It is not surprising then that one of ASHA’s own professors was nominated in the managerial category of the recently concluded Mabuhay Awards 2009 in the Dusit Thani, last November 9. Mr. Zondy Ricafort is an instructor at the Asian School of Hospitality Arts.

Sir Zondy, as most of his colleagues and students call him, literally rose from the ranks. His humble beginnings can be traced from his being a bus boy, then a waiter to supervisor, and finally to being the restaurant manager of Cravings EDSA Shangrila. He is also the Chief Barista of TCB (The Coffee Beanery), one of Cravings’ sister companies. On top of this, he had also mentored and coached his protégés in some barista competitions in Singapore.

Any stranger would instantly notice how Sir Zondy can be the life of the party. He is very warm, bubbly and fun to have around. He makes jokes with his students and colleagues that any time Sir Zondy is around; it is bound to be one filled with light-hearted laughter.

The Asian School of Hospitality Arts is a firm believer in the Filipino’s natural gift of warmth and hospitality, it is not surprising then that Sir Zondy, their instructor in the F&B (Food and Beverage) module is nominated among the others who are equally inspiring individuals.

Apart from his imparting of skills and knowledge in ASHA, Sir Zondy is the restaurant manager of Cravings EDSA Shangrila where he maintains the high quality standards which the Cravings Group of Restaurants are known for.

While Nervous Nellies are still ruling the roost, signs of an industry rebound are finally becoming tangible. During the last couple of months many industry insiders were saying a recovery was afoot, but the evidence was anecdotal. Now it looks as if there are some provable signs – and the numbers to back it up — that demand for hotel room nights is coming back.

However, the biggest problem going forward will be pricing power. That is, hoteliers will still have a hard time pushing that ADR back to levels enjoyed just a little over a year ago. As the hotel industry rapidly lowered prices to pump up occupancy, the industry will now have to reckon with a baseline price that is much lower than it’s been in about five years.

“It is getting a little better,” said Mark V. Lomanno, president of Smith Travel Research (STR), during this past weekend’s AHLA Fall Conference held in conjunction with the International Hotel/Motel & Restaurant show here in New York. “During the last couple of months, demand has begun to trend upward and I can say with a great deal of confidence it is not going to get any worse.”

Lomanno said that, while the hotel business has been in a malaise, on average there are 2.7 million rooms sold every day in the United States.

According to figures from STR, rates during the last year declined precipitously from an average daily rate (ADR) of $107 a night to about $96. However, that seems to have hit a plateau that is reminiscent of the previous downturn experience in fall 2001 after the terrorist attacks of 9/11. But it’s the revenue per available room (RevPAR) that has suffered most during the last year.

Lomanno said RevPAR is at the lowest levels since the company began tracking that statistic 16 years ago. RevPAR has plummeted 18.1 percent this year, a full 10 percent by last year’s most dour estimates predicted by PricewaterhouseCoopers last year at this event. RevPAR slipped just 1.8 percent in 2008. As for ADR, it’s dropped about 9.1 percent so far this year after a 2.5 percent decline in 2008.

Though Warren J. Marr, director with PricewaterhouseCoopers (PwC) said the U.S. economy has stopped contracting, he expects the economy recovery to be “uneven and a bit choppy.” Part of the reason is the severity of this past decline which has been extremely significant, especially for hotel occupancy. “The magnitude on occupancy during this decline has been greater than at least the last two previous cycles,” said Marr.

He said, however, that leisure business will still be strong, although it’s because the consumer is more highly engaged in finding the best deals. According to PwC, on September 15, 2008 – the day Lehman Brothers fell apart – consumer interest in travel deals was 13 percent below average. On November 5, 2009, interest was 7 percent above average. That’s a huge swing that is helping to further depress pricing power.

“The Internet has added to the challenge and the industry needs to be targeted as to how and why to discount. What is happening now is if I find at 8:00 AM you drop your rate, by early afternoon your competitors will too. That is something you didn’t have to deal with 10-15 years ago,” said Marr.

Interestingly Marr broke down exactly where the occupancy declines have come from during the past year. And it’s group business that is essentially responsible for the mess the industry is in. Call the AIG Effect or whatever, but 81 percent of the decline is due to vanishing group business, something many hoteliers don’t see fully coming back until 2011. Seventeen percent of the decline was due to transient business; however, Marr said it was offset by increases in leisure travel. Two percent of the decline was due to contract business, such as fewer airline crews utilizing rooms.

Due to the scarcity of seats in colleges to obtain certain courses, many students get deprived of the professional or technical education. With the economic downturn, many organizations have focused on efficiency and cost reduction to survive instead of a growth model. The capital for growth and available fiscal resources to undertake new endeavors has not been available since September 2008 and thus CEOs and CFOs with the support of their CIOs have focused on expense reduction to make their numbers.  This is especially true in the hospitality industry where occupancy and daily rates have significantly declined thus eliminating growth opportunities.  Plans have been pushed out to post recovery or have been scrapped or are just being completed at a slower pace. Organizations are tactically focused on filling available inventory to survive and unfortunately many hotels may not make it through the economic downturn.  

