The definition of what makes a good aperitif is often hard to define. In France, an aperitif is usually Pastis or a similar drink while in Italy; the word aperitivo means so much more, particularly in Northern Italy. An aperitif or l’aperitivo is a social moment of the day, as much as a chance to see friends and have a conversation as it is to grab a drink and maybe some snacks. L’aperitivo is very popular throughout Italy and has really been catching on abroad as well.

The concept of l’aperitivo is quite different from Happy Hour as Americans intend it. First of all, the drinks are not discounted. Sometimes, they are actually even more expensive to compensate for the food that is offered. Secondly, people drink a variety of drinks at the aperitif. Thirdly, in Milan, the Northern city and financial capital of Italy for example, l’aperitivo often substitutes dinner. I miss those many “ape” with friends, particularly during the holiday season.

In terms of the functions of an aperitivo it is supposed to open up your stomach and be the entrance to a meal. This is not always the case. Many aperitivos go on very late and actually take the place of dinner. An aperitivo is a great idea before going to the theater or a movie. This small meal can tied you over or satiate your needs, depending on your eating habits.

Bartenders put out wonderful spreads of small pizzas, focaccia, torte salate , some rice dishes, pasta dishes, cold cuts and vegetables. This is almost always supplemented by the requisite potato chips and olives. L’apertivo is a ritual of Northern Italian life and is slowly making its way to New York, I am happy to say.

In addition to a variety of foods, there are classic aperitivo drinks as well. The first question is whether or not you want to drink something made with alcohol. For those that don’t there is usually an option of something made with a variety of fruit juices. This is called an analcolico. The second question is whether you want wine, beer or hard liquor. The wines are usually sparkling either Prosecco or Spumante from Franciacorta or Trento. Many opt for a crodino or aperol.

The specialty drinks that are usually ordered are a Negroni, a Negroni Sbagliato, an Americano, a Mojito or a Caipirinha. A Negroni is made with Gin, Vermouth, Campari and orange peel while a Negroni Sbagliato substitutes the gin for sparkling wines. An Americano has vermouth, Campari, and soda while the Mojito and Caipirinha are based on Rum and Cachaca respectively. An aperitivo that has been garnering a lot of interest throughout Italy is the Spritz from the Veneto. This delicious drink is made with Prosecco, soda, and Campari or Aperol. I always choose a Spumante although once in a while a Negroni sbagliato is the drink of choice.

You can get an aperitivo in New York at a number of places. I was reminded of this the other day at Piola. Aroma on the Lower East Side and Emporio in Nolita and a host of other places around town offer l’aperitivo.

I find that an aperitivo is a good way to meet friends without having to get involved in a long dinner.
It can also be fun to invite people over for an aperitivo at home. Some of the classic Italian recipes for an aperitivo include focaccia and small pizzas. Essentially, anything can be served as an aperitivo.

Most aperitivi run from about 7 to 9 p.m in Italy but start earlier in New York City, around 5 p.m. Having an aperitivo has traditionally been a smart way to get people into a restaurant, especially in difficult times such as the current recession and aftermath. The aperitivo renaissance in New York, this most Italian of traditions, is certainly here to stay.

É assim que estão cerca de 800 cidades que dependem da energia vinda da hidrelétrica de Itaipu. A usina parou de funcionar totalmente no início da noite desta terça-feira. Ainda não se sabe ao certo o que ocasionou a queda de energia, mas trabalha-se com hipóteses: pane na usina de Itaipú ou problemas com as linhas de transmissão de Furnas, que distribui energia ao País todo.

Em entrevista ao Jornal da Globo o assessor de comunicação de Itaipú, Gilmar Piola, disse que a usina operava em potência máxima quando sofreu desligamento total, por volta das 22:20 desta terça-feira (10). De acordo com Piola, a alternativa mais plausível para a causa da baixa do sistema é um possível interrompimento da transmissão de energia por parte de Furnas, uma vez que no Paraguai a situação já está sendo normalizada. “O sistema de Itaipú é automaticamente desligado quando não há para onde mandar a energia. A usina fica em stand-by”, explicou o assessor.

O estado do Paraná foi atingido por fortes raios e vendavais no fim da tarde de terça-feira (10). Essas questões atmosféricas podem ter afetado as linhas de transmissão de Furnas. De acordo com o ministro de Minas e Energia, Edison Lobão, a prioridade agora é retomar o abastecimento de energia às cidades afetadas, o que se espera que seja feito ainda esta noite.

