Like Frankensteins of food, the proprietors use their laboratory in Angers in western <a title="Go to the France Travel Guide." href="http://travel.nytimes.com/travel/guides/europe/france/overview.html?inline=nyt-geo">France</a> to concoct artisanal condiments out of unusual and unexpected ingredients. Anyone overindulging in certain mustards (5.50 euros for a 420-gram jar, about 15 ounces) risks a D.U.I., thanks to additives like beer, white wine, whiskey and other spirits.</p>
<p>The jams, meanwhile, are forged from everything from strawberries and Champagne (7.90 euros for 420 grams) to green tomatoes (7.90 euros for 420 grams).</p>
<p>If those don’t satisfy your sweet tooth, look for the flowing Willy Wonka-worthy fountain of chocolate behind the window of <span class="bold"><a href="http://travel.nytimes.com/travel/guides/europe/france/paris/attraction-detail.html?vid=1194728708388&#38;inline=nyt-classifier">Cacao et Chocolat</a></span> (No. 63; 33-1-46-33-33-33).</p>
<p>Inside, snap up a small box of dark chocolate squares infused with coffee, Chinese jasmine tea or tequila with lemon (4.80 euros). They’re desserts and digestifs all in one.</p>

Thanks to its own ripening cellar, the shop purveys all manner of aged morsels, including the blue mold-covered Mâconnais (2.90 euros for a plug about the size of a tea candle). Within, these small plugs of goat cheese are firmer, earthier and more assertively tart than their fluffier brethren.</p>
<p>For fans of hard cheese, the thick and wedgelike comté fruité (31.50 euros a kilogram) emerges from the vault after 26 months with a mellow, smooth and nutty flavor. Also worth sampling are the gooey and understated nuggets of le trou du cru, a type of epoisse (2.50 euros for 60 grams, or just over two ounces) and the tangy, hearty Brillat-Savarin (11.50 euros for a door-stopping disk), a triple-cream brie.</p>

The tiny stone-walled boutique serves as the Paris outlet for the range of duck-based delicacies made on the rural farm of Catherine and Paul Douy.<br />
Lining the walls are jars of fresh duck confit (six thighs for 32 euros), duck rillettes (10.50 euros), duck in sauerkraut (12 euros to 32 euros) and classic duck foie gras (60 euros for 320 grams, or just over 11 ounces). All products, the manager Eve Juskov points out, are entirely hand made by the Douys. “We’re far from the industrial world.”</p>

I quai della Senna, soprattutto di sera, quando le luci dei lampioni, dei monumenti e dei bateaux-mouches rendono l&#8217;atmosfera un po&#8217; magica, irreale&#8230; Il mio preferito è il Quai de la Tournelle (5e arr., M° Maubert-Mutualité).<br />
