Ok so I made about 342342 of different brownies in my life. But after I made these, I didn’t even bother to try other recipes anymore. It’s the best brownie I ever tasted!

Don’t pay too much attention to the picture, when I baked this round they where in the oven too long!

Ingredients

70gr unsweeted dark chocolate

113 gr unsalted butter

200gr white sugar

2 eggs

1/2 teaspoon vanilla extract

35gr all-purpoue flour

1/4 teaspoon salt

Melt the butter and chocolate au bain marie

Add the sugar and mix it, then add the eggs and vanilla extract

Now mix the flour.

Spread the mixture over a sealed pan (mine is about 28×20, but if it’s a little smaller it’s better I think)

Bake in oven for about 30-35 min on 160C

I stand (sit) here and bemoan a lost generation (shake my head slowly) that has gone off the tracks (created a product like this) and wonder if they can find their way back.

Probably not:

Much as I’d like to discuss at length the pointlessness of this product, expounding upon how for about a buck you can achieve the same results and not be stuck with a waste of space you’d only use a couple times a year at most, I won’t. As the E*trade baby would say (see tomorrow’s entry for confirmation) it’s not the venue. No I’m here to talk about the ad itself.

One of my biggest peeves in commercials is Dr. Suess rhyming. It’s to my estimation one of the tackiest ways to sell a product. It’s an attempt at hitting us on a baser level of thought because we respond to the rhythm of the words. People selling on the streets, at the fair or on the boardwalk use rhythm to attract customers, often rhyming words that have nothing to do with their product. This is an acceptable form of silly showmanship. Selling to us like we’re in the first grade isn’t.

It’s doubly worse when the rhyme is only a few stanzas before the narrator stops and just starts talking. It was a sin Snuggie also committed, but then the product (stupid AND brilliant) was such as needed no real selling, just a presentation. Plus with the Weezer Snuggie, all is forgiven.

The ad has other problems as well, ranging from a weak narrative voice to music so bad they’d have been better without any. But I think I’ve battered the brownie pan enough today. Get it? Batter… brow- I’ll stop now.

Otto fotogrammi in formato 4×6.

I’ve been spending some time browsing through the online library at the Eastman House site over the past couple days. They have an extensive collection of early photographs that are fun to sift through. I’d like to see them at least twice as large as they are, since some details are difficult to make out, but good to see nontheless. The GEH.og link there also displays photos of early cameras, including a few of my beloved Brownie.

I can’t think of a better way of recovering from a night of pies and wine than a nice healthy

I can’t think of a better way of recovering from a night of pies and wine than a nice healthy shake with spinach, rice milk, banana, mango and acai.

Pie night was a complete success! Lots of good pie, wine, and dancing! We ran around all day yesterday getting ready for it (hence no post) and never really sat down.

The History of Pie Palooza

Pie Night is a tradition that started on Jeremy’s mom’s side of the family. The reasoning behind pie night is that you are always so full on Thanksgiving that you can never fully enjoy the pie’s. So…they started having just pies the night before Thanksgiving. This tradition has been going on since the 80’s and everyone looks forward to it. My first Thanksgiving with Jeremy’s family included pie night on Thanksgiving-eve. I thought it was such a great idea…a smorgasbord of pies was my kind of heaven.

Since moving out to Connecticut we have started carrying out pie night East Coast style. It was our way of bringing a little bit of home to CT. Last year was our first year hosting a pie night which we dubbed: Pie Palooza at The Schacalieu’s. We added our own little flair to pie night by awarding a golden spoon to the winner of best sweet pie, best savory pie, and most creative pie. It was a huge hit with all of the Yalies and people could not wait for this year.

The Baking

I made a chocolate-caramel brownie pie topped with sea salt. I made everything except the crust from scratch. I used Mari Tuttle’s recipe that I found online. This was my first time making caramel and it turned out great. I took forever for the sugar to start melting and I finally turned the heat up to medium heat instead of low.

Sugar just starting to clump

After turning up the heat, the sugar really started melting.

getting gooey after 30 min of stirring

Then the magic happened!

caramel here we come!

After the caramel was prepared, I got the brownie part going. That was a cinch except for the fact that the grocery store forgot to put the bar of chocolate we bought into our bag. Bummer! Jeremy went back to the store for me (good husband points), but got the wrong kind ( ) and not enough so he had to go back. We probably spent $6 on chocolate!

