<description><![CDATA[We made it past our third open week and are still having fun!  Last week was a little hiccup when we]]></description>

<p>We made it past our third open week and are still having fun!  Last week was a little hiccup when we realized that because of the way that Knoxville City Code is written we can&#8217;t allow minors in the taproom.  We are working with the City to make changes to this code since we feel we offer something different than a regular tavern.  Hopefully, we will be serving the kids rootbeer right alongside their parents again soon.  It just wasn&#8217;t the same without all the youthful energy last week.</p>
<p>Joe has been brewing like mad to keep up with demand.  He has made so many wonderful different kinds of beer it is hard to get a handle on the house favorites.  One early contender is the red ale since we can&#8217;t ever seem to keep enough of it around.  The Edelweiss wit went very fast last week and I learned that if I want to taste the new beers I better do it before customers start showing up or I may miss out.  This week we will be tapping the Iowa Corn Beer again for a very limited run.  So, if you enjoyed it before or have heard about it but missed it, come in this week for the last chance this year.  Also new last week was the brown ale.  We do have some more of this for the coming Thursday.  We are also rolling out a new pilsner.  For those who like the darker beers, we will be replacing the coffee stout with a maple stout.</p>
<p>We have been busy doing lots of behind the scenes organization this week.  Two new file cabinets and a countertop make a pretty fancy desk in the loft office.  Behind the bar has been reorganized now that we have a feel for what we need.  And lots of computer work to make sure we are keeping track of everything.</p>
<p>Scott and Joe have been playing around with different tap handles the last two weeks.  Interesting concepts from disturbing doll arms and legs to a piece of red rock driftwood.  Joe stepped it up a little last week and displayed his custom made stained glass, three color, glowing tap handle this past week.  The guy has some talent beyond beer!  Hopefully his cool creations will keep the suggested turkey leg tap handle from appearing&#8230;..</p>
<p>Peace Tree (in t-shirt form) also made it to Germany last week thanks to Scott&#8217;s cousin Jim.  It feels great to be international!  Look forward to sharing a beer with you soon!</p>

Today I am going to deviate a bit from my past posts and instead share a useful tool I found while searching for images of craft beer. The tool is called <a href="http://www.picapp.com/" target="_blank">picapp</a> and it allows you to embed duty-free images on your blog. What is really cool is that when clicked, each image will display information about what is shown. Also, below each image is displayed a list of other relatable content.</p>
<p>After reading their <a href="http://www.picapp.com/About.aspx" target="_blank">about</a> page I found that picapp is able to offer this service because of  partnerships with Getty Images, Pacific Coast News, Corbis, Newscom, Image Source and more. All of the images available are free for anyone to use.</p>
<p>Perhaps the best piece of news for this blog is that the code used by picapp is compatible with wordpress.com. Unlike most embeddable information on the web, picapp has a separately constructed code that is designed to work on wordpress.com. So, below you will find an example of a photo search I did for &#8220;craft beer.&#8221; Enjoy!</p>

<p>The cover alone is worth the price of admission.  It&#8217;s such a cool cover that, like Midwood&#8217;s<em> Sin of Wheels</em> art by Paul Rader or Gil Brewer&#8217;s <em>The Bitch,</em> it&#8217;s been reprinted on matchbooks, keychains, coffee mugs, and posters.</p>

