<p>Saya diundang sebuah perusahaan <em>Marketing Research</em> di Jakarta bersama sembilan orang panelis lainnya untuk berdiskusi sekalian mencicipi kopi luwak. Acara ini sebenarnya merupakan bagian dari strategi marketing yang akan dikembangkan oleh perusahaan tersebut berdasarkan masukan2 dari orang awam termasuk saya yang kebetulan menggemari minuman kopi. Singkat kata setelah acara berlangsung beberapa lama baru kami ketahui bahwa perusahaan kopi tersebut adalah dari PT Perkebunan XII di daerah Jawa Timur.</p>

<p>Kopi luwak sebagaimana yang kita ketahui berasal dari biji kopi yang dimakan oleh luwak (<em>paradoxurus) </em>yang tersebar di Sumatera maupun pulau Jawa. Binatang ini punya kebiaasaan memakan biji kopi yang akan ia pilih sesuai dengan seleranya,  Dengan kata lain tidak setiap biji kopi ia makan, tapi apa kriteria biji kopi yang baik, tentunya hanya si luwak yang tahu jawabannya. Nah, para luwak yang kelaparan tadi kemudian berpesta dengan mengundang para kerabatnya untuk bersama-sama mencicipi hidangan prasmanan gratis ala <em>standing party</em> pesta pernikahan orang Jakarta. Setelah kenyang, tanpa mengucapkan pamit kepada pemilik perkebunan kopi mereka akan kembali ke habitatnya di pucuk2 pohon seraya merasakan betapa nikmatnya biji kopi arabica maupun robusta yang telah mereka santap.</p>

<p>Tentu saja setelah kekenyangan biji kopi yang dimakan para luwak akan terfermentasi di dalam tubuhnya. Mungkin di pagi hari setelah pesta usaisi luwak lari terbirit-birit ke &#8220;toilet umum&#8221; karena ingin mengeluarkan biian kopi yang sudah &#8220;dimasak&#8221; sedemikian rupa di dalam perutnya. Nah para pekerja perkebunan kopi yang bernasib malang ini kemudian dengan sabar akan mengumpulkan kotoran si luwak yang masih dalam bentuk bijian utuh, tentu saja dengan aroma harum khas kotoran luwak. Bisa dikatakan luwak adalah hama kopi, namun setiap pengelola perkebunan tentunya tidak berkeberatan dengan tamu yang tidak diundang ini. Di PTP XII justru luwak di tangkar atau dipelihara secara khusus dalam kandang2 dan setiap saat mereka akan dihidangkan bijian kopi kesukaan mereka tanpa harus bersusah payah memanjat pohon kopi dengan nafas ngos2an.</p>

<p>Kotoran luwak yang sudah terkumpul oleh para pekerja yang punya &#8220;kesabaran tinggi&#8221; itu kemudian dicuci hingga bersih untuk selanjutnya diproses hingga menjadi kopi luwak dan dinikmati para penggemar kopi. Sebagai informasi di luar negeri, kopi luwak diperjual belikan dengan harga yang sangat tinggi , kira2 100-600 dollar per 0.5 kg ! Maka tak salah kalau kopi jenis ini dinobatkan sebagai kopi termahal di dunia.</p>

<p>Menurut Wuryanto, Manager Hilir PTP XII, untuk sementara kopi yang diberi nama &#8220;Rollaa Kopi Luwak&#8221; ini belum beredar secara luas dan saat ini masih dalam taraf <em>road show </em>ke berbagai kota. Mereka menyediakan dua jenis kopi luwak dari jenis Arabica dan Robusta, yang sama2 mengeluarkan aroma harum saat dibuat dalam <em>siphon filter</em>. Alat ini menurut Wuryadi sangat cocok untuk menyeduh kopi luwak karena dapat mempertahan rasa dan aroma dibanding dengan cara seduh biasa. Kegiatan yang saya ikuti bersama perusahaan <em>marketing insight</em> mereka merupakan salah satu bagian dari upaya untuk melihat minat dan masukan para penggemar kopi di Jakarta dan diharakan kopi jenis ini mulai bayak dikenal dan digemari khususnya di Indonesia.</p>

