I have been sick since last December. Here are a list of my symptoms: orthostatic hypotension, low grade fever, neck pain, low back pain before &#38; during ovulation, brain fog, severe fatigue, blurred vision, weight loss, irritability &#38; low immune system. My OB/GYN did an ultrasound a couple of years ago &#38; suspects I have endometriosis. On ovulation day, I have severe pelvic pain &#38; low back pain. I ve always had really bad menstrual cycles. I knew a low carb diet program would work for a month or two but not for long term. A low carb diet program is healthy for a month but after that I heard it takes it&#8217;s toll on the body. I was getting angry,depressed and hungry alot of the time the past 2 weeks.<br />
A low carb diet program does work if you need to lose a few lbs quick but I must admit. I missed my huge servings of pasta and tortilla chips.<br />
I&#8217;ll never go on a low carb diet program again.I&#8217;m Italian and my whole family likes to eat. I have a good body but just wanted to see if a low carb diet program would work for me. I feel those types of diets work well for people that naturally don&#8217;t love high carb foods. All my female friends have been on them for years!<br />
Has anyone ever been on a low carb diet program for more than 2 months without going nuts? The first thing I had was a huge bowl of pasta with olives and chicken. Healthy but a whole pound of pasta.Oooops!!<br />
I noticed I got very depressed the past month from not being able to eat the normal amount of carbs I was used to having.Alot of bodybuilders were using a low carb diet program in the 1970&#8217;s!<br />

<p>The following recipe might perhaps serve as a warning, rather than a suggestion.<br />
<a href="http://lowcarbconfidential.com/2009/11/22/my-low-carb-thanksgiving/" target="_blank">As mentioned in my previous post</a>, I wanted to make a low carb stuffing, and had planned to use low carb bread as a substitute for regular bread. Then it came to me: <em>pork rinds!</em> They would make a wonderful bread substitute.</p>
<p>I thought this truly original &#8211; then I did a search on &#8216;pork rind stuffing&#8217; and<a href="http://www.carbsmart.com/lcthank.html" target="_blank"> found a recipe straight away</a> &#8211; so much for my originality. Anyway, the recipe said it looked and tasted just like the real thing. I at least felt validated, and decided that this would be my big Thanksgiving experiment.</p>
<p>I wasn&#8217;t going to burden my family with the results of my experiment, so I had a box of the Stove Top Stuffing for the rest of the crew.</p>
<p>I decided to roughly follow a recipe I&#8217;ve made for the kids with leftover bread &#8211; substituting the pork rinds &#8211; here it is:<!--more--></p>

<li>2 bags unflavored pork rinds</li>
<li>2 small yellow squash</li>
<li>2 onions</li>
<li>2 eggs</li>
<li>3 stalks of celery</li>
<li>3 cloves chopped garlic</li>
<li>butter</li>
<li>olive oil</li>
<li>salt</li>
<li>pepper</li>
</ul>
<p>The recipe recommended the spices sage and thyme, and I figured I would try that as well.</p>
<p>I first cooked the chopped veggies in oil and butter (I had once heard that the mixture of oil and butter allows the temperature to go higher without &#8216;damaging&#8217; the oil &#8211; which sounds all clever and scientific, but I really don&#8217;t know what I&#8217;m talking about.) Once cooked, I threw in the 2 bags of pork rinds that I crushed by pounding on the bags. This entire performance raised a few eyebrows in the kitchen &#8211; <em>what the HELL is he making?</em> &#8211; but my family has learned that this is just one of Dad&#8217;s many &#8216;peculiarities&#8217;.</p>
<p>The pork rinds softened in the fragrant veggie medley, and I gave them a stir, seasoned with pepper and sage, looked for the thyme but there was none (drat!), and decided to hold off on the salt until I could give it a taste, as the pork rinds are already salty.</p>
<p>The recipe I found had put beaten eggs in their recipe. I thought: why the hell not? I poured in two and mixed.</p>
<p>A few minutes and it was really beginning to <em>look</em> like stuffing, but it didn&#8217;t <em>smell</em> like stuffing.</p>
<p>I began to get worried.</p>