<p>The cover also reminds me so much of this former dancer at L.A.&#8217;s Jumbo&#8217;s Clown Room. When I showed her this cover (she no longer dances, but is an esatte chef in Bel Air) her eyes popped and she said, <em>&#8220;That&#8217;s me!&#8221; </em> Really &#8212; same body type, same hair, same lips.  Strange.</p>
<p>There&#8217;s no date on this, but as a Cornith Leisure Book, it would date between 1965-66.  It is on Lynn Munroe&#8217;s list of &#8220;are they or are they not&#8221; Lawrence Blocks from <a href="http://efanzines.com/EK/eI14/index.htm#shaw">his article</a>,&#8221;The First Andrew Shaw.&#8221;  There&#8217;s also question as to whether or not Block continued to write for Hamling and Kemp after 1963, when he and his agent split from Scott Meredith &#8212; after all, Meredith contracted all titles to Hamling &#38; Kemp via <a href="http://efanzines.com/EK/eI14/index.htm#top">The Black Box</a>.</p>
<p>I think I&#8217;ve become adept at spotting Block&#8217;s style.  For one, in general, both his and Westlake&#8217;s Nightstands and Midwoods are between 9 and eleven chapters, often ten.  It&#8217;s a pragmatic thing &#8212; to get a 50,000 words manuscript, you do ten 5,000 word chapters, or nine 6,000 word chapters, and at on chapter a day, in less than two weeks you have a finished book. (Robert Silverberg&#8217;s were all fourteen chapters, until after 1965 when Greenlead required all books to be an exact 12 chapters).</p>
<p>Block also has a way of writing about Greenwich Village, a section of Manhattan that he obviously loves.  This is how <em>Sin Alley</em> opens, with colorful depictions of the the streets, trees, and builings of the Village, as well as its doomed youth in th streets:</p>
<blockquote><p>It is a tough neighborhood.</p>
<p>They fourteen they have smoked their first marijuana cigaratte; by age fifteen they have taken their first hit of H; by sixteen they have graduated to sin-popping and by sixteen they are ready to shoot with medical hardware.</p>
<p>They have already had their first love by age twelve. In the basement or boiler room or hallway or on a fat rooftop, with a girl who is a known tramp, someone from the crowded apartment next door or the street. They start early and soon learn all about that. They know how to get their kicks. (pp. 6-7)</p></blockquote>
<p>That passage is pure early vintage Block, as if <a href="http://vintagesleazepaperbacks.wordpress.com/2009/08/18/pads-are-for-passion-by-sheldon-lord-lawrence-block-beacon-books/">taken from the pages</a> of <em>Pads Are for Passion</em>.  In fact, there are a lot of &#8220;pads,&#8221; man, in early Block, and, like, beatnik lingio, Daddy-O.</p>
<p>In <em>Sin Alley,</em> The Pad is a special place, a cool space, it is &#8220;five rooms on the top floor of a four-story brick painted apartment building&#8221; (p. 8).  No one lives there and some think it is a myth; only those with a key, or know someone with a key, can get in.  No one knows who pays for it.  But The Pad is a safe place to take a chick and make her, smoke M or shoot H, play jazz and trip and float and ride the reefer wave.</p>
<p>So happens with a girl named Marion in chapter one; she meets a sexy beatnik trumpet player, they have dinner, he gives her booze and speed, and they go up to the pad.  He tells her to never talk about The Pad and to deny being there if ever asked. She&#8217;s too high to remeber anyway.</p>
<p>Chapters two and thre are in completely different writing styles which causes me to think this is a collaborative novel.  Chapter two reads like Westlake&#8217;s dense early style and I believe chapter three could be William Coons, who was already ghosting Andrew Shaws as of 1962.</p>
<p>This is a multi-character book, almost a collection of stories, a biout various people in the Village finding their way to The Pad and experiencing mind0-blowing sex and drugs and music.  We don&#8217;t get back to Marion&#8217;s story until chapter six, and back to Block&#8217;s writing &#8212; in fact, his chaptrs are choppy, stucatto, single word paragraphs that flow like jazz riffs, returning to themes &#8212; the way we return to Marion half way through the book.</p>
<p>It&#8217;s an okay book, I&#8217;m not a fan of multi-character novels or collections disguised as a novel, because you don&#8217;t get to know the characters or even care for them.  Plus, the different writing styles throughout make it an nerratic read.  But like I said at the top, the cover is worth the price of admission into this pad, Daddy-O.</p>

