Butik=0&#38;SokStrangar=" target="_blank">2001 Cuvée Perle de Ayala</a> består till 80% av chardonnay och har haft över 5 års lagring i kontakt med jästfällningen. Detta märks i den utvecklade, stora doften av gul frukt, brödighet och antydan till nougat. Jästkontakten har också gett en stor fyllighet och nästan oljig umamikaraktär balanserad av mycket fin syra. Detta fylliga vin satt som gjutet till den nötiga, nästan söta <strong>Comté Extra +16 månader AOC</strong>. Mycket lyckad kombination.</p>
<p><a href="http://systembolaget.se/SokDrycker/Produkt?VaruNr=7418&#38;Butik=0&#38;SokStrangar=" target="_blank">Bollinger Special Cuvée</a> har en utvecklad, fruktig doft med inslag av svamp och nötter. Smaken är fyllig, frisk och välstrukturerad med en lång eftersmak. En klassiker! Lite oväntat rekommenderades denna till den feta (40%) och lite syrliga <strong>Brillat-Savarin</strong>. Det fungerade bara sådär. Däremot gjorde den underverk tillsammans med <em>Ayala Zero Dosage</em>. Champagnen upplevdes mjukare, fruktigare och mineraltonen lyftes fram. Bollinger Special Cuvée var däremot en bra kompis till <em>Comté Extra</em>. Nötigheten i både ost och vin nådde nya höjder.<br />
<a href="http://systembolaget.se/SokDrycker/Produkt?VaruNr=7579&#38;Butik=0&#38;SokStrangar=" target="_blank"><br />
2000 Bollinger La Grand Année</a> har en stor fruktig doft av lemoncurd, citronkaramell och mineral. Smaken är mycket fyllig med koncentrerad frukt där lemoncurd går igen, bra hög syra och en tydlig fatstruktur. Till detta kraftfulla vin hade den lika smakrika <strong>Abondance AOC</strong> valts ut. Denna ost gjord på råmjöl från alpkor var ett under av fyllighet och balans mellan sötma, syra, sälta, beska och umami. Detta var också kvällens absolut bästa kombination. Vin och ost kompletterade varandra perfekt och gav en utökad smakupplevelse.</p>

<p>Yesterday I went to a Champagne Show at the Palace Hotel, where guests could enjoy and taste the bubbles from various Champagne houses. The Palace Hotel is one of the best hotels in Madrid, so the expectations were pretty high. The room was classy and elegant, and so were the stands that showcased the different Champagnes. I don&#8217;t know why, but Champagne is always surrounded by a glamorous aura…</p>

<p>Big houses like Moët &#38; Chandon, Veuve Clicquot, Mumm, Bollinger, Taittinger were there, but also some small Champagne boutiques with absolutely incredible wines.</p>
<p>One I like very much because of its delicious taste and amazing bottle is Perrier Jouët Belle Epoque 1999. The Art Nouveau that decorates the bottle makes it a very special piece.</p>

<p>After tasating more than 30 Champagnes, I concluded that my favourite style is the  <em>Blanc de Blancs</em>,  made from 100% Chardonnay. I love their floral character!</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>El resumen de las Bandas de Bollinger que abajo se enumera, sirve como ayuda memoria a personas que ya tienen formación en <strong><em>FOREX</em></strong>, por tanto este listado es de consulta y no de aprendizaje.</p>
<ol>
<li>Las <em><strong>Bandas Bollinger (BB)</strong></em>proporcionan una definición relativa de los conceptos <strong><em>Alto, Bajo</em></strong>.</li>
<li>Esa definicion puede usarse para comparar la actividad de los precios con la de los indicadores para llegar a decisiones rigurosas de <em><strong>Compra</strong></em> y/o <strong><em>Venta</em></strong>.</li>
<li>Los indicadores apropiados pueden calcularse partiendo del <strong><em>momento, volumen, seguimiento, posición abierta</em></strong>, de los datos intersectoriales, etc.</li>
<li>La <strong><em>Volatilidad</em></strong> y la <strong><em>Tendencia</em></strong>ya estan incluidas en la construcción de las bandas, por lo que no recomiendo su utilización como confirmacion de la actividad de los precios.</li>
<li>Los indicadores utilizados para la confirmación de los precios no deberian estar directamente relacionados entre si. Dos indicadores de la misma clase no incrementa la confirmación, es decir, se debe evitar a toda costa la <em><strong>colinealidad</strong></em>.</li>
<li>Las B.B. pueden usarse para aclarar <em><strong>patrones de precios puros</strong></em>, tales como las cimas M y los suelos W, los cambios de Momentos, etc.</li>
<li>Los precios pueden recorer, y asi lo hacen, las B.B. Superior, Media e Inferior.</li>
<li>Los cierres fuera de las B.B. pueden ser señales de continuación o no de inversión de la tendencia, como lo demuestra el uso de las B.B. en algunos sistemas de ruptura de volatilidad.</li>
<li>Los parametros por defecto de 20 dias para calcular la media movil y 2 desviaciones standard, son simplemente eso &#8220;valores por defecto&#8221;, las valoraciones para un mercado determinado pueden ser muy diferentes.</li>
<li>La media utilizada no tiene porque ser la mejor desde el punto de vista de las señales por cruce, mas bien deberia dar una buena descripción de la tendencia a Mediano Plazo.</li>
<li>Si se alarga la media, el número de desviaciones ha de ser incrementado simultaneamente.</li>
<li>Las B.B. se basan en una media movil simple, ello se debe a que se usa esa media para calcular la <em><strong>dasviacion tipica</strong></em>y ser logicamente consistente.</li>
<li>Tenga cuidado si hace suposiciones estadisticas basadas en el uso de la desviacion tipica para la construcción de las B.B.</li>
<li>Los indicadores pueden normalizarse haciendo uso del %D, eliminnado asi la necesidad de umbreles fijos en el proceso de decisión.</li>
<li>Los contactos con las B.B. son solo eso, contactos,  y NO señales.</li>