Namun pekerjaan ini muncul karena adanya pasar kopi yang prima. Pawang Luwak ini yang bertugas menangkap sekaligus memelihara Luwak, hewan yang memakan buah kopi terbaik.<br />
Luwak kerap disandingkan dengan kopi. Ya, binatang ini memang dikenal karena kesukaannya mengonsumsi buah kopi. Kegemaran ini menyebabkan Luwak berperan sebagai pengolah biji kopi alamiah di dunia.<br />
Buah kopi yang ditelan Luwak akan mengalami proses fermentasi selama berada di perut hewan tersebut. Setelah dicerna sang Luwak, buah kopi itu berubah menjadi biji yang dikeluarkan bersama kotoran sang hewan.<br />
Jangan cemas kalau biji kopi itu tercemar kotoran Luwak. Biji kopi yang dikeluarkan Luwak ini masih berbentuk utuh. Tentu saja, sebelum diproses menjadi bubuk, bpi kopi akan dibersihkan dulu.<br />
Dalam proses pencernaan Luwak inilah, akan diperoleh biji kopi dengan rasa spesial. Adanya proses inilah yang mengakibatkan harga biji kopi Luwak sangat tinggi.<br />
Minum susu<br />
Selama ini, bpi kopi Luwak hanya diperoleh secara tradisional. Pasalnya, Luwak pemakan kopi merupakan binatang liar yang hidup di alam bebas. Alhasil, pemungut kopi Luwak hanya mengumpulkan kotoran Luwak yang berserakan di perkebunan kopi.<br />
Namun, sejak tahun 2006, PTPN XII berupaya memelihara Luwak demi menghasilkan biji kopi Luwak. Nah, untuk menangkarkan luwak-luwak liar ini, PTPN mengerahkan tenaga Pawang Luwak.<br />
Tak mudah menangkap dan merawat Luwak yang pada dasarnya merupakan binatang liar. Itu sebabnya, menjadi Pawang Luwak bukanlah sebuah pekerjaan yang mudah.<br />
Apalagi, selama ini tak ada buku-buku referensi tentang perhwatan Luwak. Tak heran, Pawang Luwak banyak belajar dari pengalamannya sendiri. Salah satu modal utama yang harus dimiliki Pawang Luwak adalah menguasai seluk beluk tentang Luwak. &#8220;Luwak itu rentan mati,&#8221; kata Wuryanto, seorang Pawang Luwak dari PTPN XII.<br />
Asal tahu saja, setelah ditangkap dari alam bebas untuk dikandangkan, Luwak seringkali stres. Itulah sebabnya, pada awal penangkaran PTPN XII, banyak Luwak yang telah ditangkap mati.<br />
Menjaga agar sang Luwak tetap hidup di dalam kurungan merupakan tantangan terberat seorang Pawang Luwak. Wuryanto menuturkan, setelah penangkapan, Luwak memiliki masa kritis beradaptasi dengan lingkungannya yang baru.<br />
Masa kritis itu biasanya berlangsung selama satu hingga dua minggu. &#8220;Jika tak bisa lolos dari masa itu, Luwak bisa mati,&#8221; ujarnya.<br />
Dalam masa kritis itulah, Luwak butuh perhatian khusus. Untuk menghindarkan Luwak dari stres, biasanya Pawang teratur memberi makanan kegemaran Luwak. Dari hasil pengamatan Wuryanto, selain kopi, Luwak ternyata gemar makan pepaya dan pisang.<br />
Bila Luwak yang ditangkap masih kecil, Pawang harus memperlakukannya seperti merawat bayi. &#8220;Luwak kecil harus teratur minum susu,&#8221; ujar Wuryanto.<br />
Setiap musim kopi, Luwak hanya diberi buah kopi sebagai menu utama di malam hari. Alhasil, Pawang atau pemelihara Luwak setiap sore harus menempatkan buah kopi di kandang Luwak.<br />
Baru pada pagi harinya, para Pawang itu mengambil kotoran Luwak. Dalam satu malam, Luwak mampu melahap sekitar 3 kilogram buah kopi.<br />
Perhatian pada Luwak tak sebatas pada masa setelah penangkapan atau soal makanannya. Dalam pemeliharaannya, Pawang harus menjaga kebersihan kandang setiap hari. Maklum, Luwak termasuk binatang yang suka tinggal di tempat yang bersih. Bahkan, ketika membuang kotoran pun, Luwak akan memilih tempat yang bersih. Seperti di tanah kering, di atas bebatuan atau di atas dahan yang tumbang. (Fathoni Arief/Kontan)</p>

