<content:encoded><![CDATA[<p>You know why I hate sleeping? It&#8217;s not just due to the waste of five to eight hours I give up each night. It&#8217;s not due to the dreams I suffer through every night. Money is being lost every extra hour I take a night. Don&#8217;t sit on your ass, when you can work for a living.</p>
<p>In the past, I believed that I would be making what I wanted in a medium that required less time than others. Instead, I only found out that I got broker by sitting on my ass.</p>
<p>Now, I sleep less. I play games less. I do everything enjoyable less often. If you want to keep on going and want to do things, you need to be able and willing to give up the desire to do these extra-curricular activities.</p>
<p>In fact, saying no is one of the hardest things that you can do in life. Willpower is not an easy attribute to acquire. Giving up when things get hard is an easy attribute to acquire. Currently, I am easily putting 80 percent of my time in activities that will build my future.</p>
<p>If you want a good future, a life or anything, you have to work for a living. The perfect pieces of gold are found by working your ass off.</p>

<p>We all want to do something in life that lead us to happiness and the most of us want to choose the shorter way.</p>
<p>We seek only one thing here, happiness. We look for happiness in many foreign and distant places,hidden and forgotten by the world hoping to find a trace of happiness. After a long search we begin to wonder if there really is happiness in our lives.</p>
<p><strong>Happiness Is Here</strong></p>
<p>Your happiness is not at the one next to you, or at your father,  son, neighbors, America, Europa or Mars. Happiness is here, is in you. People seek their happiness at others, they seek their happiness outside, looking at the world and wanting to be like those they admire.</p>
<p>You have to look at you to see what you really are and what purpose do you have on this earth. No one will do it for you. No one will seek your happiness. if you consider yourself a loser, so you&#8217;ll be. If you think you can do anything in life, act!<br />
Your action determines what you are. Happiness is a path here on earth, a path that must be traveled all the way, but you should know that the path does not start in the world, it starts from you.</p>
<p><strong>Do What You Love</strong></p>
<p>Always do what you love. Love can bring happiness. You know what you like to do, you know what can make you happy. you just have to use the gift that you were given .</p>
<p><strong>happiness cost, but it is not for sale </strong></p>
<p><strong></strong>You have to fight to get the happiness, so what sense would have life? What value would have the happiness if everything would be easy? You have to fight, no matter how down you are! You have to get up no matter how many problems you have! Trust in yourself and remember,  seek happiness in your soul!</p>

<p>We all know a lazy.. maybe it&#8217;s a friend, a family member or simply a known ..<br />
<em>Laziness is the first sign of a lack of purpose in life</em>, so was our friend, the Lazyman, He lived in a small house in a corner of the street, did not seem to be the most beautiful house in the cleanest way.<br />
Every morning he woke up late and went to work without a lease of life, he was the man who always delay. Working at a store, his presence was necessary but due to delays the store lost good clients, so the boss has decided to fire him without any regret.</p>
<p>He tried to engage in several places but it was in vain. With no money to pay the house, he gets homeless on the streets. He sold everything, the only thing what was left was a dusty guitar that his father gave him before he died. Lazyman blew the dust off the guitar and he saw wrote:</p>
<p><em>&#8220;Each of us is the maker of his own destiny&#8221;</em></p>
<p>His way of life brought him here and he knew he had to do something, so he began to play guitar, although he did not know, was willing to try anything just to rehabilitate his life.</p>
<p><em>&#8220;The difference between who you are and what you want is what you do&#8221;</em></p>
<p>The warm days and lonely nights flew past over Lazyman, when was came thoughts of helplessness and disbelief he motivate himself thinking about how it feels having your home, your bed, your job. Always playing the guitar he began to love the music. He composed a song and sang as he knew better without failing.</p>