We rarely make it home for longer than a weekend, and when we are home, its really hard to spend time with everyone and make it count! Here are a few of my favorites!</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>In addition to monitoring your child’s candy consumption on Halloween night, be sure to know which houses are safe to approach for trick-or-treating. Citizens like to think that every home is like their own, unfortunately that is not reality.</p>
<p>In Walker County, there are approximately 110 registered sex offenders, and Halloween provides a perfect opportunity for one of them to become acquainted with you and or your children.</p>
<p>“We do the best we can in making sure sex offenders live where they tell us, so it is crucial that our citizens visit our website www.walkerso.com, to see who and where an offender might be living within their neighborhood,” said Sheriff Steve Wilson.</p>

<div>Citizens are encouraged to look up important addresses and review the list of registered sex offenders living within a 0.25-2 mile radius of that specific address.
<p>&#160;</p>
<p>Sheriff Wilson said, “The mapping and address feature found on the website pinpoints exactly where an offender lives, therefore, educating citizens on which houses to avoid while trick-or-treating.&#8221;</p>
<p>Perhaps the most beneficial aspect of the address monitoring feature is that once your important addresses and e-mail address have been registered the system will automatically alert you via e-mail when an offender moves within 0.25-2 mile radius of the registered address.</p>
<p>“If you aren’t planning on trick-or-treating in your neighborhood but will be in a family or friends neighborhood, register their address beforehand so you know which houses to avoid. You can register any and all of the addresses where your children spend a lot of time, for example friends, grandparents, or babysitters addresses” said Sheriff Wilson.</p>
<p>The alerts are in real-time and sent out via e-mail as soon as a new offender has registered with the Walker County Sheriff’s Office.</p>
<p>Sheriff Wilson said, “The benefit of registering for this confidential e-mail alert service allows us to monitor your important addresses for you, thereby keeping you up to date of newly registered offenders and making it unnecessary for you to have to check your important addresses daily or even weekly.&#8221;</p>
<p>The website for the Walker County Sheriff’s Office is www.walkerso.com. Citizens should click on the link “locate registered sex offenders” and follow the instructions to check their neighborhood and sign up to receive e-mail alerts.</p>
<p>Sheriff Wilson encourages everyone to have a fun and safe Halloween. &#8220;Knowledge is power and knowing where the registered sex offenders reside in your area can help you make the best choices for safe and enjoyable Halloween activities.&#8221;</p>

Utah didn’t sign anybody, literally, anybody new on the offseason, instead they matched an offer sheet from Portland for Paul Millsap and every single one of their free agents didn’t opt out of their contracts. Although the faces are the same, we should expect a different team for the upcoming season, since guys like Williams, Boozer and Kirilenko lost lots of games due to injuries last season.</p>
<p>Deron Williams is one of the best PGs of his generation. He’s athletic, can shoot and is an awesome closer but last season because of the injury that hold him for a while in the beginning, he just wasn’t himself and although they are a very balanced team, we can easily say that the Jazz goes as Deron Williams goes.</p>
<p>The other star of the team, Carlos Boozer, also had a tough year after returning from the Olympics. Boozer lost 45 games of the season in which he was replaced by Paul Millsap who played well enough to make people wonder if he was really necessary. With Millsap back and with a long term deal, Utah is signalizing that Boozer may not stick around for too long which means he’ll come hungry for this upcoming season because he’ll be playing for his new deal.</p>
<p>Another hot topic to follow with this Jazz team is coaching. Jerry Sloan is one of the best coaching of all times but everybody can tell that he’s probably not an easy human being to deal with. After last season’s poor performance of the team on the road in which they clearly quit, people started to question if the team didn’t quit on Sloan. It remains to be seen.</p>
<p>Utah has a group of guys that have been together for a while now and although they came close a few times, they never won. It’s safe to say that change will come but for now those guys will have to stick with each other for another season. Surprisingly, I’m one of the few that thinks it won’t end well. </p>

