After 25<sup>1/2</sup> years, I finally got to experience shopping at IKEA. We don&#8217;t have one close to home, so I couldn&#8217;t miss the opportunity to hit up Montreal&#8217;s massive store on the way home from our recent trip. It was a little uncomfortable driving home in a car loaded with boxes, but we were able to score a few neat items for around the house.</p>

There was an entire wall of these <a href="http://www.ikea.com/us/en/catalog/products/40152077/">candle holders</a> and yellow candles in the store and I loved the repetition. While I don&#8217;t typically gravitate towards items so sleek and modern, this was a fun change for the dining room table.</p>

I&#8217;m in love with everything gold-toned right now, and this <a href="http://www.ikea.com/us/en/catalog/products/00186569/">hammered bowl</a> is no exception. I&#8217;m trying to use it as a fruit bowl, but no one wants to eat the fruit because, &#8220;It looks too pretty.&#8221;</p>

<p>This little bowl is made by me. But it is nothing fancy. It just looks like that because it has gold in it. It is actually just made out of sculpy which I baked in the oven and then (again) went overboard gold leafing.. Sigh. I then made it look pretty with photo editing. Because I want to do more stuff like this. Styling homes and homewares. So I guess I am just practicing and sharing it with you..<br />
But if these pictures have made you feel like making a golden bowl (which is totally what I was hoping for!) then I can tell you that sculpy is a really easy material to work with. It is kind of like clay but you don&#8217;t have to make it wet to get a smooth finish or bake it in fire. You just have to warm it up in your hands and bake it in the oven. But it has to have a rather thin surface. Otherwise it doesn&#8217;t go hard. For this bowl I used 2 shapes: A circle (4mm thick) and an edge (2cm wide, 4mm thick). I just rolled it out on baking paper with my rolling pin and made sure the edge was long enough to fit around the circle. You only need to press slightly to make the shapes stick together. I used a ruler to press it together so you get a nicer edge finish. And then you bake it on 110c for about 10 min.<br />
If you also feel like gold leafing its&#8217; inside (silly question) then you need to let it cool completely. Brush on a thin layer of tannin sealer and let it dry to tack. Then you press the gold leaf onto the surface and use a brush to press it into place. You can add as much as you want. The shinier the better! When you have had enough (never) spray a layer of all purpose gloss sealer. And there you go. One extremely good looking bowl ready to use wherever your home needs a little more sparkle.<br />

<p>Remember last week when I shared the Crockpot Mexican Carnitas? Have you made them yet? If you have and you have left overs how about making a Chipotle like bowl? All you have to do is layer your ingredients. I used brown rice, black beans, carnitas (all heated up of course!), shredded lettuce, tomatoes, cilantro, salsa, a bit of cheese and a little sour cream. It was delicious!</p>

