I will be rich when I invent a way to smell stuff over the internet.

My 2nd time baking. This is a garlic-herb bread with rosemary, thyme, basil and garlic.

Folks, it’s not news to any of you that my cooking skills lack a certain something. So last night I tried for the first time to make french bread with an old bread machine I found in my parent’s home. It was a disaster. I put too much butter, yeast, and forgot the salt. It was just plain awful. So let’s not talk about it anymore. Instead I ventured to Publix today for some new inspiration and made a successful loaf today.

Garlic-Herb Bread

1.5 Cups water

4 teaspoons of butter, softened

2 cloves of garlic

4 cups of Gold Medal Better for Bread flour

2 tablespoons of salt

1/2 teaspoon of dried rosemary leaves

1/4 teaspoon dried thyme leaves

1/4 dried basil leaves

1 3/4 teaspoons of yeast

Results: Awesome smell in the house. Taste is a light smell of the herbs but absolutely no garlic flavor. I may double the amount of herbs and garlic in my next batch. Lathering a bit of whipped butter and it was heaven. But the true test was in sandwich form.

Don't run! Is only sandvich!

Two slices of the really nice smelling bread, salami, ham, turkey, lettuce, tomato, red onion, red pepper, swiss cheese, awesome grainy mustard seeds and mayo to top it all off. It was worth the time and effort. My next loaf will be a repeat but with double the herbs and garlic just to complete the trial. After that, a Caraway-Rye bread. We shall see how that turns out.

Almost a month ago, I was treated to a work lunch at any nearby cuisine of my choosing. Without hesitation I blurted out: Bess Bistro. I have wanted to try this place since restaurant roundup weekend when I gazed at the three course pre fixe meal online. This is the restaurant Sandra Bullock owns and is frequently spotted. So, naturally, I needed to jump on the band wagon and give it a go.

Directly on west 6th, you step down a few stairs into a cozy restaurant with an intimate setting. I immediately fell in love with the snug milieu and the friendly hostess. I studied the menu carefully. The waitress raved about the french fries, which helped limit my options as now I just HAD to taste these “amazing” fries for myself. I settled on the Croque Monsieur, both because I didn’t know how to pronounce the name and also I had never ordered a dish like this before.

Although this was technically a work lunch, I was determined to snag a few shots. I didn’t have my camera with me, but thank God for technology because my phone provided the images you see below (even though they are lacking in quality):

We were first served with soft, aromatic bread. I desperately wanted to eat the whole basket, but somehow I limited myself to not even one whole slice. The bread was incredible, but unnecessary when I saw the size of my meal:

The Croque Monsieur is apparently as big as my face. When reading the description on the menu, it is totally incomprehensible to think you’ll be served a huge open-faced sandwich. Granted, I have no regrets. Why? One word: Gruyère. Far from neatly placed on toasted rye bread was a hearty portion of shaved country ham with toasted mustard and bechamel, then smothered in melted Gruyère cheese. I was no where near able to finish this gourmet sandwich. The slightly sweet, yet salty and nutty Gruyère complimented the lip-smacking country ham impeccably. To make matters worse, the fries were out of this world. Before my review of Roaring Fork Fries, I had never tasted fries comparable. They weren’t quite thick cut fries, but they weren’t shoe string fries either. They were crunchy and perfectly seasoned and salted. The best, BEST part was their ketchup, which is mixed with Cajun spices. Their Cajun ketchup really left a unique impression on one’s palate… the kind that makes one yearn for more!

I was overall overly satisfied with my visit to Bess Bistro. The atmosphere at lunch time is warm and hospitable with plenty of room to talk business or simply visit with friends. The staff was attentive and informative when it came to choosing what to order on the menu.

My next goal is to visit Bess Bistro on a busy Austin night in hopes of glancing a peak at Sandra Bullock herself. What would I say to her? “Yummmm.”

Time for another delicious sandwich review, this time for Fricano’s Deli, which I mentioned earlier when I spoke about Dishola’s Dish-for-Dish deal featuring them. I promised a review, and here is a review. Luckily, Frances of The Nom Nom food blog convinced me to meet up with her and reap the Dishola 10% off benefits.

Fricano’s was super busy when we went. There was definitely a line to the door (but the restaurant is teeny) and I have a feeling it is always that packed, especially during prime eating hours. After I took this photo, there were folks eating on the curb. Great little joint, but probably not the best if you are in a rush or want to be doted on at a table.

Outside Fricano's

I ordered the special of the day, the Italian Turkey Melt, which included turkey, swiss cheese, black olives, black olive spread, tomatoes and spinach all toasted to perfection. It was delicious… I don’t even know what else to say. The flavors just accented one another perfectly. Unfortunately, the olive spread left me looking like I hadn’t flossed in a week.

Delicious...