<content:encoded><![CDATA[<div class='snap_preview'><p>Un petit stage dans les caves d’un grand restau parisien m’a permis de me pencher sur une épineuse question : faut-il garder son champagne ou bien arguer d’une idée répandue que « cela ne se fait pas » et en profiter pour faire sauter le bouchon ?</p>
<p>Si c’est un champagne commun : « petite » maison, champagne non millésimé, champagne non issu d’une première presse (On presse le raisin en plusieurs fois, et la seconde fois, nommée la « taille », donne un jus moins qualitatif) ou bien si ça n’est pas un « blanc de blanc » (un vin provenant uniquement de Chardonnay, cépage de longue garde, tandis que le Pinot noir ou le Pinot meunier évoluent plus vite), hop, le prétexte est tout trouvé, il faut le servir ! (l’alchimie peine toujours sur la transformation Plomb =&#62; Or, alors espérer une transformation Champagne commun =&#62; Nectar … ne rêvons pas !)</p>
<p>Par contre, dans le cas contraire : Grande maison, blanc de blanc, millésimé (un raisin vendangé à belle maturité avec équilibre acidité/sucre), issu de la première presse (la « cuvée), ça peut valoir le coup de le garder. Longtemps? 6 ou 7 ans max. après qu’il ait été « dégorgé ». (L’opération ne doit rien à Marc Dorcel, elle vise à enlever les « lies », cadavres des levures de fermentation). Mais alors, comment arrive-t-on à trouver d’excellents très vieux millésimes ? (Dans mon restau, quelques Krug 1988, A Gratien 1979, … ). L’astuce consiste pour le producteur ou le négociant à conserver le champagne avec ces lies qui protègent  le vin et lui permette de s’enrichir avec le temps, et à le dégorger peu de temps avant la mise sur marché.</p>
<p>Bollinger a même poussé le marketing jusqu&#8217;à <a href="http://bases-marques.inpi.fr/Typo3_INPI_Marques/marques_recherche_marques.html">déposer auprès de l’INPI</a> la marque de &#8220;RD&#8221; (Récemment Dégorgé) par laquelle ils garantissent que le champ a été conservé sur lies au moins 8 ans (contre 3 ans minimum pour les millésimés classiques). Les dates de dégorgement sont malheureusement rarement indiquées sur les étiquettes, mais comme ces vieux millésimes sont très chers, c’est aux cavistes de nous renseigner (souvenez-vous, le vin commence à chuter 6/7 ans après le dégorgement) et de nous garantir que les bouteilles ont aussi été conservées dans des lieux obscurs.</p>
<p>Ces vieux champagnes, moins pétulants que les jeunots, sont plus vineux, doux et adaptés aux desserts. Comme beaucoup de bonnes choses, les Britanniques, les riches, pas les dockers, en sont amateurs…Damned !</p>

