<title><![CDATA[All I Want For Christmas is a 260 Yard Drive]]></title>

<p>One of the beauties of today’s technology is that you can tell exactly how far you hit your shots. I use the Sky Caddie SG5 because it has a button to push where my shot started, where my shot ended, and tells me the distance in between. I think mine may be broken though, because no matter how many times I measure my driving distance it always seems to read no more than 220 yards! But let’s not blame the technology…there is no doubt it is the swing that needs fixing!</p>
<p>I play on the <a href="http://AmateurGolfTour.net" target="_blank">Amateur Golf Tour</a> every year and watch player after player, not nearly in the shape I am in, outdrive me. Granted, my drives are more or less perfectly straight and land in the fairway, while their drives are very often scattered all over the course, but I am still envious and want more distance! There is just a much higher probability for me to shoot More Pars if my approach shot is with a 7 iron or higher rather than a 3,4,5 or 6 iron.</p>
<p>I have probably watched every YouTube video known to man on how to get more distance. I am convinced that it is going to be a combination of better technique and physical fitness that is going to up my distance in 2010, despite being yet 1 year older!</p>
<p>All of you must know the scoring is all done with the short game, and even if the green is missed in regulation a good short game can get you your par. That too is on my Christmas list, but not today. Today I want a penetrating ball flight that pierces through the sky and lands 260 yards away. I am confident with the right practice and regimen this will be achieved in 2010.</p>

<p>Kohler Co. buys historic Hamilton Hall, which overlooks the 18th green and fairway of the Old Course.</p>
<p>Hamilton Hall opened as a hotel in 1895. The 45,000-square-foot building looms above the 255-year-old Royal &#38; Ancient Golf Club and offers views of West Sands Beach and the North Sea.</p>
<p>It is the prominent four-story building in the background of photographs taken from the Swilcan Bridge on the Old Course.</p>
<p>The company purchased the building through its subsidiary, The Old Course Limited, which also owns the Old Course Hotel, the Kohler Waters Spa and The Duke&#39;s golf course.</p>
<p>&#8220;Our priority is to complete the preservation of Hamilton Hall and return it to a viable and prominent position in St. Andrews for generations to come,&#8221; Kohler said.</p>
<p>Hamilton Hall was opened as the Grand Hotel in 1895 to capitalize on the popularity of St. Andrews as a tourist destination for golf and sea bathing. Founder Thomas Hamilton is said to have commissioned the construction immediately after his application for membership had been rejected by the R&#38;A.</p>

<p>I spoke about the great Playing Lessons with the Pros show I watched the other day featuring Colin Montgomerie on the Golf Channel. There was another segment I remember that struck me: he was talking about people saying he was a good iron player. Why did they say it? Because he hit lots of greens in regulation.</p>
<p>Colin went on to point out that it wasn’t necessarily that he was better with his irons than other players. The key was that his drives more often than not hit the fairway. And it is a lot easier to be a “good iron player” if you are hitting from the fairway than if you are hitting from the rough.</p>
<p>This was a wake-up call for me to really get more serious about hitting the fairway; or, if on a Par 5 and taking a 2nd shot, to make extra sure that the ball lands in the fairway to set up my approach.</p>
<p>As a relatively high handicapper, it is easier said than done to hit more fairways. But as we will see here on MorePars, we need to have a clear eye on our objectives and set goals in order to achieve them faster. Let’s all focus more often on hitting fairways and when we miss, to get back on them with our next shot. This will statistically lead us over time to scoring More Pars.</p>

