<title><![CDATA[Easy breakfast for the busy city girl...The weekday breakfast frittata.]]></title>

<p>I&#8217;m a massive breakfast fan, and why wouldn&#8217;t I be? It speeds up your metabolism, gets your brain going and gives you fuel to endure your day.</p>
<p>The humble muesli will always be an easy staple. Just add milk or yoghurt and you&#8217;re good to go. Yet who wouldn&#8217;t want to wake up to a moorish weekend-like treat of a  warm, yummy egg breakfast on a weekday? The snooze button and the mad rush to get ready make the prep and cook time unappealing for most. Don&#8217;t we already have enough to do just get out the door in the morning you ask? absolutely, and that&#8217;s why I like to make a frittata the night before. It&#8217;s quick and easy to  pre-pair and can be kept in the fridge for a couple of days. Simply ditch the biscuity base and you have yourself a pretty low carb breakfast option.</p>

<p>The humble egg will keep you full longer than your humble slice of toast because of the high protein content. Thus, they may help you lose weight.</p>

<p><em><strong>FRITTATA</strong></em></p>
<p><em><strong>Ingredients</strong></em></p>
<ul>
<li><em>4 eggs</em></li>
<li><em>veggies of your choice</em></li>
<li><em>garlic</em></li>
<li><em>sea salt</em></li>
<li><em>pepper</em></li>
<li>mixed herbs</li>
<li>ginger</li>
<li>chili powder</li>
<li>paprika</li>
<li>sage</li>
<li>basil</li>
<li>milk, soy or whatever milk or milk-like alternative</li>
<li>grated mozzarella</li>
<li>olive oil</li>
</ul>
<p>* Please note that you can use fresh or dried herbs and spices.</p>
<p>Pre-heat the oven to 200</p>
<p>Put the eggs the milks the milk and the sal and pepper together and whisk.</p>
<p>Add to the mixture the ginger, chili and paprika.</p>
<p>Set the mixture aside.</p>
<p>Heat a tea-spoon of olive oil  in a pan.</p>
<p>Add garlic and onion &#8211; cook for a minute.</p>
<p>Add the chopped veggies and the rest of the herbs and saute together</p>
<p>cook for a few minutes more</p>
<p>pour the veggie mix in the baking tin</p>
<p>pour the egg mixture and the mix the grated cheese in.</p>
<p>Place in the oven for 30 minutes</p>
<p>Fin.</p>
<p>The next day either cut a square and heat it in the microwave for a 40 seconds or eat cold.</p>
<p style="text-align:center;">There you have it. A quick, filling and low carb breakfast for your working week.</p>
