<title><![CDATA[Openbrouwdag Cantillon]]></title>

<content:encoded><![CDATA[<div class='snap_preview'><p style="text-align:justify;">Zaterdag 7 november trokken we naar Brussel, meer bepaald naar de familiale brouwerij <span style="text-decoration:underline;"><strong>Cantillon</strong></span> waar men Lambiek, Geuze, Faro en  Kriek brouwt en waar nog niets is veranderd sinds 1900, het jaar waarin de brouwerij werd gesticht. De familie Van Roy-Cantillon heette ons  welkom op hun &#8216;openbrouwdag&#8217; voor een bezoek aan een fantastisch stuk erfgoed:  de werktuigen, de machines en het brouwproces zijn hetzelfde  gebleven en ook aan de smaak van het bier werd niets veranderd de laatste 100 jaar.</p>

<p style="text-align:justify;">Lambiek, een zuur bier met cider-achtige, droge sherrysmaak, is het eindresultaat van een zeer oud brouwprocédé. Geschriften, daterend uit 1559, vermelden reeds bij de productie van lambiek: &#8220;volgens een oud recept&#8221;.</p>
<p style="text-align:justify;">Het is een spontaan gefermenteerd bier, gebrouwen met 30% ongemouten (ruwe) tarwe en 70% gemoute gerst, gekruid met overjaarse hop. Dit tarwebier kan enkel in de streek van de Zennevalei gebrouwen worden doordat het de aanwezigheid vereist van specifieke wilde gisten.</p>

<p style="text-align:justify;">Het brouwproces start met het <span style="text-decoration:underline;"><strong>maischen</strong></span>, dit is het maken van een beslag bij 45°C van gemoute en gemalen gerst, tenminste 30% gemalen tarwe en water. Bij deze temperatuur zullen de proteasen van de mout de eerste oplosbare elementen vrijmaken, waarvan eiwitten de belangrijkste zijn. Vervolgens wordt de temperatuur opgedreven tot 52°C, waardoor de aanwezige zetmelen vloeibaar en oplosbaar gemaakt worden. Door vervolgens de temperatuur nog verder te laten stijgen tot 75°C komt men in het versuikeringsstadium waar het zetmeel enzymatisch wordt afgebroken tot  fermenteerbare suikers. Het zijn deze suikers die later, tijdens de fermentatie, omgezet worden in alcohol.</p>
<p style="text-align:justify;">Dit alles gebeurt in de zogenaamde maischketel of beslagkuip. Resultaat van dit proces is een mengsel van vaste en vloeibare stof, <strong><span style="text-decoration:underline;">wort</span> </strong>genaamd, dewelke vervolgens gescheiden wordt door filtratie. Wat achterblijft op de filter, het draf, wordt gerecupereerd en later verwerkt in veevoeders, en jawel, ook in ontbijtgranen en koekjes.</p>

<p style="text-align:justify;">Het overgebleven, gefilterde wort (een oplossing van suikers, proteïnen en mineralen) wordt overgepomt naar de brouw- of kookketel. Deze roodkoperen kuip  is voorzien van een verwarmingssysteem zodat men het wort kan <span style="text-decoration:underline;"><strong>koken</strong></span>. Hier wordt het wort gekruid met overjaarse hop en gekookt gedurende 4 à 5 uur.</p>

<p style="text-align:justify;">Tenslotte wordt het gekookte wort naar het koelschip overgepompt. Dit is een open, ondiepe kuip op de zolderverdieping waar de Brusselse buitenlucht via tochtgaten in contact komt met het gehopte wort en het overnacht afkoelt. Tijdens dit cruciaal moment grijpt de mysterieuze inoculatie of &#8216;infectie&#8217; plaats: de brouwerij-eigen microflora van <span style="text-decoration:underline;"><strong>wilde gisten</strong></span> (een 80-tal soorten in totaal; waarvan de Brettanomyces bruxellensis en lambicus de bekendste zijn) worden op een natuurlijke, spontane wijze opgenomen door het wort, waar ze zich later door de aanwezigheid van de suikers zullen vermenigvuldigen en alcohol en aromacomponenten vormen.<span style="font-size:x-small;"><br />

<p style="text-align:justify;">In tegenstelling tot de niet-spontane gistingsbieren, waar gebruik gemaakt word van kunstmatige koeling en het daardoor mogelijk is het hele jaar door te brouwen kan de lambiek enkel van oktober tot mei gebrouwen worden. Tijdens de winter is de lucht namelijk zuiverder en bestaat er minder risico dat ongewenste gisten en bacteriën in contact komen met het wort. Tijdens de zomer is de lucht bovendien te warm om goed te koelen.</p>
<p style="text-align:justify;">De volgende ochtend is het wort volledig afgekoeld en wordt het op <span style="text-decoration:underline;"><strong>eikenhouten vaten</strong></span> getrokken. Deze vaten zijn doorgaans erg oud en zijn voornamelijk afkomstig uit wijngebieden. Vroeger werden vaten gebruikt waarin de wijn, port of sherry naar onze streken werd verscheept. Tegenwoordig worden de tonnen aangekocht bij wijnboeren uit Frankrijk en Spanje.<span style="font-size:x-small;"> </span></p>

<p style="text-align:justify;">Na een paar dagen treden de gisten in werking; ze vormen witte schuimkoppen die uit het gaatje boven aan het eiken vat verschijnen. Het witte schuim wordt na een tijdje bruin en vormt zo een natuurlijk stopsel dat het bier beschermt tegen oxidatie en infectie. Tijdens de eerste gisting vormt zich azijnzuur, in een latere fase volgt een melkzure gisting die uiteindelijk leidt tot de alcoholische gisting waarin de nog aanwezige suikers worden omgezet in alcohol. Pas nadien volgt de eigenlijke rijping en vormt zich de karakteristieke smaak van de lambiek.</p>

<p style="text-align:justify;">Lambiek, rechtstreeks uit de ton getapt, is een plat en schuimloos bier. Geïnspireerd door de Franse champagnemethode zijn brouwers oude, nog niet volledig uitgegiste en jonge lambiek gaan mengen en op grote flessen gaan laten hergisten tot een sprankelende <span style="text-decoration:underline;"><strong>geuze</strong></span>. Vandaar dat geuze vaak de champagne onder de bieren wordt genoemd.</p>