<title><![CDATA[Retail Therapy]]></title>

<p>There&#8217;s a lot of speculation in the news lately about the upcoming holiday shopping season. Will it be a bust again this year, or will it be a boon for retailers and signal an upswing in our recession economy? I feel a little guilty that I am not going to be doing my part to help out, but Christmas shopping is just not an activity I engage in. And to my kids&#8217; chagrin, Christmas shopping does not translate into Hanukkah shopping, either. We don&#8217;t go for the whole eight presents &#8211; one for each night &#8211; thing. We are traditional and practical. <em>Gelt </em>is what we give &#8211; the chocolate kind and the kind that can be banked for emergency use in case of future stock and real estate market meltdowns (<em>tfu, tfu, tfu</em>).</p>
<p>But to tell you the truth, regardless of the season, I am really not much of a shopper. It seems that the shopping gene is not as hearty in our family line as <a href="http://truthpraiseandhelp.wordpress.com/2009/10/26/adam-in-the-garden/">the one for green thumbed-ness</a>. I can already see that our youngest son is carrying on our family&#8217;s male dominated gardening tradition, but the hereditary predilection for whiling away the hours at the mall inexplicably ended with my mother. On my mother&#8217;s side of the family, there is compelling evidence (just venture into my mom&#8217;s closet and see for yourself) for the existence of an inherited trait shared by females. I don&#8217;t know what its genotype looks like, but phenotypically it manifests itself as an extreme attraction to retail establishments, especially those specializing in fashion. An attendant symptom is the compulsion to open one&#8217;s wallet and hand over its contents. The &#8220;ka-ching!&#8221; of the cash register (is that even still a relatable image?) has been as much of a therapeutic sound for my female ancestors as it has been for the shopkeepers who happily took their money.</p>

<p>My <a href="http://truthpraiseandhelp.wordpress.com/2009/09/22/its-no-longer-an-either-or-situation/">great-grandmother and grandmother</a> are probably looking down on my sister and me, shaking their heads in confusion and disappointment. &#8220;What went wrong?&#8221; my grandmother would ask. &#8220;I loved to shop, especially for clothes. And when I wasn&#8217;t shopping, I was pouring over Vogue and talking incessantly about the latest styles.&#8221; &#8220;I can&#8217;t believe those girls, would you take a look at what they are wearing on their feet?&#8221; my great-grandmother would add in horror. &#8220;Okay, well I admit that some said I went a little overboard with my shoe shopping, but at least <em>I </em>had taste.&#8221;</p>
<p>Thank God they are not around to know that my sister and I have only sons &#8211; no daughters, making strong the likelihood that the shopping gene will evolve all together out of our line. But, there are signs that it may not die out completely. My brother&#8217;s little girls wear the cutest outfits&#8230;though that may more of an indication of their mother&#8217;s fashionable influence than anything coming from our side. Also, my middle son is rather discerning and particular when it comes to his clothes, so there remains the possibility that the trait just skipped a generation and is alive and well on the Y chromosome.</p>
<p>But if you think that I do not like to visit stores, you are totally wrong. I never said I didn&#8217;t like stores. I just don&#8217;t like shopping with all its attendant trying things on and debating between this style and that color. If I must buy something, I devise my gameplay well in advance and with much thought. I enter the store&#8230;take a sweeping glance around&#8230;zero in on the item I need and like&#8230;try it on (if I must)&#8230;pay for it&#8230;and make a clean and quick getaway. All in the shortest amount of time possible.</p>
<p><img class="alignright size-medium wp-image-1049" title="Fish &#38; Hook - Cartoon 1_0" src="http://truthpraiseandhelp.wordpress.com/files/2009/10/fish-hook-cartoon-1_0.jpg?w=300" alt="Fish &#38; Hook - Cartoon 1_0" width="240" height="180" />I know it may sound weird then, when I say that I like the aesthetics of the shopping experience. I am attracted to the feelings of comfort, possibility, and even make-believe offered by stores. Retailers really don&#8217;t get the return on their investment when it comes to consumers like me. I willingly let myself get reeled in by the deliberate design, the artificial atmosphere and manipulated ambiance, and then&#8230;I wiggle myself free from the hook. I am one of those slippery fish who like to swim around in the alluring waters but who don&#8217;t usually take the bait.</p>
<p>I know this poses a problem for my Jewish conscience. You see, window shopping, practically a national pastime &#8211; especially during an economy like the one we have now &#8211; is not so kosher according to Jewish teachings. There exists the<em> mitzvah</em> concept of <em><a href="http://www.scribd.com/doc/18097185/The-Mitzvah-of-Sensitivity" target="_blank">hona&#8217;at</a></em><em><a href="http://www.scribd.com/doc/18097185/The-Mitzvah-of-Sensitivity" target="_blank"> devarim</a></em>, which translates as showing sensitivity &#8211; including in matters of business and consumerism. In Exodus 22:20, it says, &#8220;Just as it is wrong to cause someone to suffer in business, it is also wrong to make someone suffer with words. One should not say, &#8216;How much does this item cost?&#8217; if he does not mean to purchase it.&#8221;</p>