I make a makeshift double boiler with 2 pots and was ready to roll. Here is what it looked like as I was preparing to fold the chocolate mixture in to the flour/sugar.

Let the folding begin!

The one modification I made with the recipe was that I used Smart Balance 50/50 butter instead of the real deal.

I put a layer of the batter in a pre-made shortbread crust and then added a layer of caramel topped with another brownie layer and then drizzled caramel on the top. I took a toothpick and swirled it all together and then I was ready to bake!

into the oven it went

After baking for about 40 minutes it was all done and I sprinkled sea salt on the top.

Jeremy had been working on his beer butt chicken pie all day and waited to bake until my pie was done. He got the idea for his pie from one that has been at his Aunt and Uncles’ pie night. He couldn’t get the recipe, so he made it from memory. He used Sierra Nevada Celebration Ale for the beer and put it in a soda can because it only comes in bottles, but for beer butt chicken you need a can. Here is the little man in all of his glory!

He kept falling down in the oven so Jeremy used a skewer to prop him up. The secret to this pie was really in the crust. It was quite a process to make since the dough has to rise. Here was the professor’s pie before it went into the oven.

It had potatoes, cheese, onion, garlic, olive oil and beer-butt chicken. The potatoes didn’t cook all the way through so the pizza pie had to be cooked more and then the chicken had to be replaced because it was overcooked and dry.

Hot out of the oven

Jeremy is currently re-making his pie because it did not turn out the way he expected. The crust would have been amazing, but it was just a tad too crispy. We’ll see how it turns out tonight sans the beer butt chicken. I hope it turns out good because he was so excited about this pie and it really didn’t show the way he would have liked it.

The Eating

Since everyone who comes to Pie Palooza must bring a pie, our kitchen table got filled up pretty quickly.

Before

Yummy! We had WAY more sweet pies this year than savory, but everyone still enjoyed gorged themselves on pie. Yeah…there were 15 pies in total.

Let the eating begin!

The secret to surviving pie night is to just eat a bite or two of each pie. This way you can sample them all. It takes one time at pie night and then you figure out this secret. It’s important to try all of the pies because there is voting involved.

I fixed the n missing from station after the fact

There were a couple of late-comers and a few frozen pies, so there were about 4 more pies that were set out later. The aftermath of the first eating looked something like this…

Here is a picture of two of the frozen pies. One is key lime and the other was dubbed pi-abetes.

There was a leek pie that was put down as well, but it was eaten so quickly (lack of savory pies) that I never snapped a picture of it. After everyone tried the pies it was time to tally the votes and determine the Pie Palooza ‘09 winners.

The Winners

This year the prize for the winners of our 3 categories was a beautiful golden rolling pin. I am kicking myself now because I didn’t take a picture!

Best Sweet Pie- The winner was……Yours truly!!! My chocolate caramel sea salt brownie pie won!! I didn’t accept the golden rolling pin because I don’t think the house should win. So the prize went to the blackberry apple pie.

Best Savory Pie- Das Pie took home the golden rolling pin in this category. It was filled with a mixture of sausage, potato, mustard and then topped with sauerkraut.

Most Creative Pie- This category was won by a landslide and it went to Volcano Pie. Yes, it was a pie that erupted. That’s what you get when you party with scientists.

Getting ready...

Oh! The suspense is killing us!

Watch out for the hot magma!

Everyone was rewarded a golden rolling pin after telling them not to use it because it wasn’t real gold…only spray painted gold. We had to give the disclaimer this year because last year’s winner of the most creative pie (sushi pie) actually used her spoon!!

The night ended with dancing and conversing.

Erem was rockin' the bow-tie!

the professor in deep convo

There you have it folks! Pie Palooza ‘09 is now a thing of the past and our house is now back in order. Thankfully it didn’t get destroyed! Now I need to shower and then we are off to see the movie, Pirate Radio. Happy Sunday!

It’s the third time I made brownie. It was dry in the previous two times which the cake flaked. This time I shortened the baking time from 40 to 25 minutes. It is nicely moist per texture of normal brownie. Yeah, Carmen loves brownie. Certainly she will have a piece.

