<p>Yes, you read that correctly. If you thought I was actually writing about “Braising the Pretzel”* and became enthused, then I sincerely apologize for causing false excitement.</p>
<p>*<em>Nonetheless, an article on such a topic does not make much sense so I would question your logic if you did indeed become enthused. I would still maintain an overall apologetic tone though. </em></p>
<p><!--more-->Let me clarify: When I speak of the bretzel, I am not speaking of a pretzel, even though <a href="http://foodlorists.blogspot.com/2007/10/bretzel.html">the bretzel is another name for a pretzel</a>. Rather, I am talking about bretzel bread, such as that pictured above. It is bread, used for sandwiches and such, that has the ingredients and consistency of a pretzel.</p>
<p>What makes me write about the bretzel? I had my first experience with a bretzel at <a href="http://www.hannahsbretzel.com/">Hannah’s Bretze</a>l, a Chicago eatery that specializes in bretzel sandwiches. I had seen a bretzel sandwich on a menu once prior, at the <a href="http://www.nasher.duke.edu/museum_cafe.php">Nasher Café</a>, but the ingredients of the sandwich were not sufficiently appealing to order it. But, with a Parma ham and goat cheese bretzel baguette sandwich on the menu at Hannah’s, my culinary exposure to the bretzel began and man, was it delectable.</p>
<p>The bretzel reminds me of that airplane joke about the black box: If the black box is so indestructible, why don’t they make the entire plane out of the black box? Likewise, if people love the taste/texture of pretzels so much, why don’t they just make all breads like the pretzel?* Well, they do, at least for sandwiches.  And they are puffy, doughy, as salty as you desire, and delicious.</p>
<p>*<em>Okay, it’s not completely analogous. But, it’s sufficiently analogous for the purposes of this post. And, to be clear, I am a fan of other fresh breads too. I just think the bretzel is not a well-known entity and deserves a singling out. </em></p>
<p>One may be concerned that this makes for an unhealthy sandwich, but I fail to see what is inherently unhealthy about the bretzel. Hannah’s uses whole-wheat grains and presumably so can any bretzel maker. This makes the bretzel a hell of a lot healthier than the plethora of processed breads that dominate delis and supermarkets. Moreover, the deliciousness of the bretzel could very well lead to an increased willingness to consume healthy vegetables on said bretzel (arugula had never tasted so good before.).</p>
<p>If given the opportunity, do yourself a favor and give the bretzel a chance.</p>

<p>Ieri sera nel mio programma InfoChiocciola ho parlato di emozioni e sensazioni legate al cibo: una statistica molto interessante (per me) che dice in sostanza che affianchiamo a determinati sapori il ricordo di qualcuno, di un periodo, di un luogo !</p>
<p>Avete, come sempre, risposto in tanti : Mario mi ha detto che per lui le polpette gli ricordano i pranzi con la mamma</p>
<p>Andrea mi ha parlato di panini alla nutella che mangiava solo dalla nonna &#8230;</p>
<p>Sabri si è cucinata, ieri sera, paella per evocare una vacanza spagnola</p>
<p>Ho molti ricordi legati alla cucina, pensate che volevo iscrivermi alla scuola alberghiera .. ma poi ho iniziato la &#8220;carriera da dj&#8221; .. e ci sono piatti, anche molto semplici, che mi regalano emozioni: ne cito qualcuno.. così , per farmi venire il sorriso e la lacrimuccia</p>
<p>Preparare gli gnocchi:  bollire le patate e poi via via fare velocemente l&#8217;impasto mi brucia le mani , per prima cosa, e mi ricorda la mia piccolissima nonna !</p>
<p>Quasi sempre, alla fine della settimana bianca, compro una confezione di bretzel, mi fanno impazzire&#8230; in realtà questa cosa la faccio ovunque: mio fiondo nel supermercato e porto a casa una pietanza locale.. nel mio congelatore ci sono i Bagel che mi ha portato un amico dall&#8217;America !! slurp</p>
<p>Ieri sera ho anche promesso la ricetta per San Valentino, di seguito antipasto, primo, secondo piatto e dolce .. abbastanza veloce, sfizioso!</p>
<p><span lang="IT"><strong>Polpette di Ricotta</strong></p>
<p><span style="text-decoration:underline;">Ingredienti</span><br />
250 gr di ricotta<br />
70/80 gr parmigiano grattugiato<br />
sale q.b.<br />
Pepe nero macinato<br />
pane raffermo sbriciolato<br />
1-2 uova (dipende dalla consistenza dell&#8217;impasto)</p>
<p><span style="text-decoration:underline;">Preparazione</span><br />
Setacciare la ricotta e metterla in un recipiente, unire il sale, il pepe, le uova, il pane e il parmigiano grattugiato.<br />
Amalgamare bene. L&#8217;impasto non deve risultare molto morbido.<br />
Con l&#8217;impasto ottenuto formare delle polpette e riporle in una teglia ben distanziate tra loro.</p>
<p>Riporre le polpette in un tegame ed unire due bicchieri di acqua, l&#8217;olio ed il prezzemolo</p>
<p>Far cuocere le polpette di ricotta a fuoco molto basso con un coperchio (SENZA MAI GIRARLE) fino a quando rimangono soltanto con l&#8217;olio.</p>
<p>Servire ben calde.</p>

