<content:encoded><![CDATA[<p>I read an interesting <a href="http://www.medicalnewstoday.com/releases/241307.php">article</a> that talks about the role that leptin plays in our appetite. Basically, leptin is released from fat cells as a way to trigger appetite suppression. When we eat a diet of high fat foods it actually lessons the brains reaction to the leptin, making us feel hungry.</p>
<p>If I understand this correctly, that would mean that by making the change to healthy low-fat foods it should eventually be possible to retrain your brain to recognize the leptin and trigger the appetite suppression as it should.  I am not sure how long it will take to &#8220;re-wire&#8221; my brain but it is comforting to know that if I stick with it, the cravings should lesson.</p>
<p>It would be nice to have biology working for me and not against me&#8230;</p>

<h4 style="text-align:center;">Prep, Soak &#38; Cook Time: 4 Hours 3o Minutes<br />
Yield: 30 Keufta Balls<br />
(15 Item Recipe)<br />
Vegan &#38; Vegetarian Version Listed Below</h4>
<p style="text-align:center;"><strong><span style="text-decoration:underline;">Outer Shell Ingredients:</span></strong></p>
<p style="text-align:center;">3 Cups Fine Organic Cracked Wheat Bulgur<br />
3 cups Purified water<br />
2 cans Organic Garabanzo Beans<br />
3 large organic Eggs or vegan egg replacer<br />
3/4 cup Organic Whole Wheat Flour</p>
<p style="text-align:center;"><span style="text-decoration:underline;"><strong>Filling Ingredients:</strong></span></p>
<p style="text-align:center;">2 Boneless, Skinless Breast of Organic Chicken, cooked and minced fine<br />
4 Yellow Organic Onions, chopped<br />
2 Tablespoons Extra Virgin Olive Oil<br />
1 Cup Organic Italian parsley, chopped<br />
1 Tablespoon Fresh Mint Leaves, chopped<br />
1 Teaspoon Fresh Sweet Basil, chopped<br />
Sea Salt and Freshly Ground Pepper to taste<br />
1 cup Creamy Organic Peanut Butter<br />
1 Cup Pine Nuts, you can use Chopped Walnuts as well or a combination of both</p>
<h4 style="text-align:center;"><span style="text-decoration:underline;">Directions:</span></h4>
<p style="text-align:center;">Take the cracked wheat, purified water and the juice of one lemon into a bowl and soak for 3-4 hours.  Once cracked wheat is done it will have absorbed all the water and softened the wheat.  Next take your garbanzo beans and food process until smooth. In large bowl take cracked wheat and garbanzo bean paste mixing together until well distributed.  Knead into a soft doughy mixture.  Next form it into 30 balls.  Depress your thumb to make a inner cavity where stuffing will be placed.</p>
<p style="text-align:center;"><strong><span style="text-decoration:underline;">Preparing stuffing</span></strong>:</p>
<p style="text-align:center;">In a large pan take your olive oil and cook on medium heat saute chicken and onions in olive oil until onions and chicken juices run clear.  Drain off any excess oil or liquid.  Take chicken in food processor getting it to a fine chop.  If you do not have a food processor you can also chop the chicken fine.  Take the chopped chicken and onions in a bowl.  Add the rest of filling ingredients (Parsley, Mint, Basil, Peanut Butter, Pine Nuts, sea salt and pepper) and mix together. Cool and set aside. Take a tablespoon of the filling mixture and place into the cavity of the cracked wheat ball.  Bring the cavity edges together and seal the filling inside.  It is important to make sure they are sealed.  You can roll them with hand on cutting board to get a nice even shape.</p>