<p>I don&#8217;t make brownies that often but a few weeks ago I wanted to practice my icing flower skills so I figured I would use brownies to practice on and to share with my co-workers. Unfortunately, my friends and I ate the first batch I made when our area was flooded and we didn&#8217;t have school. I did make a second batch to take for my co-workers the following week. Anyway, they were by far the best brownies I have ever had!</p>
<p><img class="aligncenter" alt="" src="http://i1081.photobucket.com/albums/j342/seasonsfr/My%20Food/DSCF1412.jpg" width="1024" height="768" />These brownies were so fudgy and delicious! I think this will be the recipe I will always use. My flowers didn&#8217;t come out so bad either!</p>
<p><strong>Perfect Chocolate Brownies</strong></p>
<p>1 1/4 cups all purpose flour<br />
1 teaspoon salt<br />
2 tablespoons unsweetened Dutch Process cocoa powder<br />
11 ounces dark chocolate, roughly chopped (I used Ghiradelli)<br />
1 cup (2 sticks) unsalted butter, cut into 1-inch chunks<br />
optional: 1 teaspoon instant espresso powder<br />
1 1/2 cups granulated sugar<br />
1/2 cup packed light brown sugar<br />
5 eggs, at room temperature*<br />
2 teaspoons vanilla extract</p>
<p>*Before you start the recipe, place eggs in a shallow bowl filled with warm tap water to bring to room temperature.</p>
<p>Preheat oven to 350 degrees.  Butter a 9×13 inch baking dish and set aside.</p>
<p>In a medium sized mixing bowl, combine flour, salt, and cocoa powder and gently whisk together.</p>
<p>Using a double boiler (place a glass mixing bowl on top of a pot of simmering water) melt chopped chocolate, butter, and instant coffee (if using).  Stir until melted and smooth.  You could also do this step in the microwave if you’re careful and heat it gently in 30-60 second intervals, stirring after each interval.</p>
<p>Remove glass bowl from the double boiler and add granulated and brown sugars.  Whisk until smooth.  As you whisk, the mixture should  cool off, eventually coming close to room temp.</p>
<p>Add 3 eggs to the chocolate mixture and whisk until combined.  Add the remaining 2 eggs and vanilla, and continue whisking until just until everything is incorporated.  Don’t overmix at this stage.</p>
<p>Sprinkle flour mixture into chocolate mixture and use a rubber spatula (don’t use electric beaters, and not even a whisk) to fold and stir flour mixture just until incorporated.  You can even stop stirring when you still see just a few visible bits of flour are showing.</p>
<p>Pour batter into prepared pan and smooth out evenly.  Bake for 25-30 minutes, rotating the pan halfway through baking time.  Remove from oven when a toothpick comes out of center with a few crumbs still attached.  Cool completely (the hard part!) and then cut into squares and serve.</p>
<p>These brownies were pure perfection!</p>
<p>On another quick note&#8230;This week is Teacher Appreciation week. Yay for our teachers! Working in a school office I see all the time, dedication and caring that our teachers put into their profession. They are probably the person our children spend the most time with. They are truly valuable individuals worth celebrating! I sent my daughter to school with some wrapped chocolate bars (I hope she doesn&#8217;t eat them!) and some hand-made cards in decorated bags for some of the school faculty. I am truly appreciative of all they do.</p>

<p>Here&#8217;s a little post on one of my latest favorites: rose water. I&#8217;ve been using it for a while now and I must say it&#8217;s a wonderful little thing to add to your daily routine. A big plus is that it&#8217;s easy (and cheap) to make yourself! This way you are always sure about what exactly you&#8217;re putting on your skin.</p>
<p>So what is it good for?</p>
<p>1. Since rose oil has anti-inflammatory properties, using rose water can help in reducing the redness from irritated or over-heated skin. Perfect for skin that has had to endure a lot of make up or sun. It also feels really refreshing and light.</p>
<p>2. It is a great cleanser and helps in removing oil and dirt accumulated in clogged pores during the day. This way it helps with preventing acne and pimples.</p>
<p>3. It has astringent like properties, which is why it is used after facials and clean ups to close open pores. Applying rose water after steaming tightens capillaries, reduces redness and blotchiness for a glowing and even colored skin.</p>
<p>4. The aroma of roses is said to be a powerful mood enhancer. It rids you of feelings of anxiety and promotes emotional wellbeing, thereby making you look relaxed. Since it is de-stressing, it helps you sleep better which means you will wake up feeling fresh!</p>
<p>5. The best and easiest way to use it is to apply it before going to bed. It helps clear all impurities that your face has collected throughout the day, has a relaxing effect on your skin and its scent has a calming effect on your spirit!</p>
<p>The upcoming summer season seems like an excellent time to give rose water a try and see what it can do for your skin! I&#8217;ve come to love it.</p>

<content:encoded><![CDATA[<p>Although I don&#8217;t think this actually needs to be said, I&#8217;m writing it down as a future reminder to myself: do not, under any circumstances, attempt to write  an 8 page research paper the night before it is due.  My last writing assignment for my literature course was really simple and I whipped out 5 pages in no time while thoroughly enjoying myself.  That paper, however, was on the roles of women in metaphors in 17th Century British literature, which is a poppin&#8217; research topic with lots of resources.  Turns out not that many people have attempted to research structure and design of English gardens as a reflection of British society in the 17th century. After failing to find many resources in the school library and seeing this atrocity of a design section in Barnes &#38; Noble:</p>