<p>I tasted a small spoonful. It didn&#8217;t taste like stuffing at all &#8211; it tasted like, like&#8230;soggy crushed pork rinds in vegetables!</p>
<p>This was going to require some serious doctoring.</p>
<p>About that time my wife came over, looked and smelled the pot.</p>
<p>&#8220;You&#8217;re going to have regular stuffing, right?&#8221;</p>
<p>&#8220;Yep.&#8221;</p>
<p>&#8220;Are<em> you</em> going to eat that?&#8221; She asked.</p>
<p>&#8220;Yeah &#8211; even if I have to choke it down over the next couple of days.&#8221;</p>
<p>&#8220;Or you&#8217;ll leave it in the fridge until it goes bad.&#8221;</p>
<p>&#8220;Nah &#8211; I&#8217;ll eat it.&#8221;</p>
<p>There was no going back now &#8211; I <em>had </em>to make it edible. I was challenged by my wife in her prediction that it would get thrown out &#8211; and I told her it wouldn&#8217;t, so it was a matter of my pride, my integrity, to make this pot full of fake stuffing semi-palatable instead of a menu item from the &#8216;Fear Factor&#8217; reality show.</p>
<p>I remembered an old Martin Mull song &#8211; &#8216;Bun-and-Run&#8217; &#8211; a spoof on bad fast food (Go <a href="http://mog.com/music/Martin_Mull/Near_Perfect%2FPerfect/Bun_and_Run,_Pt._3_%28%22Happy_Cows%22%29" target="_blank">here</a> for a 30-second excerpt of the song, if you are so inclined). It was a jingle for an imaginary burger joint and one line in it was my inspiration for what came next:</p>
<p><em>Pour on the spice and it starts to taste nice.</em></p>
<p>I hit the spice drawer, but didn&#8217;t really know what to throw in. I am a moron when it comes to spices. I had put sage in there, so what goes with sage? I thought about the old Simon and Garfunkel song, and put in some rosemary &#8211; didn&#8217;t have any parsley.</p>
<p>It didn&#8217;t seem like the rosemary by itself was the secret ingredient to revive this dish, so I put in more butter. Why? It was nearby, I suppose, and I like butter. I also put in more pepper and some salt &#8211; the pork rinds themselves did not salt up the dish too much.</p>
<p>A few more minutes and another taste&#8230;<em>bleech!</em> I reached into the spice drawer and took out some Trader Joe&#8217;s 21 Seasoning Salute &#8211; some mixture of seasonings that ain&#8217;t that bad &#8211; but I had no idea if it would save this dish &#8211; or push it over the edge.</p>
<p>We were going to find out.</p>
<p>I put a lot of this stuff in there &#8211; maybe 2 tablespoonfuls. I mixed this, let it cook a few more minutes and took another taste &#8211; I couldn&#8217;t tell the difference. It was like my taste buds were numb. As a last-ditch effort, I threw a handful of fresh cranberries in it (I don&#8217;t know what I was thinking there), and decided to throw it in the oven &#8211; perhaps I would forget it&#8217;s there, it would burn to a crisp, and I could forget about it.</p>
<p>So it got about 40 minutes in a 350 degree oven, and the top was browned, but not burnt. It would have been perfect if it was real stuffing. It <em>did </em>look like real stuffing &#8211; enough so that my older daughter, who knew nothing of the backstory on this dish, said innocently: &#8220;Stuffing &#8211; can I have some?&#8221;</p>
<p>&#8220;Sure.&#8221; I said.</p>
<p>She took a small bowl and a few forkfuls. Then she ate it.</p>
<p>She gave a thumbs up.</p>
<p>&#8220;You<em> like</em> it? I said.</p>
<p>&#8220;Yeah.&#8221; She dashed back to whatever she had been doing previously.</p>
<p>I took a small bowl, put a little turkey gravy on it and took a forkful. Hmmm&#8230;it wasn&#8217;t <em>that</em> bad. Still wasn&#8217;t stuffing, but it was good enough to make it to the table.</p>
<p>Fast-forward a few hours to when we got to the meal. The turkey came out late &#8211; we got a late start, but all turned out good in the end. My wife decided to brine the turkey, which she had never done before, and it came out very good &#8211; though we found ourselves going nuts trying to figure out what we can brine a large turkey in &#8211; a five-gallon paint bucket seemed like the best choice &#8211; except that it would be gross. We decided we needed a plastic bag, but I wanted to find a food-safe plastic to brine it in. Hefty saved the day as they make these <em>huge </em>plastic ziploc bags &#8211; 4XL was the name, I think. My older daughter was hopping around in one like she was in a sack race &#8211; they&#8217;re that big.</p>