Ancient Jewish texts have something to say about it.</p></div>
<p>So, how do I deal with this? In two ways. First, I try to avoid lingering in or even in front of a store I really don&#8217;t need to be in and letting myself get engaged in a conversation with a salesperson (no easy task given how quickly they usually pounce on you). On occasions when this approach fails, I usually end up buying something out of a sense of (<a href="http://en.wikipedia.org/wiki/Halakha" target="_blank"><em>halakhic</em></a> Jewish) guilt. Then I repeatedly kick myself every time I see the thing lying there, unused or unworn, on the shelf or in the closet at home,.</p>
<p>Second, and more successfully, I strategically choose specific retail establishments in which to spend my limited time. These stores are practically self-selecting based on either what I really need to buy (like food, if I don&#8217;t want my family to go hungry), or what I really like to do (reading, for instance &#8230;buying lots of books is probably my only shopping vice, but can you really call it a vice when it goes with the territory when you are a Jewish educator?). That way, I end up somewhere where I <em>have</em> to spend money or I can while away the hours (okay, maybe more like minutes given my schedule) without feeling like I have committed a sin, or at least not flagrantly and flauntingly defied a Jewish teaching.</p>

<p>So, now that you are privy to my convoluted philosophy of shopping and quirky definition of retail therapy,  you are probably wondering which stores are at the top of my list. Well, I have to say that those Hawaiian shirted people at <a href="http://www.traderjoes.com/index.html" target="_blank">Trader Joe&#8217;s</a> really make grocery shopping a fun experience. I never thought I would get over having to leave <a href="http://www.fairwaymarket.com/" target="_blank">Fairway</a> behind, but products by Trader Joe and his multi-ethnic alter egos like Trader Jose, Trader Giotto and Trader Ming  have proven very attractive and tasty (and relatively easy on the family budget). Only at this super-friendly store would Bob the checkout guy take the time to <em>kibbitz</em> with my youngest son and indulge his request to help scan and pack our groceries.</p>
<p>I feel whole and healthy the minute I step into <a href="http://www.wholefoodsmarket.com/" target="_blank">Whole Foods</a>. But I know better than to spend the whole day, or even a whole hour in there lest I end up spending my whole paycheck. I make a bee line to the few items I can find only at this store, practically leave the money on the register, and run back out to my car to avoid being sucked into all that expensive wholesomeness.</p>

<p>It goes without saying that I love book stores. They are just magical and make me feel all happy inside. I will let you know, though, that my bubble was burst when my next door neighbor back in New York let me in on a trade secret. She worked for a marketing and design company that guided stores on how to set up their interiors in order to maximize profits. It was all about the flow of customer traffic, apparently. My neighbor worked on the<a href="http://www.barnesandnoble.com/" target="_blank"> Barnes &#38; Noble </a>account. As soon as she started explaining to me in detail how she advised B&#38;N to set up displays and change aspects of the store layout for each holiday season, I knew it was too late. Curiosity killed the cat. That happy feeling has not completely gone away, but now I see through the veil every time I walk into a big chain book store; my innocent book store bliss can never be completely restored.</p>

<p><a href="http://www.target.com/" target="_blank">Target</a> has been a favorite destination since moving out here to California. Unlike other big box stores, I can stand to spend time in the slightly more classy Tar-<em>get</em> (you know, there&#8217;s a reason people pronounce the store&#8217;s name in the correct, French manner). I especially like their newly designed store brand logo and packaging. The possibilities are endless when you buy <a href="http://www.target.com/b/ref=gp_se_search-results-box/180-8095454-3707212?ie=UTF8&#38;node=2055442011" target="_blank">Up &#38; Up</a>.</p>