<p><strong>Risotto allo spumante</strong></p>
<p><span style="text-decoration:underline;">Ingredienti:</span><br />
Ingredienti per 2 persone: · 120 g di riso arborio,· un pezzetto di porro · un bicchiere di spumante · 4 dl di brodo vegetale· · 20 g di parmigiano grattugiato· · 20 g di burro · noce moscata · panna · sale</p>
<p><span style="text-decoration:underline;">Preparazione:</span><br />
Tagliate finemente il porro e lasciatelo rosolare nel burro. Aggiungete il riso e lasciatelo insaporire per qualche minuto; unite lo spumante e fatelo evaporare completamente, a fuoco vivo. Versate il brodo bollente e fatelo assorbire completamente (circa 15 minuti) a fuoco moderato, in modo che il riso bolla piano, senza che si attacchi alla casseruola né che vi sia necessità di scolarlo. Pochi minuti prima di ritirarlo dal fuoco, aggiungete la panna, controllate di sale. Mantecate il risotto con il parmigiano e un pizzico di noce moscata grattugiata</p>

<p><strong>Gamberi alla Fiamma</strong></p>
<p><span style="text-decoration:underline;">Ingredienti:</span><br />
Per 2 persone 300 gr di gamberi sgusciati, burro, succo di mezzo limone, liquore, sale, pepe</p>
<p><span style="text-decoration:underline;">Preparazione:</span><br />
Far sciogliere una noce di burro in un tegame ed aggiungere il succo di limone ed un pizzico di sale. Unire i gamberi ed irrorare con il liquore. Far cuocere i gamberi mescolando spesso e, quando il liquore sfrigola, togliete il tegame dal fornello: date fuoco al liquore e servite appena la fiamma si sarà spenta.</p>

<strong>Fragole Maliziose</strong></p>
<p><span style="text-decoration:underline;">Ingredienti:</span><br />
Per 2 persone 200 gr di cioccolato al peperoncino, 15 g di burro, 1 cestino di fragole</p>
<p>Preparazione:<br />
Lavare ed acsiugare bene le fragole. Far fondere il cioccolato a bagnomaria e poi togliere dal fuoco. A questo punto aggiungere una noce di burro e mescolare bene in modo da ottenere un composto liscio. Infilzare ogni fragola con uno spiedino di legno ed immegetela nel cioccolato fuso: fatele poi asciugare all&#8217;aria infilzando lo spiedino su una mezza patata. Non appena il cioccolato sarà solido ponete le fragole nel frigorifero fino al momento di servirle.</p>

