<p>These little bites are the perfect treat to put out for guests. They&#8217;re fresh, sweet, and so easy to make! They&#8217;re also a nice healthier option to the traditional cheesecake.</p>
<p><strong>Ingredients:</strong></p>
<p>1 lb large strawberries<br />
8 oz light cream cheese, softened<br />
3-4 tbsp powdered sugar (4 tbsp for a sweeter filling)<br />
1 tsp vanilla extract<br />
1/2 cup graham cracker crumbs</p>
<p><strong>Directions:</strong><br />
Rinse strawberries and cut off the bottoms so that they have a flat surface to stand upright. Remove the top and cut out the inside of each strawberry with a paring knife or a little tomato corer if you have one (looks like a mini melon baller). Prep all strawberries and set aside.<br />
In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy.  You may want to add a bit more icing sugar depending on how sweet you like your filling. Add cream cheese mix to a piping bag or ziploc with the corner snipped off. Fill strawberries with cheesecake mixture. Once strawberries are filled, dip the top in graham cracker crumbs or simply sprinkle the graham cracker crumbs freely on the plate. These can be refrigerated if you&#8217;re not serving them right away. I suggest only sprinkling graham cracker crumbs right before serving, so that they don&#8217;t get soggy in the fridge.</p>

<p style="text-align:left;">Interesting.  When I went to bed it had me over on calories by like 200.  wtf.  I could have had&#8230; a bottle of wine last night!  (Literally. And a glass.)  I&#8217;m glad I did not forego the Salmon Snacklets I had before bed, though.</p>
<ul>
<li>Frosted mini-wheats &#38; 1% milk with Coffee &#38; Creamer</li>
<li>Apple &#38; Greek Yogurt w/ Granola and Fruit</li>

<p>Crazy.  Avoided giant Chocolate Football cake (with cream filling) yesterday at lunch.  Bonus, cuz I could have eaten it!  Wtf.  So I ate well, and did some pushups, situps, planks, tricep raises, etc. in the back storage room of the library between 3:00pm and 4:00pm&#8230;  *blinks.*  Tim mentioned wanting me to skip Spin last night.  I didn&#8217;t want to.  I&#8217;ve done way too much leg work this week (Practice Sun, Practice Mon, Spin Tues, Practice Wed, Spin Thurs) but I skipped last Saturday&#8230; and I want a good, well-deserved, no-guilt cheat day today.  So I told him that, and he was fine with it.  So all those &#8220;Calisthenics&#8221; were for nothing.  Though I will say my abs kill this morning.  Ugh.  Bijou abs and Michelle Obama arms.  Things to work for.</p>
<p>Interesting tidbit about Spin Class: you keep your abs tight, right?  Well.  The past two classes, they&#8217;ve been tight enough that I could feel my bowels moving.  Literally.  I actually thought I might shit myself Tuesday.  Not really&#8211;I mean, I&#8217;d have gotten off the bike and run to the restroom, but.  I really thought I was gonna need to poo cuz I could feel the plumbing doing its thing.</p>
<p>What else?  So, after Spin Class (which was hard and sprint-y yesterday), I wasn&#8217;t super hungry, but I figured I should eat something.  (I&#8217;d eaten a meal prior to spin.)  I only had like 200 calories left to eat.  So, I had water with Triscuits and Cream Cheese and Smoked Salmon.  Heaven in my mouth.  Soooo good.  Both Reilly (the dog) and Paris (the cat) were begging.  That put me like 200 calories over.  Which was sad b/c I&#8217;d worked so hard to stay under yesterday.  And I&#8217;d logged my &#8220;Calisthenics,&#8221; etc on Fitbit.  So I went to bed sad.</p>
<p>Then I woke up, and decided on a pre-poo weigh in.  (I haven&#8217;t been able to poo in the mornings lately.  Sad face.  And I didn&#8217;t poo after Spin Class, despite being able to feel things&#8230; ah&#8230; working themselves out.)  Anyway: 149.2  Yay.  Exciting.  That makes 4.5 lbs lost this month.</p>

