Sweet potatoes are something that I’ve had to learn to like through the years.  Held in a higher regard and deemed healthier than white potatoes, I used to only enjoy sweet potatoes when baked and slathered with mounds of butter and honey (and no Thanksgiving or Christmas dinner is complete without a sweet potato casserole piled high with melted gooey marshmallows, am I right?)  But surely all of the added fat, sweetness and calories cancels out anything remotely healthy about the tubular root. 540 more words