<p>O café-jacu, ou jacu bird coffee, chegou a Londrina, no Paraná. O produto, que vem do Espírito Santo e está ganhando o mundo, tem como principal característica o fato de passar pelo intestino do jacu antes de chegar ao terreiro. A ave come o fruto maduro e defeca os grãos inteiros, que depois são processados para chegar ao consumidor. Na cidade, o café só é servido na forma de espresso: R$ 10 a xícara. Se fosse para levar para a casa, a embalagem de 250 gramas (em grãos torrados) sairia muito caro, já que o custo para o comerciante está em torno de R$ 40.</p>
<p>O produto é inspirado no café mais caro do mundo (R$ 25 a xícara, em São Paulo), o kopi luwak, da Indonésia, cujos grãos são comidos por um felino. No caso do jacu, praticamente toda a produção vai para o mercado externo (Tóquio, Londres e Costa Oeste dos Estados Unidos) e uma pequena parte é vendida no Brasil, principalmente nas capitais.</p>
<p><strong>A praga virou benção’, diz produtor</strong></p>
<p>A re­por­ta­gem con­fes­sa que es­tra­nhou ao sa­ber que ­iria ex­pe­ri­men­tar o ca­fé-ja­cu, mas en­ca­rou com na­tu­ra­li­da­de ao ler so­bre o as­sun­to an­tes de be­ber. É um ca­fé mui­to bom, que dei­xa um gos­to de fru­ta na bo­ca. Se va­le R$ 10 a xí­ca­ra é ou­tra his­tó­ria&#8230; As ra­zões pa­ra o pre­ço, po­rém, fi­cam ­mais cla­ras ao ou­vir­mos as ex­pli­ca­ções do pro­du­tor Hen­ri­que Slo­per, um ca­rio­ca for­ma­do em mar­ke­ting na Ca­li­fór­nia, e pro­prie­tá­rio da Fa­zen­da Ca­mo­cim, no Es­pí­ri­to San­to, de on­de sai o exó­ti­co ca­fé. Con­fi­ra al­guns tre­chos da en­tre­vis­ta.</p>
<p><strong>Co­mo sur­giu a ­idéia do ca­fé-ja­cu? </strong></p>
<p>Pri­mei­ro gos­ta­ria de di­zer que es­te é um fe­nô­me­no na­tu­ral, só cria­mos a tec­no­lo­gia. An­tes, que­ria me li­vrar dos ja­cus, ­pois os via co­mo pra­gas na mi­nha la­vou­ra. Eu já co­nhe­cia o ko­pi lu­wak (ca­fé da In­do­né­sia, que pas­sa pe­lo pro­ces­so di­ges­ti­vo de um fe­li­no). Foi num dia fa­tí­di­co, quan­do vi­mos uns 80 ja­cus de­vo­ran­do os ca­fe­zais, que ­caiu a fi­cha. Aí a pra­ga vi­rou ben­ção.</p>
<p><strong>E co­mo é o pro­ces­so?</strong></p>
<p>O ja­cu pe­ga o ­grão no pé, sen­ta per­to do ca­fe­zal e vai co­men­do os fru­tos ma­du­ros até en­cher. É um es­pe­tá­cu­lo es­tra­nho. O ja­cu é uma mis­tu­ra de uru­bu com ga­li­nha, faz um ba­ru­lho as­sus­ta­dor. Ele não tem es­tô­ma­go, é só pa­po e in­tes­ti­no. E o que ele ­quer é só a par­te mo­le da fru­ta. Em 30 a 40 mi­nu­tos ele de­fe­ca.</p>
<p><strong>Vo­cês co­lhem as fe­zes e a par­tir daí o que acon­te­ce?</strong></p>
<p>Aí en­tra o nos­so pro­ces­so tec­no­ló­gi­co (que não re­ve­la em de­ta­lhes). O mun­do tem vá­rios ca­fés exó­ti­cos. O se­gre­do nos­so foi ter des­co­ber­to uma tec­no­lo­gia pró­pria. Co­lher co­cô de pás­sa­ro é fá­cil. Trans­for­mar aqui­lo em be­bi­da boa é que é a ques­tão. Já re­gis­tra­mos a mar­ca ja­cu-cof­fee no mun­do in­tei­ro e o nos­so pro­je­to é trans­for­mar is­so em te­sou­ro na­cio­nal bra­si­lei­ro.</p>
<p><strong>E o que ­atrai tan­to os ja­cus pa­ra a fa­zen­da? </strong></p>
<p>São ­três fa­to­res: o sis­te­ma de pro­du­ção flo­res­tal (flo­res­ta com agri­cul­tu­ra), a la­vou­ra or­gâ­ni­ca e bio­di­nâ­mi­ca (sem uti­li­za­ção de pro­du­tos quí­mi­cos), e o mi­cro­cli­ma da fa­zen­da (re­gião de mon­ta­nha, si­len­cio­sa). O ja­cu é sen­sí­vel e não gos­ta de ba­ru­lho.</p>
<p><strong>Por que o ca­fé é tão ca­ro?</strong></p>
<p>Por cau­sa do cus­to de pro­du­ção. Na úl­ti­ma sa­fra co­lhe­mos 70 to­ne­la­das de ca­fé na fa­zen­da, sen­do que me­nos de uma to­ne­la­da foi de ca­fé ja­cu. No fi­nal do pro­ces­so, is­so vai ge­rar uns 500 qui­los ape­nas. É me­nos de 1% da pro­du­ção.</p>
<p><strong>Na ho­ra de be­ber, ­qual a prin­ci­pal di­fe­ren­ça do ca­fé-ja­cu?</strong></p>
<p>Na bo­ca, não sa­be­mos di­zer qui­mi­ca­men­te o que mu­da por­que is­so ain­da es­tá em pro­ces­so de pes­qui­sa. Em re­la­ção ao ou­tro ti­po de ca­fé que pro­du­zi­mos na fa­zen­da, o ja­cu pas­sa por uma se­le­ção na­tu­ral, fei­ta pe­lo pró­prio pás­sa­ro. Ele só co­me os ­grãos ­bons, do mes­mo ta­ma­nho e ma­du­ros, que têm ­teor de açú­car ­mais al­to. O ja­cu sa­be o que faz.</p>
<p><strong>Vo­cê po­de di­zer por quan­to ven­de o ja­cu-cof­fee no ex­te­rior? </strong></p>
<p>De jei­to ne­nhum. Mas pos­so ga­ran­tir que o pre­ço é bem ­mais al­to do que den­tro do Bra­sil (cer­ca de R$ 40 o pa­co­te de 250 gr de ca­fé em ­grão). E não te­nho pro­du­ção pa­ra aten­der a de­man­da. <p>O café é produzido desde 2006, mas tornou-se conhecido em território nacional depois da divulgação na mídia em setembro do ano passado. Desde então, a comerciante Cristina Maulaz está tentando trazê-lo para Londrina, mas só conseguiu fechar o negócio agora porque faltava produto para atender a demanda. A novidade começou a ser servida nesta semana.</p>
<p>&#8221;Estou ligando para as pessoas virem conhecer. Comprei em pequena quantidade para sentir o mercado. Quem aprecia café está gostando. Na verdade, é uma iguaria, uma bebida fina&#8221;, diz Cristina, da loja O Armazém. A convite da Folha de Londrina, dois especialistas no assunto estiveram no local para uma degustação. Eles tomaram a bebida sem açúcar, do jeito que se prova os chamados cafés especiais.</p>
<p>Afinal, o tal café que vem nas fezes do jacu é bom? &#8221;Muito bom. Harmonioso, equilibrado e tem uma acidez desejada. Deixa um sabor residual muito agradável na boca. Lembra fruto maduro, adocicado. Está vendo esse creme que fica na xícara depois que acaba? É sinal de qualidade. Enfim, é um café maravilhoso, para degustar como se estivesse tomando uma raridade&#8221;, descreve Marcos Aurélio Bacceti, produtor, corretor e degustador de café para fins comerciais e de pesquisa. Ele já havia experimentado a bebida em São Paulo.</p>
<p>A bioquímica Maria Brígida Scholz, pesquisadora de café do Instituto Agronômico do Paraná (Iapar), tomou o café-jacu pela primeira vez e também aprovou. &#8221;Esperava que fosse um bom café. E realmente é. É muito doce, com acidez aceitável, bem agradável. O ponto de torra é suave, muito aromático&#8221;, afirma ela, que também é degustadora oficial de café. Segunda Brígida, trata-se de um café super selecionado, já que o jacu escolheu no cafeeiro os frutos bons e bem maduros. &#8221;O pássaro é atraído pelo doce do café&#8221;.</p>
<p>Tanto Bacceti quanto Brígida observaram que, independente do processo no sistema digestivo do pássaro, a qualidade do café já é muito boa. É cultivado em uma região de montanhas e certificado como orgânico e biodinâmico. &#8221;Vale lembrar que o Brasil sempre produziu um excelente café, mas não falávamos dessa qualidade. O Paraná, por exemplo, tem café excepcional&#8221;, observa Bacceti.</p>
<p>O empresário Daniel Malamud, que também participou da degustação, achou que a bebida tem &#8216;&#8217;sabor único, diferente&#8221;. &#8221;É bem equilibrado, com uma acidez boa. Você sente aquele amarguinho só no final, mas depois some da boca&#8221;, diz.</p>
<p>Depois de algum tempo na mesa ao lado, na cafeteria, ouvindo as conversas sobre o &#8221;jacu&#8221;, o médico Roberto Tino e a esposa Denise Tino, professora, tomaram coragem e pediram a bebida. &#8221;Tirando a excentricidade, é um bom café. Não é só uma boa jogada de marketing&#8221;, disse ele. &#8221;Fiquei meio receosa de tomar, mas gostei&#8221;, afirmou ela, a única pessoa entrevistada que assumiu o estranhamento de experimentar a bebida.</td>