<p>An aside about Fitbit:</p>
<p>I&#8217;m a little annoyed that it changes what my caloric intake should be like that.  50 calories here or there: ok.  But it literally gave me an additional thousand-ish calories after I went to bed.  And it had logged all of my activities and everything.  I don&#8217;t get it.  They have great customer service, so I&#8217;m sure I could email and ask and they would explain, but I don&#8217;t wanna.  It&#8217;s happened the other way, too, where I went to bed thinking I was fine and woke up to discover I was a couple hundo over.  Ugh.</p>
<p>In other news&#8211;it has me (had me?) on a 500 calorie a day defecit, to make my goal by&#8230; well&#8230; today?  I don&#8217;t remember.  Now that I&#8217;ve hit below 150&#8230; I don&#8217;t know what it is doing.  (Maybe that&#8217;s where the extra calories came from? Maybe when I weighed in this morning that changed things?  It shouldn&#8217;t have&#8230;)  Anyway.  Bleh.</p>

<title><![CDATA[Sweet, creamy mini dessert]]></title>

<p>In my last post ‘<a href="http://deliciousdivas.wordpress.com/2012/11/06/easy-delicious-coq-au-vin/">Easy, delicious Coq Au Vin’</a> I mentioned that I wanted to share the delicious dessert I prepared during my sister-in-law’s recent visit.</p>

<p>Now there is a story to choosing this dessert.  On a spring cruise on Royal Caribbean’s Monarch of the Seas I purchased their cooking <span style="text-decoration:underline;">Carte Du Jour</span> which includes recipes from the line’s main dining room and many specialty restaurants.  What came to mind as I was waiting to purchase the book was inviting a group of neighbors and friends and preparing a <a href="http://deliciousdivas.wordpress.com/2012/05/12/making-plans-to-prepare-a-royal-dinner/">‘Royal dinner’</a> that included recipes from the cookbook as well as the fun sounding and tasty ‘drinks of the day’ we enjoyed while lounging at poolside.</p>
<p>Randy’s sister, Antoinette, came east for a short visit.  As it turned out we would only have one opportunity to share a evening meal together, so I decided to make a home cooked meal instead of spending precious visit time going to a restaurant.  I chose a main from my long ago and while it was not heavy it would be filling so what to make for dessert?</p>
<p>I had already chosen the dessert I would make for the upcoming royal dinner.  I chose ‘Sweet Samplers’ mini desserts that are served in the cruise line’s Vintages restaurant.  Vintages is a wine bar and a full tapas menu.   Included in that tapas menu are their sweet sampler desserts.  I thought it would be fun to make one of these sweet samplers.</p>
<p>There were four mini desserts included in the cookbook: Crema Catalán (Cream Catalan); Mus de Chocolate con Ron (Chocolate Mousse); Mus de Pistacho (Pistachio Mousse); and Torta de Queso y Fresas (Strawberry Cheesecake).  They all sounded wonderful but I decided to make the strawberry cheesecake.</p>
<p>I did not have enough time, just arriving home from a cruise, to shop for mini glasses so used a wine glasses.  The recipe made six servings but my glasses were a little large so I was only able to make five.  I tried making a mini dessert once before and put into the glasses that I had on hand and the dessert looked oh, so very lost.</p>
<p>One aspect of this book that I really liked was that included not only the list of ingredients, the preparation instructions, the difficulty in preparation but the equipment needed and desirable wine pairings.</p>
<p>The preparation took three steps and I learned that there needs to be a little time between step 1 and two.  The strawberry compote needed time to cool before preparing the next steps.  I did not take the cooling time into consideration.  It all turned out fine in the end.  I kept three for our dinner and sent two over to neighbors Bob and Sandy knowing I would get feedback the next day.  I am always interested in opinions other than mine.</p>
<p><b><i><span style="text-decoration:underline;">Strawberry Cheesecake</span></i></b></p>
<p><strong>Strawberry compote</strong></p>
<p>1 cup strawberries, quartered</p>
<p>1 cup granulated sugar</p>
<p>1 teaspoon vanilla extract</p>
<p>3 tablespoons water</p>
<p><strong>Cheesecake:</strong></p>
<p>8-ounces cream cheese</p>
<p>½ cup granulated sugar</p>
<p>½ cup heavy cream</p>
<p><strong>Meringue</strong></p>
<p>2 egg whites, room temperature</p>
<p>¼ cup granulated sugar</p>
<p><strong>Garnish</strong></p>
<p>6 wild strawberries</p>
<p><b>Strawberry compote</b>: In a small saucepan over medium heat, combine all ingredients for the strawberry compote and bring to a boil.  Lower heat and simmer for 15 minutes or until berries are soft and syrup is thickened.</p>
<p>Remove from heat, let cool, cover and refrigerate.</p>
<p><b>For cheesecake</b>, in a small saucepan over medium heat, soften cream cheese and incorporate sugar.</p>
<p>In a chilled glass bowl, using a hand mixer, beat cream to soft peaks.  Fold ¼ of the whipped cream into the mixture to lighten it.  Fold in the remaining whipped cream.</p>
<p><strong>To make meringue</strong>, place egg whites in a stainless steel or glass bowl and, using a hand-held mixer, beat on medium speed until soft peaks form.  Gradually add sugar a little at a time until stiff peaks form.</p>
<p>Fold into the cheese mixture.</p>
<p>Fill each glass half way, spoon a small amount of strawberry compote and finish with another spoonful of cheese mixture.  Refrigerate for 2 hours.</p>
<p><strong>Garnish</strong> with a spoon of strawberry compote and a wild strawberry.</p>
<p>This mini dessert was sweet, smooth, creamy and just a perfect finish to a great meal.  Everyone enjoyed these cheesecakes in a glass immensely.  The next day our neighbor Sandy came by to return the glasses and was effusive in her description of how much she and Bob enjoyed them.  She even revealed that she enjoyed them so much that she had little spots here and there on her shirt attesting to her enjoyment.   I thought that was very funny indeed!</p>
<p>The holidays are upon us and I want to enjoy myself so I am embarking in the coming weeks of preparing dishes that are healthy, tasty and help me maintain my weight so I can indulge, just a little, during the holidays.</p>