110g unsalted butter 70g 85% cocoa chocolate

160g sugar 2 large eggs, lightly beaten

1/2 tsp pure vanilla extract 30g all-purpose flour, sifted

1/4 tsp salt 80g roasted walnuts, chopped

Preheat over to 160°C. Butter and flour a square baking pan.

Melt butter and chocolate over simmering water. Mix well and remove from heat.

Stir in sugar and blend well. Whisk in eggs, vanilla extract until just combined.

Fold flour into the mixture until just blended. Pour mixture into the baking tin. Sprinkle walnuts on top.

Bake for 25 minutes until a wooden pick inserted in the center comes out sticky.

Cool completely. Cut and serve.

Friendship Squeeze
Have all girls and adults stand in a circle holding hands. You can do the traditional right over left crossed
arms if it is not too complicated.

Discuss the purpose and the “rules” of the squeeze, we are passing our friendship on to the next girl in the form of a gentle squeeze, reminding us that we are all connected to each other. No hard squeezes and no fake squeezes.
You may have to practice several times to get it right. You might ask the girls when they have received
the squeeze to put their right foot into the circle, or you can keep its location a secret.

You usually start the squeeze but later on you can designate a special girl to start it.
When the squeeze gets back to you, you can say “Goodnight, Daisies” or goodbye or whatever is
appropriate and release them.

Older Girl Scouts like to spin out. On the signal and still holding hands, each girl at once lifts their
crossed arms over their heads and turns facing outside of the circle, uncrossing their hands and bringing
them down by their sides. They then release hands.

Make New Friends
Make new friends, but keep the old,
One is silver and the other gold.

A circle’s round, it has no end,
That’s how long I’d like to be your friend.

There is so much I need to catch up on. It has been my birthday so I have been taking it extra-easy and doing some stuff.

My parents came over on Sunday and we had roast beef! It was so yummy. They also bought birthday cake and a lemon cheese cake which was so ridiculously nice that I asked them to leave the two thirds that were left so I could be alone with it for a while. My sister bought me a lovely silver bracelet, and a book about Lolcats! My parents got me some smart work clothes, some kitchen things and some money They are also thinking about getting me a table and chairs for the house, maybe this or similar from John Lewis:

My sister also made me the sweetest little cake with marzipan icing:

During the week Ryan and I went to a wine tasting session at the bar I work at. Two french men came along from the wine companies that we stock from, and we tried many…many wines! Rather worst for wear at the end of the evening, after our amazing crisp rolls.

Thursday was my 22nd birthday! I had an interview in the morning, which meant I didnt get a lie-in, but I had a midday nap, and then Ryan came home from work. I opened all my presents, and we tidied the house for a mini-party we had in the evening. Here are some pictures of presents:

He also got me Frank Turner tickets for March in London, the cutest cupcake set with an icing bag, and fireworks for the party!! EEeeee!

I dont have any pictures from the party I was too busy chatting and drinking wine, and running around the garden lighting fireworks with incense sticks. Apparently Vawn took some photos of me bending over showing my ass off a load in the garden while I was lighting them, but I am yet to see that! I cant help it that my bum doesnt fit in my trousers! Thankyou everyone who came to our house that night it was really nice. Thankyou to Lauren and Vawn for my pretty necklaces, and to Jodi for my teddybear cake, and other Lauren for my HMV card:

Yesterday myself and Ryan went to Elizabeths of Eastgate in Rochester Highstreet, for a lovely meal. I wore a white summery (stupid for this weather) dress with green leaves and flowers around the bottom, with tights and a white cardigan, and Ryan looked lovely as usual in a shirt and trousers. We both had ‘cote de beouf’ with chunky chips and a red wine jus which was stunning, and we shared a chocolate brownie with fudge sauce, creme anglaise, and ice cream. So yummy!

Today I got up and I had a card and present from Elise made of Perler Beads:

So cute thankyou!

