I’ve said it before (for instance, here) but it bears repeating: Thanksgiving is my favorite American holiday.

I love everything about it, from the mythology to the mashed potatoes; from my family’s adherence to our culinary traditions (like this regional requisite) to the outlandish reinterpretations I’ve encountered elsewhere (like this ghastly gallinacean); from the nearly non-secular nature of the celebration to its unabashed, yet rational, nationalism; from its emphasis on amplitude and generosity to its freedom from mandatory “gifting,” etc.

Your dinner guests will give thanks for receiving these native stand-ins.

In other words, it’s the perfect domestic festival: you stay home from work, cook or contribute dishes of delicious food, celebrate your connectedness with as many of your favorite people as you can stand, watch a parade or two on TV, play some football, say “thank you” more than “please,” and nosh and nip and (when lucky) nap. Rinse and repeat. That’s it, easy as pie — except for all the setting- and cleaning-up, of course. There are endless variations on this theme and very few regulations, and that’s about as American as it gets.

Oddly enough, it’s also one of the exclusively Yankee celebrations that requires the inclusion of French produce — namely wine and beer. As any regular reader of this blog knows (or can guess), we’re not here to discuss the former. In fact, when someone asks me what wine I want to drink with my meal, I say “beer!” Glib and annoying, yes; but no less effective, and no less true on the fourth Thursday of each November. Especially because, in this case, the beer of choice comes from the Pas-de-Calais region of northern France, near Belgium.

Biere de garde, or “beer for keeping,” is a light-bodied, slightly malty, and moderately hopped farmhouse ale (similar to a Belgian ale, such as saison) with a strong herbal component that is, in the words of Garrett Oliver, brewmaster at Brooklyn Brewery and author of The Brewmaster’s Table, “brilliant with turkey.” The aromatic quality of biere de garde, which is usually sold in champagne-like bottles, perfectly matches all the various and savory qualities of the Thanksgiving Day meal — from the salty seasonings on the crunchy, browned skin, to the bouquet of veggie flavors in the stuffing and sides, to the rich poultry and game essences in the meat — and it makes everything taste juicy.

Castelain is my favorite biere de garde. It’s like liquid stuffing: slightly sweet, bready, earthy, tangy, and the perfect accompaniment to nearly every ingredient on a plateful of the standard turkey meal — and, I would bet, it pairs well with the components of a non-standard one, too. Unfortunately, as I have come to discover over the past few years, it’s also hard to come by right now. Because biere de garde is typically brewed to be consumed as a summer beer, it’s not readily available the rest of the year. And despite the fact that Belgian-style ales are all the rage among microbrewers — for instance, the number of tripels on the shelf seemingly has trebled in the last six months — scant few Americans are brewing bieres de gardes, based on what I could find in my area, at least. It’s a shame, really, because I think they’re missing the boat (the Mayflower, as it were) when it comes to creating the perfect pour for the premiere American meal.

So, following a failed attempt to locate the proper bottles to serve at my table this year, I decided to turn my deficit into a dare and set out to discover something that is comparable, in terms of flavor and comestible compatibility, easy to obtain, and brewed by our native sons and daughters. Following are the byproducts of this harvesting.

One caveat, however: I have previously (and somewhat unwittingly) reviewed several of the beers that could serve as a stand-in for the Flemish habitue. And although I normally prefer to use this space to talk about novelties (or new-to-me’s, at least), I’m willing to risk repeating myself in order to introduce these quality quaffs to those who either have yet to be served or need a second helping. So, here goes. Enjoy!

Sixteen, Avery Brewing Company. This limited-release saison proved to be a great summer brew and would, I imagine, hold up equally well at turkey time. Created in celebration of the brewery’s 16th anniversary, this Belgian-style ale features just enough unique ingredients, including jasmine, peaches, and honey, to make it a stand-out among its peer beers. Pouring out cloudy-blond, with lots of frothy foam, hoppy floral notes, and a nice balance of fruit and spices, it’s surprisingly less sweet than expected, slightly tart and dry, and assertive enough to pair with a range of flavors.

