The time has come to explore the wacky world of mini-mashing!  And a surprisingly easy & rewarding experience it was too.  So, how did it all begin…

The plan was to make a nice session bitter for My Dad’s Christmas present using the Challenger & Whitbread Golding hops he grew for me.  Of his hop plants the Challenger was the most productive so I dreamed up this recipe using an estimated %AA typical for the variety.  I estimated on the low side thinking the reduced daylight hours in Teeside wouldn’t be perfect for hop oil production.  The grain bill included crystal & amber malt for sweet, biscuity flavours & torrefied wheat for head retention.  I opted for Windsor yeast as it’s supposed to leave lost of fruity esters & a relatively high gravity for a bit of body.

• 100g Torrefied Wheat
• 155g Pale Crystal Malt
• 78g Amber Malt
• 1kg Marris Otter
• 1kg light DME

Hops / Boil / Weight / IBU

• Challenger 6% AA                       60’            14g           17
• Challenger 6% AA                       30’            5g             4
• WGV 4%AA                                 30’            7g             4
• Challenger 6% AA                       20’            6g             4

1 x Windsor yeast

So with the day off work I commenced the usual equipment sterilisation & then thought about how I was going to do this.  There are various mini-mash how to’s available on the internet. My method has been culled from those & tailored for what pots & pans I have in the kitchen.  So I’m going to use a 6 litre cast iron casserole, large muslin cloth & oven to conduct the mash.

Mini-Mash Method

1. Pre-heat the oven to 60°C and put the cast iron pan in to heat up.
2. Once hot, line the pan with the muslin & tip in the grain.
3. Add strike water at a ratio of 1:2.9 Kg per Litre (worked out to be 4 litres at 74°).
4. Stir the “porridge” & cover with the lid.  Mash in the oven for 1 hour.
5. Heat up 4 litres of sparge water to 73°C.
6. Remove muslin to large roasting rack.  Decant wort to boiling pan.
7. Put muslin back in the iron pan & add the sparge water.
8. Leave for 15 minutes.  Remove muslin & squeeze a bit.
9. Add wort to boiler & add the DME.
10. Top up to 13 litres & check gravity.  Bring to boil & add hops!

Sounds easy!  Unfortunately there were a few hiccups along the way.  Upon adding the strike water the mash temp was bang on 67 °C.  Huzzah, thought I, and swiftly put the pan in the oven.  After 15 mins I checked the temperature & it was at 70°C!  Fearing an overly dextrinous wort , poor attenuation or even enzyme denaturation I added some cold water to bring it down.  I added a bit, stirred & it plummeted to 61°C.  It seems I’d not stirred the porridge enough & was measuring the temperature of a hot spot.  The pan was basically at its limit so I put it back on the stove & heated it gently to bring it back up to temperature.  After that the mash temperature was stable & all progressed as planned.  The mash pH was 5.3 which is pretty much ideal I think.  Upon adding DME to the boiler  & topping up with water I took a sample, chilled it & checked the gravity. 1.044!  I had mashed, with about 21 gravity points coming from the grain.

Now for the hops.  However, upon taking them out the freezer however I noticed that several bags of Challengers didn’t look to good.  They were dark brown, some had mould on them & they smelled musty.  It seems my Dad didn’t do a particularly good job of drying them out before storage, so several bags had to go in the bin.  The EGV’s were fine though but still leaving me with not enough hops to do the job.  The only other hops left in the freezer were Glacier, the quality of which I was a bit unsure of.  However, they smelt fine upon opening them so they were used for the 10 and 20 minute additions.  Who knows what this Frankenstein’s monster of a beer will taste like!

So my son loves this car and I thought, why not for my first post.

Last year I blogged in detail about the “new old classics.” For the record I will say I think they are the best things to happen to the American car industry in a long time. In the present economy, we need to see the very best in innovations in the US car market, which has played step-sister, to imports for more than a decade. The 2010 Dodge Challenger SRT, which is Kevin’s car on Ben 10, is a beautiful piece of work.

The look of all the new classic cars have more refined masculine lines, though the 2010 Mustang is a “little bubbly” looking from the side, something I think they shouldn’t have done. The Challenger is rigid and strong looking and sounding. I firmly believe that muscle cars should sound like muscle cars, and the Challenger does. The 2010 Camaro fails a bit in this area, and though I was cheering for the Camaro over the other two (I think a lot of Chevy’s engine power) the Challenger comes out ahead in this area.

