<li>200g turkey breast</li>
<li>1 garlic clove</li>
<li>1 onion chopped</li>
<li>1 carrot chopped</li>
<li>2 tbsp tomato puree</li>
<li>300 ml organic chicken stock</li>
<li>140g wholemeal penne pasta</li>
<li>2 tbsp grated half fat cheddar cheese</li>
<li>Black pepper</li>
</ul>
<p>Mince the turkey breast in a food processor/blender or chop into small pieces. Brown in a non stick saucepan, breaking up any large pieces with a wooden spoon until well browned all over. Add the vegetables, puree and stock, season with black pepper. Bring to the boil, cover and simmer for 1 hour.</p>
<p>Preheat the over to 180c. Cook the pasta according to it’s instructions. Drain pasta and mix with the turkey sauce, transfer to an ovenproof dish. Sprinkle with grated cheese and bake for 20 &#8211; 30 minutes until lightly browned on top.</p>

<p>The peak season for cranberries is in the fall when the fruit takes on its distinctive deep red color.  They are cultivated mainly in Maine, Massachusetts, Michigan, Minnesota, New Jersey, Wisconsin, Washington, and Oregon.</p>
<p>Most cranberries are processed into products such as juice, sauce, and sweetened dried cranberries.  The berry is also used in baking muffins and scones but, unlike many other berries, is normally considered too tart to be eaten by itself.</p>
<p>Cranberries are a good source of vitamins A and C as well as dietary fiber.  They contain antioxidants that may help reduce the risk of cancer, heart disease and stroke.</p>
<p>Packed in plastic bags cranberries will keep in the refrigerator for up to two months. These berries can also be frozen and they&#8217;ll stay fresh for a year.</p>
<h4>Classic Cranberry Sauce Made from Scratch</h4>
<p>3/4 cup sugar<br />
1 cup water<br />
1 (12-ounce) package of fresh or frozen cranberries</p>
<p>Combine sugar and water in a medium saucepan.  Bring the sugar mixture to a boil and add the fresh or frozen cranberries. Return to a boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Cover and cool completely at room temperature. Refrigerate until serving time.</p>
<p>Yield: 8 servings (serving size: 1⁄4 cup)</p>

<p>Sweet potatoes are packed with essential vitamins and minerals.  It is an excellent source of vitamin A in the form of beta-carotene, a very good source of vitamin C and manganese and a good source of vitamin B6, copper, potassium and iron.</p>
<p>Sweet potatoes have antioxidant properties that may prevent conditions such as atherosclerosis, diabetic heart disease, and colon cancer.   They contain anti-inflammatory properties that have been shown to reduce the severity of conditions such as asthma, osteoarthritis and rheumatoid arthritis.</p>
<p>And best of all, a half cup serving of sweet potatoes is only 80 calories.  It cannot get any sweeter than that.</p>
<p>Eat sweet potatoes along with a heart healthy fat.  The beta-carotene in sweet potatoes can only get converted to vitamin A in the presence of bio-salts, which are released when consuming fat.  Finally, it is important to note that the carotene content of sweet potatoes actually increases as they are stored throughout the winter.</p>
<p><strong>Maple and Walnuts Sweet Potatoes<br />
</strong><br />
4 small (3- to 4-oz) Sweet Potatoes, peeled and cubed into 1-inch pieces<br />
1⁄2 cup Fat-Free Half-and-Half<br />
2 Tbs Pure Maple Syrup<br />
1⁄4 tsp Vanilla Extract<br />
1⁄4 tsp Cinnamon<br />
1/8 tsp Cloves<br />
Salt and Pepper to taste</p>
<p>Topping<br />
3 Tbs chopped pecans or walnuts<br />
1⁄4 tsp ground Red Pepper<br />
2 tsp melted Reduced-fat Margarine</p>
<p>Place potato cubes in a Dutch oven or similar pot and cover with water. Bring to a boil. Reduce the heat and simmer for 10-12 minutes, until tender. Drain. In a mixing bowl, combine the half-and-half, maple syrup, vanilla, cinnamon, cloves, salt, and pepper. Add the sweet potatoes and mix with a beater set on medium speed. For slightly chunkier casserole, just mash with a potato masher. Spoon the potato mixture into a casserole dish. Combine all the topping ingredients. Sprinkle over the potato mixture. Cover with foil and freeze for up to 2 weeks. Defrost in the refrigerator overnight. Preheat the oven to 375° Bake. Cover and bake for 15 minutes. Uncover and continue to bake for about 20 to 25 minutes until the pecans or walnuts have browned and potatoes are hot.</p>

