<content:encoded><![CDATA[<div class='snap_preview'><p>The problem with gluten and casein intolerance is cheesecake. Well, okay, not directly. But once in a while, you miss little things like a billion calories in a vehicle of rich, thick flavored cream cheese.</p>
<p>So what’s a girl to do?</p>
<p>Cheesefake.</p>
<p>I’ll leave the choice of crust to you. This is an amazing dessert even if you tolerate gluten well.  So a premade graham cracker crust would work fine. The original recipe called for a 9 inch spring-form pan. To that I say “Fie!” Whatever you use, it needs to be cool and ready to go when you finish mixing the filling.</p>
<p>The filling is often tricky. Mine will sometimes form cracks which call for creative decorating like strawberry slices or pecans. It’s probably because I use egg yolks in the recipe which shockingly had no fat in the original. What were they thinking?</p>
<p>Leave the yolks out if you want to trim the fat. It won’t hurt the outcome. But in my case, nixing the fat would definitely hurt my sense of Yum.</p>
<p>This is a time intensive process, but it can be made ahead and it keeps well in the fridge for about a week.</p>
<p>Preheat your oven to 350.</p>
<p>1.5 pounds of tofu crème cheese (Tofutti makes a good one)</p>
<p>10.5 oz of silken tofu. In a pinch, soft or medium will do; but it might crack.</p>
<p>¾ cup sugar. You might know of a way to make stevia work, I have not figured that one out yet. Sugar is necessary for the body.</p>
<p>2 tablespoons arrowroot starch</p>
<p>1 tablespoon lemon zest</p>
<p>2 teaspoons vanilla extract</p>
<p>Blend well in a food processor until smooth. In batches if you have a small processor.</p>
<p>Pour mix into cooled crust. Bake for 50 minutes. Turn off oven and leave the cheesecake in the warm oven for another hour. Remove and cool completely before putting it in the fridge with a tight wrap to prevent uneven cooling (and probably cracks). Cool at least four hours until well chilled.</p>
<p>When you are ready to serve it, hide any cracks with fruit, dabs of whole fruit jelly, whipped cream or any other gilding of the lily you think is necessary. Trust me, this is so good and so light, you might just be tempted to eat it all in one sitting, so to heck with how it looks.</p>
<p>I was so impressed by the nutritional information on this one I actually kept it on hand:</p>
<p>3670 calories in the entire cake. So divide total calories by number of servings. 1 serving = 3670 calories, 2 = 1835, etc. Stop dividing when the guilt goes away.</p>
<p>But they list it as 10 servings, so:</p>
<p>5 g. protein</p>
<p>26 g. fat</p>
<p>28 g carbohydrates</p>
<p>1 g. fiber</p>
<p>450 mg sodium</p>
<p>Less heart clogging than a traditional cheesecake and it makes a great breakfast food too.</p>

<p>after we feasted it was time to watch the sc game. it was pretty sweet when sc won. and then also pretty sweet when em and vern won a game of beer pong. we wont talk about the next game that they lost&#8230;</p>
<p>so, although it wasn&#8217;t the most &#8217;sugary&#8217; sweet day, it was definitely the sweetest day. like rad sweet. bro.</p>

<p><strong>Just be sure to hide it until dessert time.  We brought it to a function last weekend and the guests ate it before the main meal was served.  Though kids loved the fruit and crème cheese mixture, they did pick off the almonds so you may want to leave them out.  Actually, even Greg prefers them without the almonds.</strong></p>

