&#8216;Twas the week before Christmas and all through the house came the sound of  <strong>Meatskull</strong> mixing about. This week sees the arrival of the most excellent project <strong>Reagenz</strong> &#8211; a collaboration between <strong>Move D</strong> and <strong>Jonas Sharp</strong> taking house on a journey into the cosmos, shown here on the new album&#8217;s 14 minute opener &#8220;Dinner With Q&#8221;. Brilliant.</p>
<p>Delve into dubstep sounds from <strong>King Midas Sound</strong> and the most recent track from<strong> Burial</strong>. Also showcasing the dub genre is former <strong>PIL</strong> bassist and world music exponent <strong>Jah Wobble</strong> on his new 10&#8243; single on <strong>Pressure Sounds</strong> &#8211; a cover of <strong>Roy Budd&#8217;s</strong> classic title track to the film <em><strong>Get Carter</strong></em>. Of course, I had to have a christmas tune thrown in, so we&#8217;ll finish up with a bonkers version of &#8220;Silent Night&#8221; by krautrockers <strong>Can</strong>.</p>

<title><![CDATA[How to Trip: A Dinner with the Buddies]]></title>

<content:encoded><![CDATA[<div class='snap_preview'><p>I love to do this stuff, specially when I have someone else do the kitchen work with me. Our creativeness opens many doors. There are a bunch of things needed to prepare a great dinner, and I have to give credit to my Grandma Lena for this one. She gives most welcoming meals, making something as simple as a family dinner into an authentic feast.</p>
<p>The first detail everyone should remember is the table decoration and it&#8217;s surroundings. Since it&#8217;s a Christmas dinner, let&#8217;s make it warm and cozy with some theme related garments. Don&#8217;t ever forget to have your sound system working.</p>
<p>It&#8217;s time for serious talk.</p>
<p><!--more--></p>
<p>When your guests surpass 6 people, you should always include 2 main dishes of the same course. Some vegetarians may be present, and you don&#8217;t want to make their trip problematic. After all, what&#8217;s a host for anyways?&#8230;In this case, I will only serve 4 people and none are veggies. So let&#8217;s dive into<em> the most important things you should ALWAYS have on the table-side:</em></p>
<p><strong>1. Various Cheeses </strong></p>
<p><strong>2. Cold Meats</strong></p>
<p><strong>3. Breads and Crackers</strong></p>
<p>For number 4,<strong> the Wine</strong>. What is it, with food and wine?</p>
<p>White wine doesn&#8217;t necessarily go with fish, and red with meat. I consider it quite a myth actually. If you know the basic essences that incorporate the wine from the exterior (depending, obviously, on the regions), it will be easy to find what fits better with what you&#8217;re serving. Of course, it&#8217;s all a matter of personal taste.</p>
<p>In most Portuguese reds, berries are very present (mostly raspberries, blackberries, and sometimes blueberries). Now, can you imagine those elements with a nice grilled salmon,  fresh lemon zest and a little thyme?</p>
<p>In terms of white wines (talking about Portuguese also), the most present essences are tropical and citrus fruits. These are quite fresh, and can work very easily with chicken or turkey.  As you see, it&#8217;s not that difficult. My knowledge in wine is limited, really, but sometimes that&#8217;s the necessary, or the essential.</p>
<p><strong>THE FOOD</strong></p>
<p><strong> </strong> Alright, now we&#8217;re talkin&#8217;. I&#8217;ll try not to be too extensive on this one, although that&#8217;s a complicated thing to achieve. Everyone has a different type of cuisine. I&#8217;m more into the lighter/healthier side (more fish, white meats and vegetarian-influenced). The most important part to remember though, is how you&#8217;re going to play your main dish with your sides. For example, let&#8217;s return to the salmon. Imagine that you&#8217;re making the lemon zest and thyme. You want to keep the sides nutritionally and tastefully correct, so carbohydrates as well as fiber should be included. Some small roasted potatoes with herbs and a nice salad with roasted nuts and fresh juicy fruit? Or just simple cooked spinach/broccoli/any other green leaf? These work well with this sweetened fish, since they&#8217;re slightly bitter. Remember that these are only examples, and that I&#8217;m giving them according to my personal taste!</p>
