Acupofcotter&#8217;s maternal family was fortunate enough to gather at Auntie Joan&#8217;s beautiful home in celebration of Grandpa&#8217;s 85th birthday and also to celebrate the season of change and renewal too. Cousin Allie and Aunitie Joanie took me to their other cousin&#8217;s store on 17th ave in Calgary called <a href="http://www.rivasecostore.com/m.php?p=home" target="_blank">RIVA&#8217;s ECO STORE</a> &#8212; a beautiful eco shop with lots of neat fashion, home, and living ideas for the conscious consumer. Beautiful store with all of the products I see online such as <a href="http://www.yolocolorhouse.com/" target="_blank">YOLO Paint</a> (that was started by a couple of art students I believe), <a href="http://www.americanclay.com/" target="_blank">American Clay</a>, <a href="http://www.milkpaint.com/" target="_blank">Old Fashioned milk paint</a>, <a href="http://www.billywould.com/" target="_blank">Billy Would Jewellry</a> from Vancouver, and lots of local Calgarian notable designers too.</p>

<title><![CDATA[Getting a Work Out on Ko Tao]]></title>

<content:encoded><![CDATA[<div class='snap_preview'><p>Ko Tao is known for its beautifully clear water, which makes it a prime dive and snorkel destination.  It is full of dive shops and avid scuba divers looking to see the wonderful world of underwater sealife.  Despite my desire to see turtles, sharks and other colorful and large sea creatures, I am extremely frightened of being underwater, and being meters below sea level does not appeal to me. </p>
<p>Thus, I went to Ko Tao looking for another relaxing weekend in the sun.  I had scoped out the place a few days before and realized that it is very accessible on foot.  There are trails and although most of the roads are not paved, most of the island can be reached with a short hike.  Well, hike is an understatement&#8230;</p>
<p>I arrived to Ko Tao early on Thursday morning.  Luckily, there is now a boat leaving Lang Suan to the island that only takes 2 hours.  What a perfectly easy trip to make!  I decided that I was going to follow a path that was indicated by a dotted line on my trusty map to a place where there were a few cheap places to stay.  Five minutes later, I was pretty much climbing a mountain and forging myself through a very faded trail and overgrown brush.  The one time I forget my shoes!  My trip to Ko Tao was definitely a testiment to how trusty Rainbow Sandals can be. </p>
<p>I had a huge smile across my face the entire time.  I love hiking and I loved that there was a huge possibility I was lost.  The trail was not easily marked and there were plenty of times when I had to make the executive decision on which way to go.  I loved that I had no idea where I was going or where I was going to end up.  I loved that I had no clue what I was looking for or what it was going to look like when I got there.  To put it plainly, I loved it. </p>
<p>I made it to a secluded beach covered in little bungalows called Sai Thong Resort.  It was perfect!  I checked in and was led to a little bungalow a ways up the hill.  As soon as I saw the hammock I knew I was in heaven!  I dropped my backpack  and jumped into the hammock to relax after my hard trek through the wilderness.  But I wasn&#8217;t done.  There was way more forging ahead of me.  There was still a dotted line on the map that I hadn&#8217;t followed and I wanted to reach the town that day so I could set up a snorkeling trip. </p>
<p>So I set out again.  This trail was much more difficult to follow and it included large boulders and steep inclines, but once again I found myself on a little secluded beach and decided to take a dip in the crystal clear water.  The ocean in Thailand is absolutely heavenly.  It is the perfect refreshment from the hot sun.  After an ample amount of time relaxing, I set out for the town.  Lots of hiking later on what they call &#8220;roads&#8221; I reached a place called Viewpoint resort and stopped to have lunch.  My table was located right on the rocks with the perfect view of the beautiful Chalok Baan Kao Bay. </p>
<p>After an amazing lunch, I headed into the town to find a place to set up a snorkeling trip.  I found a shop and put down the money to buy the trip.  He asked me where I was staying and too much dismay my bungalows were too far for them to pick me up in the morning!  I had to do the hike again early in the morning!!  This didn&#8217;t discourage me one bit.  I enjoyed the hike and because I haven&#8217;t worked out too much in Thailand, I took it as a wonderful challenge.</p>
<p>The next morning I woke up around 7 and made my way into town.  The hike was rough and difficult, especially in the morning, but it was a good rough and difficult.  I truly enjoyed it.  Apparently, I was forgotten because I waited for about an hour and then was rushed to the boat with everyone starting at me like <em>I</em> was the late one.  And by rushed, I mean I had to jump aboard another motorcycle taxi, and a motorcycle taxi on the mountainous Ko Tao, is an adventure I wasn&#8217;t ready for.  But, once again, I survived, and made it to the boat. </p>
<p>The day of snorkeling was exhausting, but completely worth it.  At the first stop, Shark Island, I learned about &#8220;sea lice.&#8221;  According to a website on staying safe at the beach, &#8220;Sea lice are actually the microscopic larvae of jellyfish and other ocean stingers wchich contain the same nematocysts (stinging cells) as mommy and daddy.&#8221;  I felt liky my body was on fire!  The first sting was surprising.  I literally said out loud, &#8220;What in the world was that!!&#8221; Then as I decided to follow the path of some big fish, I must have swam into a swarm of them, because I felt them on every inch of my body!  The snorkeling was amazing there, huge fish, beautiful coral, but I had to get out of the water as soon as I could! </p>
<p>The rest of the day was magnificent!  We circled the entire island and ended up on the little island off the coast called Ko Nang Yuan.  With two hours to kill on the small island, I quickly climbed the hundreds of stairs to a breathtaking lookout, knowing that I would soon be swimming in the crystal blue water and relaxing in the white sand.  What an amazing sight.   I would have loved to see the island when it was empty and uninhabited, but then again I probably wouldn&#8217;t be standing there if it was deserted.</p>
<p>Ko Tao is only two hours away from Lang Suan.  Thus, when I want to have a &#8220;lazy weekend&#8221; where I don&#8217;t want to travel far, this is where I will come.  It is an amazing island with so much excitement to offer and I can&#8217;t wait to explore it more!!</p>