She came fully prepared with many summer flavors, each wrapped up individually and ready to take home to enjoy after recovering from an intense cupcake coma. Since then, we tried several times to meet up again to indulge in cupcake goodness, but for one reason or another it never worked out, until recently.</p>
<p>She graciously gave us a dozen cupcakes to sample in a variety of flavors: The Usual (Vanilla), Strawberry Cheesecake, Naptown (Coconut Almond—named after our mutual hometown, Annapolis), and Caramel Butter-Pecan Chocolate Deluxe.</p>

<p>It just happened to be my mom&#8217;s birthday the same day I picked up cupcakes from Lamorea, so after delivering one of each flavor to Crusader Elisa&#8217;s house, there were eight left for my family to all enjoy together (with the disclaimer that Crusader Jenn and I each had to have at least one bite of every flavor).</p>
<p><strong>The Usual</strong></p>

<p>I knew, on looks alone, this vanilla cupcake would be the favorite of my nieces (ages three and under). They were all instantly drawn to the vibrant blue frosting and happily split one cupcake among the three of them. This classic cupcake almost had a sugar cookie like quality to it. The frosting wasn&#8217;t overly sweet and it reminded us of those frosted sugar cookies you find at the store (which we actually really love). Typically I would prefer a vanilla cupcake to have more vanilla flavor, but because it was reminiscent of a sugar cookie, it didn&#8217;t bother me at all.</p>
<p><strong>Strawberry Cheesecake</strong></p>

<p>This cupcake consists of a fresh strawberry cake infused with cheesecake, a vanilla wafer crust on the bottom, and topped with a cream cheese frosting. We all agreed it was wonderful. My mom felt like it tasted like a strawberry danish, while Jenn thought it was more like a strawberry shortcake. With its true cream cheese frosting (not too sweet) I personally agree with my mom (sorry Jenn!).</p>
<p><strong>The Naptown</strong></p>

<p>This cupcake starts with an almond cake, is topped with Lamorea&#8217;s savory cream cheese frosting and is then dipped in toasted coconut. When done right, almond cake is one of my favorites and the combination of flavors in this cupcake work much better than I thought they would. In fact, this was both Jenn&#8217;s and my favorite.</p>

<p>When Lamorea told me about this cupcake I was immediately intrigued. I like butter-pecan, I like chocolate, I like caramel, but how would they all taste together? Well, as it turns out, they work really well. Of all the cupcakes, this one was the sweetest of the bunch, which we think was due to the caramel drizzle. I&#8217;m not sure if it would be too much, but I LOVE salted caramel and wonder if it would work on this cupcake, or just add too many flavors?</p>