Gosto de conversar com gente sabida, com mestres. Uma das melhores tardes do ano que passou, passei ao lado de Lelé, ouvindo o cara, conhecendo o hospital da  Rede Sarah em Salvador, uma das suas obras primas, ouvindo sobe os projetos dele para Salvador como os bondinhos como este instalado no hospital, mas que serviria também para dar acesso às cumeadas da cidade, as histórias de vida de Lelé, a visão de mundo de Lelé. Tentei  resumir tudo  nesta entrevista publicada na revista da Unifacs. Revista inventada e editada por Marcinha e Emília, com matérias de Nilson, Kátia Borges, Ana Cristina Barreto, Franciel Cruz.

A revista foi lançada na Pirâmide, Marcinha já não estava conosco. Voltaremos quase todos os que estavam naquela revista novamente para a Pirâmide, desta vez para o lançamento dos livros de Maria e Nilson.

E este lançamento tem sido a brincadeira mais bem sucedida que eu me meti nos últimos anos. Tudo dá certo. Talvez pelo alto astral permanente de Maria, talvez pelo despojamento de Nilson, tudo caminhou sem dificuldades, sem entraves. Leve.

Acho bacana o gesto de Janaína Amado, de sair do seu Maceiócio especialmente para o lançamento, da gincana de Bernardo para vir e voltar por cima do rastro, o post de Chorik com Dorival Caymmi de fundo musical, os muitos posts de adesão ao fuxico.

Enfim, vai ser uma noite bem bacana!

Nubia Mendonça, 64 ans, Pituba

Nubia Mendonça est originaire d’Ilheus, c’est-à-dire du Sud de l’Etat de Bahia, célèbre pour les romans écrits par Jorge Amado sur la terre du cacao. C’est un médecin spécialiste en cancérologie pédiatrique. Elle est membre de l’Académie Brésilienne de Pédiatrie et copropriétaire de la Clinique ONCO. C’est une globe-trotter invétérée qui connaît les trois-quarts de la planète et domine le français et l’anglais. Elle adore l’art et en particulier tout ce qui touche à l’impressionnisme. C’est par ailleurs un fin gourmet qui adore manger au restaurant et c’est à  tous ces titres que Votre Guide à Salvador l’interviewe.

Un adjectif pour résumer Salvador ?

-UNIQUE….par son charme d’abord qui provient en grande partie de sa situation privilégiée, sa topographie qui fait contraster ville haute et ville basse, élément qu’on ne retrouve pas dans les autres capitales du Nord-est comme Recife ou Natal, unique par ce cadre de mer et de collines

UNIQUE…. par sa chaleur ensuite. Les Bahianais adorent recevoir, sont toujours prêts à rendre service, sont généralement de bonne humeur

UNIQUE… enfin par sa cuisine caractérisée par l’huile de palme (le “dendê”) qu’on ne retrouve dans aucune cuisne autre part au Brésil et qui colore et parfume poissons, crevettes, langouste, crabes et même poulet.

Que dire de Pituba, où tu habites ?

C’est un quartier très connu qui est considéré comme un des meilleurs à Salvador, mais il y a un niveau élevé de violence. On voit souvent dans les journaux ou à la télé que quelqu’un a été volé ou dévalisé ou même tué au cours d’un braquage. Donc, j’avais peur au début de m’installer à Pituba, car avant j’habitais à Barra, mais mes parents habitaient à Pituba et ma Clinique aussi se trouvait à Pituba. La circulation était déjà épouvantable (je mettais au moins 50 minutes, pour faire le trajet Chame-Chame/Pituba). C’est pour toutes ces raisons que j’ai décidé de vivre ici. Mais je dois dire que je suis maintenant très contente de cette décision parce que c’est un quartier où on trouve tout ce qu’il faut pour bien vivre.

Alors, pour bien vivre, le meilleur plat bahianais c’est quoi ?

Le “vatapá”, ensuite le “caruru”. A la fin de la journée vers 5 heures, un “acarajé” ou un  ”abará”

Et la “carne do sol”, la “maniçoba” ?

La “carne do sol” c’est de la cuisine du “sertão”, qu’on retrouve dans tous les Etats du Nordeste. La “maniçoba” est originaire du Pará.