While the current economy will force a “shake out” of the hospitality industry and has challenged many operations, post recovery, there will be a much stronger and efficient hospitality industry that will be competing for every reservation. The industry will be poised to return to comfortable operating margins then push for growth.  With the improved efficiency some organizations will lag behind in the recovery while others excel.  A major factor will be the revenue generating technology solutions and decision support systems.  

Over the past two decades computing has significantly contributed to the US GDP yet most business leaders look at technology systems as a “cost of business” instead of a strategic imperative. The fact is early technology adopters and innovators remain competitive longer while less technologically advanced organizations will lag. The early adopters have advanced their thoughts from a “system” to a system of systems (or highly integrated systems) and are now evolving to date centric organizations that can compress decision making from days to hours and improve the quality of the decision. 

In the hospitality industry, many leaders focus on the central transactional system. However, the industry leaders look at their technology platform as a distribution system where they can provide room availability and property information to numerous channels from traditional voice and travel agent to Web 2.0 and unstructured group business. The true leaders will focus on improving revenue management and business intelligence systems that can dynamically price each room so the entire property is more profitable instead of focusing on selling to the last room. They will then focus on real time distribution of business information and transactions to the thousands of properties. Thus it is not one piece or a system but the entire data centric distribution and decision-making systems that will improve revenue generation and give a hospitality company a competitive advantage in the post down turn economy.  

Compared to other business areas like HR, operations, sales and finance, Information Technology is still relatively young and immature. Most business leaders started using a personal computer the second half of their career.  They purchased their first system a little over 15 years ago and now have several computers at home, they have one in the car and they even wear a computer that has more capacity than the first computer they owned. Technology is quickly changing and is poised to dramatically change over the next five years with cloud computing, improved wireless capacity and software as a service. For the leaders in the hotel industry, the future is not about the installed technology which most consider a commodity product but it is about data and services for improved business decisions and customer experiences that will deliver improved revenue in the future. ‬ ‪ ‬‬ ‪

The hospitality industry is one of the fastest growing industries in India. Along with accommodating high number of foreign travelers, the internal tourism in the country is also witnessing a boom. However, the tourism industry has seen a dip in business over the past year because of a series of unfortunate events such as the economic slowdown, 26/11 attack, changing the major twenty 20 venue and, of course, the H1N1 flu.

Travelers are taking new interest in India and, with the 2010 commonwealth games being hosted in Delhi, there is a serious need for upgrading the hospitality sector. According to the estimates, over 2.5million foreign tourists and 4.5 million domestic tourists are likely to arrive in Delhi on the eve of the commonwealth games.

The tourism ministry has revised guidelines for hotels across all categories. These guidelines include:

• Major focus on security, energy conservation and quality services
• Depending on the star category, hotels are now required to have metal detectors, CCTV, X-ray machines, under belly scanners to screen vehicles, verification of staff and suppliers
• In order to meet global standards in hospitality, existing and new hotels across the country will now have to comply with facilities for the differently-abled persons with respect to accessibility, special rooms with bathrooms and facilities in the public area by September 1, 2010, according to the revised guidelines

 With an increasing focus on the commonwealth games, there is a higher need for mid-market hotels in India matching global standards.

• Though the mid market segment is currently in its infancy stage, the need for world class quality stay at affordable prices is steadily increasing
• The major concern in the hospitality industry today is the shortage of one lakh fifty thousand rooms fueling the average room rates across India
• The demand for hotel rooms is going to exceed supply by at least a hundred percent in the next two years
•  At the same time the growing income rate has resulted in a change in the mindset of the people thus creating an increasing demand for quality stay at affordable prices

Some of the steps that have been taken to increase hotel capacity so as to reduce the demand supply gap are:

• The Centre and the State Governments  have given their consent for public private partnership (PPP) and has approved three hundred hotel projects
•  The Indian hotel industry is adding sixty thousand quality hotel rooms which are to be ready by 2012
• The Federation of Restaurant and Hotel Association of India has suggested to the government that the floor area ratio of the existing hotels must be increased as this would help create additional rooms in the existing properties
• Two, three and four star hotels coming up in Delhi and the NCR region before the 31^st March 2010 have been exempted from paying tax for five years, in order to promote the development of Hotel rooms in India

There is a direct relation between hospitality industry and tourism industry. India has a wide scope of tourism that helps to hospitality industry. Both are giving Indian economical backbone strength. There are many places to watch India’s beauty such as Taj Mahal, Agra Fort, Qutub Minar and many more.