Not just because the guys she&#8217;s marring is <strong>THE</strong> sweetest guy you&#8217;ve ever met  but I also can&#8217;t wait for one other thing&#8230;it&#8217;s time to bust out THE DONGS!!! </p>
<p>Yes people&#8230;we need penises and LOTS of them! I don&#8217;t know about anyone else but this is hands down my favorite part of the whole wedding experience. </p>
<p>For some it&#8217;s the dress and the food and the planning for the big day&#8230;but there can&#8217;t be a bigger day than the <strong>BATCHLORETTE PARTY!</strong>What better excuse do you need to behave baddly&#8230;<strong>VERY BAD</strong>&#8230;so bad you need a spanking, preferably given by a hot ass sweaty or oily guy, in nothing more than a banana hammock and a sleazy smile to send you off to your <strike>doom</strike> sweet marital bliss LOL! I love it so much that it makes me want to re-marry just to have one naughty night with my girls. Not even a girls night out with them is the same cause they get all mommy on you BLAH&#8230;who needs that??Now a batchlorette is where it&#8217;s really at&#8230;crown a girl in Penises and a sash that says &#8220;miss outa control Bachlorette&#8221; with a Penis Lolly-pop and it&#8217;s <strong>ON</strong>! </p>
<p>The possibilities are endless. All of a sudden your run of the mill house wife is converted into the biggest MILF you&#8217;ve ever seen and a group of them is just instant sex! I personally am a fan of the batchlorette weekend cause sometimes one night is just not enough. Think about it. You&#8217;re about to be married for supposedly the rest of your life (or at least it feels like it) and this is the last time your man has said it&#8217;s OK to Ogle at someone else&#8217;s penis, so hell yeah you&#8217;re going to want more than one night&#8230;at least that&#8217;s what I recommend;)</p>
<p>Needless to say my girl is about to have a pull all the stops, most hottest Batchlorette ever!! Let the shenanigans begin! </p>

