這一次★煎出像樣的牛排 (Flat Iron,什麼東東)

煎牛排不是難事,要專業,我得從頭學起。
幾天前剛好看到一封亞都麗緻飯店寄來的信,巴黎廳請了義大利米其林主廚史堤凡諾‧詩文尼(Stefano Cerveni)客座,他所設計的7道菜晚餐,其中主餐牛排是Traditional Flat Iron Beef with Polenta,「Flat Iron」是靠近牛肩膀的部位,我問了老師,這部位牛肉很厲害嗎?(亞都這七道菜套餐,含5杯餐酒,是NT6880,外加一成服務費。因此很好奇,他牛肉選Flat Iron用意在哪?是否好吃又算有賺頭的部位?),老師說,今晚做給你吃就知道了。
Flat Iron在Farmers Market或不錯的肉舖,一磅大概Ca10.99,大多切成規矩方形,挑了兩塊台幣不到400元。

嗯,再度廢話完畢,進入正題,學習如何成功煎對牛排。

牛排調味很簡單,中秋節烤肉還需費時醃肉,牛排只需灑上鹽巴和胡椒即可。牛排煎的當中,只能各翻一次面,這基本功我還知道,這次學到的是,換煎另一面後,可加一小塊奶油(無鹽Butter),進去煎,奶油在煎鍋裡融化後,用湯匙舀起煎鍋裡的湯汁,不斷地淋一會兒牛排,來自momofuku食譜的「淋煎法」,優點是牛排吃起來口感不會乾,再來是有新風味。
如何判斷煎好了沒?兩面都煎過後,用手指壓壓肉,感覺有ㄉㄨㄞ彈,就對了。(我又不是鐵沙掌?放心,不會很燙,我試過)

最要的,是血淋淋這件事。
牛排煎到六分熟差不多了,切起來一片血淋淋,通常是牛排煎好後,沒先「休息」。正確做法是,煎好牛排後,讓它在旁冷5~7分鐘,稍降溫再切,就能避免一片血海。
再來是「熱盤」。
我們家裡沒有像牛排教父Danny&Campany的厚鐵盤,用到專業型白陶瓷盤就要偷笑了。盤子保溫,可保持牛排和配菜的溫度,家裡沒烤箱可預熱,可在牛排裝盤前,用滾燙的熱水泡或淋澆盤子2分鐘,也有同等效果。

OK,開始操作。
