<p> Sticking with fall themed foods, here is another pumpkin recipe. We had pumpkin cheesecake at a restaurant one night, and it was so good, we poked around for pumpkin cheesecake recipes on several of the recipe web sites. None of the ones we found were quite to our liking, but one somewhat like this was pretty close. On the first try, it cracked pretty badly. On the second time around I added the sour cream and another egg, and left it in the oven to cool more slowly – and viola, nary a crack to be seen. I think you’ll really like this, ‘tis the season!</p>
<p>Ingredients:<br />
Crust:<br />
2 Cups ground ginger snaps*<br />
1/2 cup ground pecans<br />
2 Tablespoons brown sugar<br />
1/3 Cup butter, melted<br />
~~~~~~~~~~~~~~~~~~~~~~~<br />
Filling:<br />
3 – 8 ounce pkgs. cream cheese, softened<br />
1 Cup pumpkin puree<br />
5 eggs<br />
1/2 Cup sour cream<br />
1 1/2 Cup brown sugar<br />
6 drops orange food color** (comes in the Fall assortment)<br />
1 teaspoon vanilla<br />
1 teaspoon cinnamon<br />
1/2 teaspoon ginger<br />
1/2 teaspoon allspice<br />
1/2 teaspoon nutmeg</p>
<p>Directions:<br />
Pre-heat oven to 325 degrees. Crush ginger snaps in metal bowl with something real hard, like the handle of an ice cream scoop.</p>

<p>Combine the cookie crumbs, ground pecans, 2 tablespoons brown sugar, and melted butter in medium bowl; press into bottom of a 9 inch spring form pan.</p>

<p>(I’ve been told that a food processor will grind up the ginger snaps too, but so far, I’ve been too afraid of the noise to try it; they’re awfully hard.)</p>
<p>Combine remaining ingredients in a separate medium bowl, blending well, pour over crust.</p>

<p>Bake at 325 for 80 minutes, then turn oven off and leave cheesecake in oven to cool down for another hour before removing to countertop cool down for another hour before refrigerating. Cheesecake is best if allowed to “mellow” at least one or two days before serving.</p>
<p>* If you don&#8217;t have &#8211; and don&#8217;t want to wait until you get ginger snaps, you can substitute graham crackers. A graham cracker crust will work great, just isn&#8217;t as unique.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>This past Saturday night, <a href="http://kosherscene.wordpress.com/2009/11/12/art-you-have-to-eat/"><strong>u café</strong></a> hosted a Cantorial Kumzits.<a href="http://www.charliebernhaut.com/"> Charlie Bernhaut</a> and Cantor Benny Rogosnitzky presented their second monthly evening on the cantor&#8217;s art and great food.</p>
<p>There were some well known cantors and singers in the audience; Mr. Bernhaut, after a few words about his hopes to revive the love and appreciation for <em>chazzanut, </em>asked Asher Scharf to start out the evening of liturgical song.</p>

<p style="text-align:justify;">Mr. Scharf, a seasoned professional, both a cantor and popular singer in the Jewish scene, clearly showed his art and the lessons gleaned from years of singing.</p>
<p style="text-align:justify;">Next up was Ari Heinemam, who is the <em>chazzan</em> at a Brooklyn <em>shull</em>, although during the week he deals with Customer&#8217;s Relations at <a href="http://thepompeople.com/"><strong>Pomegranate</strong></a>, NYC&#8217;s best stacked, cleanest and newest kosher supermarket. His selection was on the <em>Birchas Kohanim</em> -<em> The Priestly Blessing</em>. His melodious, sweet voice was magnificent! His phrasing flawless, his emotion powerfully obvious, as he intoned <em>Yivorechecho Hashem veyishmerecho&#8230; veyosem lecho sholoim. May Hashem bless you and safeguard you&#8230; and establish for you peace.</em></p>