I have almost finished Batman: Arkham Asylum for the second time, playing through on hard and it seems to be ridiculously easy this time around, so it hasnt been taking long at all. I bought Ryan COD:MW2 for an early Christmas present, but I still need to finish WaW before I set to work on the new game. I also, of course, have Wet and Tombraider to play now! So many things to do haha…

I think today me and Ryan are going to make some cupcakes, and use my Hello Kitty cake mold for the first time. I hope they come out amazing

This has been quite a long post and I still havent included all the cute and amazing things I have found so far this week. Here is a quick round-up of a few things:

Seasons: Fall

Yesterday morning was fairly autumnal in New England. To be honest, I’m a man of extremes, and I’d rather it be hot hot like Summer or start with the snow. Of course, I won’t feel that way when I have to walk to class in the snow. I was so happy when Greek got out at 12 because I had my entire day planned out in terms of “errands” to run. First I swung by the dining hall and then to my room, where I read some emailed and edited(read: spell-checked) my Epic Essay. At the same time I was making lunch.

Broccoli With Red Peppers, Sweet Potato, 1 Egg Plus 1 Egg White With Raw Cheese

Seasonings: Red Pepper, Cheese, Salt

A commenter asked yesterday if I eat broccoli every day. Pretty much Except last Sunday(I checked). It’s undoubtedly one of my favorite vegetables, and the easiest to self prepare, so I think I’ll stick with it. Besides that, this lunch was pretty average. I felt like I hadn’t had a sweet potato in too long, and definitely needed it here. I was sure to stealthily scrub it in the bathroom first so the skin would be extra delicious. I really was ready to go right when I finished eating. But of course the one day I have a lot to do there’s an actual plot progression in Days Of Our Lives. What the hell was with that? I stayed to watch the whole episode, and headed out at 2. First was a swing by the mail room. No mail, but I did pick up coffee.

Organic Decaf

Seasonings: Stevia

Definitely my favorite part of that building Next up was getting my “staple” groceries. I piled on a mile walking down to Waterman Street Whole Foods where I got to see all this weeks sales; nothing particularly exciting, but I was ecstatic to see that Oikos is still on sale! They also had these adorable all-natural gingerbread men coated in chocolate I almost bought but they were a bit out of my price range and a luxury. And look what I spotted near the checkout.

Silk Nog And Pumpkin Spice Drinks

Seasons: Autumn, Winter

This is the first time besides Hannafords I’ve seen the Silk Nog, and the first time I’ve seen pumpkin spice besides the Eating Machine’s blog. I just love finding things I see on other blogs; I think learning about and trying new products is my favorite thing about the blog world. After that, I hopped over to Eastside Market. Again,t he sales weren’t too impressive, so I stuck with the staples. I picked up a snack at Whole Foods to eat on my walk back.

Cantaloupe

Seasons: Summer

I’ve been wanting cantaloupe for a while after seeing them on blogs. Just as good as they were during the Summer! This was also perfect because it was prepackaged at exactly .5lb which wrung up to exactly 2.00. I like it when things work out like that. I had to swing back by the mail room to pick up eggs(they sell a lot of decent groceries there). Then I snuck my food into the library to print out two of my essays including the Epic Poetry one. God, that felt good. There might have been some more coffee at that point. I aimed at getting everything done in 2 hours and I got back at 3:53. Score.

Groceries

After that, I broke bended the rules. I knewI had a ton of work and needed to grab my dinner early so I could work the rest of the night knowing I didn’t have to go out for anything. Unfortunately, yesterday was also this big, special BBQ dinner at The Ratty where you couldn’t take things out. Well sneaky little me snuck in a food container and snagged some BBQ asparagus, extra sauce, and some peppers. I was a bit worried it would leak in my sweatshirt but that thing needs a wash anyway. When I got back I put that away for later and made a study snack.

Pumpkin Oatmeal With Pepita Sun Butter And Maple Yogurt Frosting

Seasonings: Cinnamon, Vanilla, Allspice, Maple

This was divine. The frosting had Oikos with maple syrup, cinnamon, and vanilla stevia. Sicne the main flavor in the pepita sun butter are vanilla and allspice, it all just went together. I read what I was supposed to have done for Wednesday for the rest of the evening; I hate that feeling of being behind and catching up. I’m one of those annoying people who would rather be working ahead of the syllabus. At some point, I decided to put things away and make dinner.