Left: Rootbeer Creamsicle, Right: punch card

Added bonuses: the drink, the Rootbeer Creamsicle, was amazing. Great addition to the sandwich. Also, Fricano’s treats their customers to a frequent customer card, which gives you a free sandwich after the punch card is filled. Not bad.

Overall, I give Fricano’s Deli a 5/5.

Last week I had 6 coloured pencil drawings of Bread hung in the Kings Meadows franchise of Banjo’s Bakery. I got a mention in the Arts pages of our local daily paper, The Examiner, on Saturday.

I have no idea how this venture will turn out. I am of the opinion that it’s better to have your work out of your studio and in the public domain. If people can’t see it, how can you expect them to buy it!

On Saturday, some of my Bread Art was featured on http://samwich365.blogspot.com, what a great site! It gave me some ideas for further Bread drawings when the mood takes me.

It would be great to sell some work just before Christmas. It’s great to sell anything at any time of the year for that matter. The fact is that artists have to keep putting their work out where it can be seen. Galleries are not the complete solution, just part. There are other places that are crying out for art, but their owners don’t know it. Artists need to keep knocking on doors!

Dad, mum and Sam will be leaving for Hong Kong today so that leaves me alone in Singapore with my housekeeper. It’s gonna be lonely these few days!

I made a really different type of oatmeal today – cooked in lemongrass, ginger and citrus fruit tea (London Tea Company) instead of the usual soymilk. The change was inspired by a pomegranate I bought at Cold Storage yesterday as well as Marina’s oats cooked in tea. My vision was to create a citrusy oatmeal.

Luckily I googled “how to cut a pomegranate” before I set out to create breakfast. Because it was a really messy job with pink juices squirting everywhere!

Finally done plucking out the seeds!

The juices can leave a permanent stain on countertops/clothes if not wiped away as soon as possible so you can imagine how busy I was wiping every drop of stain away as soon as possible!

The final product

Sorry about the messy presentation with all the books strewn everywhere but I couldnt wait to dig in! The scent of the ginger was really prominent and the pomegranate seeds gave a lovely crunch. A few spoonfuls later, some Dark Chocolate Peanut went into the bowl. Haha couldnt resist Maranatha’s for even one day. I had a peach on the side too.

Cedele's Famous Rosemary Chicken

Yesterday I had to have lunch alone because everyone else was out and Dad skips lunch on Sundays. I decided on Cedele because I’ve been harbouring a major Cedele craving…have not had their sandwiches in like 2 months? Once again, fickle me couldnt decide on which sandwich to get, but I eventually I got their Rosemary Chicken, just because it is served with Cranberry sauce and I saw it as fitting in with the Christmas season. Weird logic? Anyway, I finished up the sandwich till the last grain and was even picking up the cranberry pieces that had dropped onto the plate with the toothpicks. That really did satisfy my cravings! But boy, I was sure stuffed like a turkey after that. My pet peeve was that the cranberry spread wasnt spread out; just dumped in the centre of the sandwich. I realised i’ve been having alot of reddish/pinkish foods lately which inspired the title of the post!

Can’t wait for tomorrow! Off to study!

It was so nice to be at home and relax all day! I was so tired that I actually took a nap. I usually hate napping because I’ll have trouble sleeping that night, but today it was worth it! Afterwards, I felt so much better and had the energy I needed to hit up Target.

First I had my new favorite sandwich combo….guac with laughing cow on a sandwich thin.

I also had an apple that missed the camera somehow After we went to Target and bought some essentials (ice cream and seltzer), I was starved! The boyfriend and I went through this giant bowl of edamame in about 10 minutes….so yummy.

I always keep edamame in the freezer in case I need a quick healthy snack. Definitely better than reaching for the ice cream (not that it didn’t cross my mind). Now we are debating what to have for dinner….whatever we make has to involve some of the mozzarella we bought at Costco! It is delicious and expires in three days

Planning on a good day of exercise tomorrow and a fun night of relaxing tonight…yay!

I’ve only had a very few outstanding sandwiches in my life–the Vietnamese grilled pork on baguette at Pho Que Huong on Green Springs, and the Cuban steak sandwich from Little Miami in Lake City, Florida–and this is one of them. The combination of fresh bread, salad, yogurt, feta, and meat is sublime. As an added bonus, the leftover spread can be thinned with a couple of tablespoons of olive oil and some lemon juice to make a great salad dressing for the remaining romaine and feta.