Jika sudah kita lengkapi seperti yang saya uraikan di atas, mudah-mudahan kebun akan di jadikan luwak tempat bersarang, usahakan banyak-banyak menanam jambu biji di pinggiran kebun kopi, tujuan nya ialah, sewaktu kopi tidak ada buah nya luwak akan memakan jambu biji, menanam bambu di sekitar kebun kopi, tujuan nya membuat tempat luwak bersembunyi. Setelah musim kopi, biarkan buah kopi matang, supaya di makan luwak, setelah buah kopi pada matang semua, barula kita panen, memetik kopi, kalau dapat kopi luwak kita pisahkan, jangan di campur dengan kopi yang kita petik, karna kopi luwak mahal, kopi luwak ok banget, kalau tidak mau jual, ya buat minum sendiri, kalau gak suka ngopi kasih ke saya pirdianus@gmail.com</p>

Also native to the area is a small civit-like animal called a Paradoxurus . Juga asli daerah adalah civit kecil seperti disebut binatang Musang. That&#8217;s the scientific name, the locals call them luwaks. These little mammals live in the trees and one of their favorite foods is the red, ripe coffee cherry. Itu nama ilmiah, panggilan lokal mereka luwaks. Mamalia kecil ini hidup di pepohonan dan salah satu makanan favorit mereka adalah merah, masak ceri kopi. They eat the cherries, bean and all. Mereka makan ceri, kacang dan semua. While the bean is in the little guy&#8217;s stomach, it undergoes chemical treatments and fermentations. Sementara kacang dalam perut orang kecil, ia mengalami perawatan kimia dan fermentations. The bean finishes its journey through the digestive system, and exits. Kacang selesai perjalanannya melalui sistem pencernaan, dan keluar. The still-intact beans are collected from the forest floor, and are cleaned, then roasted and ground just like any other coffee. Yang masih utuh biji dikumpulkan dari lantai hutan, dan dibersihkan, lalu dipanggang dan tanah seperti kopi lainnya.<br />
The resulting coffee is said to be like no other. Kopi yang dihasilkan dikatakan tidak seperti yang lain. It has a rich, heavy flavour with hints of caramel or chocolate. Memiliki kaya, berat rasa dengan petunjuk dari karamel atau cokelat. Other terms used to describe it are earthy, musty and exotic. Istilah lain yang digunakan untuk menggambarkan itu adalah bersahaja, pengap dan eksotis. The body is almost syrupy and it&#8217;s very smooth. Tubuh hampir manis dan sangat halus. </p>