<p>Going into this cupcake tasting, I already knew I would love these cupcakes, since we tried several other flavors at the cupcake picnic, but it was nice to try Lamorea&#8217;s creations without being somewhat overdosed on cake and frosting.</p>
<p>That&#8217;s So Morie Cupcakes will be offering <a href="https://www.facebook.com/photo.php?fbid=363374240417581&#38;set=a.164111793677161.43593.141961005892240&#38;type=1&#38;theater" target="_blank">Treat Yourself Fridays</a> starting in late November.  She&#8217;ll be testing this out by posting select cupcake flavors every other Tuesday to be picked up as a six pack that following Friday. <p>Two of my grandkids just had birthdays. Yea! Cutie Patootie #3 turned 1 and the little Chunky Monkey turned 2 within a few days of each other. My daughter planned a creative double-party for the kids, with one side being decorated for Cora and the other for Corbin. She asked for a pink cheesecake for Cora&#8217;s table, and I had the perfect strawberry cheesecake recipe for it! <p>Only part of this got eaten at the party, which wasn&#8217;t a problem, because it kept nicely in the refrigerator for the second party a couple of days later.  Cutie Patootie #1, who is 6 and was <em>very</em> busy at the party, slowed down long enough to taste it for me and declared it &#8220;OK.&#8221; Her mother, who has eaten my cheesecakes for years, said it was delicious. <a href="http://munchiesmind.files.wordpress.com/2012/10/img_1255.jpg"><img class="alignright  wp-image-1052" title="IMG_1255" alt="Pink Cheesecake, Strawberry Cheesecake" src="http://munchiesmind.files.wordpress.com/2012/10/img_1255.jpg?w=224&#038;h=300" height="300" width="224" /></a></p>
<p>I liked it but it was a bit more subtly flavored than I&#8217;d like. Then again, I had a piece less than 24 hours after it was baked, so the flavor might have intensified a bit with time. If you want a <em>really</em> intense strawberry flavor, top it with more strawberries or spread a high-quality strawberry jam on the top of the cheesecake before you serve it.</p>
<p>I got this recipe from <em>Junior&#8217;s Cheesecake Cookbook</em>, a collection of 50 recipes from the owners of Junior&#8217;s restaurant in New York. I love cheesecake, so when this cookbook came out, I added it to my collection. I had never used cornstarch in a cheesecake until I made this recipe. I think it helps balance all the liquid from the whipping cream and the berries in the recipe; at least I assume that&#8217;s the purpose of it. It also may be the reason this cheesecake sliced up so beautifully. None of my other cheesecake recipes have ever sliced so cleanly!</p>
<p>If you need a dessert for a pink-themed party, this is it! If you just want a good cheesecake with the strawberries built-in, this is also it! Eat up!</p>

<p>As of last Monday, October 15, 2012, my first college sembreak officially started. WOOHOO! And as if we didn&#8217;t bond enough during the sem, my blockmates and I had our first sembreak block bonding the day after! <img src='http://s2.wp.com/wp-includes/images/smilies/icon_razz.gif' alt=':P' class='wp-smiley' /> </p>
<p>We went to Bella&#8217;s (the girl on the far left) house and had a movie and lamon marathon, but we ended up watching only two movies because we couldn&#8217;t pick which movie to watch!</p>
<p>I stepped out of my usual outfits, and went with just a simple t-shirt and denim shorts. :O</p>

<li><strong>1 (8 ounce) brick cream cheese</strong></li>
<li><strong>1 (8 ounce) tub whipped topping</strong></li>
<li><strong>2/3 cup sugar</strong></li>
<li><strong>1 teaspoon vanilla</strong></li>
<li><strong>Fresh strawberries</strong></li>
</ul>
<p><strong>Directions:</strong></p>
<p><strong>In a large bowl, combine the cracker crumbs, 1/4 cup of sugar, and melted butter until the crumbs are well coated. Spoon 1/6 of the mixture into each of 3 medium-sized mason jars.</strong></p>
<p><strong>In an electric mixer, beat together the cream cheese, whipped topping, vanilla, and sugar until light and fluffy. Spoon atop the crumb mixture into the jars. Top with a bit more crumb mixture, then finish off the jar with the remaining cheesecake mixture. Cover and store in the fridge until ready to serve.</strong></p>
<p><strong>Serve topped with fresh strawberries.</strong></p>

<p>Last week, as I was sitting on the bus on my way to campus, my wandering attention landed smack dab in the middle of a nearby conversation in Korean. I do not speak or understand a word of Korean, unless you count kimchi. These two college-aged guys were having an extremely animated and obviously hilarious conversation next to me, and I just kept wondering what was so funny. What could they be talking about? A scene from a movie? A humorous pet story? A disastrous date? I was thinking I’d probably never know…until, (yes, of course there’s an until), one of them exclaims “STRAWBERRY CHEESECAKE!” and they both proceeded to erupt in to a fresh round of giggles.</p>

