As it turns out, the lesson was on me.

After fighting my daughter’s fever all night with strong aromatic salves, flu meds, and ibuprofen and all I had to offer, we could not win the battle. When I woke up this morning to give my daughter another dose of medication and drop some eucalyptus on her feet, she still did not look good to me. Although she said she felt better, I was not convinced. Something was not right. I don’t remember ever seeing her this sick before. Even with the last bought of flu, after one night of essential oils and tylenol- she was noticeably better the following morning. But this time, it was different.

I had to hurry to get to work, but felt sick to have to leave her behind. Although my husband is an awesome and capable dad, I felt a sense of guilt and sadness for my daughter. She kept telling me she was going to be okay, but I did not feel it. As soon as I got to work (late), a colleague suggested I send my daughter to the doctor for flu medication. So, when that 9 o’clock hour hit (the time when the doc’s office opened), I picked up the phone and made my daughter the earliest appointment possible. My husband called me soon after their visit to tell me she had a bad case of pharyngitis (or some type of “itis”). Our daughter was right afterall, she caught something from someone’s uncovered cough! She was placed on antibiotics and the first dose already began to clear her throat and her fever was breaking.

So, it wasn’t the flu…but I offer no apologies to that terrible bug. Yes,I fell into the trap of blaming the flu bug for every single misery this season, but can you blame me? I have witnessed my daughter’s teacher get sick for almost a week, her classmates getting sick, my colleagues and their children getting sick…all from the flu bug. And, this bug shows no mercy…it comes on quick and it comes on strong! From what I’ve seen, peole are left feeling weak, spending the same amount of time on recovery as they did suffering from the symptoms. So, I maintain that it is still the humbug of the season.

But, back to my daughter. I am SO HAPPY that we did take her to the doctor ASAP and that she was able to get the medication she needed. As always, my words always come back to haunt me. Soon after I finished preaching to other people about how it’s OKAY to take medications and combine it with natural treatment modalities and the miracle of medication…well, this happens. My daughter will have to miss a couple of days of school, but better than spreading it around, right?

After all of this, I’m sure she will practice hand washing more frequently, use her “immune stimulating” cream blend, and drink plenty of water. I’m sure she learned her lesson. I sure learned mine!

SO glad she is feeling better this evening and looking more like herself again.

International youth athletes are set to have a rocking good time at Singapore 2010 Friendship Camp (SFC).

Youth athletes around the world gathered yesterday at the Singapore Sports School for the official camp opening. The majority of the camp participants were decked out in colourful national costumes. I saw a Korean girl in the traditional hanbok, a Dutch milkmaid from Netherlands, and an African teenage boy in full tribal costume. Proud representatives of their nations, these athletes were eager for the camp to get into full swing.

In turn, they were given a a traditional and warm Chinese welcome to the camp, with the beat of Fuhua Secondary School NCC Festival Drums. Next, Campus SuperStar season 3 runner-up Rachel Chua took on SFC’s theme song ‘Together’. Her bubbly nature warmed the crowd up in no time and the youth athletes waved their arms enthusiastically to the music.

Celebrating the rich diversity of global cultures with showcases of sports and performing arts, the array of activities at the Singapore 2010 Friendship Camp World Festival was simply mind boggling.

THE PERFORMERS AND FUN ACTIVITIES AT THE CAMP FESTIVAL

Two World Culture Village booths by Innova Junior College and Yuying Secondary School gave a glimpse of what Youth Olympic Village could be like in less than a year’s time. The Canada booth by Innova featured both the traditional and pop culture of Canada, while the Nepal booth by Yuying featured the Nepalese culinary culture and artifacts. Over at the community arts booths, participants tried out fun activities such as balloon sculpting, circus arts and clog-painting. An international cultural experience was to be had with hand art (India), poi (New Zealand), samba (Brazil), cosplay (Japan) and more.

Traditional Chinese lion dancers performed to the sprightly soundscape of dhol drums, angklung kulintang, and samba percussion beats. At the swimming pool, martial arts talents from the Singapore National Wushu Team and Dragon Dance Federation performed. Swimmers from the Speediswim Aquatic Sports Club also performed a well-executed synchronised swimming routine, accompanied by the gamelan ensemble from the LASALLE College of the Arts.