Et des plats à base de feuilles de “taioba” ou de “língua de vaca” ?

Ça non plus ce n’est pas de la cuisine bahianaise, proprement dite, on en consomme en famille et encore très peu. Quant à l’”efó” c’est un plat d’origine africaine comme le riz de “haussá” qu’on ne trouve presque dans aucun restaurant ..

Alors où peut-on manger bahianais ?

Pour moi au-dessus de tous c’est le Bargaço, qui se trouve Jardim Armação. Pour les fruits de mer il n’y a pas mieux selon moi et en plus le cadre est très agréable comme je les aime, j’adore les endroits ouverts, soit sur la mer soit sur un jardin. Je n’y suis pas allée depuis un an suite à la mort du propriétaire à Brasilia mais sa femme continue l’affaire comme c’est elle qui cuisinait en principe, la qualité a dû rester la même. Comme autres bons restaurants bahianais traditionnels il y a aussi Yemanjá et Ki-Mukeka.

Et le piment ?

J’adore. Comme on dit en bon bahianais ’sou boa de boca”, je mange de tout. “Pimenta malagueta, pimenta de cheiro, dedo de moça”, c’est indispensable.

Tu cuisines ?

Mon travail me laisse très peu de temps. Le week-end je pourrais cuisiner et inviter des amis mais c’est une organisation qui prend pas mal de temps, il y a tout un rituel, faire les courses, boire un verre de vin, prendre son temps pour laisser mijoter, et tout le reste : débarrasser, faire la vaisselle (et le week-end je n’ai pas de bonne). Alors je préfère aller au restaurant. Comme je prends des cours de cuisine avec Rafael Sessenta je suis assez exigeante avec moi-même et avec les autres mais il m’arrive quand même de mitonner des petits plats.

Qu’est-ce qui ne manque jamais dans ton frigo et ton congélo ?

J’ai toujours chez moi une glace au coco, au moins un kilo de “maniçoba” (que j’achète par 5 kilos à mon traiteur Uzeda)(71-33 31 85 43), un kilo de “bobó de camarão” (que j’achète par 5 kilos au même traiteur) et des “esfihas”, ouverts ou fermés. J’ai toujours aussi à portée de main une bouteille de Mouton-Cadet Rothschild rouge, du Moët et Chandon et de la Veuve Clicquot pour les moments spéciaux. Au jour le jour je prends un Prosecco italien appelé Zononi. Il est délicieux avec le crabe. Vous aurez compris que j’adore le champagne. Le brut.

Et la “cachaça” ?

La “cachaça” aussi. Mes amis et mes patients m’en rapportent toujours, c’est géneralement de la “cachaça” artisanale venue directement de l’alambic. Il y a surtout une “cachaça” originaire de Minas Gerais qui est extraordinaire. On peut la trouver sous le nom de Havana ou Anísio Santiago. C’est la même distillerie. Dans tout le pays une dose de Havana ou d’Anísio Santiago coûte plus cher qu’une dose de whisky.  J’aime bien la “caipirinha” et toutes les “caipiroskas” (surtout à base de “lima”, cajou, “siriguela” et “caja”). Je ne bois pas de bière. En vin blanc j’aime bien le Chardonnay .

Ton plat favori, de 1 à 10 ?

En premier le crabe, en deuxième le crabe, du troisième au dixième le crabe. J’adore le crabe, je mange tout dans le crabe sauf le liquide noir qu’on trouve à la fin et que je trouve un peu amer.

Quand tu cuisines où tu fais tes courses ?

La plupart des choses, les produits frais surtout, je les trouve au CEASA Rio Vermelho. Le reste je l’achète à Périni.

Assez parlé cuisine, où emmènerais-tu d’abord un touriste qui arrive à Salvador?

Pour moi sans hésiter d’abord à Barra, entre le Port et le Christ. Ensuite on irait sur la Praça Municipal à côté de l’Ascenseur Lacerda d’où on a une vue magnifique de la Ville Basse. De là on irait au Terreiro de Jesus puis au Largo de São Francisco. Le Pelourinho est décadent. Le cadre s’est beaucoup dégradé ces dernières années. Autrefois il y avait de bons restaurants, maintenant je ne sais pas. Mais décadent ou non, c’est une visite obligatoire. Ne pas oublier d’aller à Santo Antonio et au Carmo.

