<p>Alright, last night I was able to knock out one more Iron Chef from my list as Yuki&#8217;s parents took us along with her sister to Iron Chef Italian Masahiko Kobe&#8217;s restaurant, Ristorante Massa. It&#8217;s located in a very cool neighborhood of Tokyo called Ebisu tucked away off a main street. It&#8217;s a simple little restaurant that seats only about 25-30 people. It was full when we were there, and probably is most nights due to his celebrity status and fantastic food.</p>
<p>There were two pre fix menu options. The one we opted for was the less expensive of the two (approx $65 compared to $85) as it offered one less dish than the other. Since none of us are fat Americans it seemed like the right choice. We could chose one from each category of Antipasto Freddo (3 choices), Antipasto Caldo (three choices), Primo Piatto (5 choices), Secondo Piatto (4 choices), and either a Dolce (5 choices) or Formaggio Plate (pick two out of 4 cheeses) followed by either tea or espresso. We washed down the meal with some Chianti Classico. I have pics of everything, but I&#8217;m only going to mention what I ordered otherwise this post will be way way way too long. This is already one of the longest introductions I&#8217;ve written. So, on to the food!</p>

<p>We each started off with the Oyster starter that was not part of the Pre Fix. It is probably the largest oyster I&#8217;ve ever eaten in my life! So fresh and clean it was simply served in its own juices with a little squeeze of lime and some rock salt. What more does a good oyster need?</p>

<p>Then they brought out an amuse bouche. Baked pasta filled with ricotta cheese, a little slice of pear, and an Italian parsley leaf. It almost reminded me of matzoh with cream cheese, a treat dear to my stomach for one week out of the year.</p>

<p>The Antipasto Freddo I ordered was a foie gras terrine with chamomile. It was served with smoked Ishikawa potatoes, a yuzu consomme jelly, Italian Arugula, and sprinkled with flaked red pepper.</p>

<p>My Antipasto Caldo of choice was a bit of a mis-translation. I thought I was getting duck confit, when it showed up we thought is was duck balls, but it turned out to be chicken gizzards. I actually preferred it to be balls since I&#8217;ve never eaten bird balls, but it was still outstanding! The gizzards were served on top of a kabocha puree with thinly sliced red onions that were soaked in cold water, a shishito pepper, and a pea pod.</p>

<p>The Primo Piatto, pasta course, I ordered was chitarra with cremini sauce. The sauce was as simple and delicious as could be&#8230;olive oil, garlic, and minced cremini mushrooms. There were big slices of sautéed cremini in it as well. With Kobe being the &#8220;Prince of Pasta&#8221; it was easily the best pasta in my life. Cooked to perfection, nice and al dente.</p>

<p>For the Secondo Piatto I got the beef, of course. I perfectly grilled strip loin to medium rare covered in a light mustard sauce and served with asparagus, a shiitake, a pea pod, and a slice of red pepper. Uichiro, Yuki&#8217;s dad, ordered his with black truffles on top. I wish I knew I could do that. He gave me a few of the truffles and they made an outstanding steak even better&#8230;as truffles always do.</p>

<p>I opted for the Formaggio instead of a Dolce. I chose the parmigiano and taleggio. He served it very typically with some dried fruits and sliced nut bread. I washed it down with lemon tea instead of espresso as I wanted to sleep later on.</p>

<p>Maki, Yuki&#8217;s sister, couldn&#8217;t finish her Tirimisu so I took it upon myself to not waste any food. It was served with kiwi sorbet and fresh fruit. Of course, it was the best tirimisu that I&#8217;ve ever digested.</p>
<p>Overall, this was by far the best Italian food I&#8217;ve ever eaten, hands down. And I&#8217;ve been to Italy. I&#8217;m sure there are places as good in Italy, but when Yuki and I went there we couldn&#8217;t afford any of the top restaurants. We ate some pretty damn good food there, but nothing as refined as this.</p>
<p>I have also said before that I didn&#8217;t think modern Italian food existed. I said that due to the lack of creativity and refinement of Italian food in Chicago (although, I have yet to eat at Spiaggia). At home it&#8217;s mostly humongous bowls of pasta with thick rich sauces that weigh you down. Nothing like Ristorante Massa where the portions were clean, fresh, perfectly sized, and creative modern takes on classics. I have a newfound respect for Italian food.</p>