Participants also walked on the water in inflatable Water Zorbs, caught Silat and Thai kickboxing demonstrations, and sampled culinary delights from 13 different countries!

CAMP PARTICIPANTS: THEY’RE FROM THE NETHERLANDS, FIJIAN AND SINGAPORE

Aptly, the youth athletes made friends fast despite having just met each other. As 14-year-old Zambian, Natasha, proudly said, “I have met at least half of these people at the airport yesterday. They are all my friends!”

Lorraine, 15, from the German School of Singapore, who will be competing in swimming and track and field, said, “Through this camp, I would like to bond with new people, discover their culture, how they perform and what they like”.

Like her, 17-year-old Fijian, Norman (above, in blue), is set to embrace the Olympian values of Excellence, Friendship and Respect. He will be competing in badminton during the Youth Olympic Games. “What I hope is that I can take it back [Olympian values] to my country so that I can contribute to a better sporting nation.”

In the next five days, camp participants will get the opportunity to get up close and personal with athletes like Michael Klim, Veronica Campbell-Brown and Asafa Powell Dexter Lee (sorry no Tiger Woods), participate in interactive workshops, hit Pulau Ubin for adventures and learn more about the environment.

The list goes on. The only thing left to say is, “I wish I could be there too!” LP

Hang on to Youth.SG for more coverage of the Singapore 2010 Friendship Camp!

How frustrating, my daughter is sick with what appears to be the flu and I feel helpless! This is he

How frustrating, my daughter is sick with what appears to be the flu and I feel helpless!

This is her second bout of cold/flu…the first time was during the height of H1N1 flu virus panic, when many children were getting sick and the virus was at its peak. I armed my family with a special cream filled with anti-viral, anti-bacterial, anti-fungal and immune stimulating essential oils…but my dear daughter, who has a tendency to rebel against anything I do that is aromatherapy, reiki, or nursing, refused to wear the cream. My husband and I were able to fight off any bugs/germs that came our way, but our daughter was not. She came home daily complaining about how the kids at school were coughing all over her and how her teacher got sick. Then, sure enough, she came home coughing,wheezing, vomiting, and complaining of general muscle aches and fatigue. Darn!!! That was the first time. I gave her plenty of TLC, pushed fluids to clear her body of germs (although she was reluctant and would rather DEHYDRATE!!), gave her some kind of over the counter cold remedy,and rubbed a strong salve filled with Thyme, Lavender, T-tree, Lemon, and I think Eucalyptus. This bout with the bug only lasted a couple of days, but I kept her home a little longer just to make sure she was strong enough to go back and face the world of viruses and bacteria. She got plenty of sleep/rest and ate plenty for energy. She was more than glad to be able to get back to school.

NOW, after many battles of trying to get her to use my aromatic anti-viral cream- and still losing, she has come home sick once again! She went to school feeling great and came home coughing. They had a special mass (Catholic school)/service in church today…and she says that there were kids coughing all over the place. Ugh!!! She was frustrated because she feels it’s not fair, she makes an effort to cover her mouth when she coughs, coughs into her sleeve when she needs to, and stays home when she is feeling ill. Of course, I am upset myself, as there is just nothing we can do about it. These things happen and I’m sure other parents are doing the best they can do take care of their kids so that they don’t get sick.

So, here we are again. She is covered in thick salve that is infused with high volumes of Thyme,Lavender, T-tree, Lemon and other strong essential oils to help her body battle the germs. She is drinking plenty, getting rest, and we have the humidifier going which is filled with Lemongrass and Lavender hydrosols. I gave her a dose of over the counter flu remedy and she was off to sleep in her Mama’s bed. She now regrets not using the anti-flu cream, but there is no time for regrets. The only thing we can do now is focus on getting better.

I feel bad, she was feeling sorry for herself for not being able to help me decorate the Christmas tree as we had planned today. We were suppose to decorate the tree with our special ornaments, watch a holiday movie, and sip hot cocoa while eating popcorn. But, not to fret, I’m confident that this one will pass again quickly, just like the last one.

I hope that all of us, especially our children, get over this flu season quickly and that it will all be over before we begin the main celebrations of the season.