<p style="text-align:center;">Once all balls are formed and sealed.<br />
Take the number of balls you will be serving the rest can be stored in the fridge or the freezer.</p>
<p style="text-align:center;"><strong><span style="text-decoration:underline;">For the Balls you are Serving:</span></strong></p>
<p style="text-align:center;">In a pot place your balls inside.  Cover the rest with Chicken Broth or Vegetarian Vegetable Broth for our Vegan and Vegetarians.  Add two dashes of sea salt to broth. Broth should be covering balls.  Cook until broth boils and keufta float to the top.  When they float to the top you know they are done.  Remove from Broth.  Serve in a small bowl of broth with slice of lemon.  Squeeze lemon juice over the Keufta and Enjoy.  You can also serve the Keufta without the Broth garnish with fresh diced parsley and a slice of lemon to squeeze over top.</p>
<p style="text-align:center;"><strong><span style="text-decoration:underline;">Storing Keufta Balls:</span></strong></p>
<p style="text-align:center;">You can keep some in the fridge if you plan on eating them within 2 days.  You can also store them in the freezer.  When preparing them from frozen everything is the same with the cooking process they will float to top when done and will take a couple more minutes when preparing them.</p>
<p style="text-align:center;"><strong><span style="text-decoration:underline;">Note:</span></strong></p>
<p style="text-align:center;">These are super nutritious, fast and easy to prepare once made and make a wonderful filling meal.  Although they are labor intense and take a bit of preparation and wait time they are well worth the effort. Our family enjoys these so much we make 100 at a time freeze a bunch and always have these delicious keufta balls on hand to eat anytime.We just pop them in the broth and can eat in minutes we usually make a tabbouleh salad with them and throw some okra in the pot while we boil them and dinner is served. This is a super low fat, delicious and nutritious meal to make for the whole family.  It is also super fun to get everyone involved in the process.</p>
<p style="text-align:center;"><strong><span style="text-decoration:underline;">Vegan &#38; Vegetarians:</span></strong></p>
<p style="text-align:center;">For the Vegan Vegetarian Version substitute chopped tofu for the chicken or omit both. Substitute egg replacer or omit.  Substitute  vegetarian vegetable broth for the chicken broth to cook them in.</p>
<p style="text-align:center;"><span style="text-decoration:underline;"><strong>For a Smaller Batch:</strong></span></p>
<p style="text-align:center;">If you don&#8217;t want to make as many at once simply cut the ingredients in half for 15 balls which is good for serving 4.<br />
If you are two adults with children it will work perfectly also.</p>
<h4><span style="color:#000000;">**This recipe is super healthy compared to the traditional style keufta that uses white flour, lamb, ground beef and frys the keufta in a lot of oil .  I love this recipe and have been eating it since childhood.  In this modified healthy version it takes the high fat out of the dish making it low fat, delicious and packed with nutrients.**<br />

I did some research to see what food would be best and how I could incorporate them into my diet. This morning I went grocery shopping with the intent to buy said foods and I almost immediately became frustrated. I guess if you want to eat healthy, you gotta pay more. That is so annoying. People lately are always saying how fat America is becoming, but those who have low incomes can&#8217;t afford to eat healthier. I&#8217;m not going to pay more for special foods for me when it will end up taking from the rest of my family&#8217;s food budget. I did buy items that were the same price for low fat as the regular food item, but there were many area&#8217;s that I wasn&#8217;t willing to pay the higher prices.</p>

Overload can lead to depression whether it be food or any of the other factors in life that wreck havoc on our well-being. Consult your doctor if you have depression, especially severe, but next time try avoiding eating that extra helping. If you&#8217;re full, walk away. If not, why not try having something else, something different? I suspect too much of one food might tax your mind.</p>

Next time you are craving candy, have an apple, notice how it helps take that sugar craving away. Having problems with constipation? Have an apple, more often. Are you low on vitamin C? Have an apple. If you have a juicer, see if you can find an abandoned orchard and drink fresh apple juice. After several days of that watch your complexion turn rosy.</p>

Junk food days can add up as the years go by but the body responds well to “turning your life around” and there’s no better time than the present to begin to do that. Whole grains instead of white, a little 100% maple syrup instead of sugar, no candy, fresh vegetables (steamed not fried) and fresh fruit. You’ll never be sorry.</p>

<content:encoded><![CDATA[<p>As a vegetarian if I don&#8217;t receive enough protein I will eat and eat and eat &#8230; and eat! Until my body receives the protein it needs, I&#8217;m hungry! Yet I cringe when I read about cancer being caused by a &#8220;protein&#8221; that runs amok. Eating too much protein can cause its problems and finding adequate protein without turning to animal sources is sometimes frustrating. But mixing the right amino acids together, which can mean beans and rice is crucial to satisfying hunger.</p>
<p>It&#8217;s very tempting to simplify things and think that because one is obese they are well-fed. Protein is expensive and many who are struggling financially eat a lot of starches (macaroni and cheese boxes) to get by. Higher quality starches like whole grain brown rice and whole grain pastas and breads, though they are more expensive, are a better bargain in the long run because of the nutrition they provide.</p>

<content:encoded><![CDATA[<p>When I first got together with my husband he had us go on an &#8220;apple diet&#8221;. But it wasn&#8217;t entirely apples, he allowed us to eat a little raw cabbage as well.  It didn&#8217;t last very long, probably just a day and a half and after we were through we smelled like apples. It wasn&#8217;t too big a deal for me because I&#8217;d been enjoying apples from the trees I found out in the woods and eating quite a bit of them because they were so pretty and fresh, I was young and believed that if I ate something so pretty and fresh right off the tree, I couldn&#8217;t help but look that way too.  Now days, I still eat fresh apples but just one at a time, sometimes only three apples a week. But I noticed that when I&#8217;m craving something, anything, whether it feels like I need protein or sugar, that apple really hits the spot.</p>