<p>Hành trang đó gồm những gì ? Đơn giản thôi, đó là những công cụ cần thiết mà bạn sẽ sử dụng để xây dựng một chiến lược chơi hiệu quả và thích hợp nhất với bạn. Bạn càng có nhiều công cụ trong tay bao nhiêu, bạn càng dễ dàng xây dựng chiến lược cho mình bấy nhiêu.</p>

<p>Bollinger bands được sử dụng để đo lường mức độ biến động của thị trường. Nói nôm na, công cụ này sẽ cho chúng ta biết thị trường đang bình lặng hay sôi động. Khi thị trường bình lặng, dải bollinger sẽ thu hẹp, khi thị trường sôi động, dải bollinger sẽ mở rộng. Bạn có thể xem trong ví dụ bên dưới, khi thị trường ít biến động, dải bolliger khép lại, nhưng đến khi tỉ giá lên cao, dải bolliger trải rộng ra.</p>

Giá di chuyển phía trong dải Bollinger càng lâu bao nhiêu thì dải Bollinger này càng mạnh bấy nhiêu. Nhiều nhà giao dịch thiết lập cho mình cách chơi dựa trên đặc điểm bật lại của dải Bollinger, chiến thuật này được sử dụng tốt nhất khi thị trường bập bềnh (sideway) và không có xu hướng rõ ràng.</p>

<p><strong>Bollinger thắt chặt</strong></p>
<p>Khi dải Bolliger ép chặt lại, nó thường báo hiệu một dấu hiệu phá vỡ (beakout) sắp xảy ra. Nếu nến phá vỡ dải trên, giá thường sẽ tiếp tục lên cao, nếu nến phá vỡ dải phía dưới, giá thường tiếp tục xuống thấp.</p>

<p>Vendredi dernier, un nommé Justin nous a rendu visite pour découvrir ce qu&#8217;est une vraie cave à Vins et en particulier une cave à <a href="http://vertetor.wordpress.com/champagne/">Champagne</a>. Il était accompagné d&#8217;Olivier Moulard, responsable Laurent-Perrier d&#8217;une partie du secteur parisien et de grands comptes tels que Lavinia et 1855.<br />
Ce &#8220;Justin&#8221; est un futur commercial <a href="http://vertetor.wordpress.com/champagne/laurent-perrier/">Laurent-Perrier</a> à New-York, pour le moment il est formation en France pour appprendre sur les <a href="http://vertetor.wordpress.com/champagne/laurent-perrier/">champagnes Laurent-Perrier</a> et comprendre les rouages de la distribution de ce delicieux breuvage.<br />
Il ainsi pu decouvrir les énormes flacons (jusqu&#8217;à 18L) de vins de <a href="http://vertetor.wordpress.com/bordeaux/">Bordeaux</a> ainsi que nos inombrables raretés en <a href="http://vertetor.wordpress.com/champagne/">Champagne</a> : Bollinger RD 1975, 1ère bouteille collectif de Taittinger en 1L maintenant introuvable ainsi que notre cave à champagne de luxe : Dom-Perignon 2000, Dom-Ruinart 1996, Cristal Roederer 2002 et bien d&#8217;autres flacons encore..</p>

<p>After an entertaining evening with Blowers &#8211; Henry Blofeld &#8220;My dear old thing&#8221; earlier in the week Tuesday evening  brought Champagne Tasting with Joe Fattorini at the Fountaine Inn, Linton.</p>

<p>With a similar format to the <a title="Beer Tasting with Jane Peyton" href="http://paganum.wordpress.com/2009/06/25/beer-tasting-with-jane-peyton-grassington-festival/" target="_blank">Beer Tasting Evening</a> Joe Fattorini who is one of the world&#8217;s leading wine experts introduced &#8220;Champagne&#8221; and his talk included some history, methods of production, grape varieties and a few good stories, we tasted 6 Champagnes from a variety of houses.</p>
<p><strong>The six Champagnes we tasted were :-<br />
</strong></p>
<ol>
<li> The Mystery Wine and not strictly a Champagne but the English equivalent Primrose Hill from Chapel Down, Tenterden, Kent and very good it was! Colour = delicate hue of summer roses, light aroma, spritzy feel and full palate, flavours of redcurrants, creamy strawberries &#38; a hint of rosehip.  Available from Booths @ £16.99</li>
<li>Veuve Clicquot Yellow Label NV, Golden colour, aromas of bread, yeast. £33.58</li>
<li>Bollinger Special Cuvee NV, one of my favourites and our guides favourite Champagne house, intense &#38; aromatic. £34.01</li>
<li>Nicolas Feuillatte Rose NV, from a cooperative with an onion skin salmon pink colour, tastes of alpine stawberries and a light bodied balance, blended style. Available from Oddbins £35.99</li>
<li>Perrier Jouet Blason Rose NV, more restrained but complex nose and a bit more peppery, liqorice, strawberries and redcurrants. £39.78</li>
<li>Bollinger Rose NV, red cherry &#38; raspberries, complex, this newly launched champagne was exclusive to Selfridges now available elsewhere. £41.40</li>

