Leifheit has been a household name in Germany for 50 years now.

Elke Roehrig, German native and vice president of Leifheit International USA, shares her memories of some authentic Oktoberfest food traditions …

Sausage: Bavarian veal sausage (not smoked, contains parsley, take off the skin before digging in) is enjoyed with sweet mustard. Beef or pork sausages are served with Dijon mustard and/or freshly ground horseradish.

Sauerkraut: Buy loose or canned sauerkraut, slice an onion in very thin slices and briefly sauté with butter in a saucepan. Add the sauerkraut, some caraway seeds, and a little dry white wine if desired, then heat.

Soft pretzels: Today, most people buy frozen ones that they pop into the oven for a few minutes.

And, of course … Beer, beer, beer and more beer!

You are all set! Blast the brass music, enjoy the beer carriages pulled by
decorated horses, and wear your “dirndl” or “janker.” Enjoy!

And the hardworking, unsung heroes behind these Oktoberfest feasts?

1. Can openers/jar openers for sauerkraut:

A long-time (I won’t say “old” because it sounds so awful) friend came to stay for

A long-time (I won’t say “old” because it sounds so awful) friend came to stay for a few days and made this absolutely amazing pico de gallo. It’s simple and wonderful and tastes so fresh …

Pico de Gallo

1 large tomato

1 small onion

1 avocado

1 lime

salt and pepper to taste

*optional* jalapeño chili peppers – fresh, seeded and chopped; or canned, diced

*optional* cilantro, fresh chopped

Cut the tomato, onion and avocado into small dice. Zest the lime over them, then juice the lime over them and mix well, adding salt and pepper to taste. If you’re looking for a little heat or spiciness, add chilis ’til you’re happy. Although we’re not fans of cilantro, add it now if you like it. Chill. This is delicious on burgers or scooped with tortilla chips.

There are a couple of Pampered Chef tools I bought at a party a few years ago that I love for the zesting and juicing.

For zesting, their Microplane Adjustable Grater is wonderful. I zest a lot of oranges, lemons and limes for recipes and we are fortunate enough to have a few citrus trees in our yard.

For juicing one or two pieces of fruit, I like their Citrus Juicer. Works like a dream and easily gets every last drop of juice.

What a great way to eat your fruits and vegetables!

If you love to cook (or even if you don’t), there are gadgets in your kitchen that you simply

If you love to cook (or even if you don’t), there are gadgets in your kitchen that you simply love because they make your life so much easier. For me, I’m not the type to buy every snazzy gadget on the market. I have a few things that are tried and true that I use regularly while cooking. Here you go…

Gadget #1: A Good Rice Cooker

I had a rice cooker before I got married and I loved it. You can make so many cool dishes and add a little rice to really create a savory meal. It’s great. And then I married a Japanese man who LOVES rice. I used it in small portions, but he wants it all the time. He even introduced me to meals that require rice. And as our family expands, we require bigger portions of rice. So for a family, I highly recommend a larger rice cooker, which we now have. It will keep your rice hot AND you can steam veggies, which is a much healthier way for you to prepare your vegetables.

Aroma ARC-838TC 16-Cup Digital Cool Touch Rice Cooker and Food Steamer

Click here to check it out: Aroma ARC-838TC 16-Cup Digital Cool Touch Rice Cooker and Food Steamer

Prepares up to 16 cups of cooked rice. Steams meats and vegetables while simultaneously cooking rice for simple, healthy one-pot meals. 15-hour delay timer for flexible and convenient meal planning. Digital LED display for clear delay timer setting. Automatically keeps food warm, fresh and moist for up to 12 hours.

Gadget #2: Wooden Spoons

The only spoons I like to cook with are wooden spoons. They don’t get hot like a metal spoon or even a plastic spoon. They don’t melt. They are durable and comfortable to use. You should have at least three types of spoons: one with a flat edge (great for stirring and sometimes scooping), a round spoon (for scooping), and one round spoon with slits (to drain liquids as you’re stirring and/or scooping). If you have at least these three, you’re good to go.

Calphalon 3pc Wood Utensil Set

Grip-anywhere handle for more comfort and control. Crafted from solid beech wood. Natural oil finish. Hand-wash only. Set includes: tasting spoon, all purpose turner and small slotted spoon.

Gadget #3: Water Heater/Kettle

I love my water kettle. No more waiting by the stove for your water to boil. Remember when they invented the kettles that whistled? Don’t even have to worry about that! This automatically turns off when the water has boiled. I use it all the time for my coffee and tea.

Proctor Silex K2070 1-Quart Automatic Electric Kettle, White

Click here to check it out: Proctor Silex K2070 1-Quart Automatic Electric Kettle, White

1000-watt electric kettle rapidly boils up to 1 quart of water. Detachable cord and non-spill spout for graceful serving. Immersed heating element; automatic shut off; boil-dry protection. Dual water-level indicators; easy-open lid with security lock for safety. Measures approximately 9-1/6 by 5 by 7-1/3 inches; 180-day limited warranty.

Gadget #4: Grill Pan

Works just like a grill, even leaving beautiful “grill marks” on your meat! It’s terrific, and you can use it right in your own kitchen. For many years I lived in an apartment with no bbq. This was the perfect solution, but it continues to be a great tool in my kitchen.

