<title><![CDATA[RECIPE OF THE WEEK:  CIABATTA BREAD]]></title>

<h3>INGREDIENTS:</h3>
<ul>
<li>500 gr of bread flour</li>
<li>500 ml warm water</li>
<li>10 gr (1 packet yeast)</li>
<li>2.5 ml salt</li>
</ul>
<h3>METHOD:</h3>
<ol>
<li>Combine the flour, yeast together in the your electric mixing bowl</li>
<li>Make a well and add the warm water</li>
<li>Let it mix for exactly 15 min and add the salt</li>
<li>Once its formed a firm dough, keep it in the bowl, cover bowl with cling wrap and place it in a warm moist place until it triples in size.  (like an oven on a very low temperature, no more than 60 degrees C).</li>
<li>Flour a flat tray &#8216;pour&#8217; dough onto the floured tray and form into a long oval-like shape.  Let it sit again, because it will rise.</li>
<li>Before baking, sprinkle on top of the raw loaf some rough salt and some rosemary for some extra flavor.</li>
<li>Bake in an oven of 220 degrees C for about 20 min.</li>
<li>After the 20 min, lift the bread off the tray and tap the bottom centre of the loaf.  If it sounds hollow, it&#8217;s ready.</li>

<title><![CDATA[Baking Bread / 30 Minute Baguettes]]></title>

Baking Breads has proven to be one of my biggest challenges. I have tried 3 different &#8220;30 min baguette&#8221; recipes now.  This time I am going to use a combination of 2 different recipes I found on Pinterest. Let me just say this takes much longer than 30 minutes.  I can&#8217;t understand the concept of not letting the bread rise. This is what I did and here is how it turned out.</p>
<p><strong>Baguettes</strong></p>
<p>preheat 425</p>
<ul>
<li>2 cups very warm water</li>
<li>1 packet yeast = 2 3/4 tsp active dry. I used 1Tbsp active dry yeast</li>
<li>2 Tbsp sugar</li>
<li>1 1/2 teaspoons salt</li>
<li>4 cups flour</li>
</ul>
<ol>

<li>set on top of preheating oven to foam up. (10 min)</li>
<li>flour, salt together in mixing bowl.</li>

<li>slowly gently fold flour into water w/ wooden spoon forming a sticky barely formed dough ball.</li>
<li>knead dough on floured surface or in mixer w/paddle.</li>
<li>cut into 4 pieces.<a href="http://bits2bites.files.wordpress.com/2012/01/dsc021091.jpg"><img class="alignright size-thumbnail wp-image-228" title="twisting the dough" src="http://bits2bites.files.wordpress.com/2012/01/dsc021091.jpg?w=117&#038;h=150" alt="" width="117" height="150" /></a></li>
<li>roll 4 long ropes.</li>
<li>twist 2 ropes together. I cut slits down the center of mine.</li>
<li>place on parchment lined baking sheet. longer pan the better.</li>
<li>let rise 30 minutes. uncovered on top of warming oven.</li>
<li>place a big roasting  pan with 4-6 c water on the bottom rack of oven.</li>
<li>put the bread in the oven.</li>
<li>bake 15- 20 min. about 10 min into baking I spread some warm butter on and continued to let brown.</li>
</ol>
<p style="text-align:center;">They came out great. The kids loved them. It took 1 1/2 hours.</p>