<p style="text-align:justify;">Ook het reinigen van de vaten gebeurt nog steeds op de oude, arbeidsintensieve manier. Na een paar spoelbeurten worden het vat gevuld met kettingen. Tijdens een dolle rit in een draai- en zwiermachine, die erg veel weg heeft van een astronautentraining, schrapen deze kettingen de binnenkant van de ton schoon.</p>

<p style="text-align:justify;">Traditionele of <span style="text-decoration:underline;"><strong>oude geuze</strong></span> kan men indelen in drie verschillende smaakpatronen: de malse geuze met een lichtjes zurige, maar evenwichtige tinteling, een geuze waarin het melkzure aspect overheerst en een geuze die een uitgesproken azijnzurig karakter heeft. Oorspronkelijk kregen caféklanten bij de bestelling van een geuze een kopje met een klontje suiker en een stamper. Daarmee konden zij de zurige geuze naar eigen goeddunken wat aanzoeten. Deze traditie is evenwel zo goed als verdwenen.</p>

<p style="text-align:justify;">Na de rondleiding volgde &#8211; uiteraard &#8211; de degustatie. Alle Cantillon bieren passeerden de revue: de platte Lambiek, Geuze, Kriek, Lou Pepe, Framboise, Rosé de Gambrinus, Sint-Lamvinus, &#8230; En dit alles onder begeleiding van de  bierkenner en -liefhebber bij uitstek: Erik Vandeperre.</p>

<p style="text-align:justify;">Interessant weetje: brouwerij Cantillon streeft naar een zo natuurlijk mogelijk brouwproces en -product. De ingrediënten zijn bijgevolg van biologische teelt. Om muizen weg te houden van de zolder (waar het graan ligt opgeslagen) heeft men simpelweg een kat in dienst en om vliegen van de fruitbieren weg te houden doet men beroep op spinnen. Waag het dus niet om de ontelbare webben op de zolder op te kuisen!</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>غلامحسین همیشه میگه اگه اسهال داری بذار باشه خیلی داروی ضد اسهال مصرف نکن خود من هم همیشه اعتقاد داشتم که زخمها رو نباید زیر پانسمان قایمشون کرد. با شکافتشون تا هر چی خون و کثافت زیر زخم هستش بریزه بیرون اما من گوش نمی کنم ترجیح می دم همیشه این زخم ها باشه. اینها جزیی از زندگی من شدن و همچنین جزیی از هویت من.<br />
وقتی که به زبون کد حرف می زنی یعنی این که می خوای زندگیت برای خودت باشه و نه چند تا پاک کن که صورت مساله ها رو فقط پاک می کنن و علامت سوالها.<br />
برای تمام کدها دلم یه جورایی لک زده. خیلی وقته یا چیز یه چیزی بشتر که کد جدیدی نداشتیم. محمد توی نامه های سربازیش نوشته بود که حتی وقتی با مسعود فارسی هم حرف می زنه کسی نمی فهمه.<br />
یلدا، لوکو، پدر، پسر، روح القدس و خیلیهای و خیلی چیزها که یادم نمیاد.<br />
این ما بودیم که می ترسیدیم از اینده و یک رسم همیشگی انجمن بود که هر کی ازدواج کرده دیگه نیومده تو انجمن. همیشه چند تا استثنا وجود داره که حرفتو ببره زیر سوال.<br />
اما شاید این کدها همون فیلتری از شرم و خود سانسوری بود که یه نوجوان همیشه داره. و مایی که الان بزرگ شدیم و وعده هامون رو فراموش کردیم. قرار بود من وقتی ماشین خریدم اولین چیز لامپ اخطار نبستن کمربندی ایمنی رو بسوزونم و بعد بچه ها را رو به یه دور کلاتی دعوت کنم اما به روش خودمون. باید ساعت سه و بیست و یک دقیقه نیمه شب باشه و البته با دنده عقب بعد بریم مش زینل رو از خواب بیدار کنیم و بریم نخود بخوریم و البته با قوانین خودمون. هیچ کس حق نداشت کاسه رو کج کنه برای سهمیه بیشتر و توی اولین حرکت باید تمام فلفل رو تو نخود خالی می کردیم.<br />
یا اینکه من یه مسافرت بود و یا نمی دونم تماشای یه فیلم میکی موس یا تام و جری به محمد بدهکارم . بر سر شرطبندی بر سر جنسیت بچه اول جواد خیلی چیزا گفتیم و قرار داد امضا کردیم و گذاشتیم تو یخچال انجمن.<br />
یخچال انجمن جایی بود که حتی امنیتش از صندوق امانات بانکهای سوییس هم بیشتر بود و اگه کسی احیانا دست درازی می کردم حسابش با یه چیزی بدتر از کرامالکاتبین بود. ماجرای دکتر فرهمند رو که تو وبلاگ محمد خوندین؟</p>
<p>دلم برای اون موقع ها تنگ نشده و حتی نمی خوام بگم که تکرار بشه چون اونقدر یونیک بود که اگه تکرار بشه مزه شو از دست میده. این جوری بهتره. میشه مثل خاطراتی که قبلنا بچه ها از پارک مشهد داشتن. یه تجربه که تکرارش باعث خراب کردنش میشه.<br />
خیلی ور زدم شاید از برکات همین اسهال باشه.<br />