Le Freak, Green Flash Brewing Company. As the name implies, and as I discovered this summer, this is one unusual farmhouse ale. A cross between an Imperial IPA and a Belgian-style tripel, it appears milky-light-brown, with citrus (grapefruit and orange) aromas and a potent whiff of alcohol. The IPA genes contribute some highly hoppy and dry-sweet flavors, while the tripel lineage confers a mix of herbs and spices and lots of carbonation. In August, it got down with a dinner of baked sweet (turkey) sausages and ears of fresh Silver Queen corn, and would no doubt prove tres chic with sliced turkey breast and sweet corn pudding.

Biere de Mars, Brewery Ommegang. As I predicted I might in my review, I’m definitely going to place this beer front and center on my Turkey Day table. Similar to a biere de garde (and, brewed in Cooperstown, N.Y., the closest thing to an all-American I could find), this more robust amber ale pours out in an orange hue, with lots of spice and citrus notes, and a tart, dry, and, well, funky taste due to a key ingredient: Brettanomyces bruxellensis, or “Brett,” a wild yeast used in secondary fermentation. This late-stage infusion apparently imparts a fruity, peppery, musty bite that, like a dry Chardonnay, will kick-start your tastebuds between forkfuls for an “out of this world” experience.

Saison Athene, Saint Somewhere Brewing Company. It seems fitting that this medium-bodied ale, brewed in Sarasota, Fla., is one of the most citrusy saisons (with pronounced grapefruit highlights) that I’ve ever opened. It’s also one of the sweetest. Both are qualities that I think make it an ideal partner for a meal that includes a variety of lighter-flavored ingredients, such as cranberry sauce (especially if it includes orange peel, the way my grandmother made it), and squash, turnips, and sweet potatoes. It is just dry and sour enough, too, that I’d bet it would do the Schuhplattler with a side of sauerkraut, which is a Maryland must-have.

La Merle, North Coast Brewing Company. Here’s another farmhouse ale that, with its golden complexion, racy carbonation, and earthy, yeasty-biscuity flavors, would serve as a refreshing and versatile table-mate for Tom and all the fixings. Last week I tried it with pork chops baked with apples and acorn squash and discovered that, because the fruity aromas and hops bitterness are less dramatic and more understated here than with other saisons, the spice notes are more noticeable and draw out the sweet and herbal qualities inherent in such a piquant meal. Gobble, gobble!

Coup de Boule, The Brewer’s Art. This is a traditional Belgian dark ale spiced with cardamom, cinnamon, and saffron that pours out coppery gold with a lively head of aromatic foam. It’s mildly spicy, with hints of lemon and malty sweetness, and a taste that reminds me of an apple pie. Seems appropriate, doesn’t it? Moreover, because dark ales are considered a good pairing for game-based dishes, I thought this relatively new brew from the Baltimore-based (and Esquire’s favorite) brewpub would be a strong choice for those who favor dark meat and hearty stuffing — like the kind my mom makes, with apples, raisins, and sausage. And, oh yeah, save a little for dessert, too.

Other American-made French-style beers that I’ve read about, figured would be ideal, but couldn’t find on the shelf in time for this posting include Fluxus (Allagash Brewing Company), an ale fermented with sweet potatoes and black pepper — is there a better-sounding second-best beer for the Thanksgiving meal? — Fuego del Otono, or “Autumn Fire” (Jolly Pumpkin Artisan Ales), an amber ale and one of the few bieres de gardes to be released in the fall, and Garde Dog (Flying Dog Brewing Company), a conventional biere de garde from an unconventional brewery.

I’d also recommend the Pecan Harvest Ale from Abita. Although I’m not a fan of the ubiquitous, often uniformly flavored “autumn ales” that seem to be growing in popularity among brewers, I was intrigued by the possibility of this one, and enjoyed it with a slice of fresh shoofly pie. Mildly flavorful, dry rather than sweet, and slightly nutty, I imagine it’s cracking good paired with its eponymous pastry.

So, there you have it, a selection of six-plus native stand-ins that, though not quite achieving la perfection, nonetheless will squash your desire to serve grape-flavored libations at the dinner table this holiday — and that’s something for which your guests will be thankful. But keep the wine glasses out — you’ll enjoy the beer better if you don’t drink it straight from the bottle.

Pourtant, les liens sont ancrés dans l’histoire entre les deux pays. La Turquie est fortement influencée par l’approche républicaine française et son concept de la laïcité.Des universitaires, écrivains et journalistes apporteront des éléments pour comprendre ce processus et les liens historiques entre les deux pays, notamment l’évolution de la question de l’adhésion de la Turquie à l’Union Européenne.