<p>One day a passerby hear him singing, he stopped and listened to him until the end. That man was the head of a bar and decided to give him a chance to sing one night in his bar in exchange for a sum of money. He began singing enthusiastically. When he finished there was a silence after that a wave of applause from the public. He has found a purpose for fighting, he truly began to live, he felt he was doing what he had to do, music.</p>

<content:encoded><![CDATA[<p>I&#8217;m a big fan of really riding a theme into the ground. Sometimes, waiting for the perfect moment can make even the most mundane activities really <em>pop</em>! Here are a few choice, full-immersion, everyday doings.</p>
<p><strong>Reading Colette.</strong> If you plan to delve into the works of Colette (which you should), please do so while sipping an exotic tea, in bed, wearing a kimono, and ashing your cigarette in a cut crystal ashtray.</p>
<p><strong>Listening to Lucinda Williams. </strong>Williams is probably best enjoyed during summer heat, although she also works on dark and freezing nights. It&#8217;s all a matter of personal taste. These aren&#8217;t hard and fast rules!</p>
<p><strong>Delving into the world of Zelda Fitzgerald</strong>. F. Scott should be reading during June and July; Zelda should be read only in the oppressive, swampy heat of a rough August so that you feel a little crazy yourself and can really come to grips with what her life was. This may seem difficult at first, but the appreciation you walk away with will be worth it. Particularly if you read her hallucinogenic <em>Save Me the Waltz</em>.</p>
<p><strong>Watching silent movies<em>.</em></strong><em> </em>Only late at night, during the winter months.</p>
<p><strong>Watching game show reruns.</strong> Only in the middle of the day, with sandwiches.</p>
<p><strong>Investigating Raymond Chandler novels.</strong> Best if done with tattered paperbacks during late fall. Bonus points if you use Aramis cologne.</p>
<p><strong>Investigating Cornell Woolrich novels.</strong> Best if done during steamy May days.</p>
<p><strong>Becoming obsessed with Bobbie Gentry.</strong> Rainy spring nights. Also an excellent time to watch <em>A Letter From Three Wives</em>.</p>

<h2><strong><span style="color:#33cccc;">It&#8217;s summer.  The sun is hot and your house is full of clutter!  This is the time to get rid of stuff!  It&#8217;s the time to simplify your life and live better.  Who isn&#8217;t intrigued by the idea of simply living happier, healthier, and having more money!  Now I&#8217;m not saying you have to become a full on minimalist and throw everything away, I&#8217;m just saying I have a few easy ideas for you to try.  But first, I&#8217;m going to give you reasons why you should try them!</span></strong></h2>
<p><span style="color:#808080;">Life just flat out feels better when the area you live in is uncluttered.</span></p>
<p><span style="color:#808080;">Less stuff&#8211;&#62; less time spent cleaning (awesome!)&#8211;&#62; more free time!</span></p>
<p><span style="color:#808080;">You can sell things you don&#8217;t use that have value; that means extra $$$ in your pocket!</span></p>
<p><span style="color:#808080;">If you donate items you aren&#8217;t using, they will be used by people who need them.</span></p>
<p><span style="color:#808080;">You have space to BREATHE!</span></p>
<p><span style="color:#808080;">You have the time read, ponder, and RELAX.</span></p>
<p><span style="color:#808080;">Not buying every little thing you think you &#8220;need&#8221; adds up way faster than you think and saves you a ton of money.</span></p>
<h2><strong><span style="color:#33cccc;">So, let&#8217;s get right into these 25 super easy, super awesome ways to &#8220;trim the fat&#8221; off your every day living!  LESS IS MORE!  Let&#8217;s do this!</span></strong></h2>
<p><span style="color:#808080;">1. If you have not worn your clothes in over six months, get rid of them.  You can donate them to a thrift store or to people who may need them or will wear them. </span></p>
<p><span style="color:#808080;">2. Any household items that you don&#8217;t use or use them very rarely, give them away or sell them.  They&#8217;re taking up unnecessary time and space.</span></p>
<p><span style="color:#808080;">3.  Each new item you decide you must absolutely have, find two things to ditch.</span></p>
<p><span style="color:#808080;">4. Let friends borrow your stuff and don&#8217;t ask for it back if you don&#8217;t really need it.</span></p>
<p><span style="color:#808080;">5. Only buy basic needs, or things you ABSOLUTELY need.</span></p>
<p><span style="color:#808080;">6. Pass on your books as you read them, so other people can enjoy them too.</span></p>