<p>Natalie&#8217;s fourth birthday cake.  Since the summer she said she wanted a hammock birthday cake.  We went camping quite a few times and Nick usually brought his hammock along with us.  She laid it in it a few times but never for very long since she is so little.  I am sure when she is a little bigger she will have her own.</p>
<p>So a few months ago, I was searching the Internet for some ideas for this cake.  I knew I wouldn&#8217;t be able to make the actual hammock on the cake so I was looking for other ideas.  On one of the sites, I found the hammock that I eventually used.  It was actually a McDonald&#8217;s Happy Meal Toy a few years ago.  So I searched ebay and sure enough it was on there.  I think it was less than $4.00 with shipping which you can&#8217;t really beat considering many cake toppers would cost much more.</p>
<p>So back to the ca<a href="http://phantom33.wordpress.com/files/2009/12/mg_12871.jpg"><img class="alignleft size-medium wp-image-238" title="Hammock Cake" src="http://phantom33.wordpress.com/files/2009/12/mg_12871.jpg?w=300" alt="" width="300" height="262" /></a>ke, Natalie wanted to have chocolate (believe it or not, she never had a piece of it).  I used the Hershey chocolate cake recipe which is very easy and tastes really good.  I baked it in a 9&#215;13 pan and it turned out a little flat.  My mom was here and said it would not be enough cake with only one layer so she thought I had to make another one.  I did, although I knew there would be more than enough cake for everyone (of course I was right and we had a lot left over).</p>
<p>I knew I wouldn&#8217;t have enough peanut butter icing for in between the layers so I thought I could the left over marshmallow icing from Natalie&#8217;s Smores Cupcake which turned out pretty tasty.  I then iced the cake with a peanut butter frosting and added a chocolate-peanut butter glaze on top.</p>
<p>I thought the chocolate would make a great base and look like dirt at a camp site.  I made the trees from sugar c<a href="http://phantom33.wordpress.com/files/2009/12/mg_1292.jpg"><img class="alignright size-medium wp-image-239" title="Tree from cake" src="http://phantom33.wordpress.com/files/2009/12/mg_1292.jpg?w=300" alt="" width="300" height="200" /></a>ones with a star tip.  As you can see, Natalie only wanted a tree.  I made the campfire from whoppers cut in half for the stones, pretzels for the logs and 4 candles for the fire.  I made the stream out of white icing gel and blue sprinkles.  I think it turned out pretty cute and tasted pretty good too.</p>
<p><strong>Hershey Chocolate Cake</strong></p>
<p>2 cups sugar<br />
1-3/4 cups all-purpose flour<br />
2 cups sugar<br />
1-3/4 cups all-purpose flour<br />
3/4 cup HERSHEY&#8217;S Cocoa<br />
1-1/2 teaspoons baking powder<br />
1-1/2 teaspoons baking soda<br />
1 teaspoon salt<br />
2 eggs<br />
1 cup milk<br />
1/2 cup vegetable oil<br />
2 teaspoons vanilla extract<br />
1 cup boiling water</p>
<p>1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.</p>
<p>2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.</p>
<p>3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with &#8220;PERFECTLY CHOCOLATE&#8221; CHOCOLATE FROSTING. 10 to 12 servings.</p>
<p>VARIATIONS:<br />
ONE-PAN CAKE: Grease and flour 13&#215;9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.</p>
<p>THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.</p>
<p>BUNDT CAKE: Grease and flour 12-cup Bundt pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.</p>
<p>CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.</p>

<p><strong>Peanut Butter Frosting</strong><br />
Makes about 5 cups</p>
<p>10 ounces cream cheese, at room temperature<br />
1 stick (4 ounces) unsalted butter, at room temperature<br />
5 cups confectioners’ sugar, sifted<br />
2/3 cup smooth peanut butter, preferably a commercial brand (because oil doesn’t separate out)</p>
<p>1. In a large bowl with an electric mixer, beat the cream cheese and butter until light and fluffy. Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes.</p>
<p>2. Add the peanut butter and beat until thoroughly blended.</p>
<p><strong>Chocolate-Peanut Butter Glaze</strong><br />
Makes about 1 1/2 cups</p>
<p>8 ounces seimsweet chocolate, coarsely chopped<br />
3 tablespoons smooth peanut butter<br />
2 tablespoons light corn syrup<br />
1/2 cup half-and-half</p>
<p>1. In the top of d double boiler or in a bowl set over simmering water, combine the chocolate, peanut butter, and corn syrup. Cook, whisking often, until the chocolate is melted and the mixture is smooth.</p>
<p>2. Remove from the heat and whisk in the half-and-half, beating until smooth. Use while still warm.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Ko Jum is a little island off the coast of Krabi.  It takes about an hour to get there.  It isn&#8217;t that well known.  It only has electricity during certain hours of the day.   There are bungalows sparsely scattered along the coastline and there are beaches where no one is in sight.  Thus, Ko Jum was heaven to me.</p>
<p>I arrived at the island and instantly fell in love.  I stayed at a little place called Bo Daeng Bungalows where the manager was  an amazing lady named Deela who was always smiling and laughing.  The bungalow had the basic ammenities:  a bathroom (of course, no western toilet), a  handheld shower, a comfortable bed, and a mosquito net.  There were hammocks everywhere.  The few guests that were there were scattered around the grounds, reading, chatting, drawing, just enjoying the laid back atmosphere.  The weekend was full of swimming in clear blue water, sunbathing on a beach where only occasional wanderers could be seen, and reading in my favorite hammock placed perfectly on the beach ready for that sun to set. </p>
<p>The most important part of the weekend was my alone time.  I&#8217;m constantly surrounded by people, some speak english some speak thai, but nonetheless I am never in complete seclusion.  Well I got it this weekend and it was exactly what I have been looking for.  I took a step in the right direction.  I started defining what it is I want in my life.  Most importantly I want happiness.  And I just need to find what it is I want that will bring me that happiness I am searching for.  Many of my ideas for happiness conflict with each other, so I just began the process of figuring out which is the most important one.  I don&#8217;t know, but I know I will find out.  The solitude of the island was absolutely amazing.  Being able to just focus on myself and my thoughts and my feelings brought me a little closer to finding myself and what I want to make out of my life, who I want to be.</p>
<p>I thank Ko Jum for bringing me one step closer to knowing the true me.  I will be back.</p>
