Savoury Stuffed Capsicums

What you will need is –

7 Capsicums
1 1/2 Cups Brown Rice

1/2 Cup Corn

400gms Diced Tomatoes
1 Cup Shredded Cheese

You can cook the brown rice on the stove top or you can cook it in the microwave which is quicker and for this method I find it easier…Follow the instructions on your rice packet or place your rice in a microwave safe container and put enough water in there so its approx 3-5 cms above the rice…Place in the microwave for 8-10mins…Keep an eye on it though…When your rice is cooked, take it out and drain it, then add your tomatoes and corn, stir well and put it back in for 2mins… 151 more words
