As if there weren’t enough goodies to stuff your face with around Thanksgiving, these treats are great to give as a hostess gift or a little thank you to your guests.

Line a container with parchment paper. The size isn’t that important, it depends on the depth you want the tiffin to be. The container I used above measures…..

Measure out the cream

Pour the cream into a bowl set over a pan of simmering water. Add in the broken chocolate.

For this I’ve chosen intense orange by Lindt. The chocolate is good quality, rich  and on the bitter side, it has slivers of almonds and shreds of orange peel. The I love contrasts of tang and bitter, the smooth chocolate and the crunch of the almonds.

Whisk the chocolate into the cream until it is a glorious glossy sea

Stack ‘em high, a tower of ginger biscuits

Now bash ‘em, bash ‘em, bash ‘em. Put them into a zip lock bag first and squeeze out the air before sealing it or else  you’ll be hoovering up biscuit crumbs.

Do the same with the pecans.

Little jewels of autumn

Stir the cranberries into the molten chocolate

And the pecans and finally the biscuits

Pour this delicious mixture into the container, bang it on the counter a couple of times so it removes any air bubbles and then leave it over night to set

The next day, turn it out onto a cutting board

Slice through it with a sharp knife

Slice in to squares

Dust lightly with cocoa powder

Place them onto a cooling rack and shake lightly to remove any excess cocoa

Cut some wax paper into strips

and then into squares big enough to wrap your tiffin in.

Place the chocolate in the middle and…

Fold the sides up, so they overlap

Twist the ends in opposite directions

Bite size treats

Put some in a little dish, a perfect way to say thank you

How lucky are the French?? They have great chocolate and can score a goal with a touch of the hand

In a Parisian corner shop one can buy a pretty OK dark chocolate at a snip. This Cote D’Or 70% Framboise was €1.19! I am not sure we could get a Cadbury’s here for that price. Now I hear that they’ve reduced VAT on dark chocolate … French government are encouraging people to eat it such are its health benefits. I would mention this to Mr. Cowen but I feel he has more pressing issues to deal with.

Anyhow, I won’t be going back for another bar unfortunately. It was waxy, bland and tasted of nothing distinct … maybe like eating a candle with raspberry crisps. Ah well, you win some, you lose some! And I won with the Lindt purchase from the same corner shop.

I’ve missed you! I don’t want to promise that I am back from my blogging hiatus because I may not be. I just wanted to drop in to say hello and let you guys know that I am still alive.

I still have a ton of work to do for my classes including a 17 page paper due in my English class at the end of next week and a 3000 word story due for my journalism class a couple days after that. I’ve had more coffee in the past week than I can keep track of and definitely too much of this

On top of all that, I went to the dentist on Wednesday because of a toothache and found out that I have to have my wisdom teeth extracted.  I hate the dentist. I was going to post on Wednesday but my laptop exploded and Jeff had to restore it to its factory settings. I was so thankful that we backed up all of my documents and pictures on discs last week.

Now, I know that blogging is the most important thing in the world but I’ve been doing some pretty important things on my blogging break, too.

He’s so tall. He’s an entire foot taller than me. I’m too short.

Blogger Breakthrough

I’ll be the first to admit that I haven’t been the healthiest blogger over the past week or so. I do not handle stress well. In fact, I have some pretty severe anxiety problems. I was so stressed out about writing a paper the other day that I got sick to my stomach every time I opened my computer. On top of that, all of my late night studying has led to me hitting the snooze button instead of getting up early. Because of this, I’ve missed quite a few of my normal workouts.

Like Heather, I’ve sort of been having a blogging identity crisis.

I first started blogging back in May to lose weight. It was not the first time I had tried to get in shape but it was my first time keeping a food journal. Above all else, blogging was the thing that motivated me most and still is. I get tons of healthy food ideas from other bloggers. If I’m not in the mood to workout, I read a few posts and suddenly working out is the only I want to do. I started this blog to motivate myself and it worked but then classes started and I got a part time job. Posts in my google reader started to pile up and stressed me out even more. Blogging felt more like a job than a hobby. I began to forget to take my camera places so I wouldn’t have to photograph my food. Getting up in the morning to go to the gym seemed like a chore and not something I wanted to do. So I decided to take a break from blogging.  And during this break, I began making poor food choices. Ive also missed my normal spin class 4 times in the past two weeks.  Twice because I just didn’t feel like going and twice because I had other things to do.