<p><strong>THE DESSERT</strong><em> Stop whining, it&#8217;s not that hard. DON&#8217;T run to the supermarket yet. </em></p>
<p>I read an opinion about desserts written by Jamie Oliver in one of his books, and I have to agree with what he says. Just pick up what you&#8217;re good at making and give it a spark! No need for gourmet fuss. If you think that you&#8217;re really a complete disaster, turn to mousses, ice-creams, some gelatines and semi-freddos. These go perfectly with any kind of meal and are quick, as well as easy to prepare. If you&#8217;re more into Pastry and Baking, I&#8217;m going to dive a little deeper into the subject.</p>
<p>Remember the &#8220;balanced/nutritional&#8221; talk I was giving a while back? Well, this is where it really comes in handy. There are a lot of sweet-toothed people (myself!!!), and they can just devour pretty much anything, as long as it has sugar (generalist here). Anyways, you don&#8217;t want to provoke an overdose and ruin the nice dinner you were giving, because you stuffed one of your guests.</p>
<p><strong>Chocolate </strong>This is an interesting matter. Here are some little things to register about chocolate desserts: People have the tendency to eat with their eyes. If you place something too fancy, like a big layer cake, they might get overwhelmed. That, or you&#8217;ll end up with a lot left-overs. In my opinion, the individual cakes like the <a href="http://sugarbilly.wordpress.com/2009/12/14/midnight-express-cake/">Petit Gâteau/</a><a href="http://sugarbilly.wordpress.com/2009/12/14/midnight-express-cake/">Moelleux</a>/Soufflé or mini-tarts are the best bet. They are elegant and clean, and are great with ice-creams, crème anglaise, whipping cream and even fruit coulits. Be creative! Sometimes, these can be more economic and more eye-pleasing.<strong></strong></p>
<p><strong>Desserts to Play</strong> My favorite is definitely the mighty Cheesecake (N.Y.- style). If you&#8217;ve got the basic recipe for this, the next thing to do is to open a Cheesecake Factory of your own. Very simple and versatile. Some people have a series of complications with this cake regarding open cracks that appear in the middle of the baking period. This cake has cream cheese, and it incorporates mainly with eggs (they are temperature sensitive!  Cracks occur when the oven temp. is too high, or the cake is taken out of the oven too fast and didn&#8217;t cool properly!) and a little flour or cornflour.</p>
<p>If you don&#8217;t want to get in any trouble, make a semi-freddo. It has some similar components, and you can also add just about anything you like.</p>
<p><strong>The Light</strong> Everything is great&#8230;but not everyone has the same attitude when it comes to desserts. I personally think that &#8220;light&#8221; versions don&#8217;t taste as good, no matter what they say. There are ways that you can substitute sugar, but that requires some advanced knowledge in baking and pastry. If you do that directly the result might be chaotic, to say the least. I think it&#8217;s better to stick with the <em>fruit sorbets, some ice-creams, crisps or trifles</em> (or anything of the genre. Fairly simple to manipulate).</p>
<p><em>Meringue</em> is a good choice to mix with fresh fruits or fruit coulis. It has no fat, since the only ingredients are egg whites and sugar.</p>
<p><em>The Angel Food Cake</em> is also great and very good to apply some inventions of your own (be carefull though, don&#8217;t destroy the whites&#8217; volume). There are numerous versions of this cake, and it also lacks fattening ingredients!</p>
<p><strong>COFFEE, TEA and DIGESTIVES</strong></p>
<p>It&#8217;s a hard part to forget, but not many people have the custom of having this prepared. What&#8217;s the prep for anyways?</p>