<p><span style="color:#808080;">7. Sell some of your gadgets.  You don&#8217;t need all of them and it means extra space AND extra money for you.</span></p>
<p><span style="color:#808080;">8. Start simple hobbies that do not require a whole of stuff (for example, music, photography, writing..).</span></p>
<p><span style="color:#808080;">9. Get rid of all extra trinkets and decorations, you don&#8217;t need them and they just add to clutter.  You know when you first move into a place and it&#8217;s bare and clear?  When you have that fresh new vibe?  It will feel more like that!</span></p>
<p><span style="color:#808080;">10. GO GREEN!!! Get rid of things in your home that use tons of energy.</span></p>
<p><span style="color:#808080;">11. Watch less TV.  It can suck up so much of your time.</span></p>
<p><span style="color:#808080;">12. Get rid of other media distractions that you don&#8217;t really need.  It&#8217;s not necessary to check your email five times a day..</span></p>
<p><span style="color:#808080;">13. Put a sign on your mailbox requesting not to receive any flyers or unsolicited mail.  This can save a lot of clutter and waste.</span></p>
<p><span style="color:#808080;">14. Leave your credit and debit cards at home!  Only carry a little bit of cash.  Otherwise if you want to use your debit card, put daily limits on it.  </span></p>
<p><span style="color:#808080;">15. Downsize your vehicles.  You can sell one or not even have a car!  If you live in an area where you are free to get around without having a car then do so.  It saves money and maintenance. </span></p>
<p><span style="color:#808080;">16. Clear out all clutter and extra things from you vehicle and keep it that way!</span></p>
<p><span style="color:#808080;">17. Take an entire weekend pretending like you are going to move.  Clean every room out and get rid of everything and anything you wouldn&#8217;t take with you.</span></p>
<p><span style="color:#808080;">18. Have a specific place for all of your things and keep them in those places.  </span></p>
<p><span style="color:#808080;">19. Label, simplify, and organize your file systems (in your home and on your desktop).</span></p>
<p><span style="color:#808080;">20. Combine your email accounts, bank accounts, and others.  This can make them so much less hectic to keep track of.  </span></p>
<p><span style="color:#808080;">21. Recycle and reuse things as often as you can.</span></p>
<p><span style="color:#808080;">22. Give your things away to those w</span><span style="color:#808080;">ho have less than you.</span></p>
<p><span style="color:#808080;">23. Volunteer your time to help those who need it.</span></p>
<p><span style="color:#808080;">24. Grow a plant or a flower. </span></p>
<p><span style="color:#808080;">25. Enjoy nature&#8217;s company.</span></p>

<content:encoded><![CDATA[<p><a href="http://ball-publications.com/godmatters/2012/02/21/livebetter-how-to-be-better-on-your-worst-day-6-easy-thoughts/happy-lady/" rel="attachment wp-att-2614"><img class="alignright size-full wp-image-2614" title="happy lady" src="http://wwwdotballpublicationsdotcom.files.wordpress.com/2012/02/happy-lady.jpg?w=300&#038;h=201" alt="" width="300" height="201" /></a>Have you noticed that our ultimate desire in life is to be better today, than we were yesterday?  This world emphasizes being the best person you can be.  Oprah has even trademarked her phrase <em>&#8220;<a title="Can You Really Live Your Best Life Now?" href="http://ball-publications.com/godmatters/spirit/can-you-really-live-your-best-life-now/">live your best life</a>.</em>&#8221;  There&#8217;s nothing wrong with wanting to live your best life.  Even Joel Olsteen became popularly known for writing his book series titled,  &#8221;<em>Live Your Best Life Now</em>.&#8221;  I wrote an article titled <em><a title="Can You Really Live Your Best Life Now? What’s The Key?" href="http://ball-publications.com/godmatters/spirit/can-you-really-live-your-best-life-now/">&#8220;Can you really live your best life now?</a></em>&#8221; as a rebuttal against Joel Olsteen&#8230; you should check it out <a title="Can You Really Live Your Best Life Now? What’s The Key?" href="http://ball-publications.com/godmatters/spirit/can-you-really-live-your-best-life-now/">here</a>.</p>
<p>But trying to live your best life doesn&#8217;t always lead to living better.  Sin is the culprit!</p>
<p>Your worst day can be any day that you live on earth.  We live day to day, again trying to make it better.  But better never comes.  This day is now your worst.  And the worst days continue.</p>
<p>But God never intended for you to continue living this way.  He wants you to be truly better &#8211; even on your worst day &#8211; <strong>with these 6 easy thoughts:</strong></p>