BBQ Tofu, BBQ Asparagus, Whole Foods Stuffing

Seasons: Summer, Autumn

Seasonings: BBQ Sauce, Salt, Thyme, Rosemary

BBQ is a cuisine I don’t eat much, and this reminded me why for the most part. I like for foods to just taste like their natural selves, and be enhanced by salt. BBQ, on the other hand, is all about sauce and the flavor from that. The tofu was nice and lightly seasoned(since I was the one who prepared it) but as for the asparagus I ate about 1/2 and threw the rest out after getting a big bite of mostly sugary sauce. If I was enjoying it like I might have been if it was an oriental sauce I would have kept eating it, but the flavor wasn’t working so I felt free to ditch it for these:

Pepper Strips

Seasonings: None

These tasted much cleaner, and made up for the veggie fail. But lets talk about the stuffing. Whole Foods makes the best stuffing. I knew I had to get it when i saw it on the prepared food line. It’s not whole wheat or healthy or anything, it’s just good stuffing. Actually, it’s the best and the only one I’ll eat. I’m sure I’ll be inhaling unholy amounts on Thanksgiving. Survivor was excellent last night. Russell plays the game so well, even if he’s a little jerk. I made a quickie snack between that and Grey’s.

Soy Yogurt With Trader Joe Mini Peanut Butter Cups And Vanilla Sugar

Seasonings: Vanilla Sugar

This was a new brand of soy yogurt to me. It tasted nice and soy-y like I was hoping for. Texturally and nutritionally I prefer So Delicious brand but this is a bit cheaper and more widely available. Grey’s was really good. Like really good. I like how this season is going. I think it’s becoming clear who the next to go after George will be. There was some late night oats involved after I did all the work that I should have done by Wednesday.

Oatmeal With Smart Balance Peanut Butter And Baking Chips

Seasoning: Chocolate Chips, Salt

For Leno, I turned off my computer, put away the books, and made my favorite bowl of oatmeal. This is when I unwind every day and I wouldn’t want it any other way I think I prefer the agave sweetened Smart Balance to the molasses one; the flavor is the same but the agave stays thicker on oatmeal. As for cleaning the bowl, you all had wonderful suggestions of letting it sit overnight in water. However, I go with a simpler route. I just assume I’m going to be having oatmeal for breakfast and leave it be for the time. I hope that’s not appalling, haha.

I think my roommate got home at around 6 this morning? And my alarm went off at 6:15. Great. After I fumbled around trying to make coffee, because it’s dark again, I also made a pre-workout snack.

Chocolate Brownie Z-Bar With Smart Balance Peanut Butter

Seasonings: Salt

The Smart Balance and chocolate is a flavor combo I just can’t quit. I probably should have prepared this earlier, because I ended up eating it on the treadmill and made a bit of a mess. Oops. Hopefully no one allergic will be using that treadmill today, plus I washed off what peanut butter touched the machine. I ran a slowish 10 miles in 85:34. I think I ended up walking around too much yesterday doing errands–2 official Pile On The Mile miles but probably a good 3+–and tuckered out my legs. instead of fight it, however, I let the pace be what it was and went with it.

Pumpkin Oatmeal With Protein Honey Maple Peanut Butter And A Vegan Pumpkin Molasses Cookie, Pineapple Chobani

Seasons: Autumn

Seasonings: Cinnamon, Salt, Ginger

Delicious. The high protein honey maple peanut butter actually reminds me almost exactly of butter toffee from Naturally Nutty. I was thinking of making my own yogurt with plain Oikos, full fat Voskos, and banana pineapple rum jam, but prepackaged is so much simpler

And now I leave you with the emails I wake up to: “The vet changed Montana’s medicine to a people one. I had to go to CVS pharmacy to get it. The lady asks “Does Montana have any questions for the pharmacist”?. I said hes a dog. hee hee.”

Tabi uygulayana.

More poker night deserts!

There are so many brownie recipes floating around that it is hard to pick just one that I like best. The basic brownie recipe is very simple with just a few ingredients, but then the chemistry of baking steps in and creates many exciting possibilities. By making a few slight adjustments in ingredients and ratios of ingredients you can create brownies that are cakey or fudgey or thin or high or dense or moist, with or without nuts, with strong or mild chocolate flavor.

The recipe I made for poker night yields a dense chocolatey brownie with toasted pecans thoughout. The guys loved the brownies and there were many comments about the texture and the deep chocolate flavor. My kids don’t like brownies with nuts so I was able to keep the few leftovers for myself.