For the spread:

¾ cup crumbled feta cheese (4 ounces)

3 heaping Tbs Greek-style yogurt

Juice of 1/2 a lemon

2 tsp dried oregano

zest of 1 lemon

¼ tsp freshly ground black pepper

For the sandwich:

4 pita breads

4 large leaves romaine lettuce, torn in half

1 cucumber, sliced into half moons

¼ cup fresh mint leaves, coarse chiffonade

Sliced meat (we used steak, but grilled pork would also be good)

Combine all spread ingredients in a small mixing bowl, and mix with a fork. In each pita, put a schmear of spread, then add a couple of slices of meat, some cucumber, mint, and a lettuce leaf. Yum! (I’ve read that a couple of slices of tomato and red onion make a fine vegetarian version, but haven’t confirmed.)

Hey y’all!

So, I think I have drafted this post three different times now. With each draft, time just slipped away from me and what I’d written was no longer relevant.

For instance, the I began this post while I was writing a term paper for High Tech Marketing on the adoption of Electronic Medical Records…who can spell FUN!?! The next time I started to write this post, it was the beginning of my fall “break” and time ended up getting away from me. We call it a break at school because that makes everyone feel a little better about how hard we are working. However, I will tell you that during my break I was on campus twice for school projects and at work for a couple of days as well. Even with all of that going on I had so much fun this break – which is why time slipped away from me!

First, I found a local carniceria in Boulder where they sell pork hocks!! This was a huge feat (no pun intended). My mom and I have looked for pork hocks for some time to no avail. In the South we use pork hocks for flavoring black-eyed-peas, field peas, and green beans. Can you spell YUM?!? After I met Mike I learned that he and his family regularly eat and make something similar to head cheese (which is something that we also eat in the south) called studenina. The main difference is that his family uses pork hocks instead of pig head. So, you can just imagine how happy we both were to have found a shop in Boulder – not the easiest town in which to find this type of food. You better believe we made studenina. I will share that recipe with you later when we have it perfected! But in the meantime, here’s a picture:

Next, we ate deliciousness at our friend’s house for Turkey Day as I’m sure you all did. As if we didn’t have enough food at Thanksgiving, the next day we ate the following: Egg McMuffin meal, Mexican food for lunch, moules frites for dinner, followed by a late night samosa for a snack. I ended up in the ER that night with what I think was my third gallbladder attack. Ha! The last time this happened to me, I was eating a deep fried peanut butter and jelly sandwich. A little tip for you: If you think you have a diseased gallbladder (usually runs in the family) you can always test it out by eating some really fatty food….just make sure to have some good pain meds on hand!

The day after my attack, we got a Christmas tree and decorated the house and made some Indian food with mom. Today, I finally just sat down to finish this post and realized that I have to start over for a third time. And so, for my third attempt I have shared the joys (and pains) with you of my lovely break.

As a digression, I must interrupt myself to make a delicious sandwich which I don’t have pictures of but I will share the recipe with you:

Rachael’s Sandwich-Inspired by my favorite ingredients

Ingredients:
1 poached egg
1 piece of Canadian Bacon
2 Tablespoons of goat cheese
1/2 avocado sliced
2 slices of your favorite sandwich bread
a little salt and pepper
your favorite hot sauce (optional)

1. Toast your sandwich bread and spread the goat cheese on one piece
2. Heat up a piece of Canadian Bacon (microwave is fine for 25 seconds) and put on the other piece of bread
3. Put your sliced avocado on the Canadian Bacon side of the sandwich
4. Put your poached egg on top of the goat cheese side….the cheese helps to grip the slippery egg and keeps it from sliding
5. Add salt, pepper, and hot sauce to taste if you like
6. Close the sandwich and enjoy!

Do you need a tip on poaching eggs?
I learned this from Mike. Crack the raw egg in a coffee cup. Fill a frying pan with enough water to cover an egg (about 3 inches) and about 2 tablespoons of white vinegar. Bring the water to a boil and turn off as soon as it reaches a boil. Then dip the cup (with the egg) in the water sideways (as if you were trying to scoop water out with the cup)and slowly release the egg. Once you have released all of your egg into the poaching water, cover with a lid for about 8 minutes or so. Use a slotted spoon to remove the egg from the water, blot with a paper towel, and you should have a perfect poached egg.

Back to the Soup
It would be a crime to write a post without some lovely pictures and so, back to the original intent of this post: a delicious soup that I make often. I call it Carrot and Corn Soup. Very original, I know. I like to share this soup with others because I think it’s comforting, easy to make, easy to freeze, cheap and full of ingredients that you probably have around your house (aside from a couple of the spices). Great for fall or winter, I based this recipes on several others that I have either tried or read about.