The price of the Challenger is the biggest turnoff though. To get a fully loaded SRT you have to pay around $40,000+. Dodge cars depreciate too quickly for such a high price. The interior doesn’t live up to the price either and I was really disappointed when I got a look inside, knowing the cost

The Challenger boast 400+ hp and a 6.1 Liter engine (if memory serves.) It is a rear wheel-driving monster with a wide enough wheelbase to make it hold the road well, which I love about any car. Dodge’s handle a little choppy for me, and the Challenger keeps with that norm.

Overall the Challenger is an awesome, inspiring piece of machinery. And I have to thank Dodge for having one of the only two cars on the market that I will almost run off the road to turn and look at (the Camaro being the other one.) So son, if mommy was rich, which she isn’t, she wouldn’t buy you a Challenger. She’d get a Camaro, but maybe one weekend we would rent one and take it for a spin up the coast. In the mean time, in the real world, I will Tivo Ben 10 because it comes on after your bedtime and we can both dream…

2010 HPP Dodge Daytona

 Det er Heide Performance Products, der på opfordring fra Chrysler har konstrueret en ny version af den berømte “Wing Car” fra Dodge.

En l’occurrence, c’est Rihanna (Madame Jay-Z bis) qui s’y colle, avec sa paire de gambettes qui a affolé le public des American Music Awards d’hier soir, grâce à son costume de Liloo dans le 5ème Elément. Par contre, histoire que le vote soit plus serré, des pièges se sont glissés dans les photos. Hein? Comment ça de la cellulite?

Finalmente Charly no jugara el torneo de puebla en Mexico por lo que los cuartos de final en Lima fue el cierre del año ATP para Carlos.

Un año marcado por las lesiones tuvo Carlos, comenzo en la semana 1 del año a Jugar en San Pablo sobre cemento, provenia de un parate por lesion de medio año en el 2008, y quedo eliminado en primera ronda. A la siguiente semana comenzo a alcanzar un buen nivel  con las semifinales alcanzadas en Salinas sobre cemento. A la tercera semana llego el polvo de ladrillo en Iquique y cuando estaba jugando un partidazo contra Maximo Gonzalez en la segunda ronda, llego nuevamente una lesion que le impidio seguir jugando.

Siete meses pasaron para que el 17 de Agosto se presentara con una invitacion en Trani (ya que figuraba fuera del top 700 atp) donde hizo segunda ronda, a la semana siguiente en Manerbio mostro sintomas de recuperacion ganando 5 partidos (3 de qualys) y perdiendo en cuartos de final del torneo.  A la semana siguiente repitio cuartos en Como y alcanzo el pico maximo del año en Genova donde paso la qualy para finalmente perder en la final del torneo con el Beto Martin, en total tuvo 7 victorias en el torneo. Cerro esta exitosa gira de retorno italiana con una segunda ronda de Todi, con este buen trabajo Charly se acomodaba cerca del 300 del mundo.

Luego a fines de septiembre se volvio a sudamerica para darse el lujo de jugar en Buenos Aires, donde logro avanzar la qualy para quedarse en segunda ronda del principal.

Nuevamente volvio a tener un receso durante el mes de Octubre para descansar en casa y volvio el 9 de Noviembre en Guayaquil ecuador donde volvio a perder por segunda vez en el año en primera ronda y finalmente la semana anterior pudo lograr cuartos en Lima para terminar el año cerca del 250 atp, lo que le permitira jugar directo la gira challenger  sudamericana de principios de año en el 2010.

Asi Charly cierra una buena semana, ya que venia de un parate largo y la semana pasada en su regreso habia perdido en primera ronda.

Ahora la semana que viene nos toca Puebla Mexico donde Carlos ya tiene el lugar en el main draw seguro, este torneo se jugara sobre cancha  dura. Esto podria ser lo ultimo de Charly en el año.

Two IMG Bollettieri professionals, Taylor Dent and Ricardas Berankis, moved into the semifinals of the JSM Challenger in Champaign-Urbana, Illinois. Dent, who is coming off a challenger win last week in Knoxville, beat fellow American Jessie Levine 6-1, 6-2 and will face top-seeded Kevin Kim in the semis. On the other side of the draw, 19-year old former Junior US Open champion, Ricardas Berankis, breezed by Kaden Hensel of Australian 6-0, 6-2 and will face third-seeded Michael Russell. Berankis, who qualified for the event, already took down seventh-seeded Kevin Anderson in the second round.