<p>Five Cypress police officers who rescued a woman from her burning home will receive the medal of valor from the California State Firefighters&#8217; Association.</p>
<p>The medal is the highest honor bestowed by the association, for &#8220;individuals that voluntarily risk their own life to an extraordinary degree in saving or attempting to save the life of another person.&#8221; The officers will receive the awards at a ceremony on tonight in Sacramento.</p>
<p>On Nov. 25, officers Paul Ruiz, James Brewer, Erik Carlson, Brock Paul and Thomas Mellana responded to a call about a fire on Windsor Circle. They broke a door and went inside to pull 84-year-old Eleanor Jensen from the home.</p>
<p>Former officer Stephen Spernak nominated the men for the honor.</p>
<p>&#8220;It&#8217;s really unexpected,&#8221; Ruiz said. &#8220;You go through a career and you&#8217;re not used to getting accolades for doing your job. It&#8217;s a great feeling.&#8221;</p>
<p>&#8220;It&#8217;s a huge honor to be bestowed on you. It&#8217;s a big award,&#8221; Carlson said. &#8220;It feels pretty good, but we weren&#8217;t thinking about that when we went in there.&#8221;</p>
<p>City officials were criticized after they refused to pay the five officers $788.48 in collective overtime claimed after the November rescue. The officers had responded to the fire about an hour before the end of their 12½-hour shifts. They claimed four hours of overtime in part because they were treated for smoke inhalation.</p>
<p>The officers&#8217; superiors — including Chief Mark Yokoyama — approved the overtime, but City Council members and City Manager John Bahorski had argued the medical treatment was outside working hours and worried paying the overtime would set a precedent. In February, they relented and paid the officers.</p>
<p>Ruiz said when he and the other officers arrived at the scene, flames were shooting out of the home and thick smoke clouded the street. A neighbor told the officers he thought Jensen was still inside—which she was.</p>
<p>The thick smoke kept them from seeing through the windows, so the officers broke them to clear some of it out, Ruiz said. Through a clearing in the smoke, one of them saw Jensen&#8217;s feet shuffling through one of the rooms.</p>
<p>&#8220;We held onto each others&#8217; leg and went crawling into the house,&#8221; Ruiz said, with Brewer spraying water from a hose to cover them as they moved through the house.</p>
<p>Though they tried to stay together, the officers got separated in the house, Ruiz said.</p>
<p>Carlson then spotted Jensen through the smoke.</p>
<p>&#8220;I saw her walk past,&#8221; Carlson said. &#8220;She was wearing a long, white nightgown. That&#8217;s when I decided to go after her.&#8221;</p>
<p>&#8220;Carlson was really moving in there,&#8221; Ruiz recalled. &#8220;The walls of the hallway were on fire when he went though. Brewer was screaming for us … and got us back.&#8221; Holding onto Jensen and crawling, &#8220;We just sort of backed out onto the street.&#8221;</p>
<p>Firefighters arrived, and treated Jensen and the officers for smoke inhalation. They were all otherwise unhurt.</p>
<p>&#8220;A couple of uniforms got singed here and there,&#8221; Ruiz said. &#8220;We were laying in water from Jim spraying everything, and when we came out we were all dry. It was hot in that house.&#8221;</p>

