The recipes I make year after year include shortbread, pecan fingers, and these sugar cookies. So delicate and flavourful, I bet you can’t eat just one. I know I can’t.

Mother Bea’s Sugar Cookies

4 cups all-purpose flour
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
1 cup butter, softened
1 cup canola oil
1 cup granulated sugar
1 cup powdered sugar
2 eggs
2 teaspoons vanilla extract

In a large bowl, combine flour, salt, cream of tartar and baking soda.
In the bowl of a mixer, cream together butter, oil, and both sugars. Add eggs one at a time, beat well. Mix in vanilla.

With mixer on low, stir flour mixture into butter mixture until well combined.

Chill dough for two hours.

Preheat oven to 350. Drop dough by the tablespoon onto parchment lined baking sheet. Using a glass dipped in coloured sugar, flatten slightly.

Bake for seven to eight minutes, until barely golden on the edges.

Cool on wire rack. These freeze well.