<p style="text-align:justify;">Next up was Pinchas Ben Ari, <a href="http://www.ucafeny.com/"><strong>u café</strong></a>&#8217;s owner. His energy, his movements to the cadence of the melody, his gestures as he intoned the different words, made it obvious he had suddenly transcended to another sphere, singing to a far higher audience than that of us &#8211; mere humans &#8211; sitting in his cafe.</p>

<p style="text-align:justify;">Pinny, as he&#8217;s affectionately called, used to be a <em>chazzan</em> in New Jersey; he retired a few years back, from that position, but he showed  he still has most of what it takes.</p>
<p style="text-align:left;">The star of the evening, however, was none other than Yitzchok Meir Helfgott. Cantor Helfgott has a busy schedule of concerts around town as well as overseas. His December 2006 concert at the Metropolitan was <strong>phenomenal</strong>, he performed before a packed house of Jews and non-Jews.  On this particular Saturday evening, he did not strain himself but his voice showed a power and mastery far above anything we&#8217;d heard.</p>

I had a superbly seasoned <em>Grilled Tuna with Sesame Ginger</em> (tuna, coconut rice, grapevine tomatoes, white asparagus and fennel) while my oldest grandson had the <em>Portobello Salad</em> (portobello mushrooms, sun-dried tomatoes, roasted peppers, mesclun salad, mozzarella with a Balsamic Vinaigrette), <em>Penne alla Vodka with Smoked Salmon</em> and a slice of &#8220;the best <em>Cheese Cake</em>&#8221; he &#8220;ever tasted.&#8221;</p>

<title><![CDATA[My 22nd Birthday!]]></title>

<p style="text-align:center;">My parents came over on Sunday and we had roast beef! It was so yummy. They also bought birthday cake and a lemon cheese cake which was so ridiculously nice that I asked them to leave the two thirds that were left so I could be alone with it for a while. My sister bought me a lovely silver bracelet, and a book about Lolcats! My parents got me some smart work clothes, some kitchen things and some money <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  They are also thinking about getting me a table and chairs for the house, maybe this or similar from John Lewis:</p>

<p style="text-align:center;">During the week Ryan and I went to a wine tasting session at the bar I work at. Two french men came along from the wine companies that we stock from, and we tried many&#8230;many wines! Rather worst for wear at the end of the evening, after our amazing crisp rolls.</p>
<p style="text-align:center;">Thursday was my 22nd birthday! I had an interview in the morning, which meant I didnt get a lie-in, but I had a midday nap, and then Ryan came home from work. I opened all my presents, and we tidied the house for a mini-party we had in the evening. Here are some pictures of presents:</p>

Apparently Vawn took some photos of me bending over showing my ass off a load in the garden while I was lighting them, but I am yet to see that! I cant help it that my bum doesnt fit in my trousers! <p style="text-align:center;">Yesterday myself and Ryan went to <a href="http://www.elizabethsofeastgate.co.uk/1kit/Default.aspx?alias=www.elizabethsofeastgate.co.uk/1kit/restaurant" target="_blank">Elizabeths of Eastgate</a> in Rochester Highstreet, for a lovely meal. I wore a white summery (stupid for this weather) dress with green leaves and flowers around the bottom, with tights and a white cardigan, and Ryan looked lovely as usual in a shirt and trousers. We both had &#8216;cote de beouf&#8217; with chunky chips and a red wine jus which was stunning, and we shared a chocolate brownie with fudge sauce, creme anglaise, and ice cream. So yummy!</p>