<p>So the turkey went on the table and the family began to crowd around the kitchen island where the sides were and pile on the food. I had my stuffing along with the brussels sprouts, mashed cauliflower with tarragon, turkey, gravy, and fresh cranberry sauce with Splenda.</p>
<p>The meal was great &#8211; even the stuffing &#8211; when part of the ensemble that made up my dish &#8211; was pretty good. The flavors had melded and mellowed a bit. It didn&#8217;t taste like soggy pork rinds anymore. It didn&#8217;t taste like stuffing, either, but it wasn&#8217;t bad.</p>
<p>I went back to get seconds and noticed that one of our guests had taken some of my stuffing. When they were told what they were eating, they laughed and said they didn&#8217;t notice it wasn&#8217;t stuffing.</p>
<p>Not exactly a compliment, but I&#8217;ll take it as one.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p style="text-align:justify;">Count me in as a yogurt fan-boy!  I&#8217;ve always loved the stuff but after starting the low-carb nutritional lifestyle I saw that most of it contained too many carbs to eat very often.  And out there in the low-carb community there&#8217;s as many opinions as there are low-carbers as to whether yogurt is a permitted food.  The disagreement comes about because <a href="http://www.nutritiondata.com/facts/dairy-and-egg-products/104/2">the label on most whole fat unsweetened yogurts shows 11 carbs per cup</a>, but some say that&#8217;s not really the ECC (Effective Carb Count) because the active bacteria cultures in yogurt convert the lactose (milk sugar) into lactic acid and therefore should not be taken into account in the nutritional analysis.</p>
<p style="text-align:justify;">Well, much to my pleasure award winning cookbook author Jennifer Eloff posted an article entitled <a href="http://low-carb-news.blogspot.com/2009/11/include-yogurt-on-your-low-carb-diet.html">&#8216;Include Yogurt on Your Low-Carb Diet&#8217;</a> this morning on her excellent <a href="http://low-carb-news.blogspot.com/">Low-Carbing and General Health News</a> blog.  She does a fantastic job of debunking the yogurt myth and giving us the facts from the scientific studies.  I&#8217;m not going to requote it all here, so be sure to click on the link and check it out for yourself.  It&#8217;s a very informative and worthwhile read!</p>
<p style="text-align:justify;">Dairy is one of those things I love and wanted to somehow make it a part of my low-carb nutritional lifestyle.  Now of course milk can&#8217;t be a part of it since it has so much lactose but that&#8217;s OK, there are other dairy products which fit in very well.  Jennifer even talks about hard cheese being a healthy product&#8230;and I love me some seriously sharp cheddar.  I also occasionally eat some cottage cheese, ricotta cheese, cream cheese and kefir.  Lots of choices out there.  My dairy milk substitutes are almond milk or coconut milk.</p>
<p style="text-align:justify;">Now back to the yogurt story.  Just be sure you eat the whole-fat plain yogurt if you&#8217;re low-carbing.  Sounds uninteresting and blah, you say.  Use some Splenda, stevia or one of the other many natural sweetener blends out there today to sweeten it to your taste.  Flavors&#8230;.you can use one of the myriad of wonderful flavors of sugar-free syrups made by DaVinci or Torani.  Or add some berries, fresh or frozen, another great low-carb value.  Or some flax-meal or slivered almonds.  Or a little no-sugar-added coconut.  Lots of choices out there.</p>
<p style="text-align:justify;">And one of my favorite yogurts is Greek yogurt.  It&#8217;s much thicker, richer and creamier&#8230;.heavenly it is!  Try it sometime and you&#8217;ll see what I mean.  And yogurt is a great addition to low-carb protein shakes too.  Well, that&#8217;s enough of my raves about the wonders of yogurt.  Let me know what your favorite way to eat yogurt is.  I look forward to hearing from y&#8217;all!</p>

Rita and I often communicate by email because of our varying time zones and activity schedules. I found notes that we exchanged months ago about this quick, hot soup when she was in the middle of one of her very limited diets.<br />