Je ne sais pas si vous le ressentez mais avec le gris de l’actu, il y a comme une bouffée d’automne qui monte en nous. Un absolu besoin d’ors et d’ocre qui s’inscrit dans notre esprit. Des envies de paysages or sous le gris du ciel. La nécessite d’être dehors et de rouler le long des champs et des vignes où l’on brûle les ceps ou les feuilles mortes (photo FB).

Ces impressions étonnantes de bonheur moelleux que chante si bien Julien Clerc dans “J’ai eu trente ans”. Un texte écrit par Maxime le Forestier qui était invité pour les trente ans de Juju et qui n’avait pas eu le temps d’acheter un cadeau. Ah si un jour, pour notre anniversaire, quelqu’un pouvait nous offrir une telle brassée d’impressions !
Donc voir la route couper toutes ces couleurs sous le peuple des nuages, s’amuser en scooter à poser le pied par terre en roulant dans les feuilles mortes et de les accumuler devant moi. Se sentir écolier sur le chemin de la classe, randonneur fou de lumières et de senteurs, ramasseur de champignons, chasseur. Oui chasseur à la “passée” comme jadis avec mon père, quand nous attendions le soir les grives qui allaient se coucher dans la montagne et qui volaient bas, un peu ivres après s’être gavées des raisins qui restaient dans les vignes.

Se sentir à la fois bien et mal. Heureux de cette douceur. Triste comme d’une fin. L’automne est une vie qui passe. Mais bizarrement se dire qu’il rassemble toutes les sensations : le feu, l’humide, les odeurs, les douces pourritures. C’est une saison paradoxale où l’on sait que tout passe et où pourtant on laisse faire, on laisse s’envoler les feuilles sans les retenir. Parce que, sans doute, quelque chose reviendra, renaître.
C’est ainsi que les saisons vivent et les pensées parfois les suivent.
Nous avons envie de tweed et de velours, de pulls marrons et d’écharpes précieuses. Nous avons envie d’une cheminée qui ne tire pas bien pour avoir une odeur de fumée sur nous. Nous avons envie de genévrier qui brûle vite dans l’âtre. J’avais envie de sanguins au feu de bois. Nous avons envie de mettre une canadienne de notre père et de retrouver un mot de lui dans la poche.
Nous avons tous envie d’automne sur les pentes du Ventoux, les routes de la Drôme provençale, les collines de la Cadière d’azur, les Gorges de la Nesque, la Castagniccia, les hauteurs de Saint-Michel l’Observatoire et tous les sentiers de nos coeurs.

SEVIM BURAK

“Voici la tête, voila le tronc, voila les ailes…”

Cette année, afin de contribuer pleinement à la « saison turque en France », Le Théâtre Afut d’Ýstanbul a orienté son choix vers Sevim Burak. Il nous a ainsi semblé primordial de faire honneur à une femme turque, méconnue du public européen.

Sevim Burak (1931-1983)occupe une place d’écrivain original dans la littérature turque contemporaine : née à Istanbul – pont entre l’Asie et l’Europe -, elle est ce personnage atypique issu d’un père musulman et d’une mère juive originaire des Balkans. Grande voyageuse au contact des cultures et des styles, Sevim Burak demeure un auteur aux multiples facettes, exploitant tout le spectre du processus créateur : théâtre, roman, poésie, incluant même parfois des dessins où des collages se déclinent dans son inspiration. Son style inventif et singulier est teinté de l’étrange « mélange » du réel, de l’imaginaire et du poétique dans un univers du quotidien…

Cette pièce se veut résolument moderne car elle reflète des enjeux toujours d’actualité : le problème identitaire, l’émancipation de la femme et le poids des traditions. Ainsi, à travers le texte « Voilà la tête… voilà le tronc… voilà les ailes… », présentons nous Ange, jeune veuve désœuvrée qui a déjà sombré dans la folie… Cinq personnes peuplent son univers : un univers où se mêlent tour à tour le désir de beauté, le désir de l’autre et le désir de la mort. De son repas anthropophage avec Rose à son amour naïf pour un avocat, un photographe immortalise ses moments de songe. La présence du mari mourant et de celle d’un marbrier de cimetière rappelle à Ange son irréversible destin…