<content:encoded><![CDATA[<p>I’m not so sure we&#8217;re supposed to be high school skinny. After all, take a look at the life of a tree. Don’t they get bigger as the years go by? If they are given room to grow, they spread out and become beautiful. Yes, studies say that thinner people live longer and there is no question that too much body fat causes problems, many of them fatal. So I strongly encourage myself to do my best to keep the fat down but I don’t expect to be high school skinny nor do I expect that of anyone else except those in high school and only if skinny is their body type. I will say that I wish I knew then what I do now in regards to calories and the way our bodies burn them. The metaphor of a wood stove helps me to understand the calorie burn. The bigger the logs the bigger the fire to burn them. No fire no burn. High school skinny? Not me. Comfortable with the body I have? Absolutely.</p>

<content:encoded><![CDATA[<p>For some of us the day comes when we need to cut calories and fat. It can be very depressing to suddenly stop our former way of eating. It’s like a death. But a good diet brings life and a higher quality one at that. Use juicy foods like fresh tomatoes and steamed onions to flavor pasta or rice and if your diet allows salt, a bit of soy sauce helps as well. Some diets allow a tiny bit of maple syrup, which can also be used to flavor. When you have a salad with a little vinegar on it and put it on the same plate as your entree, the vinegar will mingle with the soy, onions, tomatoes and spices. If you’re new at this, you’ll get the hang of it. Good luck, good health.</p>

<content:encoded><![CDATA[<p>My father used to say, “You want bread on that butter?” because my sister and I gobbled so much of the creamy, yellow fat onto our crusty French bread. I have been omitting it for years and now find the taste of butter foreign. Substitute olive oil, it makes nice garlic bread, people have been doing this for years. It takes time and patience to change a diet but you can do it. You’ll get used to no butter and you’ll omit many calories of which all are fat.</p>

Follow the directions carefully on the no-stick spray then put your garlic, onions and sliced mushrooms in the sprayed cast iron skillet. Cover but leave a crack so the steam can escape. After three or four minutes at low heat, crack your eggs and add the whites then cover again leaving a crack for steam to escape and cook until the whites are done. With toasted bagels and a salad with juicy tomatoes, this is a tasty omelet-like dish.</p>

If you wait 15 minutes and you are still hungry then maybe you need more to eat but I’ve found that second helping I was dying for 15 minutes ago is unappealing because I’ve allowed that time to let my digestive system work on the food I already ate and give me the full feeling so desperately needed while dieting. It doesn’t always work, sometimes you are just famished and nothing will stop you but if you can, have one helping then wait fifteen minutes or more before you have another helping.</p>

<content:encoded><![CDATA[<p>It&#8217;s not as much fun to cook without oil but it protects those who have high cholesterol. Using cooking spray correctly (heat it in the pan first) then adding vegetables like mushrooms, onions, zucchini, celery, garlic, etc. then putting a lid on it and turning the burner down to low, will saute&#8217; them. Be careful that you don&#8217;t overcook them, unless you enjoy them well cooked. Add them to brown rice or some great fresh bread, throw in a salad with only a dash of vinegar and there you have a low-fat (non fat?) meal that will be satiating and keep you and/or your loved ones around for a while.</p>

<content:encoded><![CDATA[<p>You know from my previous posts of some <a href="http://amothersmemoir.wordpress.com/2010/08/24/the-7-unsuspecting-foods-you-should-never-eat-again/" target="_blank">examples of foods </a>that are marketed as &#8220;healthy&#8221; but are FAR from it such as reduced fat peanut butter, corn and soy products, and unhealthy canola oil.  Buying local, fresh foods from Farmers&#8217; markets, organic farms, or from your local grocer can go a long way for your budget and your health.  However, not everyone can benefit or wants to shop healthy.  Here are the top five foods to avoid or minimize in your diet for a longer, healthier life and a leaner waistline, followed by the top five foods that will give you amazing health benefits.<br />