A few days ago I was with my girlfriend at the local <a href="http://www.liquorbarn.com/">Liquor Barn</a> shopping for some after work refreshments. I&#8217;m in the process of becoming a bit of a &#8220;beer connoisseur&#8221;, nothing big mind you. The only beers I enjoy right now are <a href="http://www.bluemoonbrewingcompany.com/">Blue Moon</a>, <a href="http://www.leinie.com/av.html">Leinenkugel</a>, <a href="http://www.dundeebeer.com/">Dundee Honey Brown</a>, <a href="http://www.georgekillians.com/">Killian&#8217;s Irish Red</a>, <a href="http://www.stpauligirl.com/">St. Paulie Girl</a>, and <a href="http://www.heineken.com/">Heineken</a>. I usually stay away from the &#8220;cheaper&#8221; beers like Bud Light, MGD, Coors, Natural Light, etc,. Those are a little too watered down for me, and I usually don&#8217;t buy beer that I&#8217;m not familiar with. However, this last trip to the liquor store I took a chance and purchased the Brewery Ommegang Gift Pack (pictured above). It was like $20, for 3 big bottles (25.4 oz) of different ales, plus a collectable glass.</p>
<p>The ales are:<br />
THREE PHILOSOPHERS – A famed Belgian blend: a dark, malty quadrupel ale with a splash of authentic Belgian Kriek (cherry-lambic). A fantastic sipping brew with a substantial 9.8% ABV.</p>
<p>HENNEPIN SAISON – Rustic golden ale modeled on the brews farmers make in Belgium – with a touch of ginger &#38; a robust 7.7% ABV.</p>
<p>CHOCOLATE INDULGENCE – A Belgian style stout brewed with imported Belgian chocolate. Dark, rich, with subtle chocolate notes – dry, not sweet, with 7% ABV.</p>
<p>I&#8217;ve already finished the Hennepin Saison and it was pretty good. I was afraid it would be bitter or taste strange from the higher alcohol but it wasn&#8217;t at all. I am drinking the Chocolate Indulgence now and I had sworn off dark ales after the first few I had tasted like teriaki sauce to me, but this one is actually pretty decent, I think it has changed my feelings on dark ale. The Three Philosophers is the highest ABV, so I&#8217;m a little leary, but who knows. This ale has made a pretty good impression on me so far. <content:encoded><![CDATA[<div class='snap_preview'><p>I just like to say the name of this beer&#8230; Transatlantique Kriek&#8230; has a good ring to it.  I am very happy to say that the beer has a good taste to it, as well.  <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   This one started off the night right with a lip puckering that we usually only reserve for the boss, but New Belgium gave us another reason.  A cherry red pour with a very clear, pink head, I thought I was pouring some of fruit punch but one whiff and I remembered I wasn&#8217;t 12 and fat and that this was a grown up drink (8.0% ABV)&#8230; anywho&#8230; the aroma is lite on the beer high on the vinegar and hints at the dry sourness that is to come.  This leads to a bitter, dry front, a mild middle, and a sour cherry finish with an overall balance across the taste from sour to cherry. . Overall a great beer that I would recommend any time.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Bem, como nós almoçamos e jantamos quase todos os dias em restaurantes nas últimas duas semanas, eu acabei experimentando várias cervejas neste período. Como está muito devagar colocar uma a uma (e minhas aulas estão para começar&#8230;), resolvi fazer um “<em>mega post</em>” falando de 9 cervejas&#8230; (faltaram 3 para uma caixa <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  ) Lá vai:</p>
<p><strong>Orval</strong></p>
<p>Esta fica numa categoria parecida à da Westmalle; lembra bastante a Chimay, mas é menos encorpada. Como gosto de cervejas fortes e encorpadas, continuo preferindo a Chimay. Faz alguns dias que a bebi, então terei de experimentá-la novamente para colocar mais detalhes.</p>
<p><strong>Estaminet</strong></p>
<p>Finalmente vou falar de uma cerveja <em>pilsen</em>, categoria “premium”. Eu gosto de cervejas <em>pilsen</em>, mas acho chato elas dominarem o mercado brasileiro da forma como dominam; acho que por isto demorei um pouco mais para experimentar uma cerveja deste tipo. Voltando à Estaminet, ela tem cor clara e brilhante, muito límpida. No primeiro gole ela dá a sensação de ser super amarga, mas logo depois esta sensação desaparece e fica apenas um sabor muito agradável, de uma cerveja saborosa, macia e muito, muito boa.</p>
<p><strong>Hoegaarden</strong></p>
<p>Lembram da <em>Brugs Witbier</em>? Pois é, esta também é uma <em>witbier</em>, mas eu não sabia disto, esta informação fundamental não estava no cardápio e, como ela parece ser bem conhecida, nunca ia imaginar isto. O maior mérito dela é não ter o mesmo sabor pronunciado da Brugs, ser um pouco mais “aguada”. É mais ou menos como dizer que seu maior mérito é não ser tudo que deveria ser&#8230; Talvez o único motivo para experimentá-la de novo seja curiosidade, pois li que as <em>witbier </em>ficam praticamente brancas quando estão bem geladas (por isso também são chamadas de <em>white beer</em>). Talvez bem gelada ela seja um pouco mais palatável.</p>
<p><strong>De Koninck (Bolleke)</strong></p>
<p>O legal desta cerveja é que ela tem um “apelido”: Bolleke, que na verdade é o nome do copo em forma de <em>bowl </em>da De Koninck, a cervejaria que a produz. Agora falando da cerveja em si, eu não lembro muito bem dela <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Só lembro que gostei, era uma boa cerveja, mas também nada de espetacularmente especial.</p>
<p><strong>Westmalle Tripple e Leffe Tripple</strong></p>
<p>Estas duas são muito boas mesmo. São cervejas claras, mas muito fortes (9% de álcool e acima). Elas são claras e apresentam-se um pouco turvas, mas nada tão exagerado quanto uma <em>witbier</em>. Apesar de serem assim tão fortes, tem um sabor muito suave, nenhum amargor exagerado nem presença marcante do álcool. A Westmalle é um pouquinho mais encorpada; eu gostei mais dela e a Fernanda, da Leffe. Mas qualquer uma delas me deixaria muito contente.</p>
<p><strong>Kriek</strong></p>
<p>Desta eu escapei <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Um colega do curso a pediu para experimentar e seu comentário foi: “Hum, parece cereja. Hum, cheira como cereja. Hum, tem gosto de cereja! É, não dá para acertar todas&#8230;”. Acho que não preciso falar mais nada.</p>
<p><strong>Brugge Tripel</strong></p>
<p>Mesma categoria das Westmalle e Leffe Tripple descritas acima. Mas esta é um pouco mais sem-graça. Experimentei quando visitamos Brugge, já que era uma cerveja local.</p>
<p><strong><img class="alignleft size-full wp-image-148" title="spandoek_lesage-web" src="http://cacaucomlupulo.wordpress.com/files/2009/08/spandoek_lesage-web.jpg" alt="spandoek_lesage-web" width="240" height="121" />Lesage</strong></p>
<p>Outra cerveja que experimentei em Brugge. Como ela estava em destaque no cardápio imagino que não seja uma cerveja muito comum de se encontrar (também não lembro de tê-la visto em nenhum dos restaurantes/bares de Leuven). Ela é uma cerveja <em>blond</em>, mas tem uma coloração um pouco mais intensa, não é dourada. É muito saborosa e também não dá nem sinal de seus 7% de álcool.</p>
<p>Ufa, depois desta maratona acho que não tenho mais nenhuma na lista para escrever&#8230; A não ser a <strong>Stella Artois</strong>, que não é mais novidade aí no Brasil. Mas admito que é ótimo ter a opção de pedir uma <em>Stella </em>quando você não está a fim de pensar muito no que vai beber&#8230;</p>

