<p><span style="color:#000000;"> Each year, in the fall, I make 15 kilo of sauerkraut. Sauerkraut is served with almost every meal in the Czech Republic.  </span><span style="font-size:medium;">Baked </span><span style="color:#000000;">chicken is no exception.</span></p>
<p><span style="color:#000000;"> 1 chicken cut into pieces</span></p>
<p><span style="color:#000000;">1 tablespoon lard</span></p>
<p><span style="color:#000000;">4 cups sauerkraut</span></p>
<p><span style="color:#000000;">1/2 cup beer</span></p>
<p><span style="color:#000000;">1 teaspoon cumin</span></p>
<p><span style="color:#000000;">8 allspice berries</span></p>
<p><span style="color:#000000;">2 cloves of garlic</span></p>
<p><span style="color:#000000;">Salt and pepper</span></p>
<p><span style="color:#000000;">A dash of nutmeg</span></p>
<p><span style="color:#000000;"> Melt lard in a large oven-proof pan with a lid. Brown the chicken on all sides. Remove chicken to a plate. Rinse the sauerkraut to remove the brine. Spread the sauerkraut over the bottom of the oven-proof pan. Add 1/2 cup of beer.  Place the chicken on top of the sauerkraut. Season the chicken with salt, pepper, cumin, allspice and nutmeg. Slice the garlic thinly and sprinkle over chicken. Cover the pan with a lid. Bake in hot oven at 350F (175C) for 1 to 1 ½ hour until chicken is done. Thicken the liquid in the pan with a little flour.  Serve with potato dumplings or boiled potatoes.</span></p>