<p>Kalo aku sih lumayan suka ma yang namanya kopi, entah pahit, atau manis, ditambah susu, coklat, krimmer, hmmm… enak lah pokokna!! xDDD~ apalagi dinikmati pagi2 gitu sebelum kuliah! Waw… ampe kelas dijamin gag ngantuk and full konsen dah!! Yosh!! <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>
<p>Meski aku suka kopi, tapi aku ga begitu ngerti tentang kopi. Katanya sih buanyak banget jenis kopi. Tapi yang uda aku cicipin paling2 kopi sachet buatan pabrik :p</p>
<p>Ya kalo boleh sebut merk, misalnya apa ya…. Hmm… ada Kapal api (kata opa dulu slogan nyanyiannya “<em>jelas tidaak enaaaak”</em>) hihihi, jadi kangen beliau… J map lo kapal api, tu bukan kata2 aku ndiri :p</p>
<p>Trus yang laen ada torabika(nih yang punya pabrik Tora Sudiro bukan ya? =.=a) yang ini kesukaan bapak aku. Hehe… aku sempet suka juga sih. Enak, pas gitu. Yang laen ada kopi cap merak (nyoba sekali, pahitt) trus yang ajib buatan pabrik tuh kopi singa yang robusta. Sumpah aromanya wenak tenann! Hehe… ada lagi Nescafe, goodday, golongan2 tanpa ampas. Enak sih, tapi aku suka yang ada ampasnya ^^ jadi jarang minum yang beginian.</p>
<p>Tapi akhir-akhir ini aku nemuin kopi di daerahku. Katanya sih kopi itu namanya Kopi IJO, tapi warnanya gak begitu ijo, biru tua/biru dongker gitu lah menurutku! Tapi rasanyaaa…. Waw… waw… sumpah ajiiib banget! Aromanya lain dari kopi2 lainnya dah, pertama nyoba sih agak pusing, dikit. Tapi pas gitu di lidah n aromanya. Bisa kebawa ampe pagi n ketagihan kalo minumnya malem2! ^^</p>
<p>Trus kalo dicampur susu, rasanya gag beda2 jauh ama kopi murninya. Ya kalo nurut aku sih emang gini yang bener, ditambah apapun juga, gak mengubah citarasa dan aroma! Hehe… aku sih seringnya dicampur susu. Denger2 dari sapa gitu, kalo minum kopi tuh ngurangin kalsium gitu di tulang, jadi kalo ditambah susu, impas dah! Gag tau juga sih bener apa gak, tapi kan itung2 nambah gizi dikit! Hehehe</p>
<p>Bagi yang suka ngerokok, cethe dari kopi ijo mantaf jaya dah! Alus banget, bisa buat gambar apa aja di batang rokok. Aku tahu temenku bikin batik bagus banget di rokoknya, wew gila dah. Aku cobain jadinya abstrak abiis! Hahaha…</p>
<p>Kopi laen yang enak,, kopi Toraja? Lumayan sih. Rasanya kuat banget tuh kopi. Satu sendok teh aja uda kerasa ampe ujung lidah… pahitnya banget. Gag ada tandingannya. Tapi karena aromanya nikmat, kopi ini banyak juga dicari. Aku baru nitip temenku yang abis pulang kampung, dibawain setengah kilo, lumayan buat dua bulan! LoL</p>
<p>Terus kopi yang belum pernah aku coba tu kopi luwak. Hmmm katanya sih kopi no. 1 di dunia. Made in Indonesia lagi! Wah, jadi bangga nih! ^^ tapi saking mahalnya, jadi lom bisa nyobain. Ntar aja kali ya, kalo dah kaya raya baru bisa nyoba… hehe… atau kerja di pabriknya? Sapa tahu bisa nyicip! Ahay! :p</p>
<p>Begitulah sekilas kopi dari aku. Masih banyak yang belum aku coba. Pengennya sih hunting kopi2 daerah… katanya sih katanya, kopi aceh tuh nikmaaaat banget. Jadi pengen kesana… O.o</p>

