<content:encoded><![CDATA[<div class='snap_preview'><p>Remember those <a href="http://bitemebrussels.wordpress.com/2009/05/18/german-cheeseburger-in-a-can/">German cheeseburgers-in-a-can</a>?  The ones that were rumored to be extremely nasty?  Well, the one in my living room expired a week ago, which naturally meant that it had to be eaten.  Here&#8217;s a summary in ten pictures.  Conclusions follow.</p>

<p style="text-align:left;">Our excellent volunteer with a steel stomach concluded a few points about this thing:</p>
<p>1.  It&#8217;s better than <a href="http://www.quick.be/-400001.html">Quick</a>.<br />
2.  The meat actually tasted like meat.<br />
3.  The meat also tasted like paper.<br />
4.   The &#8220;cheese&#8221; had plenty of something awful.<br />
5.  If you were stuck in the woods somewhere and had this canned burger, you could eat it without dying.</p>
<p style="text-align:left;">So there you go.  Not good at all, but in the end, you could do worse.  Three cheers for German innovation!</p>

<p>2 lbs fresh or frozen green beans<br />
8 oz mushrooms of your choice rough chopped<br />
2+ cloves of garlic<br />
2 TB butter<br />
2 TB brown rice flour<br />
1 1/2 Cups milk<br />
1/2 Cup turkey or veggie stock<br />
salt and pepper<br />
Fried Onions (see below)</p>
<p>Green Bean casserole has 3 parts: beans, mushroom cream, and fried onions. You can prep each of these parts separately and store them until ready to assemble OR you can make the casserole in advance and freeze it.</p>
<p>For the beans: Clean and string them if using fresh. Blanch them in boiling salted water for 3 minutes to intensify their color. Shock them in an ice bath. Drain in your salad spinner and store until the big day. Frozen beans are easier&#8211; just leave them in the freezer.</p>
<p>For the mushroom cream:</p>
<p>Saute mushrooms and garlic in butter until mushrooms soften, about 5 minutes. Sprinkle rice flour over and whisk. Cook to a light brown roux. Slowly whisk in broth. Slowly whisk in milk 1/4 cup at a time until cream has reached desired thickness. Some like the sauce a little thicker or thinner. Adjust the level of milk according to your taste.</p>
<p>This can be stored in a mason jar for weeks in the freezer. Thaw completely before assembling casserole.</p>
<p>For Fried Onions:</p>
<p>1 large yellow onion<br />
1/2 Cup rice flour + 1 TB cajun seasoning blend<br />
oil for frying</p>
<p>Slice onion into thin rings. Dredge in seasoned flour and fry in hot oil, about 350 degrees F. Drain well. Fry in small batches. Fried onions should be made the same day for optimum crispness.</p>
<p>To assemble casserole:</p>
<p>Stir the green beans with the mushroom cream and half of the fried onions. Turn into a casserole pan. Top with the remaining fried onions.</p>
<p>At this point, you can bake straight away uncovered OR you can cover the casserole dish and freeze it for up to 2 weeks. Make sure you use a thermal shock proof casserole dish if you use this method.</p>
<p>Since you are probably baking this with the turkey, in whatever crowded space you can find, cooking times will depend on the temp you have set for your turkey. In a 375 degree F oven, the casserole will be hot and bubbly in about 30 minutes.</p>
<p>Cooks Tip: Sometimes I sprinkle a little fresh grated parmesan cheese on before baking. It gives a very nice and even browning. It&#8217;s also salty. I love salty.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>I use the drippings from our roasting turkey to give this stuffing a flavorful burst of tradition. The best thing about this stuffing is that it takes only a few minutes and can be prepped several days in advance.</p>

