I just started doing it yesterday, and after doing 30 I could already feel it! At first I was like, is this really gonna do anything in 2 weeks, but since I am heading home in exactally 2 weeks, I was like, I&#8217;ll give it a try. Well let me just say, that I have done it 4 times now, and my legs literally feel like they are on fire! I am in agony, but it&#8217;s that good pain, that lets you know you are really working out. No matter how bad it hurts, I am keeping up with this. It&#8217;s only 2 weeks. (I am telling myself that, though I do plan to keep doing it when 2 weeks is up.) If worse comes to worse, I&#8217;ll go in the stroller and let my one year old and two year old push ME through the airport!</p>

<content:encoded><![CDATA[<p>Over the weekend, I was getting in that baked goods mood again, but I wanted to try to stick to my low fat diet. I ended up experimenting with some banana bread, and it actually came out quite good! First off, I want to say that if you are looking for a bread with lots of banana flavor, this is not the bread for you, but if you are craving something homemade, want something pretty easy to make, and having fruit in your snack is a bonus, then this is the perfect bread for you!</p>
<p>Here you go:</p>
<p><strong>Too-good-to be-almost fat-free Banana Bread       <a href="http://onmyweighthere.files.wordpress.com/2012/03/img_2540.jpg"><img class="alignright size-medium wp-image-135" title="IMG_2540" src="http://onmyweighthere.files.wordpress.com/2012/03/img_2540.jpg?w=225&#038;h=300" alt="" width="225" height="300" /></a>                            </strong></p>
<p><strong></strong>Ingredients:</p>
<p>2 small jars of banana baby food</p>
<p>1/2 cup sugar</p>
<p>1/2 cup honey</p>
<p>1 cup mashed ripe bananas</p>
<p>1 teaspoon vanilla</p>
<p>1 tsp. cinnamon</p>
<p>1-1/2  cups flour</p>
<p>1/2 cup oats</p>
<p>1 tsp. baking soda</p>
<p>1/4 cup walnuts or choc chips (optional)</p>
<p>What to do: Grease and flour a loaf pan. Preheat oven to 350 F. In a large mixing bowl, empty both jars baby of food, and add sugar, honey, and bananas. Beat in mixer until combined. Add vanilla, cinnamon, flour, oats and baking soda. (And nuts or chips if using.) Mix until just combined. Pour into pan and bake for about 35-40 minutes, or until a toothpick comes out clean. Cool bread completely before serving. (When it is still hot it may be very gooey, but as it cools it gets more firm.)</p>
<p>Notes about this bread: Since there is no butter or eggs, this whole bread only has about 4 grams of fat. (without chips or nuts) Want to make it fat-free? Skip the oats, and use 2 cups flour instead. Also wanted to add that even though it has some honey it is not a real strong honey flavor. I am not a huge fan of honey, but I felt like the bananas balanced it out well in here!</p>

<p><strong>Avocado and Chicken Quesadillas </strong>(serves 2)</p>
<p>Ingredients:</p>
<p>4-6 inch flour tortillas</p>
<p>1- ripe avocado</p>
<p>1-small red onion (sliced)</p>
<p>1-cut-up, grilled chicken breast (leftovers work well!)</p>
<p>1/4 cup-crumbled cheese (feta, blue cheese, etc)</p>
<p>Salt and Pepper to taste</p>
<p>What to Do: Pre-heat oven to 350 F. Lay the tortillas on an ungreased cookie sheet. Remove the avocado from peel and divide into four sections. Place one section on half of each tortilla, and mash it with a fork. Add the chicken, onion and cheese on top of the avocado along with some salt and pepper. Fold over the tortillas. Place in oven for 10-15 mins, flipping them halfway through. When slightly browned remove from oven and serve!</p>

<content:encoded><![CDATA[<p>Have you ever been halfway through a workout, and thought, &#8221; I could not possibly be sweating anymore than I am right now&#8221;? This is what crosses my mind everytime I do Tae Bo, in my stuffy, non-window livingroom, in the triple digit, Salvadorian <a href="http://onmyweighthere.files.wordpress.com/2012/03/tae-bo-strength-power-within1.jpg"><img class="alignleft size-thumbnail wp-image-111" title="Tae-Bo-Strength-Power-Within[1]" src="http://onmyweighthere.files.wordpress.com/2012/03/tae-bo-strength-power-within1.jpg?w=150&#038;h=150" alt="" width="150" height="150" /></a>summer! I swear I am a hot sweaty mess, but it&#8217;s sorta wonderful! I like it because it makes me feel like I&#8217;m really doing a good job. Out of all the dvds/workouts I do, none make me feel as exhausted, or accomplished, as Tae Bo. I do the same dvd several times a week, and I love it! If you&#8217;re thinking, doesn&#8217;t it get a little boring after watching it so much, the answer is yes, and no. Yes, I have every move and comment memorized, but I have a great way to keep it interesting. I watch the dvd on mute, and workout to a hip hop playlist on my iPod. The songs are familiar and fun to move to, and this way I can mix it up depending on my mood! Looking for a great workout?  Give Tae bo a try. It&#8217;ll &#8221;kick&#8221; your butt&#8230;in a good way!</p>

