日式芝士蛋糕 (原味/抹茶)

最近做日式芝士蛋糕做上癮了。上次做了個無麵粉版本的,被吾妹不客氣地評為「一個好大嘅芝士梳乎里,唔係芝士蛋糕囉」。我很記得我還在唸中學時,吾妹還是小學生,香港首次興起日式芝士蛋糕風潮,專門店如雨後春筍般湧現,間間大排長龍;賣的芝士蛋糕外表樸實無華,淡淡的黃色,沒有任何裝飾,一入口卻不得了,綿彈鬆軟,芝士味濃,不膩也不過甜,我們一家可以一天KO一個。 童年的味道總是讓人懷念的,現在日式芝士蛋糕的專門店沒有了,在零零散散的麵包店買到芝士蛋糕,已經感受不到當初那份驚豔。上次做的無麵粉版本芝士蛋糕被投訴「貨不對版」,這個星期就嘗試複製回憶中的味道。做法其實差不多,也很簡單:先是把忌廉芝士、牛奶和牛油煮溶、放涼,拌入蛋黃,再加少許低筋麵粉。蛋白加糖拂打至堅挺;蛋糕在焗爐裏能否發起就全靠蛋白了,所以打蛋白的每個步驟都要小心翼翼,攪拌碗不能沾有水或油脂,蛋白保持冷凍,太早放糖蛋白會打不起來,一不留意又會打過頭,蛋白變蛋水,前功盡廢。不過工多藝熟,多多練習也就能掌握箇中竅門。 打好的蛋白慢慢拌入芝士,倒入蛋糕模,放進焗爐。在放蛋糕模的烤盤上注入熱水一起烘烤,水份在熱力下化為蒸氣,做成蒸焗的效果,蛋糕會更濕潤綿滑。焗爐關燈後,先別急着取出,因為在烘烤過程裏發得非常高,若一下接觸冷空氣,蛋糕會下塌得太快,表面凹凸不平。讓蛋糕留在焗爐裏一起降溫,就會保持表面平滑。             蛋糕再放置雪櫃冷藏過夜,芝士味會更濃——歷史重演,一個7吋的芝士蛋糕,三人一日內KO,還意猶未盡。於是急急再做一個;挖材料的過程中,瞧見了中村藤吉抹茶粉,於是:             中村藤吉的抹茶甘醇,但份量控制得當,沒有搶去芝士的香味;但糖就要稍微加量,才把抹茶的澀平衡回來。放了抹茶的芝士蛋糕也是光速秒殺,我比較喜歡抹茶這款,我妹還是投了原味芝士蛋糕一票。能為她找回童年的味道,超有成功感的。 日式芝士蛋糕 (原味/抹茶) 7吋蛋糕1個 8 more words