   This soup is tasty, fast, nourishing, and warm for those days when you are looking for comfort food without a heavy load of carbohydrates to drag you down. OK, Mom note here: it is fast if you have a ready supply of diced, boiled celery in the fridge (Mom has that <a title="Mom's Celery Obsession" href="http://gfedge.wordpress.com/2009/04/12/my-celery-obsession/" target="_blank">Celery Obsession</a>). Otherwise there is some preparation of the celery.</p>
<p><strong>Boiled Celery</strong><br />
The coarse outer ribs and dark green leaves from a stalk of celery, chopped as fine as you prefer<br />
1/2 cup of water<br />
1/2 teaspoon of sea salt</p>
<p>Simmer the ingredients together in a saucepan over medium-low heat until the celery is tender. Tough celery may take a while. Store in the fridge until you need it for <a title="Lentil Patties" href="http://gfedge.wordpress.com/2009/10/27/lentil-patties/" target="_blank">Lentil Patties</a>, <a title="Rice &#38; Beans Casserole" href="http://gfedge.wordpress.com/2009/02/14/rice-beans-casserole/" target="_blank">Rice and Beans Casserole</a> or this soup.</p>
<p><strong>Cream of Celery Soup<br />
</strong>1 heaping cup chopped boiled celery including some liquid<br />
garlic powder, chili powder, and sea salt – a sprinkle of each<br />
1/4 cup coconut milk</p>
<p>Mix the ingredients in a glass or ceramic bowl and heat in the microwave if you want it hot. It could also be served cold for a summer pick-me-up or with a salad for lunch. Adjust the seasonings to your taste.</p>

I was so excited to dig right into them.I love grapefruits for breakfast, but also wanted to use them for a great dinner. I found this recipe on Sunkist and it was great! Nice and light too!</p>

<p>Ingredients: Serves 4<br />
1 cup freshly squeezed Sunkist® grapefruit juice<br />
2 Tbsp. Balsamic vinegar<br />
2 Tbsp. brown sugar<br />
4 salmon fillets, 6 oz. each<br />
½ tsp. salt<br />
½ tsp. pepper<br />
8 Sunkist® grapefruits slices, 1/2 &#8221; thick, 1 1/2 oz. each</p>
<p>Directions:<br />
Combine Sunkist grapefruit juice, balsamic vinegar and brown sugar in medium saucepan. Boil until reduced by half, approximately 15 minutes. Hold warm.<br />
Season each side of salmon fillet with 1/16 tsp. salt and 1/16 tsp. pepper. Grill salmon, presentation side down, until just done in center, about 5 minutes per side, depending on thickness of fillet.<br />
Brush salmon with 1 tablespoon Sunkist grapefruit glaze during grilling and just before removing from grill.<br />
Place 2 Sunkist grapefruit slices on serving plate and top with cooked salmon fillet. Drizzle 1 tablespoon glaze on top of salmon.<br />
I put mine atop greens too&#8230;very good!</p>

Like, not-gonna-give-it-up like pizza. Not even on this Paleo Challenge, you hear me pizza gods? So I figured out how to make my own.</p>
<p>The best part? It definitely tastes decadent and delicious, but it doesn&#8217;t leave the dreaded carb-bomb-brick in the stomach that traditional pizza tends to leave (I&#8217;ll suffer through it for you anyway, Mangia, but only you).</p>
<p>Anyway, Lisa and Georgia both asked for the recipe, so I&#8217;m going to make one up for it, since I just sort of threw together some stuff &#8230;</p>
<p><strong>Pizza crust:</strong></p>
<p>4 egg whites</p>
<p>1 c. almond meal</p>
<p>1/2 c. pecan meal</p>
<p>1/2 c. cauliflower &#8220;rice&#8221; (food-processor the cauliflower)</p>
<p>1/4 c. flax meal</p>
<p>1/4 &#8211; 1/3 c. olive oil</p>
<p>1 tsp. baking powder</p>
<p>garlic salt to taste</p>
<p>To do: Mix it up in a bowl. If it&#8217;s sort of gooey, you&#8217;re good to go. You should be able to pour it out of the bowl, but it should not stream easily, you have to scrape, if that gives you any sense of the consistency. If it seems too runny, add more of any of the flours. Don&#8217;t add more cauliflower, because I did and I think it makes it too squishy. You can also leave out the cauliflower entirely with great results, but I like to sneak in more veggies wherever possible.</p>
<p>Pour it onto a parchment-lined baking sheet. I&#8217;m pretty sure the parchment is essential for the crisping, but I&#8217;ve never made it without parchment so I can&#8217;t be too sure. Anyway, spread it out as thinly as possible, without gaps, on the baking sheet. Bake for 10-12 minutes, right before it starts browning.</p>
