<p><strong>How to make Vegan Icing</strong></p>
<p>1 cup vegan butter or shortening ( I like Earth Balance)</p>
<p>3 cup powdered sugar</p>
<p>2 tsp pure vanilla extract</p>

<li>Cream together shortening and vanilla extract until combined.</li>
<li>Add sugar 1 cup at a time until icing resembles a thick paste.</li>

<div><strong>How to Make your Cake Pops</strong></div>

<div>When your cake is ready, take it out of the oven and crumble it into a bowl, or use a potato masher and mash the crap out of your cake (in your bowl)!</div>

<div>Stir in your vegan frosting, a little at a time. Once your cake and icing cling together when you roll it in a ball, you&#8217;re ready to go. Stick this mixture in the fridge for about 15 minutes.</div>
<div></div>
<div>After the dough is a bit stiff, roll out your balls of cake! you want them to be about an inch and a  1/4 thick. Roll them out and place them on a parchment paper-lined baking sheet, and refrigerate again.</div>
<div></div>
<div>Melt your favourite vegan chocolate chips, or bar of raw chocolate in a double boiler. Using lollipop sticks or kabob sticks, dip them slightly in the melted  chocolate before inserting them half way into each chilled cake ball.</div>

<div>Dip your cake balls into the melted chocolate and make sure they are coated evenly with sweet vegan goodness. Place them onto a cake pop stand or styrofoam to let them begin to harden.</div>

<div>You can decorate them anyway you wish! I like to keep it simple and sprinkle them with Himalayan Rock Salt or dip them in a bath of shredded coconut. But the decor ideas are endless; make them into little animals, fun colours, or even a penis shaped bachelorlette treat!</div>

<p>Cake pops have been on my to-do list for quite some time, and I finally got around to making them. I kept them simple for my first attempt, but next time around, I&#8217;ll definitely be more ambitious with my designs and decorations. A quick google of cake pops brought up so many beautiful treats, so I have plenty of great ideas and inspiration for next time!</p>
<p>I made these to bring in to work and they disappeared so quickly! They&#8217;re perfect for crowds and you can make them ahead of time. I made them two days ahead and stored them in an airtight container in the fridge.</p>
<p><strong>Ingredients:</strong></p>
<p>1 box of white cake mix</p>
<p>1 16 ounce tub of French Vanilla frosting</p>
<p>100 g milk chocolate candy melts</p>
<p>25 g white chocolate candy melts</p>
<p>Additional coloured chocolate candy melts</p>
<p>Multi coloured sprinkles</p>
<p>Candy/lollipop sticks</p>
<p><strong>Directions:</strong></p>
<p>Bake the cake according to the package directions and let it cool down completely. In a large bowl, crumble the cake to a fine crumb using two forks. You may need to remove some of the crusty exterior pieces if they won&#8217;t break down. If you leave too many large bits of cake, it will make it tougher to roll it into a smooth ball later.</p>
<p>Add about 3/4 cups (or possibly a bit less) of the tub of frosting to the cake and mix it all together well using a wooden spoon. You only want to have enough frosting so that the cake holds together. If the mix is too moist, it will make it more difficult to hold together. Roll the cake mixture into balls, about 1 inch in diameter and lay them on a baking tray covered with parchment paper. In a small microwaveable bowl, melt about 5 white chocolate candy melts. Dip the end of the popsicle sticks into the white chocolate and insert it about half way into each rolled ball.</p>

<p>Place the tray in the freezer to chill for about 20 minutes, or let it chill in the fridge for at least 4 hours.</p>
<p>Using a double boiler, melt the milk chocolate, watching it carefully so that the chocolate doesn&#8217;t burn. Remove the chilled cake balls from the freezer/fridge. Depending on how quickly you can do this step, you may want to leave about half of the cake balls in the freezer so that they stay cold. The colder they are, the easier it is to roll them in the melted chocolate.</p>
<p>Dip each cake ball into the melted chocolate and coat well. Gently shake off excess chocolate and add sprinkles (or any other toppings you&#8217;d like) to the pops right away before the chocolate dries. You can either use a styrofome board to keep each pop upright to dry, or you can use a colander and stick the popsicle sticks in the holes of the colander. To decorate the pops with different coloured chocolate, melt the candy melts in the microwave and pour the chocolate mix into a ziplock bag, and cut off the corner to decorate.</p>

<p>I tried to get a little creative and made donut cake pops! When you&#8217;re rolling out the cake mix, form balls and then flatten them with your hand. Use your finger to form a small dent in the middle, making sure not to poke through the other end.</p>