<p>While I have eaten at Sakai&#8217;s, Michiba&#8217;s, and Chen&#8217;s restaurants, this is the first time that an Iron Chef has actually cooked for me. It was very exciting to see Kobe back in the kitchen when we walked in. I think there are two reasons Kobe was cooking for us. First, he only has one restaurant while the others all have numerous. So you know where Kobe will be when he cooks as opposed to it being a crapshoot for the others (I missed Sakai by 4 hours back when Yuki and I went to La Rochelle). Second, he&#8217;s still young at only 40 and still wants to create. Michiba is an old man and doesn&#8217;t cook anymore and I don&#8217;t think Sakai cooks too much anymore either.</p>
<p>No more Iron Chefs this trip as we head back to cold Chicago tomorrow. Next trip I&#8217;ll visit Iron Chef Japanese Nakamura Komei and maybe Honorary Iron Chef French Ishinabe Yutaka. Morimoto will have to wait as his Teppanyaki restaurant here in Tokyo starts at approx $300 a head!</p>

<p>For breakfast I had a Kashi waffle with delicious pumpkin butter, and a sliced honey crisp apple..</p>

<p>Honey crisp apples are so huge..I was overwhelmed with sliced apples..super yummy breakfast though!</p>
<p>It was a cold night, and Leo was shivering in the morning! The apartment stayed pretty chilled throughout the morning so I brought out the space heater and set it near Leo. He enjoyed it.</p>

<p>He wasn&#8217;t eating much(he usually gets depressed when my sister first leaves him). But he ate a greenie! I should have taken a picture for him..</p>
<p>You will be seeing lots of pictures of Leo while he&#8217;s with us so my sister can be updated on how he&#8217;s doing as well by seeing it for herself! Pretty convenient. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I was dreading going to the gym, because it was the first time leaving him alone. I finally got over it and we headed to our apartment gym. I ran/walked 2.05 miles this morning, it took 28 minutes including a three minute warm-up and cool down. I have decided I am just going to commit to running two miles three times a week. Doesn&#8217;t sound like much, but I am going to work on that for a week and see how I feel, I am starting with the s&#8217;s..<b>small steps</b> and <b>slow</b> to be <b>safe</b>! I get ahead of myself and want to run a 10k tomorrow, but I can&#8217;t. I have to train smart and hard but carefully and build up my strength. I am starting from the bottom, but you have to start somewhere right? <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  More on this to come!</p>

<p>The soup was nice and creamy, although made more sweet then savory. We added some S&#38;P to make it more savory, but the sweetness overpowered it.</p>
<p>It was pretty good, although I am not a fan of sweeter soups. I also had a few pretzel crisps, but the pictures came out super blurry!</p>
<p>We cleaned around the apartment a bit to get ready for the arrival of our Christmas tree tomorrow! YAY! I am so beyond excited. We headed out around 5 to a coffee shop to get work done but ended up being invited to dinner with my mother and father-in-law. Before we left to meet them, Adam and I got coffee at Barnie&#8217;s. I got myself a non-fat pumpkin spice latte..</p>

<p>Mmm, I am still not over pumpkiny goodness yet.</p>
<p>We headed out and met them at <a href="http://www.cricketersarmspub.com">Cricketers Arms</a>, an English pub in the heart of Orlando. They were on a mission for some Boddingtons. It was going to be pub grub and probably not the healthiest, but I knew I could find something I would like! Plus, I love a good brew. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>They ordered some &#8220;Black and Tan&#8221; onion rings. I had these plus a very small ring.</p>

<p>That&#8217;s my beer filled to the glass, I had a Boddingtons as well. Reminds me of that Friends episode where when they get back from London they talk about how much they would love some Boddington&#8217;s. I had to oblige love of Friends. It was good and bitter, but I liked it! Most of all, I liked the creaminess of the foam, it was amazingly smooth!</p>

<p>I also drank the lighter of these two samples.</p>

<p>I ordered the roasted chicken which was described on the menu as being served with roasted potatoes and vegetables.</p>
<p>It was yummy, except a few bites in I realized that the chicken and potatoes were definitely cooked in oil. I believe the potatoes were fried a bit, I don&#8217;t believe they get that crispy just by being roasted. My tummy wasn&#8217;t too happy about that.</p>
<p>I drank my beer, along with a Yuengling. Beer overload much? I didn&#8217;t feel tipsy, but I did feel stuffed to the max.</p>

<p>Also a few &#8220;chips&#8221; with vinegar and ketchup. I couldn&#8217;t resist, they looked too good!</p>