Printable recipe

Double Chocolate Brownies

Adapted from a recipe by Robert Morocco

Ingredients

1 cup pecan pieces

5 ounces semisweet chocolate, finely chopped

2 ounces unsweetened chocolate, finely chopped

8 tablespoons (1 stick) unsalted butter, cut into pieces

1 cup sugar

2 teaspoons pure vanilla

1 teaspoon salt

2 large eggs, room temperature

¼ cup all-purpose flour

Method

Preheat oven to 325 degrees. Line a 9-inch square baking pan with foil and allow excess foil to hang over the sides.

In a saute pan, over medium heat, toast the nuts about 3 to 5 minutes. Stir frequently. Keep an eye on the pan, as nuts will go from raw to toasted to burnt very quickly. Let cool.

Melt the chocolates and butter together. The classic method is to melt the chocolate and butter in a metal bowl placed over a pot of shimmering water. The easy way is to melt the chocolates and butter in the microwave on high for 30 seconds, stir and repeat until just melted and combined.

Stir in the sugar, vanilla and salt.

Beat in the eggs, one at a time. The batter should have a slight shine to it.

Whisk in the flour until the batter is smooth.

Fold in the toasted nuts.

Spread evenly in the pan and bake for about 40 minutes. The top should look shiny and may be cracked. A toothpick inserted in the center comes out with a few moist crumbs.

Let the brownies cool in the pan. To get smooth cuts, freeze the brownies for about 30 minutes. Remove the foil and cut with a sharp knife.

I heard Clifford Brown’s playing for the first time when I was a teenager. I was on my way back home

I heard Clifford Brown’s playing for the first time when I was a teenager. I was on my way back home from a small group rehearsal at the Greensboro Music Academy (where I was a student at the time), and the pianist in the group, Branson Page, pops Study in Brown into the cd player. After hearing Brownie’s solo on Cherokee I was hooked. I hadn’t heard a trumpet sound like that up to that point. So I went out and bought that cd and learned his solo on Cherokee. I made it a point to check out as many of his records and through reading the liners to his records I was able to learn about his life and his tragic death in 1956. The life he led inspired me to stay “clean”.

During my senior year in high school, I met a vibes player by the name of Jon Metzger. I mentioned to him how much I admired Clifford and his playing. He suggested that I contact Clifford’s widow LaRue Watson Brown. He gave me her phone number but it took me about a year to gather up the courage to call her. I finally called her and we talked for a couple of hours about music, life, and Clifford. She told me that one of Clifford’s only addictions was doughnuts. He would eat an entire box of doughnuts in one sitting. I asked her about the Strings album and how it came about. She told me that Clifford wanted to have a child, but she didn’t want to have one just yet. So she told him that if he recorded a classical album they could have a child. He said what about a strings album and she agreed and a child was born.

Throughout the years I’ve been fortunate to acquire more rare recordings of Clifford’s artistry. From the people that I’ve met that played with him or heard him play, they all tell me that recordings don’t really do Brownie’s sound justice. They say that his sound was huge and warm in ALL registers. I learned a lot from hearing about that……

Despite being born and raised in London, mum had never visited Borough Market. I insisted that this would be a delicious way to start our Saturday and even showed her some lovely pictures in my London guidebook to prove it. Her eyes almost popped out of her head – as she read that ‘over 10,000 Londoners’ flock to Borough Market each Saturday to sample its delights (mummy’s not a big fan of crowds). I assured her that this Saturday would be an exception – so, off we went at 9am on Saturday, braving the semi-functional weekend services of the London Underground to make our way to London Bridge. Sun was shining, air was crisp and we were hungry. If you, like my mother, are unfamiliar with the sights and tastes of Borough Market, then you are missing out. It can be overwhelming on your first visit so here is a rough guide to set you on your way.

Need to know:
Closest tube is London Bridge
Best to arrive before 10am to avoid the crowds
Pull out cash before you arrive to avoid queuing at an ATM near the market
Great place to go for inspiration and provisions if you’re planning a dinner party.

Borough Market Top Picks:
Monmouth Coffee company
Get there early if you’re a caffeine fiend. The queues do get rather lengthy. It’s a shame you only get the coffee at the end of the queue because we all know standing in line is more pleasant with a warming cup of Kenyan roast.