<p>What’s so funny about strawberry cheesecake??? I wondered that very question, until I really thought about it, and realized how very funny strawberry cheesecake really could be…like if instead of kryptonite, Super Man could withstand anything except…strawberry cheesecake. Or if your dog pooped on the kitchen floor, and  at the same moment your roommate came in and said “mmm, it smells like strawberry cheesecake”, or if you were about to get your picture taken with the pope, when what comes flying at your face, but</p>

<p>Despite the endless entertainment this 1 English phrase brought to me on that bus ride, I have to admit it really drives me nuts sometimes when you catch a random word or two in an otherwise non-English conversation and you’re dying of curiosity wondering what they’re talking about.</p>
<p>I also must admit that my very own parents are some of the worst when it comes to the 1 word deal. They’ll often speak in our language, Marathi, while in an elevator and say things about the other people in the elevator. One time, there was a fellow Spartan with a Michigan State Hoodie on, and my mom says something about how this girl must have gone to MSU too, except that there is obviously no other word for Michigan State in Marathi, so that was the 1 (or to be precise, 2) English words. I’m sure this girl heard this, and realized that we were talking about her, which of course led her to wonder what we could possibly be saying about her. The poor girl probably has a complex now. It’s not that my folks intentionally do this, it’s just that they’re so used to being able to talk about people without them realizing, that these slips just sort of happen.</p>

<p>I love learning languages. I think that people should totally embrace their non-English tongues, and have every right to speak in them. I just wish I could ask them what they were talking about when they seem to be having a fun convo, without coming off as totally nosey and cray cray.</p>

<title><![CDATA[Strawberry Cheesecake Cupcakes with Marzipan Bottoms]]></title>

<p>This fall weather is absolutely wonderful. Not only has it brought down the temperatures at least a good ten degrees, but it&#8217;s brought about a brand new crop of strawberries for me! My strawberry plants really seem to love the cooler weather, and they&#8217;re prolifically putting out berries to show it!</p>

<p>So what do I do with this unexpected bounty of juicy little strawberries? The only thing I can do in a situation such as this one! Make</p>
<h1>Strawberry Cheesecake Cupcakes with Marzipan Bottoms</h1>
<h2>Ingredients:</h2>
<p><strong>For Cupcakes:</strong></p>
<ul>
<li>1 3/4 Cups Cake Flour</li>
<li>2 1/4 tsp Baking Powder</li>
<li>1 tsp Sea Salt</li>
<li>1/2 Vanilla Bean, Scraped (or 1 tsp Vanilla Bean Extract)</li>
<li>3/4 Cup Unsalted Butter, Softened</li>
<li>1 1/2 Cups Sugar</li>
<li>3 Large Eggs, Separated</li>
<li>1 6oz. Tube of Marzipan Dough (Odensa is readily available)</li>
<li>1 Cup Heavy Cream</li>
</ul>
<p>Preheat oven to 375°.</p>
<p>In a small bowl, stir together salt, baking soda, and cake flour and set aside.</p>
<p>In a large bowl of your electric mixer, beat butter and sugar until smooth. Add 3 egg yolks, one at a time, and your vanilla bean. With mixer going, alternately add flour mixture and 1 Cup Heavy Cream.</p>
<p>In another bowl, beat egg whites constantly until stiff. Gently fold the beaten egg whites into your batter mixture with a spatula.</p>

<p>Pour batter evenly into muffin pans lined with 18 Cupcake Wrappers. Cut cold marzipan dough into 1/8 inch thick coins and rest them on top of each filled cupcake wrapper. Marzipan, of course, is optional&#8230; and SOOOOOOO incredible. These coins will sink to the bottom as the cupcake bakes.</p>

<p>Bake in the oven for 18-20 minutes. Remove from oven and allow to cool completely on a wire rack. These cupcakes are  so AMAZINGLY fluffy, if you decide to try one while it&#8217;s warm you&#8217;ll find that it is as light as air and falls to pieces and your mouth. As it cools, it will gather a bit of moisture from the air and will be able to hold itself together.</p>
<h1>Strawberry Cheesecake Frosting:</h1>
<ul>
<li>1/4 Cup Fresh Strawberries, diced</li>
<li>1/2 tsp Lemon Juice</li>
<li>1/2 (4oz) Block Cream Cheese, Cold</li>
<li>3/4 Cup Unsalted Butter</li>
<li>1 tsp Sea Salt</li>
<li>5 cups powdered sugar</li>
<li>1/2 tsp Vanilla extract</li>
<li>1/2 tsp Almond Extract</li>
<li>1 Tbsp Heavy Cream</li>
</ul>

