<p>
Ingredients:
<p>
1 bitter melon (small to medium sized)
<p>
2 large tomatoes or equivalent to 1 ½ cups
<p>
2 small rasishes or equivalent to 3/4th’s cup
<p>
2 shallots or 1/3 a red onion or equivalent to half a cup
<p>
Salt (coarse sea salt preferred)
<p>
Vinegar (nothing fancy just plain white vinegar)
<p>
Black Pepper
<p>
Sugar
<p>

Preparation:
<p>
Cut the tomato to your preference of slices (make sure to remove the seeds)
<p>
Julienne the radish.
<p>
Dice 2 shallots (any type of onion will do, I prefer shallots since they are more spicy and the contrast with the bitter melon complements the actual flavor of the bitter melon)
<p>
Scoop out the seeds of the bitter melon, slice into very very thin strips like in the picture
<p>
Rinse the bitter melon slices in salt and water once and drain
<p>
In a medium salad bowl add all your ingredients, add the tomato, onion, radish and bitter melon in first and toss.
<p>
Drizzle vinegar over the salad, add 1 teaspoon of black pepper, 1/3rd teaspoon salt, 1 ½ teaspoons of sugar
<p>
If you do not want to consume processed sugar use a sugar alternative or skip the sugar all together, it will still taste good.
<p>
Season to taste, adjust the amount of vinegar, pepper, sugar and salt to your liking. Also, instead of using the sea salt or coarse salt you can use soy sauce or fish sauce instead.
<p>
Best served chilled. Enjoy!</p>