<p style="text-align:center;">I have almost finished Batman: Arkham Asylum for the second time, playing through on hard and it seems to be ridiculously easy this time around, so it hasnt been taking long at all. I bought Ryan COD:MW2 for an early Christmas present, but I still need to finish WaW before I set to work on the new game. I also, of course, have Wet and Tombraider to play now! So many things to do haha&#8230;</p>

Eh bu kadar yatırım yapınca en son aldığım kıyafetlerin de içine sığamaz oldum tabi.</p>
<p>Şimdi boy bir yere kadar, yüz güzelliği de başka bir yere kadar kurtarabilir ama bir noktadan sonra bu obez yaşam modeline itiraz etmek gerekir düşüncesi ve bu konudaki ısrarların da etkisiyle 3 Aralık 2009 tarihinde hayatımda ilk kez diyetisyene gittim.  Diyet programını uygulamaya başladıktan sonraki ilk kontrol bugündü. Doktordan bir aferin aldıktan sonra diyete karşı kararlılığım arttı desem yalan olmaz. Kolay değil daha verilecek 20 kilo var. 1 ayda, 3 ayda, 1 senede almadım tabi ben bu kiloları. 4 sene emek verdim kendilerine. Eh bu kadar uızun süren obezlik nasıl oluyormuş deneyimi tersine çevirmek için de sanırım 1 sene gerekli. Aslında kiloyu vermek de değil korumak mesele. Şimdi ay hiç zorlanmıyorum çok kolay yapıyorum diyebilirdim aslında ama geçenlerde kafayı bulup da bilinçaltım ortaya dökülünce aslında rejim yaparken epeyce zorlandığım da ortaya çıktı. Kim brownie, cheese cake ve aklınıza gelebilecek her türlü tatlıyı sayıklar allah aşkına. Ben gözlerimi kapatınca gözlerimin önünden çikolatalı brownieler geçer oldu. Brownienin içindeki fındık ve cevizler o kadar gerçekçiydi ki nerede ise gerçekten yediğimi hissettim. Hele süslemek için üzerine koydukları vişnenin görüntüsü hala gözlerimin önünden gitmiyor. ya da çay içerken içine şeker atmamak için kuru kayısıdan miniminnacık lokmalar alıp bir bardak çay ile bir kuru kayısı yemeye çalışmak da başka bir macera oldu benim için. TATLI istiyorummmmmmmmmmmmmm diye bağırıyor bilincim ve bilinçaltım. İşte bu noktada diyetisyen faktörü çok önem kazanıyor. Olmayacak bir şey yersem kadına ne diyeceğimden ya da ya bana kötü bir şey derse ne yaparım ben diye o kadar çok korkuyorum ki çikolatalı kremalı tatlılar gözümün önünde geçit yapmaya başladığı anda aklıma bir sonraki kontrole kaç gün kaldığını getiriyorum. Hüüüüüppppp hepsi gidiyor.</p>
<p>Neyse şimdi size yemek tarifi verir gibi bir de diyet tarifi vereyim de bari beni bu kadar motive eden diyet ne imiş siz de görün.  Ehü ehü!!!!  pardon diyet değil, haziran ayında 38 beden bikini nasıl giyilir tarifi bu <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Eh kışa girdik sayılır, yaza çok kalmadı yani <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Kahvaltı: Şekersiz çay, 2 kibrit kutusu kadar beyaz peynir, 2 ince dilim ekmek, 3 adet zeytin, domates, salatalık, yeşillik.</p>
<p>Ara Öğün: 1 meyve, 2 tüm ceviz</p>
<p>Öğle: 1 kase çorba, 2 köfte kadar et, 4 kaşık sebze yemeği, 2 yemek kaşığı pilav veya makarna, salata, 200 g yoğurt</p>
<p>Ara öğün: 1 meyve</p>
<p>Akşam: 1 kase çorba, 2 köfte kadar et, 4 kaşık sebze yemeği, 1 ince dilim ekmek, salata, 200 g yoğurt</p>
<p>Gece: 1 meyve, 1 su bardağı süt</p>

<p style="text-align:center;">18 Oreos, crushed in blender<br />
1/4 cup melted butter<br />
24 oz cream cheese, softened<br />
1 (14 oz) can condensed sweet milk<br />
3 eggs<br />
2 tsp. vanilla</p>
<p style="text-align:center;">Mix Oreos and butter and press in a greased 9 inch spring-form pan.</p>
<p style="text-align:center;">In a large bowl, cream remaining ingredients until well blended. Pour into spring-form pan.</p>
<p style="text-align:center;">Break up 8 Oreos and drop on top of the batter. Bake 45-60 minutes at 300 degrees F. Don&#8217;t over-bake your cheesecakes or they will crack on top.</p>