For the past three years, instead of running around and trying to find individual Christmas gifts for my friends and family, I make it simple by giving everyone the same thing: homebrew.  It’s usually a pretty mild porter with a hint of cinnamon and ginger, giving it the dark, spicy character that lead me to call it ‘Gingerbread Porter’.  This year however, I find myself amongst Norwegians: drinkers of pale, bland, under-lagered pilsners, often with more than a hint of fruitiness.  When I tell ye average Norwegian that I brew my own beer, the first question I get is usually “Is it very dark?” or “How sweet is it?”, often accompanied by a certain suspiciousness.  There are a few microbreweries that have taken a stand as far diversifying the selection and improving the craft of Norwegian-brewed beers (Nøgne Ø, Haandbryggeriet, etc.) and quite a few good beer bars, but a good majority of the population still clings to the light, mass-produced crap that is so ubiquitous.  Hence, this year I am taking a new tack, disguising my full-bodied christmas beer in a lighter tone, giving a subtle flavor and aroma of traditional Norwegian christmas cookies, and using belgian yeast (my saison went over well here).  I would consider it a belgian christmas-style pale ale, but since I am in Norway, I dubbed it Pepperkake Juleøl.  It came out a medium golden color, with the sweet, spicy aroma of gingersnaps from the addition of aromatic malt and a trio of spices, and due to the cara-pils and wheat malts I used, it should have good head retention!  Speaking of which, I think I’ll put some nice beer glasses on my wish list…

This is my brewing setup: two canning pots with built-in electric heating elements and temperature controls; one for the HLT and kettle and one with a false bottom for the mash and lauter tun.

The thing I like most about decoction mashing (other than achieving very good mash efficiency) is that I get a really good hot break!  You can see the amount of coagulated protein in the boil very clearly.

Malt:

12 lb. Muntons lager
1 lb. Castle wheat
0.5 lb. Castle CaraVienna
0.5 lb. Castle CaraPils
0.25 lb. Castle aromatic

Hops:

90 min – 0.75 oz. German Northern Brewer (10.53 % AA)
15 min – 1 oz. East Kent Goldings (4.5 % AA)

Misc.:

10 min – 4 oz. fresh grated ginger
10 min – 1 oz. cinnamon sticks
10 min – 0.5 oz. whole cloves

0.5 l Wyeast 1214 (Belgian Abbey) starter

Directions:

Mash in with 16 l of 136.5 F (58 C) water; protein rest @ 125.5 F (52 C) for 30 min. Raise temp. to 149 F (65 C); beta-amylase rest for 30 min. Decoct the thickest 1/3 of the mash, bring to 161.5 F (72 C); rest 20 min.* Boil decoction for 20 min., stirring gently yet constantly, and return to mash to reach 161.5 F (72 C); alpha-amylase rest 20 min. Sparge w/ 27 l of 175 F (79.5 C) water, running 27 l to kettle. Boil 90 min, adding hops and spices as noted. Chill to 70 F (21 C), aerate, and pitch yeast; primary fermentation @ 68 F (20 C) for 7 days. Rack into secondary; store @ 60 F (15 C) for 21 days. Krausen** or bottle w/ 5.5 oz. sucrose (that’s right, table sugar); store @ 70 F (21 C) 7-14 days. Chill and serve!

*Optional step; I added the single decoction because my wheat malt was poorly crushed – gelatinizing the grain seemed to help get a better extraction, as well as adding a certain malty character and coagulating some of the protein pre-boil.

**Also optional, when I’m in a hurry to get the beer carbonated I like to krausen, or use priming sugar as well as an active yeast starter.

Boulevard Brewing Company is near and dear to my heart when it comes to talking about beer. I’ve been drinking their lineup for years – mainly to support my local brewery but also because they’re just so damn tasty. The Boulevard Wheat was a constant in my fridge for quite a while before discovering all the other great styles of beer that are available on the market. I should also mention here that as a 10 year old boy, George Brett was my favorite baseball player – and they’ve used his name on Saison Brett as a play on the Brettanomyces yeast that is used to brew it. If you’ve not tasted Brettanomyces (which is a type of wild yeast), I highly recommend it. It’s a flavor you will not soon forget. And there are tons of beers that use it – mainly Belgian beers. Within the last few years Boulevard began bottling their Smokestack Series, and the Saison Brett is clearly one of the best. Aside from maybe the Bourbon Barrel Quad, Imperial Stout, or Tank 7 (which won’t be bottled until 2010), I can’t think of any beer they make that is better than this one. Rated one of the best Saisons in the world by both Rate Beer and Beer Advocate, I’d say this is something to be enjoyed by any and all beer lovers. Une femme, ce matin : «Je déteste l’automne.»