<p>Maybe it&#8217;s just me, but this new design looks more European. And European signals sophistication, right? It could be that as a parent and educator, I have been around too many <a href="http://www.dk.com/" target="_blank">Dorling Kindersley</a> children&#8217;s reference books (a favorite publisher, headquartered in &#8211; where else with a name like that &#8211;  London), causing me to see echoes of their distinctive design in the new Target branding.</p>
<p>I like to spend time in all these stores, but there is only one that I could literally see myself moving into. Shopping at <a href="http://www.ikea.com/" target="_blank">IKEA</a> is like visiting Sweden, or so the company would like me to think. I stand there and imagine the store being extra-territorial, a little slice of peaceful Stockholm right here just off Highway 101 in <a href="http://www.cityrating.com/citycrime.asp?city=East+Palo+Alto&#38;state=CA" target="_blank">crime-ridden East Palo Alto</a>. I see those model showrooms &#8211; complete apartments set up right there in the store &#8211; and want to just step in, forgetting my troubles, and passing effortlessly into an alternate existence where all that DIY furniture is already put together for me (just too bad the plumbing is not really connected)&#8230;at least for the few minutes before I am snapped back to reality by one if my kids shouting to me, &#8220;Imma, come look at this!  Wouldn&#8217;t this look great in my room? Can we get one?&#8221;</p>
<p>If only I had the chutzpah <a href="http://www.lifeinthefastlane.ca/man-moves-into-ikea-for-a-week/offbeat-news" target="_blank">this guy</a> has:</p>

<p>April, according to T.S. Eliot, is the <a href="http://eliotswasteland.tripod.com/">cruelest month</a>. October? Around here, it&#8217;s the artiest.</p>
<p>Besides all the usual weekly openings (a number that continues to grow), the last two full weekends of October are set aside for the Kansas City Artists Coalition&#8217;s open studio events.</p>
<p>Last weekend was Crossroads- and West Bottoms-heavy. This weekend, you can find artists in their creative spaces all over the metropolitan area &#8212; including Fairway, where Mary Elmusa has her studio.</p>
<p>Elmusa, who teaches (in the Blue Valley district) as well as makes art, hasn&#8217;t hosted an open studio since 2007 and hasn&#8217;t shown in the area since last October and November, when she was part of the Opposition group exhibition in the Coalition&#8217;s Underground Gallery. So this will be a chance  not only to meet the artist, but also to see her newest textile works.</p>
<p>They don&#8217;t always look like textiles, though &#8230; at least, not at first glance. Elmusa&#8217;s pieces &#8212; of which <em>Disturbing the Peace</em>, pictured above, is a prime example &#8212; combine aspects of other media as well.</p>
<p><em>My formal training was in painting. Fortunately, a way of working has evolved for me that combines the interest in painting media and my passion for fabric, sewing construction and textile surface design, such as dyeing and printing on cloth,</em> Elmusa writes. <em>Pattern plays an important part in my work. I enjoy using both traditional and modern technological methods.</em></p>
<p>Elmusa&#8217;s work is more than cerebral, though. She aims to capture and interpret emotions, and she succeeds. A closer look at <em>Disturbing the Peace</em> brings out the &#8220;awww&#8221; factor, but without crossing the line into cutesiness. And if not every stitch is perfect &#8230; well, that too is by design.</p>
<p><em>Authentic art work can occur when one is truly present in the act of creation,</em> she writes. <em>Mistakes, missteps, changes, seams that show all demonstrate the process of creation. Letting such evidence remain in the work helps us to understand that art and life are messy, full of trials and attempts, successes and failures, confusion and clarity. My goal is not to produce a “pretty package”. I want my art to show that in the processes of “working things out” there is purposeful struggle with creative adjustments.</em></p>
<p>That sounds like a springboard for a really good conversation about art &#8230; one that could take place, say, at an open studio event.</p>
<p>As always &#8230; that&#8217;s a hint.</p>