<p><strong>Toppings:</strong></p>
<p>Layer, in this order:</p>
<p>1) Raw pumpkin seed cheese from Whole Foods</p>
<p>2) Pizza sauce (canned tomato, garlic salt, liberal amounts of basil, 1/2 as liberal amounts of oregano)</p>
<p>3) Steam-sauteed kale (olive oil in a pan, add chopped kale, put a lid on it. When it turns bright green, it&#8217;s steam-sauteed)</p>
<p>4) Ground beef (98% lean Springerhill Ranch is available at Randall&#8217;s for $5.79/lb. Dump that in a pan. Salt and pepper. Make it brown, but still pink in the center since you&#8217;re cooking it more on the pizza.)</p>
<p>5) Raw cabbage chopped into tiny pieces (erm, chop the cabbage. Not very much of it &#8230; like a 2&#215;2x2inch square was all I had left and was a good amount)</p>
<p>Put the pizza back in the oven for 5-10 minutes. The crust will get golden brown edges. Everything else is pretty much cooked, so you just want the flavors to meld together.</p>
<p>Bonus points if you make it, wait 20 minutes for someone to bring over wine, put it back in the warm oven, and THEN think it&#8217;s the perfect meld of flavors.</p>

My husband and I had to get an antibiotic a few weeks ago for all this respiratory delightfulness that goes on this time of year. When we got on the scale &#8211; we were both horrified!Ten years ago I went on Atkins and lost over 60 pounds. But then I met my hubby and let all his bad eating habits get me off track. Now we are trying a South Beach/Atkins combo and doing great. He&#8217;s lost 5 pounds and I&#8217;ve lost 16 and we already feel so much better!</p>
<h3 id="passage_heading"><strong> 1 Corinthians 6:19 (King James Version) <em>&#8220;What? know ye not that your body is the temple of the Holy Ghost which is in you, which ye have of God, and ye are not your own?&#8221;</em></strong></h3>
<p> God convicted me on this point.  It was a painful point to bring home- but needful! I don&#8217;t mean to offend you either, if you&#8217;re overweight, but let&#8217;s face it &#8211; our bodies are temples of the Holy Ghost &#8211; we must treat them right.  That doesn&#8217;t mean to be anorexic, but if you&#8217;re either skinny or chubby &#8211; let&#8217;s ask ourselves &#8211; are we eating like we should? I encourage you to take the plunge today to better health &#8211; whatever diet and exercise regime works for you!  God bless you on your journey!</p>

<p>Justine here&#8230; Sorry I haven&#8217;t been around much lately.  Life has been really busy during the last week and I let my blogging fall behind. So sorry!! It won&#8217;t happen again <img src='http://s.wordpress.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p>If there is anyone out there that reads our new blog, please comment! Dani and I have been the only commenters thus far and would love to hear from our readers (if we have any&#8230; yet)  I know we will!!!!</p>
<p>My weekend was okay&#8230; Just okay because I had a few minor issues, and one MAJOR issue.</p>
<p><strong>Major:</strong> The plumbing in my house has completely gone wacky and is dumping ANYTHING that goes down the drain under my house. Ahhh&#8230; Hopefully it won&#8217;t cost mucho dinero to get this issue fixed. Right now I can&#8217;t even bathe at home! Thank goodness I had already planned on dinner at my Mommy&#8217;s house tonight, so I will be able to shower there!</p>
<p><strong>Minor:</strong> My cat was missing Friday &#8211; Saturday! This is only minor because he has since been found! I was out of town visiting Danielle in Leesburg, so I couldn&#8217;t do anything about it! Luckily, Once I returned from Dani&#8217;s, I found him! He had fallen through one of the holes that are now in my floor due to the plumbing problem.  He is a little fat cat, so once he fell through into the crawl space, it was too far for him to jump back up and he got stuck! I heard his faint little &#8216;meow&#8217; and saw him come running through one of the holes. I couldn&#8217;t pick him up from that angle, but there are openings outside along the bottom of the house, so I opened one up and called him to me so he could escape. I am so happy he is okay!</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Okay, I can&#8217;t remember if Thursday was perfect or not, but it was at least &#8220;pretty damn good Thursday.&#8221; It&#8217;s Sunday now, and I&#8217;m down 4.2 pounds from my start (which I&#8217;m calling &#8211; ugh &#8211; 170 pounds. Here&#8217;s to never being THERE again !)</p>