<p>20-25 fresh strawberries<br />
35 fresh blueberries<br />
8 oz. cream cheese<br />
3 T. confectioners sugar<br />
1 t. vanilla extract<br />
1 pinch of cinnamon (optional)<br />
1/2 c. sliced almonds, toasted (if desired)</p>
<p>1. Wash and dry fresh strawberries. Carefully trim the bottom of each berry so that it will stand up on a plate. With a melon baller, scoop off the top and stem. The berry will be hollow inside.<br />
2. In a mixer, whip the cream cheese until it is light and fluffy. Add confections sugar, vanilla and pinch of cinnamon. Beat until fully combined.<br />
3. Fill a medium size Ziploc bag with the cream cheese mixture. Cut off a corner of the bag to make it function like a pastry bag.<br />
4. Gently squeeze the cream cheese through the open corner of the bag and carefully fill each strawberry with a generous amount of cream cheese. Top each strawberry with a blueberry (and 2 almond slices if desired). Serve. <strong><br />

<p>Rostat bröd med fruktmarmelad är ju en klassiker, men ibland kanske man vill ha något mindre sött på toasten. Ett gott alternativ är vegansk färskost som toppas med ett lager creme gjord av soltorkade tomater. Zeta har små burkar med &#8220;Crema di Pomodori&#8221;,  cremen har en förmåga att gå åt snabbt men är hållbar i upp till fem veckor om man ser till att den är täckt av olivolja. Deras strimlade soltorkade tomater i olja är också supergoda, på t. ex pizza eller mackor (kan låta oljan sugas upp av ett papper innan strimlorna läggs på). Tofuline har vegansk färskost (creme cheese), här har jag använt den naturella, men den med vitlök &#38; persilja är säkert minst lika god till soltomatcreme.</p>
<p>Gillar man smaken av soltorkade tomater så är det en fantastisk smaksättare rent generellt, t. ex i pajer och grytor.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Det var faktiskt sonen som var tänkt som matlagare idag. Allt var hemhandlat och fixat men det blev lite ändrade planer. Han kom inte hem den här fredagkvällen så jag fick rycka in i hans ställe och kocka loss. Det blev fyra portionsformar med en salsasås i botten, kryddig köttfärsröra, creme fraiche blandad med ost, tomater och en topping med tortillachips. Sedan är det bara in i ugnen med formarna under 15 minuter så allt blir varmt och fin färg fås.<br />
Servera med en god sallad på dina favoritgrönsaker eller varför inte starta med en förrätt som går i Mexikanska tecken. En tacksam gratäng att bjuda på till alla som gillar Tex Mex.<br />
Tror att sonen nästan ångrar sig när han får se det här. Det blev två formar över efter kvällen. Har han tur blir någon av dem kvar till i morgon när han kommer hem. Men det är inget garanterat för det här blev riktigt fredagsgott.</p>

<p><strong>Tacogratäng</strong></p>
<p>500 g köttfärs<br />
1 gul lök<br />
1 vitlöks klyfta<br />
smör<br />
spiskummin<br />
koriander<br />
kanel<br />
paprikapulver<br />
salt och peppar<br />
1 dl vatten</p>
<p>1 burk taco sauce<br />
2 dl creme fraiche<br />
200 g cream cheese<br />
2 tomater<br />
tortilla chips, chilismak<br />
ost</p>
<p>1. Börja med att hacka löken. Fräs den gula löken och vitlöken i smör. Tillsätt köttfärsen och låt den steka med.<br />
2. Krydda efter humör, matgäster eller infall. Slå på vattnet och låt det koka ihop.<br />
3. Börja med ett lager av taco sauce i botten på formen. Därefter köttfärsröran.<br />
4. Blanda ihop av creme fraiche och cream cheese. Bred ut det ovanpå köttfärsen.<br />
5. Skivade tomater därefter, avlsuta med tortilla chipsen och lite ost.<br />
6. Grädda i 225° C i ca 15 minuter.</p>

<p>Axas proteinbröd med creme cheese, aprikoser, pinjenötter och pumpafrön, till det ett äpple och ett ägg! Så god frukost, jag har länge längtat efter creme cheese men inte köpt det. I vanliga fall försöker jag göra som min PT sagt, inte äta bröd, ibland gör jag undandtag till frukost. Denna frukost gjorde det till ett väl värt undantag!</p>