<p><strong>God wants to give you your heart&#8217;s desire.</strong>  <em>&#8220;Take delight in the LORD, and he will give you the desires of your heart.&#8221; (Psalms 37:4)  </em>Just knowing that God loves you so much that He wants to give you what you ask for, speaks volumes.  Because God desires this for us, just trying to be better, by doing His will, will get you there.</p>
<p><strong>God promises you happiness.</strong>  <em>&#8220;Light shines<span style="font-size:11px;"> </span>on the righteous and joy on the upright in heart.&#8221;</em> (Psalms 97:11)  Even when you feel your worst, God&#8217;s spirit will give you joy.  When you believe in Jesus and seek to put him first in your life, you will be <a title="How To Endure To The End!" href="http://ball-publications.com/godmatters/2012/02/02/how-to-endure-to-the-end/">happy in the midst of your turmoil.</a></p>
<p><strong>Being better is knowing that God is good.</strong>  <em>&#8220;Know that the LORD is God.  It is he who made us, and we are his; we are his people, the sheep of his pasture.&#8221;</em> <em>(Psalms 100:3)</em>  God&#8217;s grace and mercy should allow you to get up everyday with praise and thanksgiving in your heart.  Just knowing that you serve a loving, just, and good God &#8211; who loves you unconditionally &#8211; should inspire you to live better for Him.</p>
<p><strong>God&#8217;s joy and spirit remains in you.</strong>  <em>&#8220;I have told you this so that my joy may be in you and that your joy may be complete.&#8221; (John 15:11)  </em>When you feel that you&#8217;re having a bad day, just remember God&#8217;s joy also dwells inside of you.  Praying and praising God will allow His joy to manifest and show itself to those around you.  So even when you don&#8217;t feel your best, His joy will overcome those times.</p>
<p><strong>Remain joyful even when you are having problems.</strong>  <em>&#8220;Consider it pure joy, my brothers and sisters,<span style="font-size:11px;"> </span>whenever you face trials of many kinds, because you know that the testing of your faith produces perseverance. Let perseverance finish its work so that you may be mature and complete, not lacking anything.&#8221; ((James 1:2-4)  </em><a title="The gods Of This World" href="http://ball-publications.com/godmatters/bookstore/the-gods-of-this-world/">Satan&#8217;s job is to steal your joy</a>.  He wants you to have bad days &#8211; everyday.  And he gets great pleasure from making you miserable.  But God is telling you that it&#8217;s all a test.  A test you can win!  God allows Satan to test you to see how strong your faith is in Him.  So when you allow Satan to steal your joy, make you angry and stressed, then he gets the victory and NOT God&#8230;</p>
<p><strong>Sharing your comfort will help others be comforted.</strong>  <em>&#8220;Praise be to the God and Father of our Lord Jesus Christ, the Father of compassion and the God of all comfort, who comforts us in all our troubles, so that we can comfort those in any trouble with the comfort we ourselves receive from God. <span style="font-size:11px;"> </span>For just as we share abundantly in the sufferings of Christ, so also our comfort abounds through Christ.&#8221; (2 Corinthians 1:3-5)  </em>This is the final key to becoming better on your worst day.  If you are suffering your worst day imaginable such as: <a title="Hardship, Tragedy, Sickness: Why Me Lord?" href="http://ball-publications.com/godmatters/2012/01/20/hardship-tragedy-sickness-why-me-lord/">death, loss, finances, tragedy, recession, (fill in the blank)</a> &#8211; just know that God is your best comforter.  You must pray during your worst time and ask God to comfort you.  He is the only one who can do it!  And once his love takes away your pain, you now become a testimony for someone else.  His love now comes from within you and will help someone who may be going through the same experiences.  It becomes a domino effect&#8230;</p>
<p>These are some thoughts that will help you to live better even when you feel your worst.  God didn&#8217;t promise us that this world would be a piece of cake. <content:encoded><![CDATA[<p>We all do a lot of thinking and working which isn&#8217;t helping us to maximize our happiness and wellbeing. The <a title="The Happiness Scale " href="http://www.probaway.com/MetaScales/Happiness/Happiness.htm">Happiness Scale</a> shows a direction to go for improving your behavior and maximizing total happiness from any place you happen to find yourself. Wellbeing is a bit different from happiness because it emphasizes more the physical condition of people rather than the mental and behavioral states. The various Probaway blogs on the subjects of Lifehavens and the Earth Ark are an attempt to maximize the physical genetic survival of humans and other existing life forms. That is the extreme example of wellbeing but some more mundane habits are needed for daily use. The Happiness Scale is similar and makes a good point of departure for creating a parallel scale and it might be called a <em><strong>Wellbeing Scale</strong></em>.</p>