<p>I planted myself in the library and worked till just after 3:00 a.m. I think I came out with a good paper, but with just short of 4 hours of sleep last night I&#8217;m feeling pretty sluggish. Hopefully this yummy breakfast combo of yogurt and crunchy Chex will help get me movin&#8217;!</p>

<p>In happier news: I finally found earbuds that fit my ears! I&#8217;ve always had to use the clunky over-the-head headphones or the ear loop headphones because earbuds fall out of my ears within about 2.5 seconds.  So the other day when I was in Target and I saw these Yurbuds headphones specifically marketed for women with the same problem, I had no problem making the impulse buy.</p>

<p>I wore them all night last night while working on my paper and they stayed in the whole time without any earaches. I think it&#8217;s safe to say I&#8217;m very happy with that purchase. Plus the cute yellow color makes me a little more excited for all this studying I&#8217;m about to do&#8230;</p>

<p>Yesterday – Monday, 6 May 2013 – is international no Diet Day, an annual celebration of body acceptance and body shape diversity. It is dedicated to promoting a healthy lifestyle and raising awareness of the dangers and ineffectiveness of dieting.</p>
<p>British feminist Mary Evans Young organised the first No Diet Day in 1992, motivated by her own experiences after being bullied as an overweight child. This week to celebrate, Happiness Weekly looks at good food that will boost your mood – these options will brighten your day!</p>
<p><b>Fish</b><br />
Two omega-3 fats, EPA and DHA, are found in oily fish such as mackerel, barramundi, trout, salmon and sardines. Eat these and any signs of depression will be reduced as these types of fish contain Omega-3s that promote functioning of the neurotransmitters that regulate mood. Omega 3 fats keep your brain healthy and improve mood by keeping brain cells flexible so the messaging chemicals (neurotransmitters) can work effectively.</p>
<p><b>Water</b><br />
The smallest water loss in our bodies can impair our physical and mental wellbeing. It’s extremely important that we’re hydrated to be able to concentrate properly.</p>
<p><b>Dark chocolate</b><br />
A small square of dark chocolate can cause the brain to release endorphins and boost serotonin levels. Theobromine and phenylethyamine are two mood-boosting compounds found in chocolate. An ounce of antioxidant-rich dark chocolate daily for two weeks will reduce stress and anxiety. It may also improve the quality of your sex life!</p>
<p><b>Nuts</b><br />
Walnuts contain alpha-linolenic acid – a form of omega-3 fat also found in flaxseed and chia seed. Brazil nuts are one of the best sources of mineral selenium. Eating just three Brazil nuts a day can provide your recommended daily amount.</p>
<p><b>Greek yoghurt</b><br />
Greek yoghurt is the yoghurt of choice because it contains twice as much protein as traditional yoghurt, which means it will raise your mood-boosting neurotransmitters dopamine and norepinephrine. Yoghurt also contains Vitamin D (best received by sunlight on the skin – but this is the next best way to take it) which reduces health conditions such as depression, osteoporosis, heart disease and cancer. It also contains Calcium which reduces stress and anxiety.</p>
<p><b>Bananas</b><br />
Bananas are one of the best super foods you can eat – they help boost your mood and aid with good sleep. They contain vitamins A, B6 and C, fibre, potassium, phosphorous, iron, carbohydrates and tryptophan. The carbohydrates aid in the absorption of tryptophan in the brain and the vitamin B6 helps to convert it into serotonin. Subsequently bananas have been used in treatments for insomnia, depression and anxiety. Plus the potassium they contain makes them a great snack if you’re feeling stressed or tired and they also aid in the transmission of nerve impulses, heart rhythm and muscle function!</p>
<p><b>Lentils<br />
</b>Lentils are a complex carbohydrate and they enhance the brain’s production of serotonin resulting in a calmer, happier state of mind. They are high in iron which can give you energy and may improve your mood. While lentils are highly recommended for everyone, they are particularly good for those with diabetes (our fastest growing incurable disease epidemic), because they stabilise your blood sugar level and stabilise mood. They are high in folate (deficiencies in folate can cause depression and mania).</p>