This Old Mountain cast iron skillet is pre seasoned and ready to use. This square grill pan is 10 1/2″ from spout to spout. The handle on this skillet comes with thumb ridges and it also comes with an assist handle for ease of handling. Ridges in the bottom of this pan offer that grilled look, and cast iron retains heat better than any other cooking media and is the cooking choice of many chefs and home cooks alike. The attractive Old Mountain logo embossed on the bottom of this skillet adds extra style and value.

Grater #8: Cutting Boards

A good cutting board is essential for cooking in your kitchen. I recommend getting at least two cutting boards: one for cutting meat, and one for vegetables. It will save you a lot of washing and time while you’re in the middle of making a recipe that requires a lot of chopping.

Kom knappt in hit till dotterns dator.

I picked up this handy little tool at Bowery Kitchen Supplies Inc., located in the Chelsea Market (appropriately, also home to the Food Network studios). This store is a kitchen connoisseur’s dream offering great value on a multitude of products. I can’t visit NYC without popping in to supplement my burgeoning stable of gadgets. The now-defunct Bodum store (an oasis of shiny white and glass) was around the corner, so trips to this neighbourhood left me burdened with heavy bags and a packing nightmare.

Fortunately, this compact ginger grater is easy to pack, made of white porcelain (did I mention my obsession with white china), and reasonable prices, satisfying all requirments when shopping abroad. Williams-Sonoma has a similar model for about $15, but you can find the model pictured above for one-third the price at Chinese markets and other kitchen supply stores.

Cooks Illustrated promoted this tool in their September, 2007 edition and I highly concur. Metal graters, including my beloved Microplane Grater, tend to cut the fibrous root as part of the grating process, potentially leaving your dish a bit hairy. The nubs on this ceramic board, however, tease the pulp out into a fluffy, glorious cloud and leave the fibres behind. Any juices can be tipped, along with the pulp, into your preparation; simply discard the mass of fibres into your organics bin.

Always one for multi-tasking, you’ll be relieved to know that this grater can be used for chocolate, hard cheeses and even cinnamon. Just rinse the board under running water and it will wait patiently in your drawer or hanging from its hole, taking up no space at all thanks to its slim profile, until called into action. This, dear reader, is my tool of the week.

Ah another great piece of steel I use often in the kitchen. Yes that is correct, I am talking about a zester grater but not only just a zest grater but the Microplane Zester Grater!

Originally a woodworking tool, this grates even the hardest Parmesan Reggiano as well as other hard cheeses into fine lacy wisps. Ideal for topping your favorite spaghetti and meatballs or a Caesar salad. It’s also wonderful for effortless citrus zesting to add natural flavors to a lemon crème brulee or a basic vinaigrette.

Dishwasher safe.

I recommend rinsing your grater in warm water immediately after each use. Remove particles stuck in the blade from the back side whenever possible. To remove “stuck on food” from the front, first soak the tool in warm water and then use a cleaning brush and stroke in the same direction as the teeth.

Store with blade covered when not in use in the plastic cover it comes with.

Price range vary depends on the quality and brand but are from $6 – $15.

So when I say zest or fine grate this is the tool I am using which should be added to your set of kitchen tools.

Happy Cooking!

Sinead O’Connor sjunger i sin antagligen mest kända låt Nothing compares to you “It’s been seven hours and fifteen days

Since you took your love away”….

M, S och J, utan er hade jag gått under! Ni är guld värda!

Apparently I’ve been on a carrot kick lately, which I suppose has a lot to do with the fact th

Apparently I’ve been on a carrot kick lately, which I suppose has a lot to do with the fact that I got three bags of them from the local produce place for $1… And I for one cannot pass up that much food for only one dollar… Plus, carrots stay good for a long time. And after this I still have enough for one more carrot dish. I have yet to decide what it will be though.

So anyway… back to the carrot dish at hand. These carrots patties are a family recipe. I wouldn’t say they’re a secret, but you should feel privileged… haha. Especially because it wasn’t written down for so long. But my sister and I took care of that…

Ingredients:
2 cups of grated/shredded carrots
1 cup of chopped onions
4 eggs (or flax seed substitute)
1 can of mushroom soup
2 cups of Italian seasoned bread crumbs

Materials:
Large Mixing Bowl and mixing spoon
Shredder or cheese grater
Knife
Cooking spray or Olive Oil
Can opener

So I always start out by shredding the carrots. I have a really cool shredding machine that I use so it doesn’t take that long. But you can use smaller side of a cheese grater. That does the job just as well, although it will take a bit longer.

Then I chop up the onions. Overall I find the finer they’re chopped, the better. I tried to do them in my shredder actually, but that ended up being a big mistake. Mostly because the onion is so full of juices, the machine just squished everything. Kinda gross. So if you have a way of finely chopping the onions, do it.

Then you add the onions to the carrots and throw in the other ingredients. Just make sure they’re all mixed in well.

And the last part is to fry them up. I usually do a couple in the pan at a time. Also, I mostly treat the patties like I’m making pancakes to start. I just let them sort of plop in and once I see that the edges are cooking and the middle is warming over/hardening, I flip them. And then unlike how I make pancakes, I usually will press the patty in to make it a more uniform flat shape.

Läste nyss i SvD
Stackars, stackars krake!

KramKram!