<p>In a small saucepan over medium heat, combine the strawberries and lemon juice. Cook until juice is reduced (5-10 minutes) and the fruit reaches a thick syrupy consistency. Remove from heat and chill in the refrigerator.</p>
<p>In your mixer, blend together cream cheese and butter until thoroughly mixed. Add sea salt and Vanilla extract. Slowly add 4 cups of powdered sugar until mixture is very thick. Remove half of the mixture and place into a separate bowl.</p>
<p>With the mixture remaining in the bowl, add the Almond Extract and blend thoroughly. If the mixture is too thick, you may add a little bit of heavy cream at this time until your desired consistency is reached. Remove from the mixer and set aside.</p>
<p>Bring your reserved mixture to the mixer and add in the strawberry reduction. To thicken the frosting, add the last cup of powdered sugar slowly until desired consistency is reached.</p>

What you are going to do here is lay down your strawberry frosting and your almond frosting side by side in a vertical line on the Saran Wrap. Then, fold the edges of the Saran over the top, twist the top and bottom edges like you would a tootsie roll, and you&#8217;re going to feed one end of the Saran bag you&#8217;ve just created through your piping bag. You will then pull one end of twisted Saran wrap through the piping tip and cut the end off so the frosting can come through. This is a technique that can save you a lot of clean-up time with your piping bag, but I personally also find it to be the easiest way to have a 2 flavored frosting come out evenly onto your cupcake.</p>

<p>Holding the piping bag so that the center line between the 2 flavors is on the very top will let you achieve this look of half almond half strawberry frosting on the top of the cupcake.</p>

<content:encoded><![CDATA[<p style="text-align:justify;">I’ve always wanted to learn how to bake since I was a kid. My mom and the rest of my aunts cook very well, but baking has never been their thing. Baking has always been number one on my list of things to do or learn, but I never really had time for it. Until a year or two ago, I braved myself and bought a new oven for myself to practice with…Hihi!</p>
<p style="text-align:justify;">Baking takes a lot of time and effort, but it has been a form of relaxation for me ever since I learned it. I bake whenever I feel a bit low, and it does cheer me up all the time.  It’s not hard at all—even though that’s what I used to think as kid. Baking is indeed exact math! And yes! Practice does make perfect in baking!</p>
<p style="text-align:justify;">I’ve been practicing and perfecting my blueberry cheesecake cupcakes for a while now. Just a few days ago, I tried to make a cake version of it and it was quite good too. I used fresh strawberries as a topping. The recipe needs a bit more tweaking, but I know I’ll eventually get to it with more practice.</p>

<p>Canteen One hosts a stall which provides the perfect comfort food should you need on a sad day, rain or shine.</p>
<p>The stall owner is very friendly and readily offered me a small stick of strawberry cheesecake to sample as I stood in front of the display panel deciding which to buy. Just like many other famous ice cream shops, this stall allows you to sample the flavors on sale that day.</p>
<p>Trying other flavors such as green tea, I still ended up with the creamy strawberry cheesecake flavor. The taste was berry-ful, very rich.</p>
<p>Even though it was quite warm in the canteen, the ice cream took quite a long while to melt. It only goes to show that the ice cream truly is what it&#8217;s supposed to be!</p>
<p>The waffle was freshly made and so you&#8217;ve to be patient while the auntie prepares it for you. It was very crispy on the exterior, soft and fluffy inside. I can&#8217;t seem to put my experience into words that will bring it its due justice.</p>
<p>For only $3.90, I&#8217;m definitely heading back for more.</p>

<content:encoded><![CDATA[<p>Over the weekend, I was seriously channeling my domesticated side. Not only did I complete some &#8220;Pinterest Projects&#8221; that I have had flagged for a while, but I also spent some time in the kitchen trying out a few new recipes. By far, the best creation from the weekend were <a href="http://www.thesweetslife.com/2011/08/cheesecake-stuffed-strawberries.html">Cheesecake Stuffed Strawberries</a>.</p>
<p>New York Style Cheesecake has been a baked good that I&#8217;ve always wanted to perfect, but have been nervous to attempt. One of my all-time favourite desserts, I know that it can be a finicky recipe and it will definitely take some practice. For now, these miniature versions are a more than suitable substitute!</p>