<p style="text-align:center;">Cool to room temperature and chill in refrigerator before removing pan.<br />

<p>One way to lighten your cheese cake and invest into a new taste is to introduce tofu!</p>
<p>Here is a simple recipe that will please anyone woorying about unwanted calories:<br />
Baked Tofu Cheese Cake!</p>
<p><strong>INGREDIENTS:</strong></p>
<p>-Cream Cheese (Philadelphia): 230 g<br />
-Tofu (kinu tofu): 200g (before pressing water out)<br />
-Sugar: 70g (of your choice)<br />
-Eggs: 2<br />
-Vanilla bean pod: 1 (small) (if not available use vanilla essence)<br />
-Soy milk: a little<br />
-Flour: 2 tablespoons (flour of any kind is fine)<br />
-Cornstarch: 1 tablespoon<br />
-Biscuits (crushed to form a solid base under the cheese cake/optional)</p>
<p><strong>RECIPE:</strong></p>
<p>-Line the bottom of a oven cake mold with a layer of crushed biscuit.<br />
You may do without it but it will help absorb excess water from tofu.</p>
<p>-Soften cream cheese to room temperature (you may warm it a bit inside a microwave oven) and mix with sugar.</p>
<p>-Once the cheese and sugar misture has become smooth, add the tofu by crushing it between your palms, addd the whole eggs and mix well with an eletric whisker until you obtain a smooth mixture.</p>
<p>-Cut the vanilla bean lengthwise and extract the inside (or use vanilla essence), mix it with some soy milk and add to the mixture. Mix well.</p>
<p>-The last three steps may be done with a food processor, but mixing all ingredients one by one give you a &#8220;right feel&#8221;!</p>
<p>-Pour the mixture inside the mold over the biscuit layer and flatten the surface with a spatula.</p>
<p>-Preheat oven to 180 degrees Celsius. Bake for 50 minutes r until you have obtained the right colour and a raising mound in the middle.</p>
<p>-If the colour even then is too white, raise temperature to 200 degrees Celsius and bake for 10 more minutes.</p>
<p>-Let cake completely cool down.<br />
Only then may you take it out of its mold and leave it inside the refrigerator overnight before eating it.</p>

<description><![CDATA[1 1/2 cup graham cracker crumbs 1/4 cup butter, melted 1 1/4 cup sugar, divided 2  8-ounce packages ]]></description>

1/4 cup butter, melted<br />
1 1/4 cup sugar, divided<br />
2  8-ounce packages cream cheese, softened<br />
2 teaspoons vanilla<br />
3 eggs<br />
1 cup sour cream<br />
1 tablespoon lemon juice</p>
<p>Add graham cracker crumbs, 1/4 cup sugar and butter to an 8 inch spring form pan. Mix well and press crumbs with the bottom of a glass into the bottom and 1/2 inch up the sides of pan</p>
<p>In a blender mix cream cheese, sour cream, sugar, lemon juice and vanilla. When completely smooth add eggs</p>
<p>Pour into prepared pan and bake in preheated 350° oven for 60 to 70 minutes<br />
When center is set, turn off oven, prop the door open with a wooden spoon and let the cake rest for one hour<br />
Remove from oven and chill for a minimum of 4 hours</p>

<p><strong>Setting</strong><br />
Wunderbar zentral ist es gelegen, das Strozzi’s. Beim Tommy Hilfiger Shop an der Bahnhofstrasse die Passage durch, quer über den Innenhof und gleich auf der anderen Seite taucht es schon auf, das angesagte Café/Restaurant im nüchternen London-Chic. Im Sommer ist auch draussen gestuhlt, im grossstädtischen Innenhof, und es lässt sich gemütlich bei der grossen Fontäne ein Häppchen geniessen. Häppchen ist hier übrigens gleich das Stichwort: Das Strozzi’s empfiehlt sich für einen Snack oder Salat zwischendurch. Oder einfach nur einen Kaffee.</p>