<p>Kemasyhuran kopi ini diyakini karena <em>mitos</em> pada masa lalu, ketika perkebunan kopi dibuka besar-besaran pada masa pemerintahan <a title="Hindia Belanda" href="http://id.wikipedia.org/wiki/Hindia_Belanda">Hindia Belanda</a> sampai dekade <a title="1950-an" href="http://id.wikipedia.org/wiki/1950-an">1950-an</a>, di mana saat itu masih banyak terdapat binatang luwak sejenis <a title="Musang" href="http://id.wikipedia.org/wiki/Musang">musang</a>.<br />
Binatang luwak senang sekali mencari buah buahan yang cukup baik termasuk buah kopi sebagai makanannya. Biji kopi dari buah kopi yang terbaik yang sangat digemari luwak, setelah dimakan dibuang beserta kotorannya, yang sebelumnya difermentasikan dalam perut luwak. Biji kopi seperti ini, pada masa lalu sering diburu para petani kopi, karena diyakini berasal dari biji kopi terbaik dan difermentasikan secara alami. Dan menurut keyakinan, rasa kopi luwak ini memang benar benar berbeda dan spesial dikalangan para penggemar dan penikmat kopi.</p>
<p>Namun binatang Luwak saat ini sekarang sukar untuk ditemukan. Dagingnya yang dipercaya dapat mengobati penyakit <a title="Asma" href="http://id.wikipedia.org/wiki/Asma">Asma</a> membuat hewan ini terus diburu. Disayangkan kenikmatan kopi yang berasal dari memungut biji-biji kopi dari kotoran Luwak hanya tinggal mitos.</p>
<p>&#8220;Kopi Luwak&#8221; sekarang telah menjadi merek dagang dari sebuah perusahaan kopi. <p>Nu har jag gjort det som man som kaffeälskare bör pricka av på sin &#8220;Saker att göra innan jag dör&#8221;-lista. Jag har testar Kopi Luwak.</p>
<p>Det fanns inga förhoppningar om att det skulle vara mitt livs upplevelse, inte heller att det skulle vara det bästa kaffet jag någonsin druckit, men med viss spänning och ett leende på läpparna, tog jag koppen i handen.</p>
<p>Efter två släta och en vaniljkringla konstaterade jag att det var ett gott kaffe, upplevde det som det stod på förpackningen. God, mustig och med lång eftersmak. Jag är ingen bevandrad kaffekännare, men den bönan är inte värd pengarna (cirka 1 700 kr/kg). Jag skulle kunna hitta godare kaffe för en bråkdel av summan, men det är en rolig grej att ha testat.</p>

Kopi betyder kaffe och Luwak heter djuret som i allra högsta grad är med i skördningsprocessen. Luwaken äter kaffebär och sägs välja ut de allra finaste bären. Kaffebönorna som blir kvar efter matsmältningen kommer ut i djurets avföring, plockas, rostas och serveras sen i drickbar form. Det ni!</p>

<p style="text-align:center;">Quando sedete comodamente avvolti dalla vostra poltrona preferita, sorseggiando una tazza di Kopi Luwak, non vi è mai venuto in mente questo accostamento?</p>
<p style="text-align:center;">Non che le due cose abbiano da essere consumate assieme, nè in sequenza, è solo un&#8217;associazione di idee, che sicuramente vi ha già fatto riflettere sulle mirabilie dell&#8217;ingegno umano.</p>
<p style="text-align:center;">Il <a href="http://it.wikipedia.org/wiki/Kopi_Luwak" target="_blank"><strong>Kopi Luwak</strong></a>, indubbiamente il miglior caffè al mondo,  viene infatti prodotto senza la faticosa raccolta delle bacche comprese di frutti, che dovrebbero quindi essere asportati, per permettere la tostatura dei chicchi.</p>
<p style="text-align:center;">Gran parte del lavoro è infatti eseguito da solerti ed affamati Paradoxurus hermaphroditus, ovvero <a href="http://it.wikipedia.org/wiki/Paradoxurus_hermaphroditus" target="_blank"><strong>zibetti delle palme comuni.</strong></a></p>
<p style="text-align:center;">Questi simpatici mammiferi mangiano e digeriscono le bacche di caffè, corrodendo parzialmente il chicco con i loro succhi gastrici.Il tutto passa poi per il tratto intestinale, conferendo al chicco il suo unico e inconfondibile aroma.</p>
<p style="text-align:center;">Essendo abitudinari di carattere, è dunque poi facile raccogliere il <a href="http://i36.photobucket.com/albums/e5/Skorp88/Top10Kid/KopiLuwak.jpg" target="_blank"><strong>frutto di questa lavorazione</strong></a> nei loro luoghi di deiezione.</p>
<p style="text-align:center;">Ora il prezioso chicco è pronto per una leggera tostatura, e diviene ciò che l&#8217;attore <a href="http://it.wikipedia.org/wiki/John_Cleese" target="_blank"><strong>John Cleese</strong></a> ha definito brillantemente: &#8220;un caffè terroso, marcio, leggero, sciropposo, sostanzioso e con sottotoni di giungla e cioccolato.</p>

<p style="text-align:center;">Probabilmente quello che avete a casa per cucinare la Tajine, o per massaggiarvi le stanche membra, comperato l&#8217;ultima volta che siete passati per Essaouira, non sarà stato prodotto secondo l&#8217;antica procedura, ma pare ci siano ancora piccoli paesi dove viene onorata la tradizione.</p>
<p style="text-align:center;">Questa vuole infatti, che i frutti di Argan, situati su spinosissimi alberi, vengano mangiati dalle capre al pascolo, che ne sono ghiotte.</p>