Carrot and Corn Soup
1 bag of carrots peeled and cut in half
8 ears of corn shucked, and boiled and cut off the cobs. (If corn isn’t in season, you can use a bag of frozen corn)
1 shallot peeled and diced
1 large onion peeled and diced
salt and pepper
1-2 tablespoons of olive oil
1-2 of those 48 oz cartons of chicken broth…probably only one and then if you need to add a little more you can always use some bouillon cubes and water
1/2 to 1 whole tablespoon of saffron
1/2 to 1 whole tablespoon of yellow curry powder

First prepare your ingredients with a mise-en-place:

Mise-en-place

Next saute your onions, shallots, and corn together in some olive oil:

Meanwhile boil your carrots for about 10 minutes:

Then add some broth and your saffron and curry to your corn, shallots, and onions:

Next, puree your corn mixture and carrots. I use my processor but you could use a blender. You will probably have to do this in several batches:

Lastly, mix together in your pot and serve. It’s also nice (although I didn’t do it this time) if you fry up some prosciutto or pancetta and sage to serve on top!

Happy eating!

Today is the first Sunday of Advent, the season when Christians prepare for Christmas.

I helped with the Sunday Club today. One of the more artistic leaders had prepared a ‘craft’ project for the children, which when assembled was a large poster with 4 purple candles.

The children have time in the Sunday Club and then go into church to exchange the Peace, and to join the Communion. This week they went to the front of the church so that they could see the ring of Advent candles, and one child lit the first candle.

The weather continues to be abysmal. Not cold, but wet, windy and dark.

To brighten things up I wore my blue grey top that I bought in Seaford in about 2005, with my Avoca cardigan that came from Carmarthen in 2008.

I added a necklace that I purchased in Carmarthen at the same time as the cardigan.

No photo of my trousers; they are brown (a tiny herringbone pattern) and came from Chico

s in Denver, Colorado in 2007.

Wow, just in time for the Holidays, we have another classic case of pareidolia: this time a woman in

Wow, just in time for the Holidays, we have another classic case of pareidolia: this time a woman in Massachusetts claims that she’s seen Jesus… in her clothing iron.

A Massachusetts woman who recently separated from her husband and had her hours cut at work says an image of Jesus Christ she sees on her iron has reassured her that “life is going to be good.”

Mary Jo Coady first noticed the image Sunday when she walked into her daughter’s room.

The brownish residue on the bottom of the iron looks like the face of a man with long hair.

The 44-year-old Coady was raised Catholic. She and her two college-age daughters agree that the image looks like Jesus and is proof that “he’s listening.”

Coady tells The Eagle-Tribune she hopes her story will inspire others during the holidays. She says she plans to keep the iron in a closet and buy a new one.

Umm… yeah. Pardon me, but… IT’S A STAIN!!! Sorry, I just had to get that out of my system. Come on folks, is it really any surprise that the person making this “miraculous discovery” (which has all the markings of a modern-day “religious relic” such as the infamous Virgin Mary Grill Cheese Sandwich) is a devout Catholic? That is the classic marker of pareidolia – our evolution-wired brains are developed for pattern recognition, and one of the most recognized patterns for humans is another human’s face. Throw into the mix a bit of religious fervor (i.e. in this case, devout Catholicism) and viola! you have a “miracle” appearance of Jesus on an iron.

Here’s another interesting bit of pareidolia to get you thinking. Years ago a man cut into a melon, and he saw this…

So what, if anything, do you see? If you’re like me, you see some wavy lines which are essentially meaningless. But if you are a devout Muslim who can read Arabic, you will likely see “Allah” (God) written out in Arabic. And, before you roll your eyes, there are people who treat this as seriously as our Catholic lady does her Jesus-stained iron.

In conclusion, what this all really teaches us about these kinds of “miraculous events” is this: it’s all in your head, folks, and people who believe strongly enough can find amazing ways to validate those beliefs – even if to the rest of us it’s utter gibberish.

I’ve heard quite a buzz around Hyde Park’s hole in the wall sandwich shop, Fricano

I’ve heard quite a buzz around Hyde Park’s hole in the wall sandwich shop, Fricano’s Deli. Dishola’s dish-for-dish campaign advertised a twitter deal, where if you went to Fricano’s and mentioned dish-for-dish you received a 10% discount off your order (See my review of Fricano’s Cajun Turkey Sandwich on Dishola here). How could I not take full advantage, especially when this place is down the street from me??

It’s connected to a generic Hyde Park corner store, and hardly looks like a deli or catering company. However, when you step inside, the aromas of fresh bread and savory sliced meats enlist all of the senses.

I glanced at the menu, saw the word Cajun, and immediately knew that’s what I wanted to order.

The sandwich was fantastic! It completely deviated from the normal turkey sandwich your mama used to make. Inside the two sourdough slices were layers of lettuce, tomatoes, jalapeno, and Cajun turkey- which added its own spicy flare to this lunch time dish. I particularly loved the jalapeno spread richly coating the insides of the sourdough bread. It appeared to be mayo based and it added a nice fiery spunk to the already spicy sandwich.

The only thing better than this sandwich was the upbeat and friendly staff. They turned sandwich making a piece of entertainment.