About 10,000 can be distinguished by humans, although no one knows just how this ability works. In the early 1900s, a researcher named Henning suggested there are really only six categories of smells, combinations of which account for all the detectable odors and aromas. </font></span><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Henning arrayed these categories into a three-dimensional prismatic map whereon, his theory suggests, all smells could be plotted to some point on one of the surfaces. For example, it should be possible for something to smell <i>fruity, putrid, resinous, and burned,</i> but impossible to have a smell that is <i>putrid, spicy, and resinous.</i> The combinations are interesting to plot and contemplate. </font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">The chemical make-up of wine includes many trace elements that contribute to the combination of smells. Some of these same elements are also found, frequently in higher concentrations, in other familiar foods, spices, flowers, etc. Consenquently, wine smells may often bring to mind these other familiar things, albeit with more subtlety and much less obvious or instant recognizability. With training, concentration, and practice, nearly anyone can learn to dissect and describe these elements of complexity. </font></span></p>

There really is no precise definition of &#8220;basic taste&#8221;; these four only differentiate and describe common taste sensations. Bitter tastes come from alkaloids, such as contained in coffee and quinine (tonic water). Salty tastes, by far the most common in prepared foods, come from sodium chloride (table salt), sodium nitrite (especially in smoked meats or fish), sodium bicarbonate (especially in baked goods, canned foods), and sodium benzoate (especially in soft drinks and packaged beverages, jellies and preserves, margarine and fast-food burgers). Sour tastes come from acids (<em><span style="font-family:Verdana;">citric</span></em> in oranges, grapefruit, etc., <em><span style="font-family:Verdana;">malic</span></em> in apples, pears, <em><span style="font-family:Verdana;">lactic</span></em> in dairy products). Sweet comes from sugars, primarily sucrose in the American diet, although there are many others (fructose, glucose, lactose, etc.).</font></span></p>
<p><font face="Times New Roman, Times, serif"><font size="4"><font color="#000099"></font></font></font><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Taste has historically been one of the least understood sensory mechanisms. Misinterpretations of research conducted in the late 1800s, led to &#8220;tongue maps&#8221; that suggested that the basic tastes are sensed primarily by specific areas, such as the tip or center. Subsequent investigation proved that taste buds on the entire surface of the tongue can sense all of the various tastes.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Tastes are sensed by nerve receptors called <i>buds</i> and there are about 9,000 of them on the average tongue. Combinations of tastes, along with the accompanying combined aromas, account for different flavors. Taste compounds have smaller molecules than those of odors and, unlike odors, must be <em><span style="font-family:Verdana;">hydrophyllic</span></em>, water-soluble.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Sensitivity to specific tastes varies considerably with individuals. It is possible in fact to be taste-blind. The test uses a chemical called <i>phenylthiocarbamide,</i> which tastes extremely bitter to some persons and quite bland to others. Some research has suggested that there is higher alcoholism incidence among the genetically taste-blind.</font></span></p>
<p><b><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Eastern Influence</font></span></b><span style="font-size:10pt;font-family:Verdana;"><br />