<p><strong>What did we learn?<br />
</strong>Some of Joe&#8217;s musings included &#8211; Champagne is traditionally grown on Limestone areas as are Sancerre and Chablis, the same Limestone geography of the Champagne region emerges under the channel in Kent giving the English the favourable possibilities of replicating Champagne growing possibilities along with climate change adding to the effect.</p>
<p>Champagne is made from 3 main grape varieties but a few houses use others, the main grape varieties are Chardonnay, Pinot Noir and Pinot Meunier and the lesser known grapes include Pinot Blanc, Arbanne &#38; Petit Meslier.  Only one Champagne House &#8220;Moutard&#8221; use all six grape varieties in its  &#8216;Cuvée aux 6 Cepages&#8217;.</p>
<p>It is said that the more expensive Champagnes have more bubbles and the older the Champagne the slower the bubbles, books have even been written just on the topic of Champagne bubbles and its true!</p>
<p>The magic letters of wine when tasting and describing are B L I C, that is<br />

<strong>C</strong>omplexity</p>
<p>Most good wines taste of 2 or 3 things, very good wine may taste of 4 or 5 things and excellent wine can taste of 10 things!</p>

</strong>Champagne is brilliant with Lamb or even with a curry!</p>

<p><img src="http://www.jeremyparzen.com/img/cold_shot/cold_shot.jpg" alt="Johnny Otis" align="left">Life&#8217;s been a little stressful lately and there&#8217;s so much negativity going around right now in the world of wine that I thought it was time for some &#8220;just for fun.&#8221;</p>
<p>It had been a while since <a href="http://mylifeitalian.blogspot.com"><strong>Tracie B</strong></a> and me popped any <strong>Movia</strong>. So Sunday night, we invited our friend and fellow natural wine freak <strong>Josh Loving</strong> over for <a href="http://mylifeitalian.blogspot.com/2009/06/learning-to-deal-fried-chicken-and-my.html"><strong>Tracie B&#8217;s famous fried chicken</strong></a> and mashed potatoes and a bottle of Puro, which Josh — the consummate wine professional — ably disgorged (check out the video I shot below).</p>
<p>Dinner was served accompanied by one of my favorite records: <em>Cold Shot!</em> by the <a href="http://www.johnnyotisworld.com/index.html"><strong>Johnny Otis Show</strong></a>. I love every track on that disk and &#8220;The Signifyin&#8217; Monkey&#8221; is probably the most famous. But my <em>favorite favorite</em> track is &#8220;Country Girl.&#8221; Toward the end of the song, Johnny Otis doubles the following aphoristic <a href="http://en.wikipedia.org/wiki/Chiasmus"><strong>chiasmus</strong></a> with his guitar: <em>You can take foxes outta the country, but you can&#8217;t get the country outta foxes</em>. It&#8217;s one of the mysteries of life but that line just kills me every time. Check it out, as Josh disgorges the wine:</p>

<p>You&#8217;ve probably seen Puro disgorged at Do Bianchi before but in case you haven&#8217;t, it&#8217;s really easy to do (as in the vid above). Winemaker <strong>Aleš Kristančič</strong> makes the wine using the <em>méthode champenoise</em> but he leaves the lees and sediment in the wine (i.e., he <em>doesn&#8217;t</em> disgorge before release). You store the wine upside down in your fridge (using a cardboard cylinder that comes with the wine) and then you disgorge it upside down in a basin of water. The wine will be totally clear (as in the photo below).</p>

<p>Although Bollinger remains the indisputable official wine of my band Nous Non Plus, we have been known to disgorge a bottle of Puro&#8230; or two. </p>

<p>Today, &#8220;the absolutely fabulous <a href="http://alicefeiring.com"><strong>Alice Feiring</strong></a>,&#8221; as Tracie B likes to call her, is up to bat at <a href="http://saignee.wordpress.com/2009/06/25/day-7-a-muscadet-moment/"><strong>31 Days of Natural Wine</strong></a>. Alice is a dear friend, a great lady, a mentor, and one of the few things — besides Katz&#8217;s pastrami and Barney Greengrass whitefish salad — that we miss about New York City. I love the wine she talks about and I can confirm what Cory writes in his intro, that &#8220;very Alice Feiring&#8221; has become a canonical wine descriptor. How cool is that? </p>