</strong>Before playing, it is advisable to stretch the muscles, to minimize the chances of you get hurt and miss the shots. Professionals are preparing for the game doing a good heating. This includes stretching before and after leaving home. They heat up the driving range for an hour and then made putts and chips for about 30 minutes. Here are some tips for heating: 1) Put a club behind his back and hold the rod with arms at the elbows, 2) Bend the body making the shoulders rotate completely, 3) move your feet and legs as if they were beating the ball, 4) Now hold the bat with his hands and lower it behind his back to below the waist. With hands as far away as possible, lift the club keeping your arms straight, 5) make some rotations on the shoulder and you feel that it will lengthen your torso, especially the upper back and shoulders; 6) Keep your feet moving and stretch the calf and thigh, but do not strain your muscles or stretch them violently.</p>
<p><strong>Output Swing</strong><br />

When you need to give effect to the ball using a driver, vary the height of your tee. If the tee is low, the swing will be a little more vertical, the ball will do a fade (a curve to the right in the air). If the tee is higher than normal, the swing path will plan, which favors a draw spin and the ball will fly from left to right.<br />
Be Optimistic (idem, p. 93): Keep a positive attitude when you&#8217;re on the tee with your driver. Many golfers get discouraged when looking at the middle of the fairway and find problems on one side and another. For example, if the boundary of the playing field is on the right side, it is natural that you think &#8220;do not throw the ball to the right.&#8221; With this negative thought in his head, you will tense and certainly will not make a beautiful and rhythmic swing. It is likely to make a slice in the tee-off and exceeding the limits of the field. Be optimistic: instead of thinking about what not to do, choose carefully place in a particular determining or more possible in the full range of your driver.</p>
<p><strong>Ball slopes</strong><br />
Playing on a slope is important to remember that the ball will fly high and to the left.Therefore, one must make appropriate compensation in preparation. Start by choosing a club with less inclination. The club face should be oriented to the right, for the movement of the legs is restricted and your hands will have to compensate him for the club head is straight at impact. The steeper the slope, the more the movement of the legs is restricted and, consequently, the ball will deviate further from right to left in the air. The basic procedures for the slopes are: 1) place the ball a little later in the stance and put your shoulders parallel to the slope, 2) Thus, the weight is concentrated at the bottom of the leg and to compensate, it is important that you strive to take your body weight forward on the downswing. Next, align the body so that it points to the right of the target, but perpendicular to the face of the club, 3) Focus on a beautiful swing and rhythmic, it is very easy to give a very strong shot.</p>