<p>During the past few days I&#8217;ve been doing two things, mainly, in addition to low carbing it. First, coughing up phlegm like a mofo &#8230; Sexy, right ? All colds are different, and this one wasn&#8217;t so bad, other than the incessant coughing. Phlegm seems to be the theme &#8211; I&#8217;m hacking like a 2-pack a day lifetime smoker. So that&#8217;s been my &#8220;exercise,&#8221; in its entirety.</p>

<p>Secondly, over the past few days I&#8217;ve begin planning (well, at this early phase more like &#8220;fantasizing about&#8221;) a late June or early July trip to &#8230; VEGAS !! Two of my IIFs (to quote Kristy &#8211; Imaginary Internet Friends) are once again free to travel and &#8211; hi J !! &#8211; one of us is turning 40 ! V and I are already there. They&#8217;ve never been to Vegas before and though I&#8217;m no insider expert, I have been there several times and have some ideas about what we can do, where to stay, etc. Of course, the plan includes being Hot Skinny Bitches. Not because we want to meet men (uh, please. In Vegas ? Even though J &#38; V are single, they&#8217;re so not interested in that. So cliche.) but just because &#8230; everything is more fun when you&#8217;re rad !</p>
<p>So I&#8217;m definitely building my momentum in bringing back rad !!</p>

<em>Where did they get these stiffs? This picture is so ph</em>o<em>ny as to be unreal. How long are they going to sit there without food on their plates? Why is the woman looking off in the distance like that &#8211; is she about to have a seizure? Why does the room they are in remind me of the final scenes from the movie </em><span style="text-decoration:underline;">2001</span><em>? The closer I look, the creepier this pic gets.</em></p>
<p>It&#8217;s the weekend before Thanksgiving here in the US, and I&#8217;ve put together a list of what I am going to make. As is the case with me, I am the only person at the table doing low carb, so the recipes have to be acceptable to them &#8211; or it be realistic to run similar dishes side by side &#8211; there&#8217;s just so much time and space in the kitchen.</p>
<p>Here goes:<!--more--></p>
<p><strong>Turkey</strong> &#8211; You saw that one coming, right? No problems here. We don&#8217;t deep-fry our turkey in batter. It does get a LOT of butter shoved under the skin and usually an apple shoved in the carcass &#8211; both these maneuvers prevent it from getting dry.</p>
<p>Funny story: early in my marriage, my wife and I cooked the turkey upside down. We were terrified that we ruined it, but it was a particularly good bird. My speculation as to why was that the white meat &#8211; the leanest and dryest part of the bird was in the juices the whole time. We have never had the guts to try this experiment again, but I&#8217;ve always had the urge to.</p>
<p><strong>&#8216;Mashed Potatoes&#8217;</strong> &#8211; No, not really. Rather, it&#8217;s my<a href="http://lowcarbconfidential.com/2009/01/04/recipe-mashed-potatoes-really-cauliflower-ssh-dont-tell-the-kids/" target="_blank"> cauliflower &#8216;mashed potatoes&#8217;</a>. These are pretty darn good, though I overdosed them in garlic the last time I made this. I&#8217;ll probably cut back a wee bit on the garlic this time, or perhaps saute it a bit to soften the flavor. I might be the only one eating this, though.</p>
<p><strong>Gravy</strong> &#8211; You know what, the store-bought gravies ain&#8217;t that high in carbs, believe it or not. <a href="http://www.dietfacts.com/html/nutrition-facts/heinz-gravy-homestyle-roasted-turkey-45961.htm" target="_blank">Three grams of carbs for Heinz Turkey Gravy isn&#8217;t bad</a>. Yeah, I&#8217;d rather not have the modified corn starch, but I also want a few minutes not cooking to play with the kids. I&#8217;ll take the tradeoff. The family is OK with it, too, so this one doesn&#8217;t jump out as low carb.</p>