<p>Canadaganzen stormen de slotgracht van het Colomakasteel van <a href="http://www.sint-pieters-leeuw.be" target="_blank">Sint-Pieters-Leeuw</a> in.  Het kasteel is een blijvende getuige van het grote belang dat de &#8220;Heerlijckheydt van Sinte Peeters Leeuw&#8221; had in het land van Gaasbeek.  Het Colomakasteel is een typisch voorbeeld van de overgang van een versterkt kasteel uit de 15e eeuw naar het &#8220;lusthuis&#8221; of &#8220;huys van plaisantie&#8221; of buitenverblijf.  Nog net op de valreep kan ik hier de tentoonstelling &#8216;Geuze &#38; Kriek, een smakelijke expo&#8217; bezoeken.</p>

<p>De expo werd op 3 juli met een vernissage geopend en mocht ruim voor de afsluiting op 16 augustus reeds de 1.000ste bezoeker verwelkomen.  Geuze en Kriek zijn gelukkig weer populair.  Ook de proeverij van <a href="http://www.lambikstoempers.be" target="_blank">De Lambikstoempers</a> op 7 juli in het kader van deze expo was snel volzet.</p>

<p>De expo start met een uiteenzetting van het vervaardigen van lambiek.  Van de grondstoffenopslagplaats en de moutvloer gaat het naar de brouwzaal.  Het complexe gistingsproces wordt in eenvoudige termen uitgelegd.  Er is aandacht voor de kuiperij, de tappenkapperij en de solfergieterij en ook de bierstekers blijven uiteraard niet onbesproken.  En hoe schenk je nu een oude geuze volgens de regels van de kunst?  Prachtige pancartes vertellen het verhaal en foto&#8217;s en reclameborden uit de oude doos kruiden het geheel.  De meeste oude machines zijn afkomstig van de voormalige brouwerij Winderickx uit Dworp.  Graag verwijs ik je naar <a href="http://bierfestival.wordpress.com/2008/06/10/edgar-winderickx/" target="_blank">een vorig artikel</a> over Edgar Winderickx.</p>

In deze fabriek vervaardigde men solferwieken voor het ontsmetten van de lege lambiekvaten.</em></h6>
<p>Sint-Pieters-Leeuw kende 4 brouwerijen en stekerijen.  <a href="http://www.lindemans.be/" target="_blank">Brouwerij Lindemans</a> in Vlezenbeek is nog steeds actief.  Brasserie de l&#8217;Etoile (waar nu brouwerij Belle-Vue staat) en stekerij Huygens sloten reeds lang de deuren.  In een filmpje vertelt voormalig steker Jan Moriau over Stekerij Moriau die in 1993 de deuren sloot.  Op de vraag hoe faro wordt gemaakt, antwoordt hij sappig: &#8220;ge pakt lambiek en een emmer water en kapt dat bijeen.  Zo bekom je een lichter bier.  Daar doe je dan nog wat zoet bij.&#8221;</p>

<p>De reis door lambikland eindigt met een collectie glazen, oude bierviltjes en lambikstoempers van Johan &#8216;Wanne&#8217; Madalijns, voorzitter van De Lambikstoempers.  In dezelfde zaal haalt men de oorzaken van de teloorgang van de fondgeuze aan (ontstaan imitatiegeuze, duurder dan andere bieren, probleem van 75cl-flessen in cafés en de consument die zoete smaken gewoon wordt) , maar ook de huidige opgang met de poging tot bescherming van het biertype en de oprichting van Horal.</p>

<p>Het zou me te ver drijven de tentoonstelling van naaldje tot draadje te verhalen.  Ik kan alleen maar hopen dat Sint-Pieters-Leeuw dit prachtige initiatief in de toekomst wil herhalen en dat zij die de expo niet bezocht hebben een volgende keer wel de weg naar het Colomakasteel vinden.  Al is dit kasteel met haar park, haar immense collectie rozen en haar rozenmuseum ook zonder de tentoonstelling een bezoek waard.</p>

Sometimes I am proven wrong; Belgian Krieks and Lambics are some of the best, most sophisticated beers in the world and they are the without a doubt also the fruitiest. It is difficult to argue with the <em>gallons </em>of fresh blackberries or currants added to the wort. However, most American fruit beers are just sad. This is one of those cases.</p>
<p>Ladies and gentlemen, I present to you a brief summary of a beer that I poured down the drain:</p>
<p><strong>Pyramid Apricot Ale</strong><br />
ABV: negligible.<br />
IBU: who cares?</p>
<p>No head. More bubbles than a pint of Coca-Cola. The nose is made up of a sickly apricot aroma and nothing else. And if it does not smell like apricot-flavored cough syrup, it sure tastes like it. There <em>are </em>some hints of hops on the finish, but the malt is nowhere to be seen. The taste bugs me the most. If Robatussin wanted an apricot flavor, they would call up Pyramid Brewing Company if they haven&#8217;t already.</p>

<p>Belga meggysör, amihez a Bem rakparton a Belgian brasserienél tudsz hozzájutni. A hely kicsit borsos, de nagyon kellemes, tipikus európai söröző, Bosch képekkel dekorálva, ami miatt nekem külön bejött.  Na meg az , hogy talán itt van a legnagyobb sörválaszték Budapesten. A kriek  rendszerint a lányok nagy kedvence. Ebben a hőségben ideális ital.</p>