Comment cela se peut-il?

Les gens n’appréciant pas l’Automne me laisse perplexe. Je les trouve tristes, gris et ennuyants. 

Comment peuvent-ils être à ce point insensibles à cette beauté? Comment font-ils pour perdre leurs racines avec la nature?

D’où est-ce que remonte mon Amour pour l’Automne? L’enfance? Peut-être.

J’ai eu une enfance heureuse. Mes parents étaient formidables. Mon père était plus fort que tous les autres et ma mère préparaient les meilleurs repas au monde. Ils m’ont construits d’immenses châteaux de feuilles! De véritables forteresses de verdure! Merci!

À cette époque, je ne me souciais pas de ces pratiques ”non écologiques”. Je m’en foutais merveilleusement! Je ramassais les feuilles. Je jouais. J’essayais de faire la grande roue. J’étais avec ma famille. Voilà TOUT ce qui m’importait. C’était TOUT ce qui comptait.

Vert.

Jaune.

Orange…  

Les arbres se préparent pour la dormance. Ils sont magnifiques.

Le craquement.

Le bruit.

L’odeur.

Les feuilles.

Des feuilles par milliers!

Le vent caresse, le froid ne transperce pas, pas encore. Il aguiche, chatouille.

Ma saison d’Amour est l’Automne. J’en frissonne. Je suis Amoureuse. Je sais, je sais, je suis célibataire. Les gens ne me comprennent pas lorsque je leur dis que je suis follement Amoureuse. Et ils me posent des questions stupides du genre «T’es en couple, toi?», «T’as rencontré quelqu’un?» Non, mais ne peuvent-ils pas être heureux pour moi? Sont-ils jaloux ou futiles de penser qu’il faut quelqu’un? Il faudra m’expliquer, un jour…

L’Automne c’est la chasse, à l’homme. Les mâles sont si «chauds» en cette période. Les frôler me brûle. Les embrasser m’enflamme… Les femmes sont magnifiques. Elles se font frileuses, paraissent fragiles, délicates. Les pommettes rosées resurgissent, les cafés brûlants, les mufles en laine, les pull en cachemire. 

Humez, vivez la transition! Les arbres multicolores tendent à devenir gris, mélange de blanc et de noir, couleur significative de contradiction. Le temps se bouleverse lui même, s’humanise. Il fait de plus en plus noir, la nuit s’allonge, c’est excitant.

PLUS! L’Automne est la seule période de l’année pendant laquelle on peut se laisser traîner les pieds. C’est louable et agréable d’avoir 12 ans pour un instant! De remuer ces feuilles sous nos pieds.

Si je croyais en Dieu, il serait né un 9 septembre. 

                         L’Automne est la saison que je préfère…

                              suivie du printemps…

                 l’hiver comme l’été se disputent les années.

Schon am 08. Dezember 2008 begann für mich die Saison 2009. Ab diesem Zeitpunkt konnte ich zum ersten mal eine ordentliche Vorbereitungsphase starten.

Schon mit den ersten Wettkämpfen in Hamm (Winterlaufserie) und Plettenberg (Crosslauf) konnte ich die ersten guten Zeiten und Platzierungen erreichen. Der erste Tiefpunkt kam ca. 5 Wochen vor dem Triathlon Saisonstart in Buschhütten. Durch eine Sehnenentzündung in der Kniekehle konnte ich knapp drei Wochen nicht trainieren und ich sah meinen Start in Buschhütten schon sehr gefährdet. Zum Glück legten sich die Schmerzen rechtzeitig, sodass ich doch in Buschhütten starten konnte. Wie auch im Jahr 2008 konnte ich keinen ordentlichen Wettkampf bestreiten und musste beim laufen das Tempo aufgrund von Krämpfen herausnehmen. Vielleicht klappt es 2010 ja mal eine ordentlicher Wettkampf in Siegen abzuliefern

Bei meinem ersten (kleinen) Trainingslager in Frankenau hatte ich zusammen mit Frank, Markus und Christian jede menge Spaß und gleichzeitig konnte wir an einem verlängerten Wochenende ca. 400 Radkilometer sammeln.