Hurricane Katrina was one of the greatest catastrophes to hit the United States.  Nearly 1,600 died in Louisiana alone with massive flooding in New Orleans when its levees failed.  The storm displaced about 300,000 people and caused over $80 billion in damage.  While a natural disaster was initially blamed for the damage, it is now evident that our government had significant responsibility.

In a scathing decision, US District Court Judge Stanwood Duval Jr. placed significant blame for the damage to New Orleans during the Hurricane squarely in the lap of the Army Corps of Engineers.  Judge Duval found that:

“It is the court’s opinion that the negligence of the Corps, in this instance by failing to maintain the MRGO [Mississippi River Gulf Outlet] properly, was not policy, but insouciance, myopia and short-sightedness,”

“For over 40 years, the Corps was aware that the Reach II levee protecting Chalmette and the Lower Ninth Ward was going to be compromised by the continued deterioration of the MRGO … The Corps had an opportunity to take a myriad of actions to alleviate this deterioration or rehabilitate this deterioration and failed to do so.  Clearly, the expression ‘talk is cheap’ applies here.”

“This court cannot but comment that the Corps’ approach reminds the court of the old adage, ‘Close your eyes and you become invisible,’”

“It is beyond arbitrary and capricious — it flies in the face of the purpose of NEPA [the National Environmental Policy Act] and ignores the very heart of what ‘operation’ means,”

Referring to the Corps’ actions: “were in direct contravention of professional engineering and safety standards,” ……. “… Ignoring safety and poor engineering are not policy, and clearly the Corps engaged in such activities.”

According to Duval, the MRGO channel that was managed by the Army Corps of Engineers was not properly maintained.  As a result, it widened with erosion and deteriorated making the walls vulnerable to waves from Lake Borgne.  This led to levee failure and subsequent flooding of portions of New Orleans.

The Court’s ruling was in favor of a half dozen plaintiffs whose property was damaged by Katrina.  While the damages amounted only to about $700,000, there were 100,000 homes and businesses in the affected parish and Lower 9th Ward.  Judge Duval’s ruling will lead to compensation for many more.  So, first taxpayers pay to build the levees and maintain them and now we get to pay for the incompetence of our government.  Look for a multi-billion dollar bill added to our already ballooning deficit.

If government caused catastrophes like Katrina were isolated, it could be passed off as a bad mistake.  However, it is not.  Governments have a history of creating “mistakes” that are very expensive.  Whether it is construction projects such as Katrina, scientific/system failures as in the space shuttle Challenger disaster, wrongly predicting oncoming events such as Y2K, or not properly managing agencies such as Fannie Mae and Freddie Mac, the government’s track record is very poor.

Given the recent letdowns of the private sector such as the Wall Street banks, some Americans look to government for the cure.  If history is the judge, it indicates that the cure is often worse than the disease!

Based on news reports, U.S. employers are scaling back on holiday parties and gifts for their employees this year, thanks to the economy.

According to a story the Las Vegas Sun published online today, one event planner in Vegas said that he normally has 80 company holiday parties booked by now. But this year, only 20 companies have booked parties, he said.

Fewer parties aren’t the only evidence of a grimmer holiday season.

Employees can expect fewer gifts this year from employers, too, according to American Express Open’s small-business monitor, which last month surveyed 516 companies with up to 100 employees.

Thirty-five percent of the businesses said they would give gifts to their employees, down from 46 percent last year, and 31 percent of companies said they would give year-end bonuses this year, compared with 44 percent last year.

Then there’s this headline from Wednesday’s edition of The (Cleveland) Plain Dealer: “Economy puts damper on holiday parties — again.”

While the worst of the recession may be past, many local employers are still not ready to bring out the champagne this holiday season.

Companies are generally being cautious in their spending, and are throwing more modest Christmas-time shindigs – if they’re having them at all.

It’s the second year that the economy has put a major damper on corporate holiday parties. An annual survey by outplacement consulting firm Challenger, Gray & Christmas found that only 62 percent of companies are planning holiday parties this year, down from 77 percent last year, and 90 percent in 2007.

On The Wall Street Journal’s Web site Wednesday, blogger Michael Corkery wrote that the U.S.’s big banks “have killed their holiday parties this year amid the backlash against big banker bonuses and government bail outs.”

While small businesses and individual Americans continue to suffer from the economic downturn, the banks have to at least restrain from gloating about their good fortune.

Bank of America says “it does not host or fund corporate wide, regional, line of business or staff holiday parties.”