The aroma of "calamansi" flowers (Filipino lime) reminds me of the neroli's pleasant aroma.

There was a time when we relied heavily on our sense of smell for human survival. Our ability to smell played an integral role in helping us to identify edible versus poisonous foods, attraction to a potential mate through hormonal scents, helping us to sense danger from afar and so forth. Because we relied so heavily on this sense, our ability to smell and our awareness of it’s importance was far greater then.

Today, however, we still maintain our sense of smell- but we do not seem to rely on it as much as we did back in our earlier days. Additionally, our air is filled with so many pollutants that the natural scents that are out there are much harder for us to pick up and detect. Also, there are many synthetic scents floating around in our air and in our products that we have seem to lost our ability to distinguish between authentic smells and natural aromas. Although our sense of smell has often been neglected, it continues to play an integral role in our quality of life. Our sense of smell can still play a large part in appetite, attraction, as well as triggering memories.

Aromatherapy uses essential oils in many ways to elicit a therapeutic response. When we talk about “therapeutic effects” in aromatherapy, we are not only adressing physiological imbalances and diseases, but also emotional, psychological, and spiritual imbalances and abnormalties. The tricky part about using pure essential oils is that they have an ability to not only produce a physiological reaction,but also an emotional and psychological effect as well. The fine molecules that make up the chemistry of these essential oils have the ability to react with the sensitive neurotransmitters in our nasal passages and brain connecting us to our environment that we have to be careful about which essential oils to use. The right essential oils may trigger a pleasant memory in our limbic system’s amygdala and the wrong one may trigger an unpleasant memory as well. Whether we want to acknowledge the complexity of essential oils or not, they will do what they are able to do to help a person reach optimal health and balance. This may include emotional releasing and detoxification. So, a trained aromatherapist knows that a thorough assessment includes testing the different aromas for the client’s blend with the client prior to the actual blending. For example, although the primary purpose of a blend is to produce sinus relief or migraine headache relief, the client must be prepared for TOTAL balance- including any emotional and psychological barriers and releasing of memories burried in the back of our emotional brain (limbic system) that the essential oils may trigger through their aroma; memories that one may want to heal or recall (pleasant and unpleasant).

Essential oils and aromatherapy can also be used to our advantage in this way. We can produce a blend using essential oils that physiologically produce a relaxing and uplifting feeling and use it during a massage treatment or other pleasant healing modality, such a Reiki. What happens then is a memory lock-in response in which the pleasant experience will be associated with the pleasant essential oils aroma in the blend. So, when the aromatherapy blend is used, the memory associated with the aroma in our brain is triggered. The person can then experience the same pleasant experience as he/she did when they first used the blend during the massage or Reiki treatment. There are many other ways in which aromatherapy therapy uses this lock-in memory response for beneficial purposes.

Just to open up some minds out there about the complex nature and wonderful ability of aromatherapy and essential oils…something to consider for self-care and healing! So, when you do get a chance, give it a try. I would love to hear your experiences!

President Obama has traveled extensively overseas in his first ten months in office. During some of these visits he offered a reoccurring apology for America’s past sins. His approach is perplexing and is probably an attempt by the President to gain cooperation from other governments for his foreign policy agendas. This is misplaced diplomacy. Countries pursue policies that are good for their interests and the personal re-election needs of the politicians, not because of niceties expressed by another country’s politician.

The President’s approach requires a view of America’s history from a distorted lens. While American has not been without sin, it is the country that the world has turned to when there have been catastrophes and wars. It is the place that immigrants have sought to escape the oppression of their native lands.

Before the President takes his next trip to Europe he should review the history of America’s roles in World War I and World War II. In both cases, American came to the aid of a Europe ravaged in total war when America was geographically isolated from those conflicts. When Europe was in shambles after World War II, it did not seek reparations that certainly were due it. Instead, America came up with the philanthropic Marshall Plan and rebuilt Europe.

Financial cost aside, the true measure of America’s commitment to Europe can be seen in cemeteries that dot the continent. Over 100,000 families of fallen GI’s chose to leave their soldier’s remains in the countries where they fell. The list below includes those cemeteries and the lost of American lives. For those that have distorted lenses, this sobering review is a great cleanup tool.