Four out of five Americans and two out of five Australians start the day with a coffee.</p>
<p>It’s almost certainly not the same brew –“the best coffee in the world” &#8211; consumed by Jack Nicholson’s character in the 2007 movie <em>The Bucket List</em>.</p>
<p>That was a rare blend known as Kopi Luwak, civet coffee – where the beans have passed through the digestive tracts of civet cats, and are gathered when the seeds, still coated in some cherry mucilage, are eliminated in the cat’s “poop”. Great!</p>
<p>But whether you take your daily caffeine fix in Kopi Luwak or Starbucks, in cola, chocolate or black tea &#8211; there’s truckloads of conflicting evidence about whether caffeine is good for your health and love life, whether it boosts sexual desire or causes infertility.</p>
<p><strong>Good and Bad News About Caffeine</strong></p>
<p><strong>Good:</strong> A new study shows <strong>caffeine gets females in the mood for sex</strong>. With a few provisos – if you’re a female rat who hasn’t previously experienced a caffeine “lift”  - it had them coming back for more – sex that is not coffee.</p>
<p>Researcher Fay Guarraci, an assistant professor of psychology at Southwestern University in Georgetown, Texas, is cautious about whether it would boost women’s sex lives in the same way.</p>
<p>“We gave only one dose of caffeine to animals who had never had caffeine before.</p>
<p>“Most of the time, women drink coffee on a daily basis or ingest caffeine in cola beverages,&#8221; she observes. &#8220;In humans, it might enhance the sexual experience only among people who are not habitual users.&#8221;</p>
<p><strong>Bad:  More than four cups of coffee a day increases infertility </strong>in women who are already subfertile, according to a new European study. For many women though, it probably won’t make any difference.</p>
<p>One study done in 2003 showed women who consumed less than 300 mg of caffeine a day (appx 2-3 cups of coffee) a day did <em>not</em> experience reduced fertility.</p>
<p>Yet another study of over 1000 women found the risk of not conceiving to go up with each additional cup of coffee, where even one cup reduced a woman’s ability to conceive.<strong> </strong></p>
<p><strong>The results are mixed for men as well</strong>. One study showed that sperm count, motility and abnormalities increased<strong> </strong>with the number of cups of coffee drank in a day &#8211; while another Brazilian study showed <em>increased</em> motility for mild to heavy coffee drinkers.</p>
<p><strong>Good:</strong> Coffee drinkers had a <strong>significantly reduced risk of diabetes, Parkinson’s </strong>Disease, cirrhosis of the liver, and gallstones.</p>
<ul>
<li>A recent Harvard study of over 126,000 people conducted over 18 years found that compared to non-coffee drinkers, drinking 1-3 cups of coffee a day will reduce the risk of diabetes by single digits, but drinking 6 or more cups a day reduced that risk by 30% in women and 54% in men.</li>
<li>At least six studies have shown coffee drinkers are significantly less likely to develop Parkinson&#8217;s Disease (at least three studies showed that the more coffee you drank, the lower your risk).</li>
<li>Coffee drinking reduces the risk of cirrhosis of the liver by up to 80%, and cuts the risk of gall stones in half.</li>
</ul>
<p><strong> </strong></p>
<p><strong>Bad:</strong> Random Coffee Fact: People who buy coffee primarily at drive through windows on their way to work will spend as much as <strong>45 hours a year waiting in line.</strong><strong> </strong></p>
<p><strong>Good: Caffeine aids weight loss</strong></p>
<p>Caffeine speeds your body’s metabolism so you burn calories at a faster rate, and it breaks down fat. Fat conversion is up to 30% more efficient when you consume caffeine before you exercise. It also keeps blood sugar levels higher, reducing appetite.</p>
<p><strong>“A Little Bad, A Lot of Good”</strong></p>
<p>Concludes Dr. Tomas DePaulis at Vanderbilt University Institute for Coffee Studies: &#8220;Overall, the research shows that coffee is far more helpful than harmful.&#8221; Drinking coffee, he says, brings little bad, but a lot of good.</p>

<p>Our friend, Dennis got me some <a href="http://en.wikipedia.org/wiki/Kopi_luwak" target="_blank">Kopi Luwak</a> from Indonesia. According to his &#8220;Reliable Source&#8221;, it is the real deal. It was given to him as a gift.</p>
<p>So, in double-quick time (6 hours period), got a few guys to come over to my place for tasting session. At around 8.30pm we  have Dennis the Menace, Ralph the German Bear, Marcus Aurelius + Wife and Kid, Me + my Home Minister ready to see what so great about Kopi Luwak.</p>

No kidding</p>
<p>Well, I actually made 3 rounds of Aeropress coffee using different beans just to make sure their minds are not bias in anyway (don&#8217;t want them to be influenced by the reputation of kopi Luwak).</p>
<p>In fact everyone like the Kopi Luwak. It is earthy, full body, no bitterness. Personally I find it surprisingly pleasant. Then I ask the very important question, &#8220;Would you pay USD30 for a cup of Kopi Luwak or even RM30 for that cup?&#8221;</p>
<p>And everyone answers &#8220;NOOOOOO&#8221;.</p>
<p>Frankly, it is a decent cup of coffee. Whether you like it or not depends on your taste preference. I would prefer some Ethiopia. I would not pay more then RM10 for a cup. And it does taste better than those Kopi-O Kosong-type you find in regular kopitiam.</p>