<content:encoded><![CDATA[<div class='snap_preview'><p style="text-align:justify;">“A milia is tiny and hard like a BB pellet.  It’s often mistaken for a whitehead when it shows up on the face,”  says Lynne Drake, M.D., professor and chair of the department of dermatology at the University of Oklahoma Health Science Center in Oklahoma City and president of the American Academy of Dermatology.  According to Dr. Selwyn Rigor Crisostomo, milia is very common amount Filipinos.  Unlike whiteheads, which are pores blocked by white blood cells and oil that heal on their own in a few days, milia are benign cysts that do not go away.</p>
<p style="text-align:justify;"><em><span style="color:#0000ff;"><strong><span style="color:#ff00ff;">Cause:</span></strong></span></em>  A combination of sun damage and the age-related slowdown of cell turnover can produce these cysts.  Milia are common in adults, says Dr. Drake, but children also have been known to develop milia after a severe sunburn.</p>
<p style="text-align:justify;"><strong><em><span style="color:#ff00ff;">Self-help:</span></em></strong>  An over-the-counter (OTC) cream that contains alpha-hydroxyl acids or retinoid—ingredients that exfoliate the skin and accelerate cell turnover—can help prevent the formulation of milia, explains Dr. Drake.</p>
<p style="text-align:justify;"><strong><em><span style="color:#ff00ff;">Professional treatment:</span></em></strong>  Using a small instrument, a dermatologist removes the cysts.  This may require a topical anesthetic, and the treated area should heal in less than a week, usually without scarring, says Dirk Robertson, M.D., associate clinical professor of dermatology at Emory University in Atlanta.</p>
<p style="text-align:justify;">A doctor might instead prescribe tretinoin to exfoliate the skin and slough pore lining, these creams contains a more effective form of vitamin A than OTC preparations.  Not only may this help prevent the formulation of new milia, but in some instances, the peeling action may remove very small cysts.  But there can be side effects, such as excessive dryness, redness, and extreme sensitivity to the sun.</p>
<p style="text-align:justify;"><em><strong><span style="color:#ff00ff;">Real-life story:</span></strong></em>  “I thought they were whiteheads on my check until I tried to pop them,”  explains 22-year-old Taylor Stone, who works at a Savannah, GA-based construction company.  “They just wouldn’t pop or go away.”  When the cysts showed signs of irritation.  Stone went to see her dermatologist for treatment.</p>
<p style="text-align:justify;">He opted to excise the irritated milia with a scalpel.  Although the procedure was fairly simple, the recovery was not.  Stone had a black eye for 10days, resulting from a local anesthetic injection needed for the excision.  And now, she has a tiny pock mark where one of the costs used to be.  “I wouldn’t say it’s a big deal to have them removed, it takes only a few minutes,” says Stone. “But it isn’t a whole lot of fun.” – Elizabeth Yow</p>

<p> The superfood, which is set to hit the market next week, is 40 per cent rich in beta-carotene, an anti-oxidant the body converts into vitamin A and boosts health.</p>
<p> It has been found to improve vision in dim light, strengthen body’s immunity to infections such as winter colds and flu, and helps maintain healthy skin.</p>
<p> The new Super A carrots that are intensely orange with a sweet taste were developed by growers in Shropshire.</p>
<p> “Eating Super A carrots is the ideal way to boost your intake of beta-carotene which as well as converting to vitamin A is also an antioxidant.” Antioxidants help protect body cells from damage,” the Daily Express quoted M&#38;S nutritionist Claire Hughes.</p>
<p> Dr Elisabeth Weichselbaum, of the British Nutrition Foundation, said a lack of vitamin A could lead to eye problems and even night blindness.</p>
<p> However, researchers have warned that consuming huge quantities would not improve night vision beyond its natural limit.</p>