<p>Up to 5 days ahead prep these veggies and store in the fridge.</p>
<p>4 large carrots, diced<br />
1 stalk celery with leaves, chopped<br />
1 yellow onion, diced<br />
8 oz mushrooms, any variety, rough chopped<br />
8 oz walnuts, rough chopped<br />
2 TB dried sage<br />
1 TB black pepper<br />
1 TB thyme</p>
<p>Prep bread crumbs well in advance. The best option is to save heels of gluten free breads you buy throughout the previous month. Cube the bread bits and store in a gallon size freezer bag. You want 8-10 cups total. You can also use gluten free corn bread. Bread crumbs store in the freezer for about 2 months.</p>
<p>When you are ready to assemble the stuffing, add 3 TB butter or turkey drippings to a heavy stock pot or large dutch oven. Heat over medium-high. Toss in the prepped bag of veggies and herbs. Saute for 7 minutes until onions are soft and the vegetables have sweated out some of their moisture. Heating the dry herbs with the fat will disperse the flavor and help it develop fully.</p>
<p>While veggies are softening, drain off 2 cups of fluid from your turkey roasting pan. Set aside for finishing stuffing.</p>
<p>Toss in the prepared bread crumbs and cubes. Drizzle in turkey drippings as needed for moisture. Cover stuffing and transfer to the oven to keep warm until serving. If you&#8217;ll be keeping the stuffing in the oven for more than 20 minutes, add an additional 1/4 Cup of turkey drippings to maintain moisture.</p>
<p>*For vegetarian stuffing, use veggie stock in place of turkey drippings. For vegan stuffing, use a quality butter substitute and vegan bread cubes.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>Jen here.  I know &#8211; it&#8217;s been a while.  I&#8217;ve been pretty busy lately.  We&#8217;ve been cooking things like <a href="http://goodcleanfood.wordpress.com/2008/12/28/baked-brown-rice/">brown rice</a>, and <a href="http://goodcleanfood.wordpress.com/2009/01/27/mmm-this-makes-your-house-smell-so-good/">bacon ricotta pasta</a>, and focaccia made from my <a href="http://goodcleanfood.wordpress.com/2009/08/15/five-minute-bread-really-good-bread/">5-minute bread dough</a> (I&#8217;ll post details later) but nothing new and exciting.  But, the cooking holiday of the year is coming up, and I wanted to share a recipe we&#8217;re going to try this year (so, no action shots yet, except for one I just took today of the prep work).</p>
<p>The craziness in my world stems from the fact that my brother-in-law, <a href="http://jennebeker.wordpress.com/2009/11/04/rosemary/">Mike</a>, passed away completely unexpectedly at the end of October.  He loved to cook, and while I was talking with my niece after his funeral, she remembered how he had served pumpkin soup one year that she had come up for Thanksgiving.  In the aftermath of all the organizing, mourning and cleaning, I ran across a recipe of Mike&#8217;s, which was his &#8220;Quick Creamy Pumpkin Soup.&#8221;  So, in his honor, I will be making this for my family this year year, since we will be hosting Thanksgiving at our house.  I don&#8217;t know for certain if this is what he served that year, but it will be his Thanksgiving recipe from now on.  I love how fast it goes together.  There&#8217;s also a bit of versatility, too.  I&#8217;ll be doubling this for Thanksgiving.</p>
<p>First, you&#8217;ll need canned pumpkin, or pumpkin puree.  I&#8217;m making mine using <a href="http://nourishinghome.blogspot.com/2009/11/pumpkins-how-to-make-puree-and-recipes.html">these directions</a> from Nourishing Heart &#38; Home (a lovely website).  I tried it the first time a couple of weeks ago, after somebody threw a pumpkin at our front door.  You know, when life gives you lemons (or a cracked sugar pie pumpkin), make lemonade (or pumpkin puree).  These are actually the three small pumpkins we bought right before Halloween, that we never carved (there just wasn&#8217;t time).  I&#8217;m roasting them as we speak.  The first pumpkin gave me 3-1/2 cups of puree that in my freezer.  (One tip:  I pureed my pumpkin in my blender, and had to add a bit of water.  This time I&#8217;m going to use the water that&#8217;s in the roasting pan.)</p>

<address>1 can pumpkin (about 2 cups homemade)</address>
<address>1 can (14-ounces) chicken or vegetable broth</address>
<address>1 cup cream, or milk (nonfat milk OK &#8211; if you really have to (I can hear Mike&#8217;s voice))</address>
<address>White pepper to taste (1/2 to 1 tsp.)</address>
<address>Nutmeg</address>
<address>Optional: 1/2 cup chopped celery, 1 small chopped onion, sauté, and add other seasonings.</address>
<p>Put chicken broth in a 2-quart saucepan.  Stir in pumpkin.  Heat until pumpkin is hot.  Add cream and pepper.  Puree in a blender (<em>use your immersion blender here</em>) until smooth.  Serve in bowls with a light sprinkling of nutmeg.</p>