<p><strong>Cranberry Sauce</strong> &#8211; I only tried this last year and fell in love with it. Take a bag of cranberries, cover with water in a small pot , and cook on the stove til they burst &#8211; you got cranberry sauce. Then add just enough Splenda to cut the tartness &#8211; but not enough to tick off the anti-Splenda faction at the table. Yes &#8211; there&#8217;s carbs here, but these are about as healthy a serving of carbs you can get &#8211; <a href="http://www.msnbc.msn.com/id/15814415/" target="_blank">at least that&#8217;s what some research says</a>.</p>
<p><strong>Spinach Casserole</strong> -<a href="http://lowcarbconfidential.com/2008/02/13/kitchen-experiment-12-three-cheese-spinach/" target="_blank"> I haven&#8217;t made this in a while</a>, but I have fond memories of it. This I can squeeze in the rack below the bird in the oven. Everyone liked this when I cooked it last, so I won&#8217;t mention that it is low carb and ruin it for them.</p>
<p><strong>Brussels Sprouts</strong> &#8211; The entire family likes <a href="http://lowcarbconfidential.com/2007/06/17/recipe-easy-brussels-sprouts-and-bacon/" target="_blank">these brussels sprouts</a>, so they don&#8217;t stand out as a &#8216;low carb&#8217; dish (like the cauliflower mashed potatoes). I&#8217;ll buy some sour cream &#8211; I think it makes a great topping for the sprouts, oddly enough.</p>
<p><strong>Stuffing</strong> &#8211; I make my kids a great homemade stuffing out of leftover bread. I soak it in chicken broth overnight, then fry up some onions and yellow squash in olive oil. Mix the bread and the fried veggies together, add whatever seasonings strike my fancy at the time (always salt and pepper), and bake until the top is nicely browned. I think I&#8217;ll experiment with making some of my low carb bread a bit stale in the oven, and trying it with that.</p>
<p>I&#8217;ll have regular stuffing as a backup for the family.<strong></strong></p>
<p><strong>Ricotta Cranberry Cream Pie</strong> &#8211; <a href="http://lowcarbconfidential.com/2009/11/12/recipe-ricotta-cranberry-crea-pie/" target="_blank">My new favorite</a>. Now I can have a dessert to keep me satisfied while everyone else chows down on their sugar and starch laden goodies.</p>
<p><strong>Red Wine</strong> &#8211; Alcohol slows weight loss. Alcohol, in moderation, is also good for you in a number of ways &#8211; especially with the other compounds found in red wine. Enjoy a little &#8211; it&#8217;s Thanksgiving.</p>

<p>Weigh in- 167 (17 pounds lost)</p>
<p>My weight loss has been gradual, not quite the pound a day most hCG diets claim. I partially blame that on my cheating here and there; nothing serious just a bite of mashed potatoes and a few corn chips in my chili.  Even though they are small treats and seem innocent enough, they add up; it&#8217;s evident on the scale.</p>
<p>The scale, however, is not the be all end all. I&#8217;ve learned throughout the years that even if the scale isn&#8217;t going down in numbers doesn&#8217;t mean you&#8217;re not losing inches. Even though my weight loss has been slower than expected, I&#8217;m still losing inches, my clothes fit so much better, and I have more energy and feel great!</p>
<p>The holidays are coming around the corner, and when I started this diet I thought I&#8217;d be done by the end of November just in time for Christmas. Well, I think with my progress that&#8217;s not very realistic. I&#8217;m not too worried about being on this diet during holiday meals; it will just be another test to my will power and dedication to losing weight. Bring it on!</p>

<p>1 pound of 7% fat Ground Sirloin<br />1 tbsp Cumin<br />1 tbsp Oregano<br />1 tbsp Chili Powder<br />Garlic and Onion Powder to taste<br />Salt and Pepper to taste<br />1 tomato, chopped<br />Leaves of Head Lettuce large enough to hold meat and tomatoes<br />(Depending on strength of lettuce, may want to layer 2-3 leaves for each wrap)<br />Your favorite Hot Sauce (no sugar added)</p>
<p>Add sirloin to hot pan and add all spices, garlic and onion powder, and salt and pepper and mix until meat is browned.</p>
<p>Prepare lettuce leaves.</p>
<p>Place 2 oz of cooked ground sirloin into a lettuce wrap and top with tomatoes and your favorite hot sauce.</p>