<p>In the September Estates blog post, <a href="http://efwegardens.wordpress.com/2009/09/24/you-say-tomato-i-say/">You Say Tomato, I Say&#8230;</a>, I discussed <a href="http://efwegardens.wordpress.com/2009/09/24/you-say-tomato-i-say/">how to start tomato plants</a>.  Already, the tomatoes are sprouting and are big enough to leave the greenhouse flats.  They are now in 4” pots and available for purchase.</p>
<p>Many people don’t realize, but the tomato is actually a fruit.  They are low in fat and packed with fiber, Lycopene, Vitamin C, Vitamin A, Potassium, Iron, Calcium, and Folate. </p>
<p>When you plant the varieties of tomatoes I have chosen for our Florida climate (<a href="http://1.bp.blogspot.com/_rrN3DDvvN4Y/Sm5FT90JCKI/AAAAAAAADkU/QWM1dRKZHZQ/s400/7-26-0910.jpg">Bella Rosa</a>, <a href="http://www.gardenharvestsupply.com/productcart/pc/catalog/tomato_floralina_hybrid_2345_detail.jpg">Floralina</a>, <a href="http://www.victoryseeds.com/catalog/vegetable/tomato/images/homestead_24.jpg">Homestead</a>, <a href="http://farm4.static.flickr.com/3319/3489621931_d17f6a1a77.jpg">Florida Basket</a>, <a href="http://knapps-fresh-vegies.netfirms.com/snow-white.jpg">Snow White</a>, and <a href="http://www.soenyun.com/Blog/wp-content/uploads/2009/05/first-cherokee-purple-tomatoes-of-the-season.jpg">Cherokee Purple</a>) there are some techniques you should employ to increase your chance of success:</p>
<ul>
<li>Plant in raised beds, mounds, containers, or buckets with holes drilled for drainage</li>
<li>Use the best good draining soil possible</li>
<li>Place in full sun</li>
<li>Water when the soil is dry</li>
<li>Incorporate organic fertilizers</li>
<li>Insert a tomato cage</li>
</ul>
<p>Tomatoes are what you call “heavy feeders,” needing a balanced fertilizer throughout the growing season (September through April). The Estates uses worm castings, sea kelp, fish emulsion, bone meal, and Espoma brand fertilizer on ours.  We spray a soap solution once a week to keep insects at bay, and hand- pick the caterpillars off the leaves. Tom’s Plant Soap is available in the Estates Museum Store.  Other insecticides include neem oil, hot pepper spray, and pyrethroids.  <strong>As always read the label directions</strong>.  Beware of blossom end rot (caused by a calcium deficiency) and fungal diseases, such as early blight and light blight (soil borne fungi). Copper fungicide is labeled for tomatoes and can help control fungal diseases.</p>
<p>Cultural practices highly affect the outcome of tomatoes.  Hand watering at the root zone or using drip irrigation in the morning hours can help prevent withering.  Wetting the soil roots rather than the foliage decreases the chances of fungal diseases. Put dead leaves and rotting fruit in your regular garbage (you don’t want to risk contaminating your compost). High nitrogen fertilizer should be avoided as well. </p>

(I love it when that happens&#8211;when just the right song, thought, or book makes its way to you right when it&#8217;s most the needed.)</p>
<p style="text-align:left;">So yeah&#8211;it&#8217;s Friday! Yay. In addition to getting in some <a href="http://monikafabian.wordpress.com/2009/11/17/tibdits-queens/" target="_blank">ice-skating and Colombian awareness</a>, I&#8217;d like to replenish my <a href="http://monikafabian.wordpress.com/category/vitamin-a/" target="_blank">vitamin a</a> with some museum- and gallery-hopping since it&#8217;s been a while. In certain products vitamin A is also present as aldehyde. Acid basically retinoic acid contain vitamin A in low amount but not shows any function in retina of the eye part of human body.</p>

This structure of vitamin A is needed for vitamin activity. The rich beauty of the color combined with the custard sweetness of these seasonal fruits provided the perfect inspiration. A friend of mine was musing on persimmon over dinner on Monday. She mentioned that during their season (October-December) her skin is softer and smoother than any other time of year. She attributes her angelic, rejuvenated complexion to the slippery, soft Hachiya persimmon. Of course I had one for breakfast yesterday to test their potency.<br />
By noon I was a reaping the rewards. I could not believe it!<br />
My skin was plump, smooth and much more even and toned than usual. Needless to say I bought a bunch more of the Hachiya variety. These are the acorn shaped rich orange fruits that are eaten when completely soft.<br />
So what is it in the persimmon that makes you look as fresh as a full night of sleep following all day at the spa? Like everything we eat it&#8217;s the combination of vitamins, minerals and fresh goodness.<br />
For all you nutrition nerds like me here are the stats:</p>

<p>The perfect food right?<br />
Persimmons are also rich in tannins which give the immature fruit its astringent taste, it contains two compounds known as shibuol and betulinic acid that are though to have anti-cancer properties. A study conducted in Japan showed that the peel of the persimmon contains phytochemicals known as proanthocyanidins which may protect cells against oxidative damage associated with aging.</p>
<p>I mixed the creamy fruit with whole raw walnuts and it was simply superb.<br />
