Merry Christmas!!

It’s an understatement to say it’s wedding season.  I was recently asked to do a ceremonial wedding cake for a wedding that happened last Saturday, Dec. 19^th. You know, one that can be cut into but doesn’t have to feed a bagillion people. Anyway, with all the excitement of the holiday season, the closing out of one of my rotations at work, and housing changes, I’ve been a crazed mess! But here’s my detailed account of my first ever wedding cake made for Aletheia and Josiah, happily married now- Congratulations!

What I love about making special cakes is that each cake is different depending on the person and occasion.  My prompt this time was: a small-ish wedding cake that is simple and elegant, preferably with odd-sized tiers and a blueish-grey color to match the wedding theme.

I got so many questions during the wedding about how the cake was made that I think it’d be good to post up some “in the process” photos.

Here are the two top layers: Real cake, covered in buttercream. Layer 1: 5″diam x 4″ high. Layer 2: 6″ diam x 2″ high.

I had to figure out how to color the fondant. I was matching it to the wedding invitations…

So, my friend Bri and I played with the gel colors and regular white fondant. We made the main color “core” by mixing equal amounts of violet and blue, with a pinch of grey, and then took that and added it to tons of white to get that light color. Only problem is that it takes tons of kneading to get an even color… and after… ohh… 2 and a half hours or so of kneading/making/rolling fondant… while standing on a phonebook (because I’m a little shorter than my countertops and needed leverage)… well. My arms felt like jello. And I ended up slathering up with Bengay before I went to sleep.

Anyways, I detract. Here’s how the color core was mixed in, along with fondant photos:

So, the bottom layer (7″diam x 3″ height) was a fake styrofoam layer. I attached that with royal icing to the ceramic stand that they provided me (for transport) then attached the top two together with royal icing. Getting those to Bri’s house in my car was quite the feat. Since she lives closer to the venue, I could assemble the entire cake at hers and then she could drive me while I held the cake in the car.

Although it’s Christmas I just had to make a cake, but not just any cake a fondant cake. My first intention was to decorate the cake with green Christmas trees and yellow stars, but when I was about to decorate it I ended up with a valentine them cake.  This cake may not taste or look good, but it was made with love! So I hope my family and friends will still eat the cake.

Merry Christmas everyone! This cake takes a new twist on christmas. Who needs conventional red and green when you have a spectrum of colors awaiting to be experimented with?  This four layered yellow cake is filled with chocolate pudding, and has chocolate frosting.

It seems I know a lot of people with birthdays in December. My sister, mom and husband all celebrate their birthdays in December!!

Sheri and Susan referred a co-worker of theirs to me! I knew this cake would be challenging but I am so happy with the way it came out! I was sent a picture of a cake they liked but they wanted a few things different. The original cake was done in pinks and had zebra stripes. Debbie asked that I use cobalt blue, turquoise, black and white. Instead of the zebra, polka dots and stars.

She also wanted a three tier cake. This cake was HEAVY! Each tier had 3 cake layers so it was a big one! The bottom layer was chocolate with fudge filling, middle layer was chocolate with cheesecake filling and the top layer was chocolate chip with buttercream filling.

Toby contacted me about making Mark’s Birthday Cake. She has the idea of doing a present for him! She wanted a pretty small cake but with Christmas colors.

Well, it’s time for me to pout about how fast my little JJ has grown up now.

He turned 12 yesterday.

(I swear… I just had him!) In fact… just not too long ago he looked like this:

And in between then and now, there’s been some of this eewy-gooey-squishy-sweetness:

Actually, I am grateful for all my boys and that they are growing into fine young men… it’s just hard to believe that that much time has gone by so quickly! And every year just seems to get faster.

Well, there’s no stopping it, so… might as well party and celebrate it!

Soooo… JJ is 12… and last night we threw him a small but VERY fun party. His good friend Tate got sick at the last-minute, so he wasn’t able to come, but Tate’s little brother came  and so did our old neighbor boy Michael! (And the mom’s Branndan & Sandy) We had a blast!