<font size="4" color="#000099" face="Times New Roman, Times, serif">Additional theories of taste perception come into Western consciousness from Eastern thought. Asians generally add &#8220;hot&#8221; (the <i>capiscum</i> or <i>capsaicin</i> taste of peppers) to the four basic tastes. At the beginning of the 1900s, Japanese scientist Kikunae Ikeda identified this element as more complex and variable than merely hot. He isolated one element that causes this taste in meat, milk, mushrooms, and seaweed broth as the amino acid <i>glutamate</i> and called the sensation &#8220;umami.&#8221; </font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Rather than a specific flavor, umami is best described as a distinctive <i>quality or completeness of flavor</i>. The nearest English equivalent would be &#8220;savory&#8221; or &#8220;delicious.&#8221; Oriental food often gets umami, its &#8220;complete&#8221; flavor, by the addition of monosodium glutamate (MSG).</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">The scientific journal <u>Nature</u> published an article in the Spring of 2002, that American scientists Charles Zuker and Nick Ryber have identified a taste receptor for amino acids, supporting the idea of Umami. Wine typically contains from one to four grams of amino acids per liter. While still controversial, there are ongoing studies of umami and it is an emerging consideration in food and wine circles.</font></span></p>
<p><a name="more" title="more"></a><b><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">THREE &#8211; FEELING: Texture, Body, Tannin, Alcohol and Temperature </font></span></b><span style="font-size:10pt;font-family:Verdana;"><br />
<font size="4" color="#000099" face="Times New Roman, Times, serif">The sense of touch figures in the overall flavor impression by conveying temperature, texture and pressure, the <i>feeling </i>differences that exist between cold iced tea and hot coffee, between plain fruit punch and carbonated soda, between filtered and unfiltered apple juice, between smooth pudding and crunchy cookies, or between the burn of jalapeño or the cool of menthol. These sensations of touch, irritation, or thermal differences are called <em><span style="font-family:Verdana;">chemesthesis</span></em> and may be experienced in the eyes, mouth, nose, or throat. Much of the touch information of flavor is conveyed to the brain through the <em><span style="font-family:Verdana;">trigeminal nerve</span></em>.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">The <i>body</i> of a wine is felt as light or heavy, thin or full, rich or crisp. Body is one of the most often misunderstood components of wine. The description &#8220;full bodied&#8221; is frequently applied to wines that are high in either alcohol or tannin or in both, without the actual texture and weight of the wine being &#8220;full&#8221; at all. Body should be thought of as the relative &#8220;thickness&#8221; or viscosity of the wine.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">One of the most prominent elements of wine &#8220;flavor&#8221; is <i>tannin,</i> more a sensation of touch rather than taste. It is also a significant flavor component of tea, chocolate, soy, pecans, walnuts, and the skins and seeds of many fruits, other than grapes, such as blueberries, dates, kiwi, peaches, persimmons, pomegranates, raspberries and figs. Tannin leaves a puckery, astringent feeling on the tongue, gums, and cheeks and can sometimes also taste bitter. When the proportion is too high for the other flavor elements, alcohol may give a &#8220;burning&#8221; sensation in the nose as well as a &#8220;hot&#8221; feeling in the back of the throat or the roof of the mouth.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Wine served cold gives a taste impression that is less sweet and more acid and astringent than the same wine at a warmer temperature. This is one reason to serve fruity wines chilled, while dry, astringent ones are best near or just below &#8220;room&#8221; temperature.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">The phenomenons of fatigue and adaption discussed earlier regarding smell are also considerations with taste. Astringency and bitterness require up to ninety seconds recovery in order not to influence the flavor of the next wine. This can be a very long time between tastes. A good swallow of water or bite of bread helps. Sugar also takes a while to fade from the tongue. Chocolate, which combines astringency, bitterness and sweetness, has an extremely long aftertaste, can foul the palate for wine evaluation, and is not recommended within three hours prior to serious tasting. Cheese also clouds the ability to judge wine; as wise old French wine merchants say, &#8220;Achetez avec l&#8217;eau, vendez avec le fromage&#8221; (Buy with water, sell with cheese.)</font></span></p>