<p align="justify"><font face="Verdana, Helvetica" size="1"><img src="http://www.tageblatt.lu/upload/images/270208bretzel.jpg" align="left" border="1" />Hier, la Fédération des patrons boulangers-pâtissiers a défilé dans les rues de la capitale avec à sa tête le président Henri Wagener. Un cortège qui, malgré la pluie, continue à distribuer 4 500 bretzels aux passants, accompagné de la fanfare de Harlange.<br />

<p align="justify"><font face="Verdana, Helvetica" size="1">Toute l&#8217;après-midi d&#8217;hier était consacrée à la distribution par les boulangers-pâtissiers de cette pâtisserie traditionnelle.<br />
Comme chaque année, le cortège est parti de la Chambre des métiers au Kirchberg, avec son petit train motorisé de trois wagons et escorté par deux motards. Le cortège était présidé par la reine du bretzel, Tessy Streng, originaire de la ville de Fouhren, près de Vianden. Tessy a 20 ans et se dit très fière d&#8217;être la représentante de cette gourmandise qui n&#8217;est fabriquée qu&#8217;à cette époque de l&#8217;année et cela pendant une semaine uniquement.<br />

<font face="Verdana, Helvetica" size="1">La tradition</font></b> <font face="Verdana, Helvetica" size="1"><b>du bretzel</b></p>
<p>Henri Wagener qui préside le cortège explique cette coutume : «<b>Cette tradition nous vient de la Moselle luxembourgeoise. Cela fait partie du carnaval et c&#8217;est un moyen de communication. Le bretzel a la forme de deux bras entrelacés, c&#8217;est un signe d&#8217;amour et ce signe est aussi celui de notre corporation. Les boulangers l&#8217;ont adopté comme enseigne.</b><br />
<b>Pour la mi-carême c&#8217;est le garçon qui offre le bretzel à sa fiancée et si à Pâques la dame répond par les œufs de Pâques, c&#8217;est qu&#8217;elle donne son consentement. Mais cette année, nous sommes une année bissextile et c&#8217;est à la femme de faire le premier pas normalement et d&#8217;offrir un œuf de Pâques à celui qu&#8217;elle convoite</b>».<br />
Le président de la fédération parle également de la différence qui existe entre le bretzel luxembourgeois et le bretzel allemand ou alsacien : «<b>Au Luxembourg, cette pâtisserie est sucrée et faite d&#8217;une pâte levée feuilletée comme un croissant. On fait des bretzels d&#8217;une demi-livre ou plus; certaines sont plus élaborées et fourrées avec des pralines, d&#8217;autres avec du chocolat</b>».<br />
Le cortège s&#8217;est arrêté chez Jean-Claude Juncker, puis a visité le collège échevinal qui a reçu plusieurs magnifiques bretzels sur plateaux dorés.<br />
Sur la Grand-Rue et dans les autres rues de Luxembourg-Ville, les passants nombreux espéraient un des4 500 bretzels portés dans les paniers des pâtissiers.<br />
Henri Wagener apporte son témoignage concernant la profession des boulangers-pâtissiers : «<b>On voit aujourd&#8217;hui beaucoup de commerces fermer et les petits métiers disparaître, mais on voit également des commerces de plus en plus grands s&#8217;installer avec plus d&#8217;employés.</b><br />
<b>Aujourd&#8217;hui la jeunesse ne veut plus s&#8217;installer à son compte; ce ne sont plus des petites structures qui peuvent exister, mais tout un groupe. Je vois ça bien sûr d&#8217;un mauvais œil, mais nous n&#8217;y pouvons rien. Car la principale difficulté pour un jeune c&#8217;est de trouver des capitaux et de tenir 20 ans environ. Malheureusement, les personnes veulent avoir un gros poste avec un gros salaire et profiter pleinement de la vie.</b><br />
<b>Quand on s&#8217;installe, il y a dix années difficiles, mais par la suite, le métier apporte ses joies et cela devient un métier rentable</b>».</font></p>
