A yummy midweek delight!

We love mushrooms and I’m always thinking of a way for more creative dishes - this one was pretty simple!

First I took chopped 1 cup of fresh mushrooms and sauteed them with olive oil, chopped garlic, chopped onion, parsley, with some salt and pepper to taste. Then add 1/2 cup of white wine and simmer until nicely tender and ready to place on the crostini.

Second – take slices of crostini and brush them with olive oil. Rub with fresh garlic cloves and some salt and pepper. Broil at 350 degrees until toasty brown, all they need is just a few minutes.

Place the scrumptious mushroom mixture on top of the toasted crostini and sprinkle lightly with grated Parmesan cheese. Now….sit back and enjoy!

There are always great healthy and simple midweek appetizers to make without much effort. I served this with a delicious Tomato Soup!

Bon Appetitto!!