Weiter ging es im Juni und Anfang Juli mit meinen ersten Ligawettkämpfen in Kamen (Oberliga), Altena (Oberliga) und Saerbeck (NRW-Liga). Wenn man es so nennen kann, ist wohl in Kamen mein Knoten geplatzt. Ich konnte zum ersten mal einen Wettkampf ohne große Probleme durchziehen, und mit Platz 10 meine erste Top-10 Platzierung erreichen. Auch die Wettkämpfe in Altena (7. Platz ) und Saerbeck (27. Platz) bestätigten den Trend.

Kurz vor meinem Sommerurlaub Ende Juli ging es zusammen mit Frank zu meinem selbsternannten Saisonhöhepunkt nach Hamburg. Für den Hamburg City Man hatten wir uns schon zu beginn des Jahres entschieden. Nach seiner Langdistanz in Roth war Frank zwar nicht in bester Verfassung aber wir hatten viel Spaß und auch die Platzierungen konnten sich sehen lassen. In einem mit ca. 3000 Athleten sehr großem Starterfeld konnte ich den 34. Gesamtplatz erreichen und war damit natürlich sehr zufrieden. Der Wettkampf ist wirklich zu empfehlen, da einem viel geboten wird.

Nach meinem (trainingsreduziertem) Sommerurlaub absolvierte ich Mitte August meine erste Mitteldistanz in Hückeswagen, im Rahmen der Oberliga. Trotz meiner nicht vorhandenen Erfahrung auf dieser Distanz konnte ich mit dem 9. Platz noch mal einen Top-10 Platz erreichen. Vor dem letzten Wettkampf in Krefeld belegten wir mit der 2. Mannschaft somit den 2. Tabellenplatz und waren klar auf Aufstiegskurs.

Nach der Entzündung im April konnte ich das Training während der restlichen Saison konstant durchführen. Kurz vor dem Abschlusswettkampf in Krefeld passierte es dann aber. Bei der letzten Trainingseinheit kollidierte ich mit einem Mottorad und prellte mir den Arm. Somit musste die Mannschaft mit nur drei Athleten an den Start gehen, was am Ende aber trotzdem (puuuuuuhhh…..) für den Aufstieg reichte. Wenige Tage später konnte ich den Gips schon abnehmen, und nach einen gewissen Schonzeit langsam wieder trainieren.

Nach einem Jahr Vorfreude startete Mitte September das P-Weg Marathonwochenende. Mit guten Leistungen konnte ich mir die Kombinationswertung (Halbmarathon + Mountainbikemarathon) sichern. Zwar wäre beim Halbmarathon der Einzelsieg möglich gewesen, aber die Konkurrenz war einfach stärker und hatte ein paar Körner mehr “im Petto”.

Mit einer Endzeit von unter 36 Minuten über 10 Kilometer konnte ich die gute Laufform beim 7. Radio-Mk Lauf in Werdohl noch einmal bestätigen. Mit dem Heimvorteil im Rücken reichte es zu Platz 3.

Zum krönenden Abschluss ging es Mitte Oktober zu meinem ersten Marathon nach Essen. Das Ziel von unter drei Stunden konnte ich trotz starker Unterstützung zwar nicht erreichen (3:01:48), aber mit Hinblick auf die Tatsache, dass es mein erster Marathon war, ist die Zeit völlig ok

Fazit:
Alles in allem bin ich mit dieser Saison natürlich sehr zufrieden. Es hat vieles gut funktioniert und durch das verstärkte Training konnte man auch schon die ersten Erfolge erkennen. Besonders im Laufen konnte ich durch gezieltes Training meine Zeiten klar verbessern. Mit der 2. Mannschaft haben wir den Aufstieg in die Regionalliga geschafft und die erste startet in der NRW-Liga. Wenn die Saison 2010 ähnlich verlaufen würde wie das vergangene Jahr könnte ich damit gut leben.