<p>I really love this side dish &#8212; admittedly, it isn&#8217;t the healthiest. I haven&#8217;t tried to adapt the amount of sugar, but I do put a minimum amount of butter on it.</p>
<p>If you serve ham for Christmas, I recommend making this for something different this year. It&#8217;s delicious with ham/pork! And it re-heats well.</p>
<p>Since it&#8217;s an old 1950&#8217;s-1960&#8217;s recipe, it&#8217;s written a little vague, but here it is!</p>
<p>You probably don&#8217;t need more than a 1 1/2 qt or so casserole for this, unless you&#8217;re doubling the recipe!</p>
<p><strong>Baked Pineapple</strong></p>
<p><strong>(</strong>Old family cookbook)</p>
<p>1-20 oz. can crushed pineapple</p>
<p>1 cup sugar</p>
<p>2 tbsp cornstarch</p>
<p>2 eggs, beaten</p>
<p>1/4 cup water</p>
<p>1 tsp vanilla extract</p>
<p><strong>Directions</strong></p>
<p>- Mix all ingredients together in a bowl</p>
<p>- Pour into a casserole dish (2-4 quart work best, I think)</p>
<p>- Dot the top with butter (I use about 2.5 tbsp, broken into small pieces)</p>
<p>- Sprinkle with cinnamon</p>
<p>- Bake at 350 degrees F for 1 hour.</p>

<p>Okay, so maybe at first I was curious because I thought they meant Kahlua, the alcohol&#8230;not kahlua, the cooking-pig-in-a-pit method. But still.</p>

<p>So in the interest of ramping up my arsenal of crockpot recipes (I love having enough on hand we don&#8217;t get sick of them!) I thought I&#8217;d try it out.</p>
<p>Problem was, I couldn&#8217;t decide between the two recipes. So I read both, took from each what I liked, and made it my own.</p>
<p>The one kahlua pork recipe is oven-only, but I liked those ingredients better than the other, which was crockpot, but in a complicated change-the-heat-after-a-period-of-time sort of way.</p>
<p>Well, I leave at 7:30 am and I don&#8217;t get home until 6:30 pm &#8212; there will be no changing heat halfway through cooking! LOL</p>
<p>So I made it my way, and it was DELICIOUS. I served it with a baked pineapple side dish (to keep with the hawaiian theme), and rice to soak up the delicious pork/liquid smoke juices. DH loved loved loved it, and begged that we have it again!</p>
<p>My only change is that next time, I&#8217;ll make slits in the pork roast and put pieces of garlic into the meat&#8230;rather than mincing the garlic and just adding it to the pot!</p>
<p><strong>Kahlua Pork</strong></p>

<p>2-3 lb. pork roast/butt/shoulder/whatever</p>
<p>1 tsp kosher or sea salt</p>
<p>1 tsp garlic powder</p>
<p>1/2 tsp black pepper</p>
<p>3 cloves minced garlic</p>
<p>1/4 cup liquid smoke (you can find this near the ketchup in the grocery store)</p>
<p>1/2 cup chicken broth</p>
<p>&#160;</p>
<p><strong>Directions</strong></p>
<p>- Mix the kosher/sea salt, garlic powder, and black pepper together to make a spice rub</p>
<p>- Rinse the pork roast, pat dry, and then rub the spices all over it</p>
<p>- Place in the crockpot, fat side up</p>
<p>- Sprinkle minced garlic over roast in crockpot, add liquid smoke and chicken broth to the pot</p>
<p>- Cook on low, 8 hours</p>
<p>- Remove from crockpot and let rest 5 minutes, then shred pork</p>
<p>- Return to crockpot and let sit long enough to absorb some of the juices</p>