Best Brownies
Amongst the endless stalls of delicious baked goods you will come across stacks of enormous brownies. Don’t shy away or pretend to be on a diet. Share one with a friend if you must. My favourite brownie purveyor is located just after you go under the Bridge towards the Green Market. For the best brownie money can buy - £2.00

Strange Fruits
I found a rather knowledgeable vegetable vendor in the Jubilee Market (the old car park for those of you in the know). I bought one of his many varieties of pumpkin, but was more intrigued by the logarithmic spirals of the fractal Romanesco broccoli. It would just be a shame to cook one of those. It’s like eating an equation. How can nature calculate something so perfectly?! Cost of onion squash – £2.45

Saucy sausages
If the free tastings of olives, patés, cheeses and jams aren’t hitting the spot, then you might want to make a beeline for one of the sausage or burger stands in the Middle Market. The meat is always perfectly cooked and flawlessly tasty. Here are my two friends Sophie and Sofia, delighted with their sausages. Cost of sausage bun – £3.00

Paté-Moi
I have never been to Borough Market and not bought a tub of this amazing wild mushroom paté. It can be eaten with or on almost anything, be it a chicken breast, pork chop, pasta dish or just a loaf of fresh baguette. The stall is always manned by one or two charismatic individuals although once you’ve tasted the mix you won’t need the charming folk to convince you any further. One pot costs £3.80

There’s so much more to see and eat but I’ll stop and let you discover the rest.

Tomorrow is tech for Emerald City, and as tradition, I baked something. Since I had no energy this morning before my interview (I also couldn’t really walk without pain, but we’re not going to talk about that) I waited until I got back to make something. Because of that, I wanted to make something fast and easy, so of course I thought brownies. But, when I was thinking about it, I also wanted to make cookies. But, I had no time. I then remembered I had a recipe for chocolate chip cookie topped brownies. My needs have been fulfilled. Now, if I do this recipe again, I’d probably put the cookie layer on the bottom because the dough doesn’t spread to well. Lesson learned. However, the brownies look AMAZING and I can’t wait for the actors to try them tomorrow, that’s my favorite part!

Chocolate Chip Cookie Topped Brownies

6 oz bittersweet chocolate, coarsely chopped Cookie layer:
3 oz unsweetened chocolate, coarsely chopped 1 1/4 cups all-purpose flour
2 sticks (8 oz) unsalted butter, cut into chunks 1/2 teaspoon baking soda
1 2/3 cups sugar 1/2 teaspoon salt
4 large eggs (12 tablespoons) unsalted butter,
1/2 teaspoon salt 3/4 cup (packed) light brown sugar
1/2 teaspoon pure vanilla extract 2/3 cup sugar
1 cup all purpose flour 1 large egg
1/3 cup walnuts, coarsely chopped* 1 teaspoon pure vanilla extract
1 cup store-bought chips

Center a rack in the oven and preheat the oven to 350F. Butter a 9×13 inch baking pan, line it with wax or parchment paper. Put the pan on a baking sheet.

To make the brownie batter: Put both chocolates and the butter in a bowl set over a saucepan of simmering water. Stirring occasionally, heat just until the ingredients are melted, shiny and smooth. Remove the bowl from the heat. beat the sugar and eggs on medium-high speed for about 2 minutes, until pale, thick and creamy. Beat in the salt and vanilla extract. Reduce the speed to low and mix in the melted chocolate and butter; mixing only until incorporated. add the flour, mixing only until it disappears into the batter. Using the spatula, fold in the walnuts, and scrape the batter into the prepared pan. Set aside.

To make the cookie dough: Whisk together the flour, baking soda and salt. Working with the stand mixer in the cleaned bowl, beat the butter and both sugars together on medium-high speed until smooth and creamy, about 3 minutes. One at a time, add the egg and the yolk, beating for 1 minute after each addition. Beat in the vanilla. Reduce the mixer speed to low and add the dry ingredients, mixing only until they disappear into the dough. Still on low, mix in the chopped chocolate. Drop the cookie dough by spoonfuls over the brownie batter and, using a spatula and a light touch, spread it evenly over the batter.

Bake for 50 to 55 minutes, or until the cookie top is deep golden brown and firm and a thin knife inserted into the brownie layer comes out with only faint streaks of moist chocolate. Transfer the pan to a rack and cool to room temperature.