<p>I stood up to find I was way too full and had overeaten. I eat so fast sometimes and don&#8217;t realize how full I really am. That&#8217;s one thing I really need to work on.</p>

<p>We headed to Macy&#8217;s after to check out some items we are thinking of giving as gifts.</p>
<p>We were checking out an instant espresso machine that uses a little pod of ground espresso beans to instantly make the perfect shot. I LOVE espresso, and so does Adam. That&#8217;s all we drank in Italy, no large coffees there!</p>
<p>Thankfully, and amazingly they had free samples. We watched the instant gratification right before our eyes. We may ask for this for Christmas. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>Hey, I will take free espresso any day! We then headed to Target to get some things(like green monster essentials) and a sweater for Leo, they didn&#8217;t have cute doggie ones so I got one for a 12-month old boy. Hopefully it&#8217;ll work since he was so cold last night!</p>
<p>Tomorrow is officially a &#8220;detox&#8221; day for me. I need to get back into good habits. I have been feeling lazy and beat down and I can tell it&#8217;s because of the food I have been eating. <b>It&#8217;s great to eat freely on Thanksgiving and Christmas but the in-between time is the perfect opportunity to eat healthier and be more active.</b> It&#8217;s all about <b>balance</b>, and I am still figuring it out. <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I plan on having a green monster in the morning, afternoon(along with some veggies for lunch) and a large salad with veggies. Very light, lots of veggies, fruit and LOTS of H2O. My body is telling me it needs a break. I am happily going to listen. More running, more cross-training, and better eating. It&#8217;s going to the be the healthiest holiday season for me yet! <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<strong>Frustrating!</strong> &#8211; Scott A. Marshall &#8211; <br />We had a bit smaller version of this for years and LOVED it!! This one looks prettier but it is harder to use. We always steamed milk right in our mug before but with this one it is almost impossible to do because it immediately foams over and makes a huge mess. It does not adjust to steam/froth so you just get froth! It drives me crazy! I would rather have the other Capresso that is a bit smaller but worked great. If you never steam milk I suppose the espresso part works fine. I don&#8217;t like it <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' /> </p>

<p>Coffee is the drink of choice for centuries by Italians. As the tea is considered the typical drink of the British, with their famous tea-time, the Italians are famous worldwide for the espresso. Espresso is a beverage obtained by roasting and grinding the seeds of Coffea arabica and Coffea robusta, prepared following a method of infusion under high pressure of water vapor through a special machine.<!--more--></p>
<p>But coffee is not just a simple physical process. Making coffee is an art and a particular lifestyle. Every country has its own particular way of preparing coffee and everyone is convinced that others do only coffee undrinkable. Such as the Italian American coffee which we consider a tasteless slop. There are also many ways to drink espresso, some people only drink the espresso bar, but those who spends many hours each day to the famous coffee machine office, those who prefer to do it at home with coffee.</p>
<p>If coffee, imported from South America had been drinking right from 600, the first coffee shops were opened in Venice in 1645. From there, the little use of this drink spread rapidly, first in England, but then the coffee soon became places of birth and spread of liberal ideas, and were attended by scholars, politicians and philosophers, and disseminating the use throughout Europe.<br />
Instead espresso as we know it came in the early &#8216;900 to Milan by the inventions of the machine to produce it, patented by Ing. Joseph Bezzera in 1902. The patent was purchased by Desiderio Pavoni that began with his company, La Pavoni, in 1905, production in series (one per day) in a small workshop in Via Parini in Milan. This was the first machine for espresso coffee, and was named Ideal.</p>
<p>This first car as we know there are many others followed, from housewives to coffee vending of coffee, which today have become too hot drinks machine. Well definitely a major commercial development!</p>
<p>Today the global market segment consists of about 90,000 million dollars. Brazil alone produces nearly one third of the coffee in the world. Worldwide, there is no shortage of voices expressing concern for what is one of the most traded goods with oil and steel. Periodically, the amounts collected are very volatile, depending on the weather and price fluctuations.<br />
The major world producers, in order, Brazil, Vietnam, Colombia and Indonesia. Subsequently, by order variable depending on the year, Mexico, Guatemala, Honduras, Peru, Ethiopia, India.</p>
<p>Yet coffee remains one of the most traded and most important of the world economy. Nobody would dream of giving up his coffee break, whether at home or at work or waiting for the train, perhaps together with a small food snacks from vending machines, at all times of the day we are grateful for the long journey that coffee continues do.</p>