<p style="text-align:justify;">Si je vous ai démontré il y a quelques semaines que le taux d&#8217;ensoleillement est supérieur dans le Nord de la France que sur Paris par exemple, la région n&#8217;est pas exempte de jours de pluie l&#8217;été. Si les Nordistes ne craignent pas les gouttes, il y a tout de même quelques précautions à prévoir &#8230;</p>
<p style="text-align:justify;">Direction un estaminet, proche frontière, avec une belle vue dégagée à 360° sur les Monts des Flandres pour un après-midi ensoleillé sous la pluie. L&#8217;estaminet &#8220;De Kauwackers&#8221; (le corbeau en français), situé à Dranouter, à à peine 3 kilomètres de Bailleul, en est un parfait exemple.<br />
Première chose à vérifier avant de s&#8217;asseoir dehors, si les parasols sont à portée de main. Un nordiste en vacances dans sa région se comporte comme si il était dans le Sud de la France &#8230;</p>
<p style="text-align:justify;">- &#8220;<em>Ah satané pluie !! Allez on remballe tout et direction le Mas</em>&#8221; dirait un Marseillais avec l&#8217;accent qui le caractérise si bien.<br />
- &#8220;<em>Ah, il pleut &#8230; ??!! Allez vite ouvrez les parasols ça nous protégera du mauvais temps !!</em>&#8221; dit un Nordiste avec toute la quiétude qui caractérise ces paroles.</p>

<p style="text-align:justify;">Si dans le Sud de la France, le pastis et les olives sont rois, dans le Nord on opte plutôt pour une bonne bière belge et une bonne saucisse sèche des Ardennes. Sous la pluie ou sous le soleil, ce goûter égaiera chaque après-midi passé dans le jardin de l&#8217;estaminet.</p>
<p style="text-align:justify;">- &#8220;<em>Qu&#8217;est-ce que j&#8217;vous sers ?&#8221;</em><br />
- &#8220;<em>Oh, un perrier pour madame, un pastis pour monsieur et un rosé pour moi !</em>&#8221; diraient des Marseillais.</p>
<p style="text-align:justify;">- &#8220;J<em>&#8216;vous sers quoi ?&#8221;</em><br />
- &#8220;<em>mmmh, une Brigand, oh non plutôt une Westmalle triple pour monsieur, une Kriek cerise pour madame et une Jupiler pour moi !&#8221;</em> disent les Nordites.</p>

<p style="text-align:justify;">Quand vient l&#8217;heure de dîner, après une ou deux bières ingurgitées à l&#8217;extérieur sous la pluie, parmi les 4 pages de choix dans la carte, la plupart des Nordistes préfèrent manger à l&#8217;intérieur. Une carbonnade ou un poulet frit enroulé d&#8217;une tranche de bacon avec du fromage à l&#8217;intérieur composent très souvent le dîner dans ce type d&#8217;établissements. Mais l&#8217;ambiance qui y réside est toujours très chaude, le dessert se prendra une nouvelle fois dehors.</p>
<p style="text-align:justify;">- &#8220;<em>Ah non, les chaises sont mouillées</em> !&#8221; dirait le Marseillais<br />
- &#8220;<em>Bon allez, file moi ta serviette</em> (car il y a toujours une personne parmi un groupe d&#8217;amis nordiste qui dispose d&#8217;une serviette de plage dans le coffre de sa voiture) <em>pour que j&#8217;essuie toutes les chaises</em> !&#8221;</p>
<p style="text-align:justify;">Si le Marseillais décidait de s&#8217;asseoir malgré tout, il dirait &#8220;<em>Ouh c&#8217;est froid aux fesses !!</em>&#8220;, avec un grognement significatif.<br />
Le Nordiste lui dit plutôt &#8220;<em>Ah c&#8217;est froid !</em>!&#8221; avec le rire général de ces accolytes.</p>
<p style="text-align:justify;">Vous l&#8217;aurez compris, la pluie n&#8217;empêche pas de vivre l&#8217;été dans le Nord, le soleil non plus d&#8217;ailleurs. Mais pour cela, je vous ai déjà alerté récemment des petites choses à prévoir avant votre venue sur l&#8217;une des stations balnéaires qui abrite la Côte Nord.</p>

<p>I tend to avoid fruit beers because they are generally too sweet and get old after the first few sips (Lienenkugel&#8217;s Berry Weiss comes to mind). The Belgian Kriek is different. Brewed with wild yeast in a process called &#8220;spontaneous fermentation,&#8221; these Belgian beers get their strength from the windows and doors of the brewery being wide open, letting natural, airborne yeast from outside settle into the early beer. This method takes patience and practice, but the results can be both ravishing and unexpected, especially with the gallons of fresh raspberries and cherries added into the brew.</p>
<p>Belle-Vue Kriek is an interesting blend of flavors. The nose is more yeasty and bread-like than fruity, which to me is a good sign. After inspecting the mouthfeel, the first thing you get is the fruit; cherry flavors come out of the woodwork the second it hits your tongue. This is countered by a tart midpalate, a touch of sourness that compliments the fruit really well. The yeast also impart some flavorful undertones that appear now and again throughout drinking. Needless to say, I really enjoyed my experience with Belle-Vue. Hardcore Kriek drinkers shy away from it because its yeast effects are at a minimum comparitively (it is also produced by the InBev beer giant), but I found it to be a very refreshing beer for the summer, with its fruit sweetness subdued by complex emotions. My kind of beer.</p>

