<title><![CDATA[Marinating ]]></title>

<content:encoded><![CDATA[<p>I was scheduled for a late meeting tonight so wanted something easy.  When I want easy, I think marinate ahead of time and grill (even easier for me because my husband does the grilling!)  There are so many marinades for chicken and we really like grilled chicken with rice.  You can buy good marinades at the store &#8211; just keep an eye on the salt and sugar listed in the ingredients.</p>
<p>I had some leftover Thai marinade in the refrigerator so we used that.  Here is the Thai marinade recipe, a picture of our dinner and a few other choices.  Because I had the marinade in the fridge, I was able to pour over the chicken this morning before I left for work so it only needed grilling.</p>
<p><strong>Thai marinade</strong></p>
<ul>
<li>4 – 6 garlic cloves, sliced</li>
<li>1 TB cumin seed</li>
<li>2 TB coriander seed</li>
<li>1 TB peppercorns</li>
<li>2/3 cup soy sauce</li>
<li>1/2 cup brown sugar and/or honey</li>
<li>1 TB turmeric powder</li>
<li>1 lime</li>
<li>1 tsp ground Thai chili peppers</li>
<li>1 cup coconut cream</li>
</ul>
<div>Toast the cumin seed, coriander and peppercorns in a dry pan over the stove for a few minutes until aromatic.  Grind together in a mortar and pestle.  Add garlic and continue grinding until ingredients make a paste.  Put paste in a bowl and add brown sugar, soy sauce, juice from lime, ground chili pepper, turmeric and coconut cream.  Mix well.</div>

<p><strong>Chipotle marinade </strong></p>
<ul>
<li>2 chipotle chiles in adobo sauce</li>
<li>2 cloves garlic</li>
<li>3 TB tomato juice</li>
<li>1/2 cup olive oil</li>
<li>1/4 cup soy sauce</li>
<li>2 TB sherry vinegar</li>
<li>1 tsp basil</li>
<li>1 tsp oregano</li>
<li>salt and pepper</li>
</ul>
<p>Combine all ingredients in a blender.  NOTE: Marinade keeps well in refrigerator.  We have also had this on steak, shrimp and pork chops.</p>
<p><strong>Indonesian Marinade </strong></p>
<ul>
<li>1/3 cup low sodium soy sauce</li>
<li>1/4 cup peanut oil</li>
<li>zest and juice of 2 lemons</li>
<li>1/4 cup minced fresh ginger</li>
<li>4 cloves garlic, minced</li>
<li>1 TB Dijon mustard</li>
</ul>
<p>Combine all ingredients.   This is also good on fish.</p>
<p><strong>Grilled Eastern Shore chicken</strong></p>
<ul>
<li>Chicken breasts, bone in (two per person for leftovers)</li>
<li>1 cup white wine vinegar</li>
<li>3 oz olive oil</li>
<li>1/2 tsp salt</li>
<li>1/4 tsp pepper</li>
<li>3 tsp poultry seasoning</li>
</ul>
<div>Combine marinade ingredients in a saucepan and bring to a boil.  Let cool to room temperature before marinating.</div>

<content:encoded><![CDATA[<p>Much like salad dressing, homemade marinades don&#8217;t take very long to make and taste so much better because they don&#8217;t have all of the chemicals and preservatives that keep store bought marinades safe on the shelves for months.  Like store bought marinades, many are quite versatile and can be used on different proteins.  Most have even better flavor if you let your protein marinate overnight and having it ready to go on the grill or in the oven makes them a great friend for busy people.  We are having grilled steak with the chipotle marinade tonight along with oven roasted potatoes.  Tomorrow we&#8217;re having grilled chicken with the Indonesian marinade.</p>
<p>One tip &#8211; be careful if you let a 5 year old be your assistant.  We were almost finished with the Indonesian marinade when in a valiant effort to squeeze garlic in the garlic press, she knocked over the whole cup.  This resulted in a sobbing 5 year old, the start of a load of laundry and a second trip to the grocery store to get more lemons and more ginger.  We acquired our ingredients and got both finished.  There is plenty of chipotle marinade left in the refrigerator and it works well with pork chops, chicken or any kind of beef so that will make another appearance next week.  The 5 year old is now happy because the second trip to the store included cookies from the bakery so we&#8217;re all good.</p>