Don’t get me wrong, I’ve still been going to the gym and working out and I have not gained weight. But during my blogging hiatus, I’ve learned that blogging keeps me sane and really motivates me to keep up with my healthy habits. For a while, I considered deleting my blog but decided that I really didn’t want to. Blogging has  improved my life a great deal in the past 6 months (Happy 6 Months Blogiversary to me by the way). It has made me happier, healthier, and most of all, it has made me love myself the way I am.

So, I am going to ask all of you again to please bear with me over the next couple weeks. I will not be posting as often but I will be blogging. I really appreciate all of your support and motivation. I hope you will continue reading!

With all that said, I’m off to write a 17 page paper!

Before and after - smushed!

Biting through the  macaron it smushed almost completely. The flavour was not bad (a bit too sweet) and the crunch from the crystallised lilacs was interesting but didn’t add much flavour-wise, probably just more sweetness. All in all, an okay macaron experience.

I moved on to the champagne macaron with white chocolate and champagne ganache. It looked pretty good. However, biting in to it I was very dissapointed that it had a powdery, overly crisp shell which concealed a giant air pocket in the top layer.

This macaron was crunchy and dry and definitely too sweet; I didn’t even want to finish it. I was also not a fan of the champagne ganache – in my view the addition of the champagne gave an almost sour end note to the filling. I will note, however, that my friend and fellow taste tester Ms S really liked the filling, so maybe it was just me. 

All in all, a pretty disappointing experience. I won’t be going back.

Cleo har “lurat” mig att köpa två roliga saker idag. Först va det Ost & Vin-boken som jag bara inte kunde stå emot. I den fanns bland annat ett recept på ädelostglass med päron och vin i… Det låter ju så knarkat så det måste vi ju bara testa! Jag lovar att ge ett utlåtande så fort vi har testat det!

En ny, fin glögg från Dufvenkrooks köpte jag också. Den hade jag och Cleo miniglöggafton med efter jobbet. Mycket trevligt!
Vi va båda överens om att det va en väldigt fin glögg. Den va rund i smaken men vi tyckte båda att den gärna hade fått smakat lite mer chili och choklad för att vara namnet värdig. Men med en bit Lindt Chilichoklad till kom den verkligen till sin rätt!
Glöggen saknar lyckligtvis det där sockerstarka som vissa billigare glöggar kan ha. Kvalitet behöver inte sockras sönder…
Toppbetyg!

Findus verkar lite kryare nu på kvällen. Jag har sett att han har ätit och han är piggare på ögonen. Jag hoppas verkligen att det bara va något tillfälligt.

I really need to thank Evan from Food Makes Fun Fuel for reminding me that chicken sausage can be used as a breakfast food.  In this case, I used it for lunch but in my mind every meal is breakfast. I also need to thank him for telling me that Blueberry Chicken Sausage exists. BLUEBERRY! I need it!!

Anyway, back to that gorgeous sandwich up there.  I used 1 link of Sundried Tomato Chicken Sausage, a egg, and a bit of grated Cabot Reduced Fat Cheddar. I let it all mingle together for a couple minutes in a 10 inch frying pan and then plopped it on top of a WW English Muffin. TAKE THAT MCDONALD’S! I win, you lose!

Seriously, Is there a petition somewhere to shut down all of the Mcdonald’s in the world? If there is, I want to sign it over and over again until my hand falls off. Would you sign a petition to close McDonald’s? Morgan Spurlock probably would.

Ahh ok, this post is getting ridiculous and I have to leave for work in 20 minutes. Blogging makes me ridiculous!

Speaking of work,  since I was at worked from 6-10 last night, I brought dinner with me.

I need to ask The Fitnessista if it’s legal to have a Breakfast Cookie for dinner

It’s not that pretty because I made it to go. It contained 1/3 cup oats, 1/8 cup light chocolate soy milk,  Tbsp of Cinnamon Swirl PB, 1/2 banana, 1/4 tsp cinnamon, and a drizzle of agave.  I think the the people at work thought I was crazy or eating baby food or something.