Ensuite direction Bonfim et Monte Serrat et pour terminer en beauté, à l’autre extrémité de Salvador, Itapuã vers le phare. La Lagoa d’Abaeté n’est plus ce qu’elle était non plus, je ferais probablement l’impasse sur elle.

Pour se baigner, quelles plages ?

Pour moi sans hésitation pour se baigner il n’y a que deux plages, Porto da Barra et Piatã. Je dis bien, pour se baigner. Maintenant si le but recherché c’est l’animation et les baraques de plage alors Stella Maris et Praias do Flamengo sont de bonnes options.

Revenons aux bars. Où boire un coup tranquille et grignoter quelque chose ?

Le Bar da Ponta, à côté du Trapiche Adelaide avenue do Contorno. A cause de la vue, du service, des boissons qui sont décentes, “à point” comme on dit en bon bahianais, c’est-à-dire à la température idéale pour chaque boisson. Il y aussi à côté à Bahia Marina le Lafayette.

Et pour manger autrement que bahianais? Les restaurants gastronomiques?

Alors là le Trapiche Adelaide c’est formidable pour manger, tout comme deux restaurants sur la ladeira da Barra, le Yacht Clube et La Lupa. La Lupa a un grand défaut: c’est que la terrasse est réservée aux fumeurs alors qu’on y a une vue magnifique sur la mer. Il y a aussi au Salvador Shopping le Café Ferreiro qui lui aussi est un espace ouvert et un restaurant à Itapuã à ne pas manquer: Mistura.

Si on souhaite des endroits fermés il y a alors Bate Boca à Barra et le DOC à Pituba et si on désire déguster un filet exceptionnel il faut se rendre chez Juarez dans la Ville Basse au Comércio. C’est un restaurant simple qui ne paie pas de mine mais on y mange bien.

Je pense que les touristes ne vont pas se précipiter sur les pizzerias mais nous avons des pizzerias exceptionnelles comme Piola, Colombo et Companhia da Pizza au Rio Vermelho. Quant à la cuisine japonaise elle est aussi très présente avec Soho par exemple au Contorno, Shiro à Graça et Aice Sushi et Jóia à Pituba. Un autre restaurant qui vaut la peine d’être signalé c’est A Porteira qui existe à Boca do Rio et sur le Dique do Tororó.

Un must: les churrascarias. Sal e Brasa est un restaurant que, selon ma typologie de restaurants, je qualifierai comme ouvert. Donc je le retiens ainsi que Boi Preto à Boca do Rio et Fogo de Chão à Rio Vermelho.

  A tradicionalíssima pizzaria Piola que é da terra do meu nonno, Treviso, está arrecadando leite em pó e fraldas descartáveis para as crianças afetadas pelas enchentes em Santa Catarina até quinta-feira (04/12), AINDA DÁ TEMPO!

A Piola está presente em mais de cinco países além da Itália: Chile, Estados Unidos, Argentina, México e é claro no Brasil (Campinas, Curitiba, Campos do Jordão, Rio Branco e Salvador – e nas três unidades de São Paulo que eu sei que estão recolhendo os donativos - Moema, Higienópolis e Jardins).

L’attaccante piemontese di Robbio (classe 1913) ha veramente segnato un’epoca e la mostra «Silvio Piola il senso del gol» non fa che restituire al centravanti che giocò anche con la maglia della Lazio quella visibilità che non ebbe perché il football, seppure già sport nazionale, non riceveva in quegli anni le attenzioni di oggi. La mostra, che sarà inaugurata il 3 ottobre nella sede della Regione Piemonte a Roma, mostrerà le immagini dell’uomo e del calciatore, dagli esordi della carriera, nel 1920, al 1996, anno della scomparsa. In primo piano le fotografie, in gran parte tratte dall’archivio della famiglia: immagini di gioco, ma anche di vita privata. E non mancheranno istantanee tratte dalle pubblicazioni del tempo, oltre alle maglie di Piola, che esordì nel 1930, diciassettenne, con la divisa della Pro Vercelli per approdare successivamente alla Lazio nel 1934; poi il Torino, la Juventus e la fine della carriera nel 1954 con il Novara. Per la cronaca, Piola è stato l’attaccante più prolifico della storia del calcio italiano con 395 gol segnati in gare ufficiali e resta il sesto calciatore con più presenze in serie A (537).