<p><strong>What you&#8217;ll need:</strong></p>
<p>-Large strawberries (I used 2 pints)<br />
-1 container of cream cheese (I used the low fat variety)<br />
-3-4 tbsp. of Icing Sugar<br />
-1 tsp. of Vanilla</p>
<p><strong>Directions:</strong></p>
<p>1. Cut the tops of strawberries and core the middles. Set aside.<br />
2. Mix together softened Cream Cheese, Icing Sugar and Vanilla. Beat until smooth.</p>

4. Squeeze a dollop of the stuffing into each strawberry.<br />
5. Dip the top of each strawberry in Graham Cracker Crumble.</p>

<content:encoded><![CDATA[<p><strong><em><span style="color:#008080;">So the cheesecake base did not firm up, in all the years I have been baking I have never had a disaster quite like this one, when I tried to slice it and put it on the plate it was just one big gloopy mess! Still tastes okay though and I won&#8217;t be wasting it.. I cannot stand throwing food away!! Worked it out at 4pp per slice so not too bad, I will however be trying this again next week and posting decent pics and the recipe. Last night we ended up going to Strada (Italian) instead of the Indian we had planned, I&#8217;m actually quite pleased we did because in hindsight I probably would have overeaten and then felt ill today.. So I had no starter, just a main which was Pumpkin and butternut squash risotto with pancetta, wilted spinach and pine nuts. It was very yummy and I did not feel like I had eaten too much, I had a diet coke with my meal, I don&#8217;t drink fizzy too often so I was happy to have a diet coke. I also instead of having dessert decided to have an espresso, so when I got home and re pointed it all it turned out I had 17 weeklies left! I was sure I would use them today but as you will see from my menu I haven&#8217;t even used all my dailies :O So if the weeklies don&#8217;t get used tomorrow then they wont be being used at all!! Today we went for a walk down the beach as it was a gorgeous Indian summers day.. Well for part of the day anyway now it looks like it&#8217;s going to storm, typical British weather.. Anyway down on the front today they had the motorbike show they have every year and there were some beasts, however this one is the one that caught my eye.. </span></em></strong></p>

<p><strong><em><span style="color:#008080;">After our wander looking at the bikes, trikes and scooters we went for a drink before the weather turned and I had Jeremiah Weed root brew, it&#8217;s yummy ginger style root beer from Kentucky I have had both this one and their sour mash brew before, I prefer the Sour mash brew one but they had run out where we went. The one thing that annoys me as a weight watcher is there is never any nutritional information on bottles of alcohol.. So I have Googled it and the only thing I can find is that they both are 120 calories for 500ml?! That can&#8217;t be right surely!! I have no taken it upon myself to email the company and ask them for the nutritional info for both bottles so I can safely propoint it without having to guestimate!! </span></em></strong></p>
<p><strong><em><span style="color:#008080;">So my menu today was: </span></em></strong></p>
<p><strong><em><span style="color:#008080;">Breakfast: None, we didn&#8217;t actually get out of bed till 11:30am.. So it seemed like the most sensible idea was to wait for lunch.</span></em></strong></p>
<p><strong><em><span style="color:#008080;">Lunch: 1 weightwatchers tortilla wrap 3pp, 40g wafer thin turkey 1pp, 75g Nume piri piri chicken sandwich filler 2pp (The tikka one is the best!), 1 mini pepper sliced 0pp, 1 mushroom sliced 0pp.</span></em></strong></p>
<p><strong><em><span style="color:#008080;">Dinner: 50g cous cous 2pp, 1 pack Bernard Matthews tikka turkey chunks 3pp, handful fresh chopped parsley 0pp, 1 tbsp lime juice 0pp, 1 mini pepper sliced 0pp, 2 mushrooms sliced 0pp. </span></em></strong></p>
<p><strong><em><span style="color:#008080;">Snacks: 1 slice of gloopy strawberry cheesecake 4pp, 1 bottle Jeremiah weed which I am pro pointing as 6 for now as I&#8217;d rather over point than under point. </span></em></strong></p>
<p><strong><em><span style="color:#008080;">Total used 21/26, 0 weeklies used. </span></em></strong></p>