Many amateur golfers have a hard time to swing into the wind. One of the favorite phrases of Tom Watson is: &#8220;Take a swing with ease, sway with the breeze,&#8221; but of course this can only be done with the correct technique. To play against the wind, not to hit too hard. A common mistake is the player to position the ball too far in stance, almost opposite the right foot. This only induces the golfer to raise even more the putter and shot leaves pressed to the right. Procedures: 1) It is good that the ball is positioned slightly behind (or right) the center of stance. Then, press a little more grip.This gives you more gas and helps to shorten the swing. About two sties of their body weight should be on the left side in the starting position &#8211; and there should be throughout the swing. 2) Now, make a comfortable three-quarter backswing. 3) Focus on a limited follow-through, three-quarters. It is recommended to keep the sticky fingers during the swing, to reduce the urge to hit the ball too hard.</p>
<p><strong>In the Fairway Bunker</strong><br />
A shot from the fairway bunker is undoubtedly the most difficult golf. It&#8217;s a shot very difficult even for professionals and for a beginner golfer, can be a nightmare. However, with three basic exercises, there will be a great improvement. First choose a club that you know will send the ball comfortably over the edge of the central bunker. Next, assume the stance with the ball farther back than normal. This helps ensure you hit the ball first and then the sand. Now bury your feet in the sand a bit, to give a firm foundation for your swing and &#8220;quiet&#8221; their legs. Hold the club about a 5 or 7 cm lower down, to shorten the swing and induce a spin smoother. It&#8217;s good to keep the chin away from chest, which allows a smooth swing and steady pace, resulting in a clean shot.</p>
<p><strong>Short Game</strong><br />
To many, the short game is the difference between a good and a bad golfer. It makes little sense to throw the ball a mile from the tee and hit the second and third shots into the green, in the end, you can not hit the ball into the hole.</p>
<p><strong>Chip</strong><br />
The problem with many players is that they hit the ground before hitting the ball. As an exercise to remedy this problem, place a penny in front of the ball and focus your weight on the left, aligning the ball with his right heel. Now, take a few shots, trying to hit both. You see that now is giving his chips with a slightly downward swing and your hands are naturally ahead of the ball at impact.</p>
<p><strong>Chip Putt</strong><br />
If the ball is near the green, the most simple and safe to make the chip is to use the chip putt. The idea is to give a shot like a putt. This prevents any action of the handles off the tee and results in greater consistency. Procedures: 1) Using an 8 iron or 9, do the normal stance and grip to putt, but position the ball farther back. You must make sure your hands are slightly ahead of the ball in the initial position and put your weight preferably the left, 2) You will notice that being closer to the ball than it would to a normal chip, the base of the club is slightly off the ground. That&#8217;s good, because you must hit the ball with the &#8220;dead&#8221; of the club. Keeping your elbows, use your normal swingda putt, a little fast. If you need the ball to go farther, just make a longer swing.</p>
<p><strong>Pitch</strong><br />
In the pitch you should be perpendicular to the ball-target line and place the ball further back than normal. The body weight should be on the left. Take a light grip. The swing should be steady, accelerated slightly on impact, because any attempt to &#8220;beat&#8221; the ball will result in a backspin. Finally, focus on letting your forearms to open the follow through, as would happen in the normal swing. Do not try to keep the clubface open at impact &#8211; this creates an undesirable backspin on the finish, the base of the club should be pointing to the sky. Many golfers make the mistake of leaving the hands and arms do all the work and then not know why their pitching is so inconsistent. The pitch, with some adjustments, is a scaled-down version of the full swing. And the full swing, when appropriate, is done with the whole body. For the pitch, it is imperative that you use and the muscles. A good exercise for the muscles is the towel. Procedures: 1) Put a towel under the arms across the chest. Tighten the grip a little and take the stance of normal pitch. 2) Now make a few short pitches, trying to keep the towel in place. If you play the ball a little further, simply rotate the upper body more quickly.</p>
<p><strong>Putting</strong><br />
Many golfers find it difficult to keep the putter head in the ball-target line and also hit the holes in the putt. This can be corrected with the following exercise. Place 5 tees on each side of the putter head on a flat part of the green, and parallel to the ball-target line. Make sure that the space between the two lines of tees is just enough to let the putter. Make the putt, focusing on a steady swing and avoiding hitting the tees. How special tip, before leaving for the game, you must pass a 10 or 15 minutes practicing on the putting green. It is always useful to practice putts short, medium and long. Dar putts toward a tee stuck in the green is great for rhythm, and gives a lot of confidence, since hitting a tee is more difficult to hit a hole. Many players do not take seriously the training of strokes to putt. Do not break into the putt without being sure that you have programmed speed and direction required in the swing of training. Only then face the ball. And practice to enforce his putt.</p>
<p><strong>Grip</strong><br />
Hold hands with the uplands to precise strokes. The grip is largely responsible for the direction the club face takes on impact. The best way to make sure that the clubface is facing the target is to hold the bat with the palms almost plateaus.<br />

<p>Right. So, as our ‘hell yeah we have an apartment’ grocery shopping trip we hopped in Matt’s car and headed to 	<a href="http://www.fairwaymarket.com">Fairway Market</a></p>
<p>If you haven’t been to or heard of Fairway (like me prior to this trip) you should acquaint yourself with this Mecca of deliciousness. Aisle dedicated to olive oil? Coffee cabana with barrels of beans waiting to be ground? Freshest mozzarella this side of  Italy? Meat locker the size of the house I grew up in? Yes, PLEASE!</p>
<p>I could’ve spent all day there, but the kitchen called. It was a warm, humid, summer day and after the delicious Cemita I figured I’d take our taste buds to another place.  ‘But Wish’, you might say, ‘you’re from Los Angeles. Isn’t chorizo your lifeblood?’ and I would have to answer ‘yes’. But we also have the ocean.</p>
<p>And there are delicious critters that live in the ocean, one of which is a particular favorite of this household. Salmon. And that meat locker? Yeah, it had lots of salmon. And what goes better with a warm day than white wine? So I got that too.</p>