<p><b>Oats<br />
</b>Oats boost your mood because they have a low glycaemic index (GI) meaning it releases energy into our bloodstream slowly. This maintains blood sugar levels and stabilises the mood. Selenium, found in oats, can also assist mood by regulating the thyroid gland function.</p>
<p><b>Quinoa</b><br />
People who eat a low-carb diet are more likely to experience depression because they reduce the production of serotonin to your brain. However, those who stick to a low-fat diet and eat nutrient-rich carbohydrates such as quinoa, brown rice, whole wheat pasta are happier.</p>
<p><b>Low-fat milk</b><br />
Milk, fish and some fortified foods are reliable sources of vitamin D – the sun vitamin.</p>
<p><b>Poultry (chicken or turkey)<br />
</b>Chicken or turkey breast contain tryptophan and therefore assist in producing serotonin, which helps to regulate mood and melatonin which helps to regulate sleep. Poultry also contains tyrosine, an amino acid used to make adrenaline and reduces symptoms of depression.</p>
<p><b>Extra virgin olive oil</b><br />
People that follow a Mediterranean-style diet, rich in olive oil, nuts, whole grains, fish, legumes and vegetable are 30% less likely to suffer from depression.</p>
<p><b>Green leafy vegetables</b><br />
Generally anything leafy green is a good source of vitamin B folate. Women with the high blood folate levels are less likely to suffer depressive symptoms. Eating green leafy vegetables such as spinach and broccoli will help you get your vitamin B intake and avoid depression and/or depressive symptoms. B vitamins to look out for include folate, vitamin B3, B6 and B12.</p>
<p><b>Oysters<br />
</b>Oysters are high in many essential nutrients such as zinc – essential for energy production and brain health meaning it assists with mood. They also contain a protein rich in tyrosine which your brain uses to produce chemicals to enhance your mental function and elevate mood.</p>
<p>&#160;</p>
<p>Now that we are going into winter in Australia, many people are feeling the winter blues (also known as Seasonal Affective Disorder) approaching and there are some foods that may also assist your mood that aren’t included in the above list. These foods are:</p>
<p>Oranges contain vitamin C and will help boost your mood, give instant energy, pump oxygen through your body and brain, and recharge your system. They’re a great snack or you can have it first thing in the morning to help you get started each day.</p>
<p>Eat plenty of salmon, mackerel, herring and sardines or look for DHA-fortified foods such as Horizon, Silk Milks, Gold Circle farm eggs and Mission Life Balance tortillas. Omega-3 (found in all these foods) helps brain cells, mood and memory – and you will feel full for hours! These foods will also improve your outlook today while cutting down your risk of dementia down the track.</p>
<p>Of course soup in winter helps us all to feel good because it’s warm and comforting, but a good bowl of chicken soup with veggies has the water-fibre-protein that fills you up without you gaining weight. For an extra helping of happiness, your soup should be loaded with dark green and orange veggies (collards, carrots and squash cubes) which are full of vitamins to improve mood, brainpower and immunity.</p>
<p>Burgers and/or meat sauce made with lean beef (or black bean for vegetarians) are a great source of iron. Iron deficiencies affect thinking and sleeping which impact your mood. Try to drink your tea and coffee between meals because they can block iron absorption.</p>
<p>Skip the chocolate during your 3 o’clock slump and grab an English muffin slathered with jam to raise your serotonin, a bowl of popcorn or sorbet with berries. It will help you relax and hit the spot with your cravings!</p>
<p>Blueberries are a superfuit because of their antioxidents and their ability to promote positive energy. Frozen blueberries are a great alternative to ice cream!</p>
<p>Dried tart cherries before bed will help improve your sleep quality because of their melatonin. They also contain enough serotonin to help you sleep properly and provide you with a great mood the next morning. Bonus!</p>