<p>I have a host of memories associated with espresso.  My earliest memory of buying my own espresso goes back to high school, living in Naples, Italy.  I had missed the bus to school one morning and sensing the opportunity to take advantage of circumstances which were surely beyond my control,  I stopped into my neighborhood cafe, walked up to the coffee bar and placed my order.  I went in there a sulky, insecure adolescent, and came out with a very manly buzz.  I was hooked.</p>
<p>Nowadays, I am looking for ways to be more mindful, especially in the morning before I take my place on the train to meditate.  I&#8217;ve been doing sun salutations as soon as I get up and whispering gathas to myself in the mirror before shaving, trying to get my head in the right place before going down to breakfast on the assumption that yoga and gathas can morph into mindfulness and spread like a virus to the rest of my life.   I am sure that will happen, but I am in the mood lately for a more direct approach, which brings me back to espresso.</p>
<p><a href="http://buddhatrain.wordpress.com/files/2009/11/tea_ceremony.gif"><img class="alignright size-full wp-image-112" title="tea_ceremony" src="http://buddhatrain.wordpress.com/files/2009/11/tea_ceremony.gif" alt="" width="290" height="247" /></a>I do not share an affinity for archery, flower arrangement, or drinking tea with Japanese Zen masters, but just as those everyday activities have been elevated to an art form to enhance  mindfulness, perhaps I can do the same for espresso.   It makes sense, doesn&#8217;t it, to stick with activities that resonate with your own culture?  Although I make a good cup of espresso, grinding the coffee beans and using filtered water in a traditional stove top perculator, I inevitably spill some water because the pot doesn&#8217;t quite fit in the dispenser on the fridge, then coffee grinds end up on the counter or the outside of the pot, and pouring the coffee into the cup is somehow a problem, not to mention the sugar that doesn&#8217;t all end up where it should be.  Maybe I am exaggerating my incompetence a little to make the point that I am not very mindful.</p>
<p>As my father liked to say, it&#8217;s time to take the bull by the horns.  Have you ever noticed how the Buddha was always making lists &#8211; the 4 noble truths, the 8 steps to happiness, the 31 planes of existence,  etc?   Well, here are my 6 obsessive compulsive steps to making a mindful cup of espresso:</p>
<p style="padding-left:30px;">1.  Clean the pot thoroughly, no small grinds on the inner ring,  no stains:  spotless!</p>
<p style="padding-left:30px;">2. Do not spill water on the floor when you retrieve it from the  refrigerator dispenser.</p>
<p style="padding-left:30px;">3.  Transfer and pat down coffee grinds in the pot without dropping them on the counter or on the outside of the pot.</p>
<p style="padding-left:30px;">4. When the espresso is ready, pour it in the cup carefully  without spilling a single drop.</p>
<p style="padding-left:30px;">5.  Same goes for the sugar.</p>
<p style="padding-left:30px;">6.  Enjoy the espresso.</p>
<p>I must keep in mind the valuable instruction I received when I started practicing vipassana meditation: just bring the attention back to the breath (espresso) without beating yourself up for having slipped away.  Becoming aware and bringing yourself back is the heart of training.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Danke für das positive Feedback. Meine Woche in der Schweiz, und zwar genauer gesagt in Bern und Umgebung, brachte mir nicht nur bildungstechnisch eine ganze Menge, sondern ich durfte auch ein bisschen vom Land selbst sehen.<br />
Die Fortbildung war sehr ausgiebig und umfangreich, viel Neues gab es zu erfahren, das ich jetzt mit in meine Seminare und Workshops integriere.<br />
Ausserdem darf ich mich seit letzter Woche zu den autorisierten SCAE-Ausbildern zählen, wovon es europaweit nur 90 gibt. So kann ich jetzt auch mehr Seminare für Profis anbieten. Aber dazu gibt es im Januar mehr, denn dann ist meine neue Website fertig, die ich gestern in Auftrag gegeben habe. Für den Auftrag konnte ich zwei sehr kreative Jungs gewinnen, die meine jetzige Site komplett überarbeiten. Mit Ihrer Präsentation konnten Sie mich sofort überzeugen, und auch beim Marketing unterstützen Sie mich. Ich freu mich schon auf die langfristige Zusammenarbeit mit den beiden. In meiner Freizeit konnte ich mich öfter in der schönen Berner Altstadt umsehen und verschiedene Schweizer Spezialitäten ausprobieren. Besonders empfehlenswert: Das Kornhaus. Fantastisches Restaurant mit gemütlichen Flair und einem edlen Ambiente. Die Speisen: hervorragend!