I then proceeded to stand in the hot shower water for about 8 minutes before finally grabbing the soap. I then went outside to my newly frosted car, quickly remembering that I broke the heat recently which meant that I would of course have to scratch the frost off. Perhaps one of the most painful of jobs to do in life.</p>
<p>I pulled up to my dorm, chucked my keyboard and accessories into the car and headed over to Spring Arbor&#8217;s (half) circle drive to meet up with a group of other charismatic weirdos who were headed over to the homeless shelter.</p>
<p>We then prayed for the homeless shelter and were on our way into the heart of Jackson. When we arrived, we set up our stuff as I got ready to play the worship music with a friend and his bongo. Funny how more people were singing their hearts out at a homeless shelter to songs they probably didn&#8217;t know than most of the churches I&#8217;ve been at.</p>
<p>4 songs, 2 Psalms, a message, and an invitation later, Brewer threw out a word of knowledge. He had explained how we were going to pray for anyone who wanted us to and that we would be praying for healing because Jesus would like to do that for them. And so he started with a demonstration:</p>
<p>&#8220;Before we start, is there someone here who has pain in their foot? I felt like God was telling me there  was.&#8221;</p>
<p>&#8220;Yeah I do,&#8221; said some dude in the back.</p>
<p>&#8220;Yeah? It&#8217;s your left foot right?&#8221;</p>
<p>&#8220;Yeah.&#8221;</p>
<p>&#8220;Alright, why don&#8217;t you come up here. Now is your foot in pain right now?&#8221;</p>
<p>&#8220;Yeah, well it hurt when I was walking on it on the way up here. The pain is from the bottom of my foot up through the back of my leg.&#8221;</p>
<p>&#8220;Okay, well do you mind if I put my hands on it and pray for it?&#8221;</p>
<p>The guy seemed slightly confused.</p>
<p>&#8220;I mean, you&#8217;d much rather have it healed now than have to go to the doctors right? Not that I have anything against doctors!&#8221;</p>
<p>Laughter from those sitting in the room.</p>
<p>&#8220;Yeah, go ahead.&#8221;</p>
<p>Brewer had us all stick out our hands to pray for the  guy while he lead in prayer for his leg, asking God to heal it. When he finished, he asked &#8220;Why don&#8217;t you move it around. See how it feels.&#8221;</p>
<p>He began to move it around when Brewer asked him to walk down the aisle. The guy seemed amazed and when he reached the end of the aisle he said:</p>
<p>&#8220;Well, I guess I&#8217;ve been proven wrong!&#8221; Which I believe was his way of saying &#8220;There really is a God!&#8221;</p>
<p>And so there it is peeps. The first healing story I can say that I was there when it happened. And don&#8217;t think that this will be the only one. Oh no. I expect to see God work in the miraculous for the rest of my life as He opens my eyes to His world.</p>
<p>We then went around and prayed for other people. I found myself praying for a cool guy named Adam who believed in God very much, but appeared to still be working on understanding it all. I also prayed for another man looking for employment and laid hands on a blind lady. While it didn&#8217;t seem that her eyes were healed, we&#8217;ll see if anything happens throughout the rest of the day for her. And if not, I hope she still felt God&#8217;s blessing this morning!</p>

Michael Brewer, 15, is expected to be hospitalized for five months.</p></div>
<p>Michael Brewer suffered second-degree burns over 80 percent of his body and three juveniles were arrested Monday night, hours after the incident, and two others were arrested Tuesday, sheriff&#8217;s Sgt. Steve Feeley said.</p>
<p>&#8220;A couple of them last night were laughing about it,&#8221; he said. &#8220;One of them arrested today seems genuinely sorry about it.&#8221;</p>
<p>The youths all attend school together, police said, and Brewer apparently owed one of the suspects $40 for a video game and had not paid it. So the suspect allegedly stole the victim&#8217;s father&#8217;s bicycle, Feeley said. Brewer reported the bicycle stolen Sunday, and the suspect was arrested that day, taken to a detention center and released to his parents early Monday, police said.</p>
<p>Neither Brewer nor the suspect went to school Monday, and the victim was waiting at the apartment complex for his friends when the suspect and two other people approached him, Feeley said.</p>
<p>From what the suspects and witnesses have told police, the suspect yelled, &#8220;He&#8217;s a snitch, he&#8217;s a snitch&#8221; and &#8220;pour it on him.&#8221; Another juvenile threw what police believe was rubbing alcohol on Brewer from a plastic jug and used a lighter to set him on fire, he said.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>It&#8217;s been almost 3 years since Stumptown has opened  their beautiful roasting facility and cafes in Seattle. No matter which roaster you work for or which coffee you prefer, it&#8217;s undeniable that Stumptown has had a profound influence over Seattle&#8217;s coffee scene. Without getting into who&#8217;s coffee is better and whatnot, it&#8217;s fair to say that everybody has been upping their game for sure. To that, more power to them all.</p>

