Confession: I’ve never been too clear on how a sunny-side up egg or a poached egg is really different from a fried egg. All I know is that this is not scrambled eggs. Beyond that, I wait for the whites to firm up on the bottom and then I flip it over on itself.
Basically I just fold the egg whites over onto the yolk and flip it a few times. Cook a little less if you want to leave the yolk a bit oozy and runny. For Simon, I make sure the yolk is cooked.