<content:encoded><![CDATA[<div class='snap_preview'><p>An organization will not begin the transformation until it is aware that the quality of the product or service must be improved. Awareness comes about when an organization loses market share or realizes that quality and productivity go hand in hand. It also occurs if TQM is mandated by the customer or if management realizes that TQM is a better way to run business and compete in domestic and world markets.</p>
<p>Automation or other productivity enhancements might not help a corporation if it is unable to market its product or service because the quality is poor. The Japanese learned this fact from practical experience. They could sell their products only at ridiculously low prices, and even then it was difficult to secure repeat sales. Until recently, corporations have not recognized the importance of quality. However, a new attitude has emerged—quality first among the equals of cost and service—the customer wants value.</p>
<p>Quality and productivity are not mutually exclusive. Improvements in quality can lead directly to increased productivity and other benefits. The improved quality results in improvement in productivity, capacity, and profit. Many quality improvement projects are achieved with the same workforce, same overhead, and no investment in new equipment.</p>
<p>More and more corporations are recognizing the importance and necessity of quality improvement if they are to survive domestic and world-wide competition. Quality improvement is not limited to the conformance of the product or service to specifications; it also involves the inherent quality in the design of the system. The prevention of the product, service, and process problems is a more desirable objective than taking corrective action after the product is manufactured or a service rendered.</p>
<p>TQM does not occur overnight; there are no quick remedies. It takes a long time to build the appropriate emphasis and techniques into the culture. Over-emphasis on short term results and profits must be set aside so long-term planning and constancy of purpose will prevail.</p>

<title><![CDATA[The poor cookbook: beef stroganoff]]></title>

<content:encoded><![CDATA[<div class='snap_preview'><p>Today&#8217;s meal is beef stroganoff. I have adapted it from an old family recipe and cheapened it in doing so. It&#8217;s a good one dish meal, easy to make, but does take some time and preparation. </p>
<p>Needed:<br />
1-2 lbs beef ( of some kind. The recipe origionally calls for cubed steak. I used the stew cut from the local kingsoopers. Cost about 3.50 a pound)<br />
1 tbs garlic<br />
1 onion<br />
1 lbs mushrooms<br />
1 can tomatoe soup<br />
Worshtishire sauce </p>
<p>First thing is to marinade the beef. This isn&#8217;t entirely necessary but will definately pay off in the end. I used janes crazy salt, garlic pepper rub with Sierra Nevada double IPA. Marinade for as long as you want, I did about 4 hours.<br />
Next oil the LAN and begin brazing the meat. Do this for 10-15 minutes or until all the meat is well browned.<br />
Next throw in the garlic, onion, mushroom, and tomatoe soup. Let this simmer for 45 min or until the meat is tender. Add worshtisher sauce to taste, usually about 1-2 tbs. Thus can be served alone of on rice/egg noodles/mashed potatoes etc.<br />
The cost for this meal was $7 for two pounds of meat, the onion was $.50, the soup $.80, mushrooms were $2.50. This yielded about four servings. So per serving we have $2.75, not bad for such a classy entree.  </p>

<description><![CDATA[I love me some frothy milk.  I like it for my hot chocolate, for my latte, for&#8230; well, nope, ju]]></description>
<content:encoded><![CDATA[<div class='snap_preview'><div class="mceTemp">I love me some frothy milk.  I like it for my hot chocolate, for my latte, for&#8230; well, nope, just those things really.  But frothy milk makes them so much better than ordinary milk!  I used to have an <a href="http://www.amazon.co.uk/Aerolatte-020-Moo-Milk-Frother/dp/B000Y3GOGC/ref=sr_1_5?ie=UTF8&#38;s=kitchen&#38;qid=1258719730&#38;sr=8-5">Aerolatte</a>, which was great, love that thing, however it currently resides in a box somewhere in the garage with the rest of my kitchen.  I also have a fancy coffee maker with a steam wand out there too.  However, currently I have neither of these things.  I have been frothy milk-less! </div>
<p>However, salvation has arrived!  Here is a simple how to for making frothy milk with a jam jar and a microwave.  Sorted! </p>
<p>(My mother has asked that I point out that Friday is kitchen cleaning day and it has been a hell of a week so any mess you see is the result of bad timing for me to do a quick photo shoot before doing my chores!  I would like to point out the irony of the fancy coffee maker sitting in the back of the shots.  Hasn&#8217;t been used in years, I think the instructions were written in Martian!)</p>