It&#8217;s from Indonesia, and the roasting facility is nothing you&#8217;d ever imagined. It&#8217;s as exotic (read: unusual, rather stomach-churning, and not for the faint-hearted) and organic as it gets. Let&#8217;s get some facts on the table first: the name is <strong><em>Kopi Luwak</em> (Luwak Coffee)</strong>, and it&#8217;s produced when a  Indonesia&#8217;s fox-like cousin that has a penchant for coffee, dines on delicious raw coffee fruit, and extracts (yes journeying through its digestive system) the coffee pits (yes, the prized coffee beans, already nicely roasted!). Gaining attention from everyone from <strong>Oprah</strong>, the Wildboyz of <strong>MTV&#8217;s Jackass</strong> fame, to Andrew Zimmern of <strong>Travel Channel&#8217;s Bizarre Food</strong>s. Not a week goes by when I do not get an email from someone, somewhere in the world, asking me a question relating to Kopi Luwak. Kopi Luwak, or “KL” as we call it, is one of the rarest and most expensive coffees in the world. At around $800/kg it dwarves the moderately expensive Jamaican Blue Mountain and Hawaiian Kona Arabica Coffees.</p>
<p>For those of you who do not know what Kopi Luwak is, take a deep breath, put your cappuccino down and read on. Luwak is the Indonesian name for the Masked Palm Civet. This animal has close relatives throughout most of Asia, as well as in Ethiopia and Kenya. Its poor cousin in China got blamed for being a link in the SARS epidemic in 2004 and got pretty much wiped out in a government cull. Before that it had been a culinary delicacy in Mainland Chinese cuisine. In Indonesia, the range of the Luwak is quite widespread. Their habitat includes higher altitude, less densely populated areas of Sumatra, Java, Bali, Sulawesi and the islands of Nusa Tenggara. The Luwak is nocturnal by nature and is quite wary of human contact. It nearly always comes out at dusk to hunt for food and to forage, by morning it is tucked up sleeping.<br />

The Luwak is an omnivore, eating mainly fruits, but not averse to raiding a hen house for eggs, or scavenging for mice, rats and small chickens. Often the Luwak is demonised in small villages for its ability to damage poultry production, perhaps in a similar vein that weasels are not on any farmer’s Christmas Card list in western countries.</p>
<p>So this brings us around to the part the Luwak plays in one of the stranger chapters of global coffee consumption. Not unlike the way in which coffee was first discovered (thanks to a herd of dancing goats back in Abyssinia over 1000 years ago), Kopi Luwak somehow accidentally made its way from animal to human; albeit in a more direct and slightly revolting way.</p>
<p>Luwak generally forage ripe coffee cherries from the trees during the night, gorging themselves on the fruit. The gastrointestinal tract of the animal removes the pulp and skin from the cherry, but is unable to digest the stone or bean inside. Finally the beans are deposited in a star-fish shaped pile from the rear end of the Luwak. The excrement, which looks a bit like peanut brittle candy, is then collected, cleaned, dried and roasted by the villagers, who savour it for its unique taste profile. Of course in the village Kopi Luwak actually has two meanings. The first and most common does not actually refer to coffee consumed and subsequently passed by the Luwak, but rather to ripe coffee that was picked by human hand, the Luwak reference being to the fact that if the Luwak had seen the cherry first he would have eaten it, as it was that ripe.</p>
<p>As the Luwak is an omnivore it must be said that the taste of the final cup does depend somewhat on what else the Luwak has been eating along with the coffee cherries. Cupping reports from experts include comparisons to fruit such as Papaya, Pineapple, Mango and Blackberry. On the other hand there are also frequent comparisons to “game” (meaning the dead mouse consumed before the coffee cherry I suspect).</p>
<p>As the Luwak is found all over the coffee producing regions of Indonesia, the regional cupping characters of the coffee will still be apparent in the coffee. Because over 80% of coffee from Indonesia is the less interesting Robusta, then the Luwak’s intervention in the traditional coffee chain does not dramatically change the cupping character of this type of coffee. The cupping characters of the Arabicas however are altered by the inner workings of the Luwak.<br />

I had the pleasure to accompany Professor Massimo Marcone, from the University of Guelph, on a TV documentary shoot back in 2004. Professor Marcone is the world’s premier Civetologist. His study on Civets has taken him from the Horn of Africa, through the Philippines and Malaysia to Indonesia. His passion for Civets is contagious. During the filming he described to me in great detail just how the Luwak’s intestinal system affects the coffee. Apparently the combination of scenting glands on the rear end of the animal, along with the secretions in its digestive system, contributes to a unique finished product. He has also devised a method to detect whether Kopi Luwak is the real deal, or fake. He estimates that around 48% of all Kopi Luwak on the market is fake, or at the very best very small quantities of real stuff mixed in with normal coffee filler. When paying such a premium, it is wise to make sure the coffee you are buying is certified as being authentic.<br />

Kopi Luwak indeed attracts its fair share of both true sceptics and coffee crazed fans. American TV talk shows, such as Oprah, have regularly featured Kopi Luwak. One of the more interesting groups of Luwak hunters to turn up at Merdeka Coffee’s door was the cast of MTV’s Wildboyz (including Steve-O, Chris Pontiak and Johnny Knoxville from “Jackass” fame). Steve-O had a great tussle with the Luwak, which left him (Steve-O) scarred and battered. In the final shot of filming Steve-O scooped up some raw Luwak pooh containing coffee, consumed it and claimed with great satisfaction: “Good to the last dropping!”.</p>
<p>Whether it deserves a serious place in the mainstream of specialty coffee is debatable. However it can not be doubted that Kopi Luwak is absolutely unique and it comes from right here in Indonesia.</p>