<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Americans raised in the last half of the 20th Century typically drank milk, or increasingly soft drinks, sweet and sometimes carbonated, as mealtime beverages. The longtime adage of wine marketers has been that &#8220;Americans talk <em><span style="font-family:Verdana;">dry</span></em> but drink <em><span style="font-family:Verdana;">sweet</span></em>&#8220;. Each culture has a similar taste bias. Coca-Cola employs 200 global research and development staff, two dozen of them specialists in flavor development to pinpoint local taste preferences and adjust their product formula to local conformity. They have found that Germans like spicy, Mexicans like citric and Italians want a little bitterness. These cultural flavor preferences may also dictate wine choices to some degree.</font></span></p>
<p><b><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">FOUR &#8211; SEEING: Clues Only; Don&#8217;t be Fooled</font></span></b><span style="font-size:10pt;font-family:Verdana;"><br />
<font size="4" color="#000099" face="Times New Roman, Times, serif">This idea of sight affecting flavor is not hard to grasp if one thinks of some food which looks unappetizing, but then tastes very good. The reverse is also true. How often is an item selected from a cafeteria line that appears very tasty but turns out to be bland or worse? This <i>expectation based on appearance </i>often psychologically sets up our taste buds. In wine, this sight prejudice leads us to expect that transparent and bright wines will be good-tasting, and wines that are cloudy or dull in color will not. Although this does not necessarily hold, still our sense of sight sets us up psychologically for gustatory enjoyment or disappointment.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Color can be an indicator of what the nose and the mouth might expect. Clues as to the grape varietal identity and the age of wine can be revealed by its hue and transparency or opacity. White varietal wines may appear from very pale greenish and brightly clear (suspect youth and bone dryness) to deep golden brownish and approaching translucence (probably well-aged, possibly nectar-like). Red varietals run from brickish red and nearly transparent (may be older, mellow) to deep opaque bluish-purple (expect young, brash, tannic). Bright pink rosé or blush wines are often youthful, while orangey-bricky ones are usually past their point of prime drinkability.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Although they may appear to be in a range of either red-purples or green-yellows, wine grapes are referred to as black (<i>noir </i>) or white (<i>blanc </i>), depending on the color of their skins at ripeness. Pinot Noir, Grenache and Mourvedre tend towards a garnet or brickish tone. Syrah, Cabernet Sauvignon, Cabernet Franc and Barbera can make wines so inky-purple they could refill fountain pens. The hues of the black grapes are consistent but they become nearly transparent when made into rosé or blush-style wines. Sauvignon Blanc and Chenin Blanc tend to be green. Semillon and Viognier are generally more yellow. Gewürztraminer and Pinot Gris (<i>Grigio </i>) can have a light tannish-grey cast if allowed to fully ripen before made into wine. Most unnamed varietals fall in between these color ranges.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Sight may set up initial expectations in the other senses, or serve as confirmation <i>after</i> smelling, tasting, and feeling a wine&#8217;s properties. When aromas of tomatoes, bouquet of earth, light tannins, a texture of velvet, and flavor of dried cherries all lead to suspicions of Pinot Noir, the garnet edge may confirm it.</font></span></p>
<p><a name="methods" title="methods"></a><b><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">METHODOLOGY: Putting it all together</font></span></b><span style="font-size:10pt;font-family:Verdana;"><br />
<font size="4" color="#000099" face="Times New Roman, Times, serif">Evaluating the physiological factors and chemical properties helps devise methodology to get the most from tasting wine. The taster can control serving parameters to intensify the experience and consider and maintain an awareness of elements which are beyond control but nonetheless affect the tasting occasion.</font></span></p>