First of all we got to eat some of Daddy’s Pizza! It’s just the best!

While Dave was busy with the pizza’s I was frantically trying to make more fondant for the turtle cake. See, I thought I was being all prepared and organized the day before the party by having everything ready to go so I would be out of the kitchen for Dave to do his magic - but I had messed up the fondant and didn’t realize it until I went to decorate the “cake” Friday afternoon. WAAAH! I had to make more fondant… AND decorate the “cake”. With Dave making pizza dough and trying to cut up all the veggies on one small counter, and me kneading fondant (VERY messy) on another… it was pretty comical - with shots of cursing sprinkled about! (we have a small kitchen.) But we managed to get it all done and no one got stabbed or burned!

And I did get the cake done in time - barely.

But before that, of course, we did this:

And the type of people who eat turtle heads… they just can’t be trusted. Nope. Scary folks, really.

We played charades and LOVED it. I just made up some activities, careers and Bible characters on slips of paper and we didn’t play by all the technical rules. We had quite an age gap going on… 8-46, so it was easier this way.

So fun!

And as far as the “cake” goes… we loved the look of it, however it was just too sweet. A dab would do ya! Well, the rice krispies treats on their own were fine, but with the buttercream frosting as the “glue”, and the marshmallow fondant… it was just way too much for us. We couldn’t even finish the little turtle!! So we were talking about making a vegtable “cake” for the next birthday! I can make some sort of an arrangement out of cut up veggies and then have some ranch dip as the “frosting”! Weirod, I know. But the guys were pretty excited about it until they started to think about what their friends might say about “their mama” (said like Johnny Bravo), if  that instead of the expected sugar high at a birthday party, they get veggies and dip! We’ll see!

I really like these guys. They’re such a hoot.

 We just missed Tate & Tim. (and that is a soda in Bud’s hand – not a beer! Although, he’s old enough.)

 These two nutballs didn’t even want to play charades at first. They were being “shy”. But after they did it once… they didn’t want to quit! By the end of the evening they were doing little “charades” together for all of us. They were so funny!

It was a great night and I hope that JJ’s 13th year is as good as his 12th birthday party!

First of all, wedding cakes are no longer limited to the typical three tier wedding cake.   Yesterday I happened to catch an episode of Amazing Wedding Cakes  and watched Cake Alchemy create not just a cake but a piece of art.  (Here I will disclose that I am a cake show junkie!)  The cake was topped with a blown sugar “chandelier” lit from within for a New York Bridal Show. 

There are no limits to what a cakemaker can sculpt out of flour, sugar, and fondant for your special cake.  OR buttercream?  We wanted to let you know that Fondant always gets a bad rap but has come along way in flavor.  Most will admit that fondant is “neutral’ in taste at best, but it can make a GORGEOUS, custom cake.  On the other hand, buttercream definitely tastes better.  The good news is that you can have BOTH. 

 Most cakes are layered in buttercream icing and then covered with rolled fondant.  The seamless nature of fondant makes it hands down the choice for design.  You can even peal it away and savor the buttercream.  I will say that every once in a while you can find a fondant that is worth enjoying like a giant slice of Maples cake. 

Just look at these cakes from Maples.  Don’t you love the brooches and brocade designs! 

Now, that that dilemma has been solved —Happy Designing and Eating!!!!  Just know that you might have to compete for the limelight at your reception when your guests spy the cake!

This beautiful white 3 tier butter cream wedding cake was created for a wedding in Harrodsburg, KY.   The tiers were shaped into an octagon.  The flowers for the cake were created by Ellis Florist in Harrodsburg.  The bride chose red tulips and red roses.

This two tiered red fondant bandana western themed birthday cake was created for a close friend’s birthday.  One tier was strawberry cake with a fresh strawberry filling and the second layer was a white cake with a fresh lemon filling.  Both cakes were iced with a vanilla buttercream under the marshmallow fondant.  The design was piped on using  royal icing.