Ausserdem hatte ich die Möglichkeit, Thun zu besuchen, eine wirklich schöne Stadt an der Aare. Der See, eingebettet in eine unglaubliche Berglandschaft, ist für mich einer der schönsten Seen, die ich kenne: Glasklares Wasser, Ausflugsschiffe (sogar Schaufelrad-Dampfer) &#8211; umgeben von wilden Bergmassiven. Natur pur. Auf jeden Fall werde ich dort noch einmal Urlaub machen, denn das Berner Oberland hat so viel mehr zu bieten. Mein Besuch in Kandersteg bedarf auch einer Wiederholung, viel zu wenig konnte ich mir dort anschauen. Bevor ich mich verabschiede, noch einige neue Nachrichten aus der Kaffeelounge der Berliner Privat Rösterei: Morgen treffen die Weihnachtsbäume ein, alles wird für die kommenden Festtage vorbereitet. An den Advents-Sonntagen ist übrigens von 11 &#8211; 15 Uhr geöffnet, denn dann kann man dort ein verlängertes Advents-Frühstück geniessen:<br />
Röstfrischer Kaffee, Wurst, Käse, Brötchen, Rührei, Konfitüre usw. – alles was das Herz begehrt.<br />

<p>I bought it in September because I was drinking two mugs of coffee (a coffee bong-full) every morning, which left me feeling bloated like the Michelin Man. I thought I could get a similar quantity of caffeine with far less water by using this stove-top device. Anyway, long story short is that either it&#8217;s erratic or I&#8217;m incompetent. Sometimes the coffee doesn&#8217;t work its magic at all, and I sit around for half an hour before realizing that it&#8217;s not going to work; sometimes it backfires, and the coffee grinds end up in the reservoir and nothing makes it up top. A man of science, I&#8217;ve paid careful attention to the levels of water and coffee grinds, but the cause of my troubles seems to have more to do with caprice than reason. I&#8217;m going to replace the rubber seal between the two parts this evening, maybe that&#8217;s it.</p>

Und zwar mit unseren neuen Kolumnistinnen in unserer Kaffeekolumne. Denn ab heute schreiben die beiden verwegenen Piratinnen der <a title="Black Pirates" href="http://www.bpcc.de/" target="_blank">Black Pirate Coffee Crew</a> &#8211; Caroline Maras und Annika Poloczek &#8211; in unserem coffee break. Im ersten Beitrag werden sie uns spannend und vor allem kompetent über die richtige Zubereitung von Espresso, Cappuccino und Latte macchiato berichten. <p>Doch bevor ich die Kolumne jetzt veröffentlich, möchte ich mich auch an dieser Stelle ganz herzlich bei unserem Besuch aus Österreich für die tollen zwei Tage bedanken. <a title="dinner-auction.at" href="http://at.dinner-auction.at/content/" target="_blank">dinner-auction goes Austria</a> &#8211; seit kurzem gibt es uns ja auch in Österreich, das ja zu den besten Gastronomieländern der Welt zählt. Gegenseitiges Kennenlernen und Erfahrungsaustausch war Devise, ein Business-Meeting sollte es werden. Und war es auch! Aber wir haben uns gleich ausgesprochen gut verstanden und so war nach herzlichem Hallo und Erzählen bei Kaffee und Kuchen war klar, fine dining und ein Streifzug durch Berlins Gastronomien steht jetzt auch auf dem Programm. Nach einem arbeitsintensiven, aber kreativ-produktiven Nachmittag haben wir uns dann auf den Weg in den Prenzl-Berg gemacht. Jones &#8211; california<br />I&#8217;ve had this model for over four years, and it&#8217;s a fantastic domestic model. for a home machine, it has a lot of power for steaming, and pulls phenomenal shots with a beautiful creme. nothing is like a professional machine, however this is a great machine for the home.<br />
<strong>Had to return it</strong> &#8211; Daniel &#8211; New York<br />Bought as a gift. Upon opening box immediately noticed this was previously used unit; internal packaging material broken and water spots in the tank. I decided to try it anyway, hoping it had been returned for something other than performance. Nope &#8212; water leaked from below boiler unit quite badly. Really awful for the manufacturer to sell a reconditioned unit as new, worse one that does not work! The item is quite heavy returning it was a real chore. I urge the prospective buyer to be be wary of this manufacturer again. I won&#8217;t risk buying from tjem again.</p>