<p>Das Strozzi’s hat sich übrigens erst vor kurzem ein kleines Facelift gegönnt. Die Besitzer definieren das leicht überarbeitete Konzept so: „Urbaner Schick, reduzierte Gemütlichkeit und dezent elegante Töne bestimmen das Ambiente“.</p>
<p><strong>Karte</strong><br />
Tonangebend sind Salate, Pizzas und Pasta. Aber auch andere Gerichte stehen auf der Karte. Daneben gibt es auch wunderbare Kuchen<img class="size-medium wp-image-596 alignright" title="strozzis" src="http://harrysding.wordpress.com/files/2009/11/strozzis.jpg?w=300" alt="strozzis" width="300" height="200" />&#8230;zum Beispiel einen fantastischen Cheese Cake!</p>
<p><strong>Bedienung</strong><br />
Die junge Servicedame war nett und schnell. Der Manager hinter der Bar machte allerdings einen etwas rotzigen Eindruck und strahlte nun definitiv keine Gastlichkeit aus.</p>
<p><strong>Preis</strong><br />
Auch hier gilt: Alles hat seinen Preis, besonders wenn das Lokal um den Paradeplatz gravitiert. Wir hatten zu zweit 2 x Salat (1 x Kichererbsen, Linsen und asiatischer Omlettsalat und 1 x asiatischer Omletsalat und Pastasalat), 1 x San Pellegrino und 1 x Chinotto = 55 Franken.</p>
<p><strong>Harrys Tipp</strong><br />
Ein netter urbaner Ort mitten in der Stadt. Ideal zum Lunch oder an einem Samstag zum Verschnaufen nach einer Shoppingtour. Einfach nur einen Kaffee trinken oder auch etwas essen. Im Preis inbegriffen sind natürlich die schönen Leute, die man hier sehen kann.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p style="text-align:justify;">There is only one type of cheesecake that I like &#8211; my Aunt Gail&#8217;s.  I have tried many others - New York, Montreal,  your grandmother&#8217;s, etc.  Sorry, they do nothing for me.  And also?  Chocolate cheesecake?  Whoever came up with THAT idea should be shot because really?  GROSS.</p>
<p style="text-align:justify;">Last night I made Aunt Gail&#8217;s cheesecake for a dinner party I am going to this evening &#8211; here is the recipe &#8211; so simple yet so incredibly delicious!</p>
<p style="text-align:justify;"><strong>Ingredients</strong>:</p>
<p style="text-align:justify;"><strong>Crust</strong> &#8211; 2 1/2 cups Graham cracker crumbs, 1/2 cup melted butter, 1/2 cup extra-fine granulated sugar</p>
<p style="text-align:justify;"><strong>Cake</strong> &#8211; 2 packages cream cheese, 2 eggs, 1/2 cup extra-fine granulated sugar, 2 eggs</p>
<p style="text-align:justify;"><strong>Top</strong> &#8211; 1 pint sour cream, 1 teaspoon vanilla, 2 tablespoons extra-fine granulated sugar</p>
<p style="text-align:justify;">
<p style="text-align:justify;"><strong>Directions</strong>:</p>
<p style="text-align:justify;">1.  combine crumbs, melted butter and sugar, press into spring-form cake pan</p>
<p style="text-align:justify;">2.  combine cream cheese, sugar and eggs until smooth</p>
<p style="text-align:justify;">3.  pour into crust</p>
<p style="text-align:justify;">4.  bake at 350 for 20 minutes</p>
<p style="text-align:justify;">5.  combine sour cream, sugar and vanilla</p>
<p style="text-align:justify;">6.  pour on top of partially baked cheesecake</p>
<p style="text-align:justify;">7.  bake for 10 minutes</p>
<p style="text-align:justify;">8.  turn oven off and leave cheesecake inside for 45 minutes</p>
<p style="text-align:justify;">9.  cool completely</p>
<p style="text-align:justify;">10.  top with whatever fruit coulis you like (I did raspberries and blueberries because I had some in the freezer)</p>
<p style="text-align:justify;">11.  enjoy!</p>

<p>När Nicklas var här <a href="http://sotasaker.wordpress.com/2009/10/08/kokssallskap/">häromdagen </a>provade jag en helt ny variant av cheesecake som blev väldigt god. I alla fall om man gillar rosor och den lite parfymiga smak som de ger, vilket jag verkligen gör. Ett bra tips är att använda flytande smör (1 1/2 dl) istället för smält.</p>