I was still hungry when I got home so I devoured this

A Lindt apresenta sua linha de Excelência em chocolates e oferece uma versão com 85% de cacau, apresentada em finissimos pedaços de 3,5 x 3,5cm.

O chocolate é realmente amargo destacando o gosto do cacau, por ser forte e com gosto marcante é uma otima opção para receitas pois o boa parte do gosto se mantém após o cozimento.

O gosto peculiar não agrada boa parte dos que provam deste chocolate, como se pode conferir na avaliação do blog Mentes Ociosas. Mas sinceramente me agradou, e muito. Não achei com tanto gosto de terra quanto o “NOVI NERO Nero 99% cacao” que será a próxima avaliação aqui neste blog.

Recomendo para quem gosta de chocolate extra amargo, mas este é outro produto que eu não compraria tão cedo novamente.

Underbara älskade Lenita på mysiga Strandbergs café i Svensta…

Jag åt en varm panini, drack Earl Grey och till efterrätt åt jag ett moccaflarn.

Efter en mysig surrstund med gott fika begav jag mig till jobbet.

So today was pretty much awesome!

Met Jess at Town Hall – wandered around the City for a while before heading to the Lindt Chocolate Cafe

SO FUCKING AWESOME!!!!!

We had two slices of cake, coffee, milkshakes, chicken sandwhich and milk

During our 2 hours in the Cafe we discussed so many things……many of them inappropriate teehee

We planned our weddings and talked about the names of our children…

Then decided we would get married YAY

Totally awesome day can’t wait to do it again…

My book Crime & Punishment is committing suicide….

I didnt think it was possible but it is!

It started with a page coming out in the City now its got about 10 pages coming out ….

My book is killing itself because it doesn’t want me to read it (well that’s what I’ve decided)

Stupid book.

Bei einem meiner letzten Freigänge fand ich einen Teller mit Schokolade auf dem Boden stehend. Sollte der etwa für mich sein? Die Zweibeiner sollten doch eigentlich wissen, das ich Süssen nicht mag! Vorsichtig näherte ich mich ….

Nee, lieber doch nicht Probieren! Ich würde nur Bauchschmerzen bekommen. Aber lecker sah sie schon aus, diese Mousse au Chocolat. Aber nein, die Vernunft siegte und ich blieb standhaft, rührte sie nicht an.

Zum Glück, denn den Teller hatten die Felllosen bei den Vorbereitungen zur Traumparty nur kurz hier abgestellt. Hätte ich genascht, hätte ich wieder garantiert Gemeckertes vom Zweibeiner bekommen!

Acompanhando o blog DoisEspressos me deparei com essa excelente dica “chocolática” (nossa, que palavrinha…). Como sempre é bem-vindo um chocolate para harmonizar muitas das delícias alcoólicas que já indicamos aqui, resolvi replicar o post do Sr DoisEspressos. Das dicas apenas o Lindt eu já provei e realmente é muito bom. Inclusive o post fez eu ter um “mini-flashback” da infância, quando eu e minha irmã nos atracamos num pote de minis-lindts na casa de uma família que meus pais visitavam; minha mãe morria de vergonha…quem mandou oferecer chocolates pras crianças…

I shot this the other day and I really don’t know what to do with it… I guess it is a valid part of the big city lights series, but what chapter does it fit into… I’m already having a tough time figuring out what the next chapter shall be called… plus now, pictures turn up that don’t fit… this thing is tougher than I planned for it to be. But that’s part of the point of this blog… to share the thoughts that go into this stuff along the process… I’ll have to bite around on this project a little more, any input or inspirations are welcome!

Neuhaus (Bélgica)

Neuhaus é um dos chocolates belgas mais famosos do mundo. Começou a ser fabricado em 1857 por Jean Neuhaus, um suíço radicado na Bélgica que jurava de pés juntos ter sido o inventor do praliné (aquele “crocante”, feito com amêndoas e caramelo… sabe?).