<p>The coffee and tea, just about anyone has a notion of (for tea, it&#8217;s nice to have some choices like <em>Green Tea, Earl Grey </em>and some infusions like <em>Mint</em>).  To have a little treat on the side, just like you see in restaurants, can really make a difference. <em>Chocolate truffles, petit fours and butter cookies</em> are a great idea, since you can make them any size you wish and also add various nuts and flavourings. For the more advanced, some confectionery candies work as well. Candies like <em>chocolate bark, peanut butter cups, pralinés, candied fruits and bonbons&#8230;</em>this could go on for ever.</p>
<p>An advice on <strong>chocolate confectionery</strong> though: Some recipes require certain techniques, which is the case of &#8220;tempering&#8221;. This consists of melting the chocolate and leaving it to cool until 30ºC/31ºC, so that it can be molded.</p>
<p>When it comes to digestives, I think it really depends on what kind of host you are, and what kind of guests you invited. Obviously most of this stuff is for dinners with your close buddies, not your boss. Cognac and a nice aged whiskey is always a good ending polish, regardless of the ambience the trip turns out to have. After two bottles of wine, the probability is official, collective agreement!</p>

<p>The <strong>Washed Out</strong> album was a lovely listen in 2009&#8230;dude really has that whole lo-fi &#8220;beach vibe thang&#8221; downpat. Here&#8217;s a very tasty lil mix he put together recently.</p>
<p>&#8220;It’s unclear what was imagined first – the band name, the music, or the artwork – but the entire <strong>Washed Out</strong> aesthetic coheres effortlessly to form a beautiful dream wave of eternal youth and endless Sunday afternoons. Nothing feels like an after thought, but equally, it doesn’t feel overly calculated either, blurred just enough around the edges to comfort like sunshine through a window. It’s fitting, then, that when we asked Ernest to make a mixtape based around his recent marriage, he instead chose to pop out a 20 minute soporific beauty designed to evoke one long continuous dream. <p>&#8220;Filled with <strong>french perverse</strong> 70&#8217;s LSD funk, some <strong>monstrous jazz + samba</strong> flipouts, several <strong>cult and very influental songs</strong> mixed with <strong>ridicule</strong> of The Beatles and the non-existent hippie-parody Dewey Cox himself.</p>
<p><strong>This small collection</strong> went through some big changes over time. At first, I made it the most obvious way &#8211; indie experiments with japanese and NY noise bands (OOIOO, Optimo, Pullsallama etc.) but that was simply to simple, raw and it was&#8217;nt &#8220;romantic&#8221; and humorous enough. So I basically shifted entirely from that direction into sex, retro, french, jazz, kinky, ridiculous direction and tried to make a sort of a &#8220;soundtrack&#8221; that is not that tough at rhythm but more into the freedom loving atmosphere of the swinging sex organs.<br />
<strong><br />
Standout tracks</strong>, and maybe tracks that make this comp a must have (for those who never heard them before) are definitely: the gorgeous and life-fulfiling, jamming Andrew Bird&#8217;s <strong>Coney Island Shuffle</strong>, Janko Nilovic&#8217;s by far the best composition <strong>Xenos Cosmos</strong> from 1972 (the last 1 minute of the song is golden and the rest of his work is mostly crap), magickal Senor Coconut&#8217;s &#8211; <strong>Rydeen</strong>, of course Serge Gainsbourg&#8217;s cult classic <strong>Bonnie and Clyde</strong>, Sohail Rana&#8217;s Soul Sitar &#8211; a perverse take on bollywood humour (Guys from Ninja Tune label had lots of fun remixing this gem) and the infinite <strong>Piggies </strong>- spitting humour from The Beatles. Also, I should mention Marsha Hunt with her nipple shaking <strong>(Oh No! Not) The Beast Day</strong>, a strangely missed groovy 70&#8217;s funk club hit.&#8221; &#8211; <em><strong>Bleeding Panda</strong></em></p>

<p>&#8220;It&#8217;s been a very busy summer but now with <a href="http://www.sundaybestnyc.com/">Sunday Best</a> and <a href="http://www2.eamonharkin.com/2009/06/claude-vonstroke-carl-craig-robert-hood.html">The Beach Party</a> in full flight there&#8217;s a little breathing room in an otherwise hectic schedule to launch websites, release records and get through the general back log.</p>