<p>15 digestivekex<br />
150 g smör</p>
<p>6 dl grädde<br />
1 dl florsocker<br />
100 gr cream cheese<br />
2 msk rosenvatten<br />
Nägra droppar röd karamellfärg<br />
Rosor till garnering</p>
<p>Krossa kexen med exempelvis en ballongvisp och blanda med det smälta smöret. Tryck ut i botten av en rund form, gärna med löstagbara kanter. Vispa ihop florsocker, cream cheese och grädde till en fast smet. Blanda ner rosenvatten och karamellfärg tills smeten blir ljust rosa. Bred rosensmeten över kexblandningen och ställ i frys en timme, eller kyl ett dygn. Garnera med fina rosor. Ätbara finns att köpa i vissa matbutiker, de här söta rosa knopparna är bara dekoration.</p>

Cheesecakes are of several types, each with distinct essence.</p>
<p style="text-align:justify;">Invented in 1872 and made from cream cheese, the old American style cheese cake is a mouth-watering cake. Different from the American one in taste, New York style cheese cake is made of cream cheese with heavy cream and egg yolks. Rich in essence, it is also known as Jewish style cheesecake. Another cheesecake made of cream, Chicago style cheesecake is creamy inside and solid outside.</p>
<p style="text-align:justify;">Made of a tangy kind of cottage cheese, Pennsylvania Dutch style cheesecake retains a unique and unusual taste. Low in water content but high in curd content, this cottage cheesecake is called farmer’s cheesecake.  A ricotta-like cheese and honey are the chief ingredients of Roman style cheesecake. Having a pie of it is a tradition with Romans till date.</p>

<p><strong>Filling Ingredients:</strong></p>
<p style="padding-left:30px;">- Eggs (4 large)</p>
<p style="padding-left:30px;">- Sugar (to taste- minimum one cup)</p>
<p style="padding-left:30px;">- Ricotta cheese (16 oz)</p>
<p style="padding-left:30px;">- Fat-free Cream Cheese (16 oz)</p>
<p style="padding-left:30px;">- Orange rind crushed (half cup)</p>
<p style="padding-left:30px;">- Lemon Juice (half cup)</p>
<p style="padding-left:30px;">- Mandarin Oranges</p>
<p><strong>Crust Ingredients</strong></p>
<p style="padding-left:30px;">- Graham Crackers</p>
<p style="padding-left:30px;">- Sugar</p>
<p style="padding-left:30px;">- Butter</p>
<p style="padding-left:30px;"><strong>Note:</strong> If I don&#8217;t mention quantity then it means I don&#8217;t remember so use what makes sense.</p>
<p><strong>Other stuff</strong></p>
<p style="padding-left:30px;">- Pre-heated oven</p>
<p style="padding-left:30px;">- 9 inch pie plate</p>
<p style="padding-left:30px;">- Hand-held blender</p>
<p><strong>Crust Recipe:</strong></p>
<p style="padding-left:30px;">- Mix crushed Graham Crackers and sugar with butter</p>
<p style="padding-left:30px;">- Set on 9 inch pie plate till it is smooth and flat (Eg. Press with bottom of measuring cup)</p>
<p><strong>Filling Recipe:</strong></p>
<p style="padding-left:30px;">- Blend in <span style="text-decoration:underline;">one by one </span>(this is important for smoothness and flavor)</p>
<p style="padding-left:30px;">- eggs (one at a time) with sugar and fat-free cream cheese</p>
<p style="padding-left:30px;">- Ricotta cheese</p>
<p style="padding-left:30px;">- crushed orange rind (can be substituted with half-tsp orange essence)</p>
<p style="padding-left:30px;">- lemon juice</p>
<p>Spread cheese cake filling on crust. Bake at 350 F for 50 minutes.</p>
<p>Garnish with mandarin oranges.</p>
<p>You can substitute cream cheese/ricotta, with anything else. If you want New York style, use sour cream.</p>
