<address>2 eggs or 1/4 c. soy milk if vegan</address>

<p>In a small bowl combine flour and spices.  In another small bowl beat eggs.  Dip tomato slices in the egg then coat with flour mixture.  Fry in oil until golden on each side.</p>
<p>Variations:</p>
<ol>
<li>Omit paprika and flour and add curry powder and chick pea flour</li>
<li>Omit paprika and salt and add garlic salt</li>
<li>Omit paprika and add cumin and cayenne</li>
<li>Omit egg and use 1 tbs. of finely ground flaxseed blended with 3 tbs. water until frothy.</li>
<li>Omit egg and paprika and use tomato sauce, garlic salt and oregano</li>

<address><span style="font-style:normal;">1/2 c. cooked green peas</span></address>
<address><span style="font-style:normal;">juice from 1/2 lemon</span></address>

<address><span style="font-style:normal;">1/2 tsp. turmeric</span></address>

<address><span style="font-style:normal;line-height:24px;font-size:16px;">Sauté garlic ginger onion until onion is translucent.  Combine all ingredients except peas and mix well.  Fold in peas last careful not to smash them.</span></address>

<p><strong>The dough:</strong></p>
<address><span style="font-style:normal;">2 c. white flour</span></address>
<address><span style="font-style:normal;">1 tsp. salt</span></address>
<address><span style="font-style:normal;">4 tbs. melted butter</span></address>
<address><span style="font-style:normal;">1/3 c. yogurt</span></address>
<address><span style="font-style:normal;">water</span></address>
<p>Sift together flour and salt; add melted butter, yogurt and enough water to make a stiff dough.  Knead until smooth and elastic.  Roll our 1/4 inch on a floured board and cut into 4&#8243; in diameter pieces.  Keep rolling and cutting until you have used all the dough.  Place 1 -2 tbs. of filling in the middle of each circle, fold in half and seal with a fork around the edges.</p>
<p>Heat 3 inches of vegetable or peanut oil in a skillet and fry samosas until golden.</p>
<p>Serve with a chutney or yogurt sauce.</p>
<p><span style="text-decoration:underline;">Here are a few dipping suggestions:</span></p>
<p><strong>Mock Tamarind Sauce</strong></p>
<address><span style="font-style:normal;">¼ c. packed brown sugar</span></address>
<address><span style="font-style:normal;">3 tbs. lime juice</span></address>
<address><span style="font-style:normal;">1.2 tsp. molasses</span></address>
<p>Combine all ingredients in a small saucepan over low heat stirring until the sugar melts.</p>
<p><strong>Cilantro Mint Pesto</strong></p>
<address><span style="font-style:normal;">1 c. tightly packed fresh chopped cilantro</span></address>
<address><span style="font-style:normal;">1 c. tightly packed fresh chopped mint</span></address>
<address><span style="font-style:normal;">2 cloves garlic minced</span></address>
<address><span style="font-style:normal;">½ c. pine nuts</span></address>
<address><span style="font-style:normal;">1 tsp. salt</span></address>
<address><span style="font-style:normal;">½ tsp. black pepper</span></address>
<address><span style="font-style:normal;">½ c. grated parmesan cheese</span></address>
<address><span style="font-style:normal;">½ c. olive oil</span></address>
<p>Combine all ingredients in a food processor or blender and process until smooth.  Can be stored in the refrigerator for up to 5 days in an airtight container with a little olive oil on top to prevent it from turning black.  Great with pasta or rice too.</p>
<p><strong>Tomato Ginger Chutney</strong></p>
<address><span style="font-style:normal;">1 tbs. fresh ginger</span></address>
<address><span style="font-style:normal;">2 cloves garlic</span></address>
<address><span style="font-style:normal;">½ tsp. garam masala</span></address>
<address><span style="font-style:normal;">dash of cayenne</span></address>
<address><span style="font-style:normal;">1 tsp. olive oil</span></address>
<address><span style="font-style:normal;">1 (15 oz) can diced tomatoes</span></address>
<address><span style="font-style:normal;">¼ c brown sugar</span></address>
<address><span style="font-style:normal;">¼ c cider vinega</span>r</address>
<address></address>
<address></address>
<address></address>
<p>Cook ginger and garlic with garam masala and cayenne in oil about 2 minutes.  Add all other ingredients and cook uncovered on med. heat for 15 minutes stirring occasionally.  Reduce heat and cook 5 minutes or until thickens.</p>

<address><span style="font-style:normal;">This is a untraditional version of  Huevos Rancheros.  If you like it spicy, enjoy with your favorite hot sauce.</span></address>

<address><span style="font-style:normal;">In a small bowl, whisk the eggs until well scrambled and set aside.  Heat the oil in a small skillet for about a minute.  Chop all the vegetables about the same size and toss together with cilantro and cumin.  Saute&#8217;e vegetable mixture until onions are translucent and you start to smell the garlic.  Pour the eggs over the veggies and cook on med heat for a minute.  Loosen the sides with a spatula and lift the pan so the liquid slides toward the side of the pan and under the cooked egg.  When there is very little liquid left on top, loosen the edges again, cover and cook for about a minute or two, until the top has cooked.  With a spatula slide the Huevos onto a plate, sprinkle cilantro on top and enjoy. </span></address>

<content:encoded><![CDATA[<div>I have been doing some ingredient research in the last couple of days and have noticed a lot of misinformation online (I know, shocking) about the the levels of vitamins, minerals and antioxidants in plant oils. It seems that people are drawing  from the nutritional data of the entire plant rather than just the oil. Not a lot of these substances make it in the oil. Take for example avocado oil &#8211; the fruit has almost every nutritional mineral, vitamin and antioxidant but the oil has NONE. A typical statement for avocado oil is &#8220;it is rich in Vitamin A, D &#38; E, the youth mineral &#8211; &#8216;potassium&#8217;&#8221;. Yikes. Here is the nutritional data I&#8217;ve drawn from the USDA. The oils are listed from highest to lowest concentrations. I have yet to find reliable information about less popular oils such as rosehip, sea buckthorn and hemp seed but I know they are full of wonderfulness (vitamin A, vitamin C).</div>

Cherries are often known to ease inflammation as well as the seasoning turmeric. According to the University of Arizona turmeric may help prevent rheumatoid arthritis. Omega 3 is also known to greatly decrease inflammation. Omega 3 can be found in salmon, flax seeds and walnuts. Also the best vegetable juice to reduce inflammation is cucumber and celery. </span></span></p>

<p class="MsoNormal" style="margin:0;"><span style="font-family:Tahoma;"><span style="font-size:small;">Obviously, if there are foods that can reduce inflammation there are certainly foods that contribute to inflammation. Want to take a wild guess at what foods are “pro” inflammation? If you guessed sugar, soft drinks and alcoholic beverages you are right! Red meat is also a big contributor to inflammation as well as white flour, eggs, fried foods and vegetable oils like corn and soybean oil. </span></span></p>

<p class="MsoNormal" style="margin:0;"><span style="font-family:Tahoma;"><span style="font-size:small;">It is so easy to fall in to the “quick” meals and processed food life style, but we are what we eat. Everything we eat is going to affect our body in one what or another whether it is now or later in life. I encourage you to eat more fruits and vegetables and limit or eliminate all processed foods from your diet. Your body will thank you! </span></span></p>