Com lojas espalhadas por todo o mundo (de onde se pode comprar pela Internet) é relativamente fácil encontrá-lo aqui no Brasil. Essa barrinha acima, com 45g de chocolate ao leite e crocante de avelãs, sai por uns R$15.

Lindt & Sprüngli (Suíça)

Lindt é uma das mais antigas fábricas de chocolate da Suíça. Dos 6 chocolates dessa lista, são os mais fáceis de se encontrar por aqui (até o Submarino e a Americanas.com vendem Lindt), com preços que costumam varias entre R$10 e R$15.

Curiosidade histórica: foi Rodolphe Lindt, fundador da empresa, que em 1879 inventou a máquina para refinar chocolate. Ao misturar a pasta refinada com manteiga de cacau, Lindt criou o primeiro tablete de chocolate que derretia na boca.

Godiva (Bélgica)

A quem diga que esse é o melhor chocolate do mundo. Não posso confirmar porque os poucos chocolates Godiva que já provei — comprados aqui no Brasil — foram produzidos na fábrica que fica na Pensilvânia, EUA, com receitas mais puxadas no açúcar para agradar os consumidores norte-americanos. Quem já provou os chocolates produzidos na fábrica da Bélgica — que abastece o mercado europeu — diz que eles são muito superiores aos dos EUA.

Fáceis de encontrar por aqui, os chocolates Godiva são também os mais caros da lista. Com menos de R$20 dá pra comprar apenas essa caixinha acima, com 4 variedades de bombons ou, em um dia de dolar baixo e muita sorte, uma das caixinhas com 4 trufas. As opções maiores (com até 36 peças) chegam facilmente aos R$150.

Michel Cluizel (França)

Contando com apenas 200 empregados a fábrica de Michel Cluizel, situada na Normandia, norte da França, é uma das últimas e raras empresas familiares que ainda produz seu próprio chocolate a partir do cacau.

Disputando com a chocolataria Valrhona o título de melhor chocolate da França, Cluizel viaja o mundo para visitar pessoalmente plantações de cacau e escolher os melhores grãos. Suas barras de chocolate amargo — cujo teor de cacau pode superar em muito os 76% que muitos consideram o limite do palatável — são minhas favoritas.

Difíceis de encontrar no Brasil (achei uma única vez no Carrefour), as barras de 100g, quando estão num bom preço, custam entre $15 e R$20. Na Internet saem por cerca de  US$7 (sem os custos de envio).

Caffarel (Itália)

Pra encurtar a história sobre a qualidade dos chocolates Caffarel, basta dizer que foi o italiano Pierre Paul Caffarel que ensinou François Luiz Cailler — primeiro chocolateiro da Suíça, em 1819 — a fazer chocolate, e que foi ele que, em 1852, inventou a gianduia (mistura de chocolate com creme de avelã, mais conhecida hoje em dia como Nutella).

Difíceis de encontrar no Brasil, é mais fácil comprá-los pelo eBay, na loja The Chocolate Moose.

Valrhona (França)

Chocolate preferido por 9 entre 10 chefs pâtissier (incluindo o renomado confeiteiro francês Pierre Hermé), Valrhona é chamada por alguns de “Tiffany dos chocolates”. Da fábrica em Tain L´Hermitage, no Valle du Rhône (daí o nome Valrhona…) saem alguns dos chocolates mais premiados do mundo, como esse aí ao lado, o Valrhona Jivara 40%, eleito pela Academy of Chocolate como melhor chocolate ao leite do mundo em 2008.

A primeira vez que encontrei por aqui foi no Rio de Janeiro, numa importadora em Copacabana (dizem que em São Paulo é mais fácil encontrar… alguém confirma?). Nas outras vezes em que comprei achei mais prático pedir diretamente pela Internet, na The Chocolate Moose (cada barra custando algo entre US$5~US$7).

Melts in your mouth.Some chocolates just give you a jaw work-out. This one gives you the real indulgence of a heavenly experience.

How come I don’t see any of these in the market?

Mine was a gift from a friend who came from the US last summer. I could not let the gastronomic moment pass me by hence the picture.

Today as I dream on this cholocate I just had this exquisite moment of finding their web page. I could have done this a long time ago last summer.