In my childhood home, back in the 1970s, a meal of spaghetti Bolognese was considered exotic. This

In my childhood home, back in the 1970s, a meal of spaghetti Bolognese was considered exotic. This rare treat was due, in part, to post-war migration, and afforded the vast land of Australia some much needed diversity in culture!

I schooled with many first generation Australians – myself included - whose families heralded from a variety of European countries. This first generation Australian was an ever ready participant to visit a friend’s home, to enjoy an afternoon snack (and embrace an array of new flavours along the way).

Since those days as a child, the gastronomic palate of Australia has bulged well beyond the last belt hole. Cuisine from virtually every corner of the world is available. From every continent, from every country, it seems a global aroma permeates all the major cities.

I suppose it is no surprise that the introduction of new tastes is common across all corners of the world. In the 18th century, a variation of the baba au rhum was introduced into France (by way of Alsace-Lorraine), from Poland. It is believed to be a descendent of the Kugelhopf.

This dessert, traditionally shaped like a Champagne cork, is a rich, yeast bread, baked in a cylindrical mould. It is liberally (emphasis on liberally) soaked in a sweet rum syrup. The more modern version includes dried fruit, but this recipe, by Julia Child, omits the fruit and showcases the simplicity of the original dessert. The classic baba, as recommended by Julia, is finished simply with a few additional drops of rum, a brush of apricot preserve and a carefully topped glacéed cherry. I opted for the extra rum and apricot but not the cherry. Personal preference.

There are variations of this dessert with cream or fruit. Each would serve as a lovely complement to the sweet rum laden bread. This would be an ideal dessert to finish off a rich, hearty meal. The rum syrup instantly cleanses the palate, and the hint of sweetness, from the rich bread and sugar syrup, provides a clear note to signal the end of the meal.

{ Babas au Rhum } from Julia Child et al and Mastering the Art of French Cooking

Note: I baked the bread in a larger than recommended mould. Typically the cylindrical baba mould holds about 100ml of fluid, and is roughly 5cm or 2 inches in diameter and depth – much narrower and smaller than the mould I used.

{ Pâte à baba et babas }

* Ingredients *
60g butter
10g dry active yeast
45ml tepid water
2 tablespoons sugar
1/8 teaspoon salt
2 large eggs
1 1/3 cups flour

* Directions *
Melt the butter and let cool. Blend the yeast and water in the bowl with whisk and stand until yeast has dissolved completely. Beat in the sugar, salt and eggs. Mix the flour and the cool melted butter into the yeast with a wooden spoon.

Knead the dough by lifting it, slapping it, and pulling it vigorously against the sides of the bowl for about 5 minutes. Alternatively, put into a mixer with a dough hook and mix until it starts to detach itself from the bowl. Form into a ball and cut a cross deep on top. Sprinkle with a little flour. Cove the bowl and let rise in a warm place for 1 ½ to 2 hours or until the dough has doubled in bulk.

Butter the inside of your moulds. Lightly break off about a tablespoon of dough, enough to fill a third of a cup, and press lightly into the bottom of the cup. Place the cups, uncovered, again in a warm place and allow to rise 1 to 2 hours, or until the dough is over the rim of the cups.

As soon as the dough has risen the second time, bake in the upper third of a preheated 180C/375F oven for about 15 minutes.

{ Sugar syrup }

Both the babas and the rum syrup should be lukewarm but not hot before this operation begins. If the babas are cold, warm slightly.

* Ingredients *
2 cups of water
1 cup sugar
½ cup dark rum (preferably Jamaican)

* Directions *
Bring the water and sugar to a boil. Remove from the heat and stir until the sugar has dissolved. When the sugar syrup has cooled to lukewarm, stir in the rum. Arrange the babas in a dish, with their puffed tops up. Prick tops in several places, pour the syrup over them and let stand for ½ hour basting frequently. They should imbibe enough syrup so they are moist and spongy but still hold their shape. Drain on rack for ½ hour.

After the babas have drained, sprinkle the top of each with a few drops of rum. Pain them with some apricot glaze/preserve, and place a cherry on top of each.

Makes 12 babas