<content:encoded><![CDATA[<div class='snap_preview'><p style="text-align:justify;">Tillbaka på banan? <em>Tillbaka på banan! </em>Det har varit en relativt krævane helg, både psykiskt och fysiskt. Mest fysistk. Nationaldagen på 17 mai tog bokstavligt talat musten ur mig. Jag har aldrig sett så många kanapéer och tomma magnumflaskor Bollinger på en och samma gång. Precis som jag antog var dock dagen på Grand Hotel otroligt hændelserik och på sitt sætt riktigt rolig. Rika norrmænn ær otroligt excentriska och egna. Personligen tror jag inte det ær nyttigt før stackarna att leva røvare på ett stælle som Grankan utan øversyn av en mentalt vuxen mænniska. Efter ett tappert førsøk att med slappa och trøtta leder dra på fylla samma søndagkvæll dæckade jag fem minuter efter det øgonblicket jag kommit innanfør dørren och lyckades sova bort hela måndagen.</p>
<p style="text-align:justify;">Kontoret ær sig likt, lokalerna ær næstan tomma och stæmningen ær fortsatt demotiverande och det lutar starkt åt att læmna in ett uppsægningsbrev under løpet av veckan. Måste børja jobba på att få in lite cashflow och skaffa mig en egen liten lægenhet så att jag kan førøska skaffa mig lite <em>alone time to think</em> om man sæger så. Ræta ut mitt liv. Førsøka renovera min mur, som før øvrigt faktiskt har stått stark. Hållt mig ifrån diverse otuktsbedrivande och enbart spenderat tid på att få mig så full att jag blir okontaktbar. Jag ær praktiskt taget en førsupen munk.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p><img class="aligncenter size-full wp-image-354" title="scallop-rose" src="http://stupidandhungry.wordpress.com/files/2009/05/scallop-rose.jpg" alt="scallop-rose" width="468" height="351" />So much to report, while I wait for our Moroccan spiced lamb shanks with aubergine (with thanks to <a href="http://www.nigelslater.com/">Nigel Slater&#8217;s</a> <a href="http://www.nigelslater.com/books_view.asp?nBook_ID={3E62FDA5-FD9F-4CE3-9D7C-CD614A2E26DE}">Real Cooking</a>) to cook through. I contrived to eat at two Michelin-starred restaurants on Friday, lunching at one Michelin-starred <a href="http://www.zafferanorestaurant.com/home.htm">Zafferano </a>with the MD of the <a href="http://www.atozrestaurants.com/">London Fine Dining Group</a>, Paul Singer, then dining with Susie at two Michelin-starred <a href="http://www.alainducasse-dorchester.com/dorchester.php?LANG=en">Alain Ducasse at the Dorchester</a>. Belt-loosening stuff. Here are some highlights:</p>
<ol>
<li>Zafferano&#8217;s award-winning <a href="http://en.wikipedia.org/wiki/Bellini_(cocktail)" target="_self">Peach Bellini</a>: cloudy, perfumed and eminently quaffable.</li>
<li>Little explosions of flavour from the crystallized salt in the aged crumblings of <a href="http://en.wikipedia.org/wiki/Parmesan">Parmesan </a>served as antipasti at Zafferano.</li>
<li>Zafferano&#8217;s homemade Papardelle with enough beefy morels to fill two cupped hands.</li>
<li><a href="http://en.wikipedia.org/wiki/Burrata">Burrata </a>ravioli at Zafferano: creamier than any soft cheese I&#8217;ve ever tasted.</li>
<li><a href="http://www.thedrinkshop.com/products/nlpdetail.php?prodid=4969">Bollinger rose champagne</a>, served with choux pastry mini-buns that had bene dusted with black pepper and paprika, and which &#8211; pouf! -  evaporated in your mouth: a revelation. </li>
<li>The perfect beauty of the rose of marinated scallops, lamb&#8217;s lettuce and celeriac, and the earthy impact of its black truffle sauce.</li>
<li>
<div><a href="http://www.alain-ducasse.com/public/index.htm">Ducasse&#8217;s </a>roasted chicken and lobster, sweetbread, creamy juice: the flavour of the sweetbread seemed to coat and then fill your mouth.</div>