<p>You know that <em>sour</em> Belgian beer everyone warned you about? Well, I found it. I can appreciate how dry sourness can be an art form and can be the best of the best as far as some people are concerned, but for me, this was the first beer in years that I have poured down the drain. Definitely not my beer. Do not confuse this with the Hoegaarden Wit that everyone drinks in the states (basically a pumped up Blue Moon), Grand Cru is a monster of its own.</p>
<p>So why did I put this up here? Let&#8217;s talk tastes for a moment. It is a simple truth that what aspects of a beer appeal to some drinkers are the very same things that turn others away in disgust. That is partly why so many people in the U.S. decide that they are not into beer, because they think that &#8220;beer&#8221; is the countless tide of cheap, pale lagers: Miller, Budweiser, Coors. Others dive into it right away, but I did not think I enjoyed beer until I had my first brown ale.</p>
<p>Anyway, I digress. The point is that there hundreds of different styles of real beer out there and this means two things for you. One, that you should not keep buying and drinking something because you think you will like it eventually. And two, that you should always keep trying new beers. Not only will you learn more about your tastes and what best quenches them, but you will run into some surprises along the way.</p>
<p>Here&#8217;s a question of the day: what beer got you into beer? You know Newcastle Brown Ale? That got me into Guinness, German Hefeweißen, and beyond.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p style="text-align:left;">Pour continuer sur ma lancée de &#8220;<em>Tiens y&#8217;a de la belgitude par là-bas</em> <em>?</em> &#8220;, je viens de découvrir un véritable supermarché à bières en plein coeur de la Capitale !</p>
<p style="text-align:justify;">Le samedi après-midi est l&#8217;occasion pour certains nordistes de se rendre en Belgique afin de s&#8217;approvisionner en cigarettes, alcools et bières ! En dehors de l&#8217;aspect prix, le choix proposé par les marchands belges est tout simplement énorme.</p>
<p style="text-align:justify;">- &#8220;<em>Normal </em>!&#8221; me diriez-vous &#8230; &#8220;<em>L&#8217;une des plus grandes spécialités de ce pays est la Bière.</em>&#8220;<br />
- &#8220;<em>Oui, mais les meilleurs vins nationaux ne sont pas forcément proposés dans les supermarchés Français ou dans les chaînes telles que Nicolas</em> !&#8221; Et toc ! <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>
<p style="text-align:justify;">Si je ne suis pas un adepte des endroits belges purement touristiques qui ont pour seuls vocations d&#8217;accroître un peu plus votre cancer du poumon ou la cyrhose qui ronge votre foie à petite goutte, je dois quand même avouer que j&#8217;aime me rendre dans certains magasins spécialisés, et notamment le fameux Roby situé près du Centre de Menen (Menin en Français). Là-bas, on y trouve des magnums de Leffe, des paniers cadeaux, des verres pour accompagner comme il se doit ces beuvrages houblonnés, mais aussi une gamme de bières artisanales les plus méconnues les unes des autres.</p>
<p style="text-align:justify;">Ce samedi après-midi, j&#8217;ai rencontré le gérant de la boutique &#8221;Pommier Dan&#8221;, Daniel Pommier, et j&#8217;ai retrouvé ce léger frétillement qui s&#8217;éveille en moi face à ces rangées de futurs cadavres ! Dans son entrepôt situé Quai de Bercy, au fin fond d&#8217;un tunnel à la pénombre particulière telle une zone de non droit, il y avait tout ce dont un nordiste ou un belge rêverait de trouver en dehors de chez lui : fûts, rangées de bouteilles, verres et chopes, une grande enseigne Ch&#8217;ti qui devait être destinée à une brasserie de la ville traînait là également, une enseigne clignotante &#8220;Kriek&#8221; et bien d&#8217;autres choses encore si chères au gars d&#8217;min coin.</p>

<p style="text-align:justify;">Daniel, véritable passionné de la distribution de boissons m&#8217;a expliqué la différence entre la culture commerciale belge et française, la façon dont on considère le volume et la valeur marchande, la règle de distribution en France face au quasi-monopole des grandes brasseries devenues des multi-nationales. J&#8217;ai enfin compris pourquoi à Paris une Kriek se vendait 12 euros quand on en trouve à moins de 5 euros sur Lille. J&#8217;ai aussi appris le secret de fabrication d&#8217;une bière aromatisée et ses particularités de brassage.</p>

<p style="text-align:justify;">Une belle rencontre, à peine un mois avant mon retour sur la Métropole lilloise, qui m&#8217;a conforté dans mon ambition de retour vers le Grand Nord. Je ne sais pas si Daniel est originaire de la région, mais il la représente de la plus belle des manières !</p>
<p style="text-align:justify;">Si mon petit guide des bières vous titille le palais chaque semaine, je vous conseille de vous rendre dans sa boutique située au 12, rue d&#8217;Aligre dans le XIXème arrondissement. Vous y découvrirez toutes les saveurs subtiles de l&#8217;orge et du houblon et les conseils d&#8217;un spécialiste !</p>

<p>Eizeringen was op 6 juni 2009 getuige van een geslaagd huwelijk tussen het bordeauxrode, sappige maar lichtzure vruchtje en de oudste bierstijl van het land.  U raadt het al: De eerste <a href="http://www.eizeringen.be/dagvandekriek/" target="_blank">&#8216;Dag van de Kriek&#8217;</a> was geboren!</p>
<p>Op deze dag brachten ongeveer 400 liefhebbers een bezoekje aan <a href="http://www.dorst.be" target="_blank">‘In de Verzekering tegen de Grote Dorst’</a>. Dit is het lambik-, geuze- en kriekcafé van de strafste cafébazen van Vlaanderen: Kurt en Yves Panneels.  Naast vele bierliefhebbers (waaronder mijzelf en biervriend Werner) tekenden ook <a href="http://www.kuaska.it" target="_blank">Lorenzo Dabove</a>, <a href="http://blog.seniorennet.be/bierblog/" target="_blank">William Roelens</a> en een aantal brouwers uit de streek present.</p>

<em>Kiezen tussen 18 soorten Kriek.</em></h6>
<p>Iedereen kon proeven van maar liefst 18 soorten kriek. Allen werden vakkundig op de toog tentoongesteld zodat iedereen kon keuren en kiezen. Van Oude Kriek Drie Fonteinen met Schaarbeekse krieken tot en met een Lindemans Kriek, van authentiek friszuur tot  zeemzoet, het was er allemaal!</p>
<p>De kriekliefhebber draaide het kriekenvocht vakkundig in het glas rond zoals de draaimolen dat deed onder de kerk. Voor het eerst in jaren werd er immers nog eens Eizeringen Kermis gevierd. Een mooi initiatief! Spelende kinderen, proevende ouders, gevulde terrasjes, … het Pajots leven kan soms eenvoudig mooi zijn.</p>
<p>Ook wij opteerden voor ‘degusteren’ in plaats van ‘drinken’ en kozen voor de proefplankjes van telkens 4 krieken.  De houten degustatieplankjes zelf werden ontworpen door <a href="http://www.nedda.be" target="_blank">Nedda</a> El Asmar.  Zij studeerde juweelontwerp en edelsmeedkunst aan de Koninklijke Academie voor Schone Kunsten in Antwerpen en aan het Royal College of Art in Londen en won reeds talrijke prijzen waaronder de titel van &#8216;Belgisch Designer van het Jaar&#8217; in 2007.</p>