<p><strong>#1:   Low-fat Foods</strong></p>
<p>Food labeling can be very deceptive when it comes to food geared for weight loss.  Low-fat foods are one of the products to be careful about.  Just because the food says &#8220;low fat,&#8221; does not mean the food is low calorie.  Be sure to check the label and see how many calories are typically in the product.  Most people associate low-fat foods with lower calories, so they tend to eat more.  Do not be fooled by this deceptive labeling technique.<br />
<strong></strong></p>
<p><strong>#2:   Sugar-Free Foods</strong></p>
<p>Sugar-free foods are geared to people with diabetes or at risk for developing diabetes.  Sugar-free foods have low calories and no sugar.</p>
<p>However, look at the label under sugars, and you will see something interesting.  Sugar-free foods tend to have sugar alcohols, which is an ingredient designed to give it sweetness.  Most of the time, sugar alcohol is made from sugar products, which can lead to increased calories.  Sugar alcohols carry between 1.5 and 4 calories per gram.  Not only do you get extra calories, but you also can get cramping, bloating, and other gastrointestinal problems if you ingest too much.</p>
<p><strong>#3:   Commercial Smoothies</strong></p>
<p>Normally, smoothies are associated with healthy eating.  They have skim milk, fruit, and yogurt, so they are considered a great, healthy food.  Some commercial smoothies, however, have many hidden calories from extra sugar.  Some smoothies are also made with ice cream, so you end up ballooning sugar, fat, and calorie content.  Most of the time, the fruit in smoothies is blended up into fruit juice, or fruit juice is added.   This eliminates the fiber that is found in the skin of most fruits.  My advice:  Make your smoothies at home, and leave the commercial smoothies on the shelf.</p>
<p><strong>#4:   Commercial Yogurts</strong></p>
<p>Yogurt, again, has been considered a natural health product containing calcium, probiotics, and other products that have been shown to be beneficial to our health.  Look at the label again, and you might see something surprising.   When looking at the label, some of the first few ingredients in yogurt are different forms of sugar.  All this extra sugar can lead to weight gain and stubborn, hard-to-lose body fat.  So again, read the label and see exactly what is in the product before you choose the yogurt of choice.</p>
<p><strong>#5:   Sugary energy drinks including items with added vitamins and minerals</strong></p>
<p>Energy drinks have been advertised as giving you that extra pick-me-up during the day, and a way to increase the intensity of your workouts.  Energy drinks can contain high amounts of caffeine and sugar, which gives you that initial pick-me-up, but you end up crashing hard later.  Also, some drinks that have added vitamins and minerals, can have loads of sugar as well.  So stop and think before you drink and choose something lower in calories and sugar, maybe something like coffee or tea.</p>
<p><em>Next, I am going to share with you <span style="text-decoration:underline;">5 foods that are beneficial to your health</span>, and you might not even know it.</em></p>
<p><strong><br />
#1:  Swiss Chard<br />
</strong></p>
<p>Aging can create many different problems for people.  Wrinkles, lack of balance, and our eyesight can worsen, and are just some of the different things that happen with the aging process.  Swiss chard is considered a super food because of some of the amazing caroteniods that can be found in this leafy green vegetable.  Swiss chard contains high levels of lutein and zeaxanthin that have been shown to help with good eyesight.   These two caroteniods have been shown to build up in the eyes, which help with the way light rays enter our eyes and are absorbed.</p>
<p><strong><br />
#2:  Pepper, Especially Capsaicin</strong></p>
<p>So most of you are probably asking why pepper is on the list.  Pepper is a zero-calories food that can add a lot of flavor to your foods.  Not only does it pack a great punch to your foods, but capsaicin has been shown to have tremendous anti-inflammatory properties.  It has also been shown to be helpful in fighting some cancers because of its anti-cancer effects.<br />
<strong>#3:  Wheat Grass<br />

<p>Tahini is now found in most grocery stores as an excellent source of all the B vitamins as well as calcium.  B vitamins are essential in development of healthy cells in the body, especially red blood cells.   B vitamins can also help in raising metabolism, and help our immune system become stronger.  Tahini also holds a surprising amount of calcium, zinc, and copper.  The high levels of calcium can help keep bones strong and healthy, and might be responsible in fighting some cancers. Tahini also holds an abundance of fiber, specifically sesamin and sesomolin, which can have positive effects in lowering cholesterol.<br />
<strong>#5:  Avocado</strong></p>
<p>This amazing fruit helps reduce inflammation through some of the carotenoids found in the green, fleshy part of the avocado. This vegetable also has a tremendous amount of fat, but the good fats that are beneficial to the body. The main source of fat is Oliec acid, which helps with fat absorption and also helps to lower the risk for developing heart disease. Avocados also have phytosterols, which keep inflammation in the body under control.</p>

<p>WASHINGTON (AP) &#8212; The Obama administration is planning to ask food companies and restaurants to cut back on advertising unhealthy foods to children.</p>
<p>Under guidelines obtained by The Associated Press, companies would be urged only to market foods to children ages 2 through 17 if they are low in fats, sugars and sodium and contain specified healthy ingredients. The government is planning to propose the voluntary guidelines Thursday, according to three people familiar with the process who spoke on condition of anonymity because they were not authorized to speak publicly.</p>
<p>The guidelines set parameters set that are stricter than many companies have set for themselves and would eliminate much of the advertising viewers see today &#8211; on television, in magazines, in stores and on the Internet &#8211; for foods that appeal to children.</p>
<p>The food industry has already been successful in reducing the number of television ads aimed at children in recent years as much of that advertising has moved to magazines, the Internet and social media. Public health advocates have argued that the industry&#8217;s self-regulation is not enough and pushed the government to set guidelines.</p>