<p><font face="Times New Roman, Times, serif"><font size="4"><font color="#000099"></font></font></font><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">First, to make sure enough vapor is present to get a strong sense of the wine&#8217;s smell, use a glass shape that can concentrate the molecules, filled only one-third full or less to allow space for the vapors to be contained. Tilting the glass over an opaque white surface and observing the liquid&#8217;s edge is the best way to judge hue and clarity. Next, swirl the wine to toss some of those molecules into the air and to increase the size of the liquid surface area from which the molecules can escape. </font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Then take a big, deep sniff of the wine to reach the deep-seated nasal receptors and cross the threshold of sensitivity. That first impression of a wine is really important. Close the eyes and concentrate to form an initial judgment before fatigue and adaptation set in.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Put enough wine, one-half to a full ounce, in the mouth and slosh it around to make sure as large an area of the tongue as possible has a chance to judge the wine&#8217;s elements. Feel the viscosity and tannins. Allow the wine to settle in the lower jaw, letting it warm slightly while pursing the lips to breathe in a small amount of air. Continue sucking in air, making a slurping sound as the wine and air mix. This volatilizes the wine and sends it to the back of the nasal cavity, intensifying the smell and flavor experience. After swallowing, notice which flavors and feelings are left and how well they linger.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Tasting several wines on the same occasion can somewhat alter the tasting procedure. Different contexts call for different techniques. When faced, for example, in a &#8220;blind&#8221; tasting, there are a couple of possible approaches. Whichever is comfortable and works best for the taster is proper.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">One method is to sample and evaluate each wine completely and separately, before moving to the next one. For some people, this gives them a complete and memorable picture of the individual wine. A large &#8220;cocktail party&#8221; tasting event, where one glass, carried from table to table, is used to sample many wines, dictates this manner of tasting. </font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">A different technique may be used at &#8220;sit-down&#8221; wine tastings with &#8220;flights&#8221; of two or more wines. In this situation, it&#8217;s possible to smell and evaluate all of the wines, before tasting any of them. Proceed through once, smelling each in order, then return to those that left the weakest impression for a second chance to coax more from them. Classify the wines, based on aromas, from &#8220;weak&#8221; to &#8220;strong&#8221; to &#8220;defective&#8221; to set the order of tasting. It requires discipline to delay tasting the strongest or most appealing wine, but it provides a chance to form a more definite impression of the lightest-smelling wines, without being overwhelmed by the &#8220;bigger&#8221; wines. Consumers can enhance their tasting experience by learning these terms in order to communicate better with their fellow tasters, their wine merchant, and, perhaps most importantly, to develop a memory of their likes and dislikes.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Many of the smells and flavors in wine are described in terms of other fruits. Gas chromatography enables separation and identification of elements in a compound, according to the constituent&#8217;s volatility. This technique has enabled chemists to establish that there are, in fact, several odoriferous molecules that are shared by wine and apples, pears, currants, raspberries, oranges, or bananas. These include acetic and butyric acids, the alcohols propanol, terpinol and hexanol, the carbonyls ethanal, acetone and diacetyl, and the esters isoamyle acetate, ethyl caproate, and ethyl butyrate. Different combinations and amounts of these and other compounds give fruits their distinct aromas and flavors and provide great variety in wine.</font></span></p>
<p><span style="font-size:10pt;font-family:Verdana;"><font size="4" color="#000099" face="Times New Roman, Times, serif">Until her retirement in 2003, from the University of California at Davis, Dr. Ann Noble led wine research on smells and flavors. She began to develop her theories on aromas specifically recognizable in wine in the 1980s and her colleagues continue this research today. Dr. Noble headed a project to develop an inexpensive and easy tool to aid in learning wine flavor terminology. The Aroma Wheel is a kind of pie-chart that lists, categorizes and groups hundreds of smells and odors that may be present specifically in wines.