<em>Proefplankjes laten je toe meer te degusteren.</em></h6>
<p>Uitschieters op onze plankjes waren Girardin kriekenlambik van ’t vat en 3 Fonteinen Schaarbeekse kriek 2008. De friszure fruitige aroma’s van de kriekenlambik en de gebalanceerde amandelnootachtige toetsen van de befaamde Schaarbeekse krieken staan voortaan in het collectief geheugen gegrifd. Uiteraard waren er nog vele kleppers aanwezig; nergens vind je dan ook zo een grote verscheidenheid verzameld in 1 herberg. Kiezen is verliezen, en dat de dag voor de Europese en Vlaamse verkiezingen!</p>
<p>De hele dag door kon men ook genieten van tal van culturele activiteiten. Kunstfotograaf <a href="http://www.pascalbaetens.com" target="_blank">Pascal Baetens</a> stelde zijn foto’s tentoon, die hij naar aanleiding van een fotoreportage in 2001 in de toen nog niet gerestaureerde herberg heeft gemaakt. De Doctor Jazz Band, ook fervente liefhebbers van de ‘aave geus en kriek’, fleurde de namiddag op. Na <a href="http://www.marcpairon.com/" target="_blank">Marc Pairon</a>, die gedichten voorlas uit zijn bestseller &#8220;De liefste liefdesverzen aller tijden”, was het de beurt aan café chantant met <a href="http://www.fonnydewulf.com/" target="_blank">Fonny De Wulf</a> en Peter van de Vivere: een schot in de roos en ambiance tot na middernacht!</p>
<p><em>Noteer alvast volgende datums in jullie agenda: Na de geslaagde eerste Dag van de Lambik vindt de tweede editie plaats op zaterdag 12 december 2009. <p>The reason behind all of this is because a Magritte Museum just opened (the day we left sadly) and Magritte was Belgian. So a wonderful surreal performance took over the street:</p>

<p>It was a sunny day so this kind of made sense:</p>

<p>There were fun photo shoots set up all over the square (which had been renamed for the day) and this one in the background has a saying which translates as this is not a couple, a play on one of Magritte&#8217;s famous painting of a pipe where he wrote &#8220;this is not a pipe&#8221; (in French of course).</p>

<title><![CDATA[EAT! Vancouver 2009 - Lambic Beer Tasting]]></title>

<p>I didn&#8217;t really pick out any events to sit down and watch on the stages, but nearing the end of the night my feet were pretty tired and I wanted to sit down.</p>
<p>Tasting some <a href="http://en.wikipedia.org/wiki/Lambic">lambic</a> beer while doing that seemed to fit just perfectly with that, and so we waited for the show at 830pm.</p>
<p>I first heard of Lambic Beer during the <a href="http://604foodtography.wordpress.com/2009/05/18/granville-island-brewing-tour/">Granville Island Brewing tour</a>, and it intrigued me.</p>
<blockquote><p><em><strong>Lambic</strong> is a very distinctive type of <a title="Beer" href="http://en.wikipedia.org/wiki/Beer">beer</a> brewed only in the <a title="Pajottenland" href="http://en.wikipedia.org/wiki/Pajottenland">Pajottenland</a> region of <a title="Belgium" href="http://en.wikipedia.org/wiki/Belgium">Belgium</a> (southwest of <a title="Brussels" href="http://en.wikipedia.org/wiki/Brussels">Brussels</a>).</em></p>
<p><em>Unlike conventional <a title="Ale" href="http://en.wikipedia.org/wiki/Ale">ales</a> and <a title="Lager" href="http://en.wikipedia.org/wiki/Lager">lagers</a>, which are <a title="Fermentation (food)" href="http://en.wikipedia.org/wiki/Fermentation_%28food%29">fermented</a> by carefully cultivated strains of brewer&#8217;s <a title="Yeast" href="http://en.wikipedia.org/wiki/Yeast">yeasts</a>, Lambic beer is instead produced by </em><em>spontaneous fermentation: it is exposed to the wild yeasts and bacteria that are said to be native to the <a class="mw-redirect" title="Senne" href="http://en.wikipedia.org/wiki/Senne">Senne</a> valley, in which Brussels lies. It is this unusual process which gives the beer its distinctive flavour: dry, <a class="extiw" title="wiktionary:vinous" href="http://en.wiktionary.org/wiki/vinous">vinous</a>, and cidery, with a slightly sour aftertaste.</em></p></blockquote>
<p>I personally think of it as sophisticated beer, as it&#8217;s not something you&#8217;ll knock back with your friends on a chill Friday night, but rather something you should enjoy and really taste. It actually tastes very similar to wine, as it has no typical beer aftertaste. Educating us about Lambic beer was <a href="http://www.justhereforthebeer.com">Justhereforthebeer.com</a> and we were presented with 4 different beers, courtesy of <a href="http://www.bravobeerco.com/">Bravo Beer Co</a>.</p>

<p>From left to right, <a href="http://www.bravobeerco.com/beers/chapeau-cuvee-oud-gueuze">Gueuze</a>, <a href="http://www.bravobeerco.com/beers/chapeau-faro">Faro</a>, <a href="http://www.bravobeerco.com/beers/chapeau-peach-lambic">Pêche</a> and <a href="http://www.bravobeerco.com/beers/chapeau-kriek-lambic">Kriek</a>. All these links point to their respective product pages on Bravo Beer Co. They didn&#8217;t have any unopened bottles, but one thing I noticed was they all had CORKS, just like wine! That&#8217;s how similar they are, but by definition they are still beers.</p>