<p>This brings up an interesting question &#8211; with the proliferation of 3rd wave coffee, what&#8217;s next? 4th wave? What are the parameters of this next stage of evolution?</p>
<p>With the way things are brewing (bada bing!), direct trade and ultra attentive sourcing will result in brewing methods that highlight such extensive work. These may include single origin espresso and single origin coffees by the cup via various methods e.g. pourover, chemex, press pot, etc. Equipment-wise, this means new coffee brewers and espresso machines that enable greater control over soft preinfusion and pressure profiling. Though there has not been an entire industry consensus on merits or standards of soft preinfusion and pressure profiling (whether on a Mechanical Paddle La Marzocco, Synesso, or Slayer), things are trickling in.</p>
<p>Advanced soft preinfusion (soft preinfusion with pressure manipulation) in its various forms have shown what&#8217;s possible to date. It doesn&#8217;t necessarily work on all coffees and, in the end, it&#8217;s still in the tongue of the beholder. In words, it&#8217;s hella debatable! The results have been impressive for us &#8211; espressos tend to be much more softer and rounded, without sacrificing its core delicacies e.g. brightness, acidity, etc. Hopefully, as more advanced soft preinfusion machines (Mechanical Paddle La Marzoccos and Slayer) find their way onto coffee bars, a better consensus can result.</p>
<p>However, advanced soft preinfusion is but only an incremental step towards <strong>total control</strong> a.k.a. true pressure profiling (that is, infinitely variable pressure from zero to your desired maximum brew pressure throughout the extraction process). Whatever the technology (<em>or the lack thereof</em>) that will get an espresso machine there, more power to it. After all, it&#8217;s all about what&#8217;s in the cup that truly matters. Well, it&#8217;s also about reproducibility as well. It&#8217;s rather difficult to use either advanced soft preinfusion or pressure profiling to make every espresso shot in a busy cafe. It&#8217;s just not practical!</p>
<p>To date, no production machine has been able to truly enable true pressure profiling. To that end, La Marzocco is working on a brand new, true pressure profile machine. A prototype was shown at this year&#8217;s SCAA on a down low basis and there&#8217;s field tests/feedback going on to get maximum input and feedback from those that will ultimately use it. All we can say is, watch out for it in 2010!</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Today was another milestone as Knoxville City Council voted to approve our liquor license.  Since there is still a bit to be done on the  tap room, it is conditional on passing inspection from Fire Chief Mike Roberts.  He has been great about letting us know what needs to be done so with a couple more days I am sure we will be ready to go for Friday inspection.</p>
<p>Joe has been busy fixing up the draft system for the tap room, Scott has been creating the handrails for the stairway, and I have been the late night concrete sealer.  Robert&#8217;s and crew got all the wood siding on the walls, fastened the salvage tin to the top, installed the window between the brewery and the tap room and are working on trim.    Danny and Eric Pearson started hanging the vent ducts today and they look great.  It will be good to get some heat in there as the evenings keep getting shorter and cooler.  Andy and Junior from Advanced Electrical are moving quickly to get lights hung and outlets functional.  At the end of today we had 8 lights hanging and all the sconces installed and it looks great!  Pat and Linda Brown spent their second weekend in a row painting and delivered the stained doors tonight.  We weren&#8217;t quite sure about the green color we picked out but it is growing on me and I think it is going to be great once we have the furnishings in place.  So wonderful to have paint on the walls!</p>
<p>We also had special help from Scott&#8217;s parents, Dick and Connie who were refurbishing bar stools and taking care of Urban so we could get to the floors at night while all the contractors were gone.</p>
<p>Looks like we are on track  for a preview opening this weekend for the Autumn Studio Tour.  We are going to hit it hard this week to get everything polished up and looking good.  Hope to tap a keg Friday night to test the draft system, do a little taste test and celebrate  how far we have come in 6 months!</p>