<p>and Thus, we had Salmon en Papillote.</p>
<p>It sounds fancy. It tastes fancy. It’s super freaking easy.</p>
<p>‘en papillote’ just means ‘in envelope’. We’re essentially steaming the fish in deliciousness.</p>
<p><strong>Salmon en Papillote</strong></p>
<p>1.5 lbs Salmon (about .5lb per adult diner)</p>
<p>3 tbs fresh dill, chopped</p>
<p>3tbs salted butter, softened. enough to cover the top of the fish</p>
<p>crisp white wine (pinot grigio is best)</p>
<p>pepper to taste</p>
<p>olive oil</p>
<p>parchment paper or aluminum foil</p>
<p>baking pan</p>
<p>lemon (optional)</p>
<p>Preheat oven to 375F. Cut your salmon into serving sized portions. Each person gets their own little package.  Cut pieces of parchment paper or foil large enough to wrap around your fish with room. Remember, we will be steaming these guys so we need to have a little room.</p>

<p>If using foil, coat it with a little bit of olive oil. Parchment paper is inherently nonstick so if you’re using that no olive oil needed unless you want some of the flavor.</p>
<p>Place each piece of salmon on its respective square, skin side down.</p>
<p>Place the softened butter in a bowl. Mix in 2tbs of the fresh dill. Using hands (because messy is better), spread the butter on the fish. You can just dot the top of the fish with the butter, as everything is going to melt anyhow, but spreading the butter all over ensures maximum deliciousness. Sprinkle left over dill on top of the butter. Crack some fresh pepper over the top as well.</p>

<p>Now comes the fun part. Tilt the edges of the parchment/foil up so the liquid we’re about to add doesn’t go everywhere. Add about 2Tbs of white wine by slowly drizzling over the fish. I pour it through my fingers so it doesn’t displace the butter and dill.</p>

<p>Seal the envelope by bringing the two long ends together and folding them over at least twice, leaving about ½ in. above the fish. Do the same to either side. you don’t have to leave as much room on the sides. only vertical ventilation is key.</p>

<p>Place bundle on a baking sheet and cook for 11 -12 minutes for parchment and 20-25 minutes for foil.</p>

<p>The fish should be cooked through and flake a bit. If you want it done more, leave it in for 3-minute intervals.</p>
<p>Garnish with lemon.</p>
<p>Consume with the rest of the bottle of wine.</p>
<p>We served this with smashed potatoes and green beans, but this salmon will go with just about anything. It also makes great leftovers.</p>

<p>Beer enthusiasts, take note: the <a href="http://www.pioneersupermarkets.com/">Pioneer on the Upper West Side</a>, on Columbus Avenue between 73rd and 74th Street, has the most impressive beer selection I&#8217;ve ever seen at a supermarket. This fact is even more perplexing considering that the place looks like an absolute dump from the outside, and a <a href="http://www.ctownsupermarkets.com/">C-Town</a> on the inside.</p>
<p>And yet, once you set foot inside, you cannot go more than two feet without bumping into beer. Most supermarkets save the prime end-of-aisle space for their weekly specials, but not at Pioneer. In addition to the absurd number of beer displays, the supermarket&#8217;s absolute jaw-dropper is an entire aisle devoted to beer. A portion of this aisle features six packs, but the majority of the space is taken up by a beer aficionado&#8217;s dream: literally hundreds of individual beer bottles &#8212; from craft breweries across the country to countless global imports &#8212; and empty cardboard six-pack containers, enabling one to create their very own variety pack.</p>
<p>Surprisingly, a couple of the commenters at Beer Advocate seemed fairly nonplussed about Pioneer, although a closer inspection reveals the dissenters to hail from out of town. I don&#8217;t know what the supermarkets are like in San Francisco and Chicago, but in Manhattan, you&#8217;re lucky to exit a Gristede&#8217;s or Food Emporium with anything better than Bud Light. Forget about <a href="http://www.flyingdogales.com/Default.aspx">Flying Dog</a> or <a href="http://www.longtrail.com/">Long Trail</a>.</p>
<p>Additionally, higher-end boutique food markets like <a href="http://www.fairwaymarket.com/shop/">Fairway</a> and Whole Foods aren&#8217;t in this discussion, as you can&#8217;t compare a place like Fairway with your average run-of-the-mill overpriced and disgusting Manhattan supermarket. However, even if you did include those two beloved stores, both of which stock a fairly impressive amount of craft beer themselves, they still can&#8217;t compete with Pioneer&#8217;s overall selection &#8212; Pioneer boasts more than 400 types of beer &#8212; and the ability to mix and match individual bottles.</p>