Today I came up with a really simple chowder, that&#8217;s the perfect partner to any sandwich. Whether you&#8217;re having the girls over for lunch, or are just looking for a yummy little side this chowder is great!</p>
<p><strong>Chunky Corn and Spinach Chowder </strong>(makes 6 side servings or about 4 small bowls)</p>

<p><strong></strong>Ingredients:</p>
<p>1 can corn kernels</p>
<p>1 can creamed corn</p>
<p>1 cup fresh spinach chopped</p>
<p>1 large red onion diced</p>
<p>1-1/2 cups skim milk</p>
<p>1 tbs. olive oil</p>
<p>garlic salt/dash pepper</p>
<p>&#160;</p>
<p>In a pan, cook the onion and spinach in the olive oil. Add the pepper and season with garlic salt. When the onions are translucent add the milk. Then add both cans of corn. (drain the can of  kernels) Stir and serve!</p>
<p>It&#8217;s that easy, and quite filling, perfect for lunch! With only 120 calories per serving, it&#8217;s not too bad for you either! To make the soup the main meal you might want to add some ham, or bacon bits.   </p>

<content:encoded><![CDATA[<p>Since I don&#8217;t have access to any Zumba classes where I live, I do a bunch of workouts on youtube. In some ways it&#8217;s better because I don&#8217;t have to worry about how I look or how bad I might mess up new moves! Some of my favorites on youtube are on the MasaZumba channel. They have a bunch of different popular songs and have great Zumba dances to them.  <img class="aligncenter size-full wp-image-71" title="p[2]" src="http://onmyweighthere.files.wordpress.com/2012/02/p2.gif?w=170&#038;h=128" alt="" width="170" height="128" />One of my favorites is Enrique Iglesias and Pitbull&#8217;s, &#8220;I like It&#8221;.The moves are easy, but by the time you are finished you&#8217;ll have worked up a sweat! I usually start with that song, (though it is not labeled as a warm-up) because it is so fun that it gets me motivated to do the rest of the workout. I also love their cool down to Shakira&#8217;s &#8221;Whenever, Wherever&#8221;. Again, the steps are fun and simple. When I am worn out, and want to quit, it gets me through the home stretch! There are tons of great workouts on youtube. If you like Zumba, there is definitely something out there for you.</p>

Trying to keep my boys (and myself) happy, I recently threw these together. Unlike regular s&#8217;mores, I used whole grain crackers. This made them taste a little different, but it was a little healthier since they had grain and fiber. Then I used a thin layer of Nutella in place of the chocolate. I LOVE Nutella, and the little bit I smeared on one cracker was enough to give me my fix! I placed the mini marshmellows (my kids like the colored ones) on top of the Nutella, and then covered the marshmellows with the other cracker. Pop it in the microwave for 20 seconds, and you have a yummy little snack! 0 trans fats make it feel like it&#8217;s a justifiable &#8220;cheat!&#8221; I loved them, and my kids gobbled them up too!</p>

<p>It&#8217;s always hard to get back on track after the holidays, or after &#8220;falling off the wagon&#8221;. So how do we get ourselves back in weight-loss <a href="http://onmyweighthere.files.wordpress.com/2012/02/20120222-140633.jpg"><img class="alignright size-thumbnail wp-image-54" title="20120222-140633.jpg" src="http://onmyweighthere.files.wordpress.com/2012/02/20120222-140633.jpg?w=150&#038;h=150" alt="" width="150" height="150" /></a>mode? My sister likes to buy new athletic clothes to get her excited about working out. My mom is always trying the latest diet craze to loose some weight. Me, I usually feel the most motivated when I am uncomfortable in a room full of thin people, or when I see people on tv that remind me of what society thinks I should look like. It usually makes me feel bad about myself, to be quite honest, and I know that if I just get moving, I&#8217;ll feel better. Occasionally, in a store I will see something that catches my eye and makes me want to work out! Recently, it was these pink gloves. They are so cute and girly, but rough at the same time. I do lots of Tae Bo, and these just seem perfect! Do I really need them, no. But would I buy them if I thought they would keep me motivated? In a heartbeat!</p>

<content:encoded><![CDATA[<p>Yesterday I watched an episode of &#8220;Shimmy&#8221;. It&#8217;s a show that has a new belly dance workout every week. Although I look nothing like the girls on tv when I do it, I enjoy belly dancing as a workout. There is a lot of ab work and arm movements. As I was doing the moves, I started thinking about what songs I have on my iPod that I could use these same moves and dance to later. Here&#8217;s a 20 minute playlist of songs from my itunes that are fun to belly dance to. (Keep in mind the songs  are a little old!)</p>