<p>The first beer we tried was the <a href="http://en.wikipedia.org/wiki/Gueuze">Gueuze</a>, and it was&#8230;.so sour! The reason behind this because they blend old and new lambic beer together, allowing for a second fermentation to occur. The yeast used gives it a very dry cidery sour taste, and it&#8217;s very strong. It&#8217;s very comparable to drinking straight lime juice. I just don&#8217;t understand how anyone could drink a whole bottle of this, but people do. You can pair it with food though, as can the rest of these beers.</p>
<p>Next was the <a href="http://en.wikipedia.org/wiki/Lambic#Faro">Faro</a>, and it smelt like creme brulee to me. What a change from the first, as this was sweet like caramel. It&#8217;s made by mixing lambic and lighter beer with brown sugar, resulting in a low alcohol content and a pleasant taste. You can even use it to cook, or reduce it and use it as a syrup.</p>
<p>Third was the <a href="http://en.wikipedia.org/wiki/Lambic#Fruit">Pêche</a>, and it&#8217;s the perfect summer drink. I don&#8217;t say beer because it doesn&#8217;t taste like beer! It&#8217;s almost like drinking a peach cooler, and would be great during a barbeque or a day at the beach [not that I say you should drink in public places...]. My personal favorite out of the 4 we were given.</p>
<p>Last was the <a href="http://en.wikipedia.org/wiki/Kriek">Kriek</a>, and you can definitely smell the cherry flavour if you take a deep whiff. This was my second favorite.</p>
<p>Lambic beers are actually popular with females because of the sweet flavor and no bitter aftertaste that beers will leave in your mouth.</p>
<p>I really enjoyed the tasting and the little &#8220;lecture&#8221; we were given. I recorded the audio, but my card reader isn&#8217;t working so I can&#8217;t get it off my card! <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />  I&#8217;ll update this post when I get it uploaded.</p>
<p>Lambic beer is rare, and if you manage to find some, take the time to educate yourself on this very distinctive type of beer, it&#8217;ll be worth it!</p>

Il y a les connues comme la Leffe ou la Stella Artois, et les moins populaires, celles qu&#8217;on ne trouve que dans les estaminets ou dans les grandes surfaces spécialisées en bière.</p>
<p style="text-align:justify;">Ce guide a pour but de vous faire découvrir de nouvelles saveurs de bière, vous faire voyager à travers les champs de houblon. Commençons notre premier verre en commun par la grisette aux fruits des bois.</p>

<p style="text-align:justify;">L&#8217;une des bières aromatisées les plus connues est la kriek, pour son goût très sucré et par le fait également qu&#8217;elle plaît à de nombreuses filles <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> . La grisette lui ressemble avec sa robe aux couleurs fruits des bois. Une mousse compacte parsème le dessus lorsqu&#8217;elle est versée dans son verre. Au goût, ce jus de houblon est plus rude que la kriek, le goût &#8220;habituel&#8221; de la bière est plus prononcé, la saveur des fruits rouge pimente la gorgée d&#8217;une fraîcheur légèrement sucrée très desaltérante.</p>
<p style="text-align:justify;">A l&#8217;instar du vin, la bière peut accompagner de nombreux plats. La grisette est pour moi une bière d&#8217;après-midi, à déguster avec une bonne gauffre de Liège ou quelques croustillons.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Yesterday was Easter Sunday, and the best girlfriend and I decided to try out one of our many guidebooks and opted for &#8216;<a href="http://www.amazon.co.uk/Pocket-Pub-Walks-Essex/dp/1846740177/ref=pd_sim_b_2/277-4520035-3926613" target="_blank">Pub Walks in Essex</a>&#8216;. With the weather being absolutely rubbish we opted to cancel the &#8216;walk&#8217; bit and instead headed directly for the pub. With us being currently stranded in a rather unfashionable bit of the notorious South East of the Essex, only the car was able to take us to a decent watering hole and so we made our way to the village of <a href="http://en.wikipedia.org/wiki/Stow_Maries" target="_blank">Stow Maries</a>, a surprisingly lovely bit of countryside in this rather drab area. <a href="http://www.prince-stowmaries.net/" target="_blank"> The Prince of Wales</a>, the villages only pub, is a surprisingly comfortable and cozy pub, run by an unusually (well, at least for the area) friendly team of landlords and has an amazing selection of real ales and belgian beers (Kriek on tap. Yum!).  With me driving I was unfortunately only allowed to try a modest amount of their wares, but the best girlfriend already promised me to drop me off there for an saturday afternoon. Yeah! For those who don&#8217;t want to drive home, there is a nice B+B attached and the food is supposed to excellent.  They even have proper website. Good on them.</p>
<p>The best girlfriend and I were in absolute pub heaven and the easter sunday brightened up considerably. Heartily recommended.</p>

<title><![CDATA[New Belgium Lips of Faith Dark Kriek]]></title>

<content:encoded><![CDATA[<div class='snap_preview'><p>One of the members of the <a href="http://www.newbelgium.com/beerline/lips-of-faith" target="_self">New Belgium Lips of Faith program</a>, <a href="http://www.newbelgium.com/beer/dark-kriek" target="_self">New Belgium Lips of Faith Dark Kriek</a> was highly anticipated by the neighborhood tasting panel.  Just look at the smile on Mrs. Heather&#8217;s face in the pic below&#8230; <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>So, for their Dark Kriek, we opened her up and dug right in&#8230; on the pour, you can see the redish brown tinge to the brew and on the nose, cherry for sure but not over the top on the tangy vinegar smell that some sours exude.  As we head into the body, you get a semi-sour, tart hit, somewhat &#8220;bingy&#8221;, noted Ms. Katrina, and overall it comes in like a lite version of our favorite <a title="Permanent Link to New Belgium La Folie" rel="bookmark" href="http://justbeer.wordpress.com/2008/12/28/new-belgium-la-folie/"><span style="color:#c9740a;">New Belgium La Folie</span></a>.  It is a tip of the tongue tingler at 8% but not over the top and as &#8220;The Belly&#8221; notes, it might be a good introduction to the sour cherry beer genre for those that are new to the game. </p>

The other day my friend Liza came over and rearranged the living room of my flat in hopes that some impromptu feng shui would bring back my writerly mojo.</p>
<p>We surveyed the new desk-by-window set up and saw that it was good.  So we rested.  And by resting I mean we cracked open the Cantillon Kriek from my stash, in partial solidarity (and a tinge of jealousy) with the <a href="http://thebeernut.blogspot.com/">Beer Nut</a> who just returned from visiting the brewery on an open brew day there.</p>
<p>When I drink Cantillon I feel like I&#8217;m inside some crazy beer time machine.  Ancient fermentation!  The mysteries of wild yeast! Arcane blendings!</p>
<p>I will never <em>not</em> be in the mood for this beer which makes me feel just sophisticated enough but also earthy, like a rosy cheeked clog dancer in a Breugel painting.  We ate it with some cave-aged gruyere and too many olives, and our tasting notes consist of only <em>Did kool aid have a red sour patch flavor? </em>and, more tipsily,<em> Hey Kool Aid!  Bustin&#8217; through your wattle and daub in his ceramic pitcher.  yo.</em></p>