Just forty minutes west of Wichita the fair is close to the best little city in Kansas.</span></p>

<p style="margin-bottom:0;"><span style="font-size:small;">One can easily get lost in time and space while wandering around the <a href="http://www.kansasstatefair.com/nonfair_description.php?pages=nsf&#38;id=1">280 acres</a> of buildings, rides, fairways and commercial vendors. There is so much to see and so much to do it all can&#8217;t possibly be done in a single outing.</span></p>
<p style="margin-bottom:0;">
<p style="margin-bottom:0;"><span style="font-size:small;">Get there first thing in the morning on the first weekend. That&#8217;s the best </span><img style="border:2px solid black;float:right;margin:2px;" src="http://activerain.com/image_store/uploads/2/6/0/3/8/ar125305183183062.JPG" alt="" width="160" height="120" /><span style="font-size:small;">time to see all the many different animals before or shortly after they are judged. There are cows of many different varieties. More than one breed of goat (my personal favorite among the mammals), sheep, and many beautiful horses. Even <a href="http://en.wikipedia.org/wiki/Llama">llamas</a>, or alpaca as the ones at the fair are, make an appearance.</span></p>
<p style="margin-bottom:0;">
<p style="margin-bottom:0;"><span style="font-size:small;">After the buildings that are a temporary home to these mammals the birds have some <a href="http://wichitahomesite.com/">real estate</a> of their own. Inside the rabbit and bird complex you can find chickens of many different and quite interesting varieties. There are also ducks, geese and pigeons of lots of different sizes and shapes. You never knew there were so many different kinds of rabbits. </span></p>

Tall scary ones, super fast spinning ones and slow easy rides for those more tame souls. There&#8217;s loads of games to win prizes at, cotton candy to eat, a fun house and much much more.</span></p>

<p style="margin-bottom:0;"><span style="font-size:small;">If Competition is your game you&#8217;ll find plenty of that at The Kansas State Fair. </span></p>

<p style="margin-bottom:0;"><span style="font-size:small;">A building dedicated to the domestic arts is full of beautiful hand made quilts of every size, baked goods, knitting and even cooking demonstrations. </span></p>

The beasts are all groomed and pampered to look their best then paraded around in front of the judges and public to be admired. Who has the best looking cow, sheep, goat or even chicken. Whatever it may be. Some really beautiful animals are to seen here. </span></p>

Young people learning about ranching, farming and life. A really great program. Boy scouts and girl scouts make their presence known also.</span></p>

Can&#8217;t forget about wheat in Kansas. You can learn all about wheat at the fair. Where it comes from, how it&#8217;s harvested and what it&#8217;s used for. Yep, wheat is a pretty big deal in Kansas. Not just wheat either, lot&#8217;s of different crops are on display here and there&#8217;s lots to learn about them.</span></p>
<p style="margin-bottom:0;">
<p style="margin-bottom:0;"><span style="font-size:small;">When your hungry it&#8217;s not hard to find a good place to eat something. Food vendors of all kinds are strategically placed about the fairgrounds to ensure no one goes hungry while enjoying the fun.</span></p>

<p style="margin-bottom:0;"><span style="font-size:small;">One thing you won&#8217;t want to forget when you come to the Fair is a good </span><img style="border:2px solid black;float:right;margin:2px;" src="http://activerain.com/image_store/uploads/7/7/2/1/6/ar125305225861277.JPG" alt="" width="200" height="203" /><span style="font-size:small;">pair of walking shoes. There is so much to do and see you&#8217;ll be on your feet all day racing from one cool thing to another. While there are plenty of places to sit in the shade and rest, you&#8217;ll want to be sure not to miss any of the fun!</span></p>