At Goldman Sachs, there’s no holiday party this year nor was there was one last year. And there will be no Goldman sponsored birthday parties either, a spokesperson added.•

A HIGH-profile corporate governance group has opposed a proposed “two-strikes” rule intended to curb excessive executive pay on the grounds it will inhibit shareholders from expressing their views.

RiskMetrics – a leading campaigner on the issue of remuneration reports at publicly listed companies – spoke out against the proposal at a hearing before the commission in Melbourne yesterday.

The recommendation, if passed, will empower shareholders to force an entire board to stand for re-election by lodging a protest vote of more than 25 per cent against the remuneration report at two successive annual meetings.

Freedom
and I have been together 10 years this summer.
She came in as a baby in 1998 with two broken
wings. Her left wing doesn’t open all the way
even after surgery, it was broken in 4
places. She’s my baby.

When
Freedom came in she could not stand
and both wings were broken. She was
emaciated and covered in lice. We made the
decision to give her a chance at life, so I took
her to the vets office. From then
on, I was always around her. We had her in a
huge dog carrier with the top off, and it
was loaded up with shredded newspaper for her to
lay in. I used to sit and talk to her,
urging her to live, to fight; and she would lay
there looking at me with those big brown eyes.
We also had to tube feed her for
weeks.

This
went on for 4-6 weeks, and by then she still
couldn’t stand. It got to the point where the
decision was made to euthanize her if she
couldn’t stand in a week. You know you don’t
want to cross that line between torture and
rehab, and it looked like death was
winning. She was going to be put
down that Friday, and I was supposed to come in
on that Thursday afternoon. I didn’t want to go
to the center that Thursday, because I couldn’t
bear the thought of her being euthanized;
but I went anyway, and when I walked in everyone
was grinning from ear to ear. I went
immediately back to her cage; and there she was,
standing on her own, a big beautiful
eagle. She was ready to live. I was
just about in tears by then. That
was a very good day.

We
knew she could never fly, so the director
asked me to glove train her. I got her used to
the glove, and then to jesses, and we
started doing education programs for schools in
western Washington
. We wound up in the newspapers,
radio (believe it or not) and some
TV. Miracle Pets even did a show
about us.

In
the spring of 2000, I was diagnosed with
non-Hodgkin’s lymphoma. I had stage 3,
which is not good (one major organ plus
everywhere), so I wound up doing 8 months of
chemo. Lost the hair – the whole
bit. I missed a lot of work. When I
felt good enough, I would go to Sarvey
and take Freedom out for walks. Freedom would
also come to me in my dreams and help me fight
the cancer. This happened time and time
again.

Fast
forward to November 2000, the day after
Thanksgiving. I went in for my last
checkup. I was told that if the cancer was not
all gone after 8 rounds of chemo, then my last
option was a stem cell transplant. Anyway, they
did the tests; and I had to come back Monday for
the results. I went in Monday, and I was
told that all the cancer was
gone.

So
the first thing I did was get up to Sarvey and
take the big girl out for a walk. It was misty
and cold. I went to her flight and jessed her
up, and we went out front to the top of the
hill. I hadn’t said a word to
Freedom, but somehow she knew. She looked at me
and wrapped both her wings around me to where I
could feel them pressing in on my back
(I was engulfed in eagle wings), and she
touched my nose with her beak and stared into my
eyes, and we just stood there like
that for I don’t know how long. That was a
magic moment.. We have been soul mates ever
since she came in. This is a very special
bird.

On
a side note: I have had people who
were sick come up to us when we are out, and
Freedom has some kind of hold on
them. I once had a guy who was
terminal come up to us and I let him hold
her. His knees just about buckled and he
swore he could feel her power coarse through his
body. I have so many stories like
that.

I  never forget the honor I have of being so close
to such a magnificent spirit as Freedom.

Tuvo buen debut Carlos en el dobles junto a Juan Martin Arangueren vencieron por 7-6 3-6 y 10-6 en el super tie break final a la pareja numero 2 del torneo los brasileños Silva y Dutra Da Silva.

De este modo Charly suma 15 puntos para su ranking en dobles y en los cuartos de final tendra la chance de verselas nuevamente con el austriaco Andreas haider que comparte pareja con el el aleman Poerschke. El partido sera hoy miercoles por la tarde.

En cuanto al single jugara la semana que viene en Lima Peru, donde ya tiene el ingreso directo al main draw.