<p>Makes approximately 8 individual wraps using 2 oz of meat for each wrap.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Well, no actually that wasn&#8217;t me <em>today</em>. I had a few setbacks this afternoon. I didn&#8217;t pig out or shovel anything really bad into my face , it was all healthy stuff (a veggie wrap, green juice, etc) but it wasn&#8217;t low carb. In all honesty, I&#8217;m not up and running 100% just yet in the kitchen department, and we all know that prepping the kitchen is <strong>essential</strong> to low carb success ! To any diet plan, really, but I think low carb especially.</p>
<p>I did buy something the other day &#8211; an 18 pack of eggs. I was about to pick up a dozen, like normal people, and then I realized that 3 eggs a day for breakfast x 7 days a week &#8230; why not buy the bigger carton ? So today, my mom says, &#8220;Oh, I saw all those eggs in the refrigerator. I guess I better make a quiche tomorrow to use them up.&#8221; As if they were leftovers from a party I threw where too many guests brought &#8220;raw eggs&#8221; and now I had all this extra I didn&#8217;t know what to do with ? Um, no, Mom &#8230; I wasn&#8217;t drunk when I bought those. It was an<em> intentional act</em> &#8211; the eggs just didn&#8217;t materialize against my will in my fridge &#8211; and I have plans for them. (She did the same thing last week with the flour and sugar. I have a NORMAL amount of these two kitchen staples in my pantry and she said, &#8220;Oh, I saw you have a lot of flour and sugar so I thought I better bake something.&#8221; I have a lot of bathroom cleaner, too, knock yourself out. And since when has a standard, grocery store sized bag of flour become &#8220;a lot&#8221; ??)</p>
<p>Anyway. I went to Daily Plate and designed a &#8220;perfect low carb day&#8221; and my goal from here on out will be to live this day over and over again. It will be my own personal Low Carb Groundhog Day. Here&#8217;s what the final stats look like (Man, if I can eat like this consistenty, I&#8217;ll drop weight like I&#8217;m tossing rocks out of my pockets ! I just know it !!)</p>

<p>Here&#8217;s the plan ( am trying to keep it simple, because too much variety is just a bad thing for me when trying to stick to a diet.)</p>
<ul>
<li>Breakfast: 3 eggs with 2 Tbsp heavy cream scrambled in a Tbsp of butter</li>
<li>Lunch: a can of salmon with 2 cups of mixed greens and 2 Tbsp of full fat ranch dressing</li>
<li>Dinner: 6 oz of roast chicken with a bag of Steamfresh brocolli, 1 Tbsp olive oil</li>
<li>Snack: 1/4 cup of walnut halves (the only nut that I can stop at 1/4 cup at !)</li>
</ul>
<p>I know the fat grams on that are high, but on low carb that really isn&#8217;t a problem. At 1,500 calories a day, and only 23 grams of carbs (and that&#8217;s not even <em>net </em>carbs ! That&#8217;s <em>all</em> the carbs !) and over 100 grams of protein, my body should be a fat burning furnace, so it won&#8217;t matter if I flavor up my food nicely with some ranch dressing and olive oil.</p>

A study conducted on 106 obese participants concluded that &#8220;Low Carb Diets Are Harder To Stick To Than A Low Fat Diet&#8221;.  &#8221; That some aspects of  low carb diets have a detrimental affect on peoples moods&#8221;. Juan says that maybe after being on a low-fat diet for a year the low-fat people were happy to be off a low-fat diet! That&#8217;s why they were in such a jubilant mood. I bet they were running down the halls so happy the researchers concluded &#8221; low-fat is good for your mood!&#8221; &#8220;Just look at the low-fat people, they are so happy, Dr. Lector!&#8221; Anyways, I have been on a low-fat diet before doing low carb and for me there is no comparison. I am glad I was not one of the participants in the study on the side of the low-fat dieters. I would have never finished the study. If you have tasted any low-fat product you know what I am talking about. It is tasteless, boring, and not good for you. I have thrown away low-fat products after tasting them into the trash. I wish they would have given everybody in the study <a href="http://www.shopgbg.com/Juan Mendoza" target="_blank">GBG&#8217;S 10 in one </a>liquid vitamins it has a  mood enhancer, they all would have felt good after the study.  A low carb diet has not affected my mood, I have been a very happy fellow before I started a low carb diet and now I am delirious, I mean&#8230;&#8230;&#8230;&#8230;I am still a happy fellow.
