高爾夫球場是我在第一個接待家庭常去的地方,在那邊他們除了喝紅酒,還很喜歡點一道法國傳統美食:吐司先生(Croque Monsieur )

吐司先生(Croque Monsieur )主要是兩片厚吐司,中間夾起司和火腿,吐司上層在灑上厚厚的一層起司,送入烤箱烤,等到起司融化,吐司變脆了就可以上桌。吐司先生相較於正式的法式料理簡單許多,不需繁雜的刀叉,因此打完高爾夫球的他們,徒手吃著香噴噴的吐司先生應該是最大的享受。

餐廳裡的吐司先生價錢通常比較和藹可親,對於像我這樣的窮學生,是在外面小餐廳最適合點的餐點,重點是他非常的可口,又可以吃飽。和藹可親的價錢在高爾夫球的會員餐廳也不例外,一份單點的吐司先生大約為15歐,折台幣快要600元…但相較於其他牛排之類的已經便宜很多。

吐司先生最早出現在1910年的巴黎咖啡館菜單上。實際上Croque Monsieur名字的來源卻不詳,但要是照字面上來翻的話Croquer在法文是咬或是嚼(脆的食物)所以直譯應該是”咬先生”,似乎還是吐司先生比較文雅。

每個區域會在吐司先生中夾不同的東西,例如在普羅旺斯會夾番茄;夏威夷會夾鳳梨片;在奧福格會夾傳統奧福格藍紋起司,但其實假如想吃甚麼就夾什麼,也不用太拘泥。

另外吐司先生也有進階版,如果吐司先生(Croque Monsieur )上面加一顆荷包蛋的法式吐司就是吐司女士 (Croque Madame),據法國人的說法,因為荷包蛋放上去很像女人的胸部,但也有人說是因為荷包蛋與舊式的女士帽子相似,因此命名。(以法國人的角度,我個人是覺得應該是前者)

吃吐司先生搭配的酒,會推薦的是安茹佳美(Anjou Gamay),這款由酒莊生產的葡萄酒,出自法國盧瓦爾河谷安茹,是採用佳美(Gamay)葡萄配製,佳美的葡萄特色,葡萄酒顏色呈淡紫紅色,單寧含量非常低,口感清淡,富含新鮮果香。搭配上吐司先生濃濃的起司,果香和起司味會激盪出特別的火花。

安茹產區的地形多變,葡萄品種多樣,釀酒方法也各不相同,這也就造就了他們風格各異​​的葡萄酒。提到安茹,就不能不提金雀花享利伯爵,他是法國歷史上赫赫有名的公屬國——安茹國的國王。這個國王俊逸瀟灑,倜儻風流,喜歡在頭盔上插一枝金雀花,因此得名“金雀花享利”。(我個人是不太欣賞有男人把花插在頭上)另一種說法是,因為金雀花是他父親的綽號。當年,亨利二世最得意的也是轟動法國王室並為這位伯爵在歷史上留下盛名的事,便是他讓法王路易七世的王后阿莉埃諾改嫁投入到他的懷抱之中。

吐司先生雖然做法簡單,但搭配不同的法國起司,送入烤箱中烤個焦香,加上酥脆的吐司,加上新鮮的火腿,外酥內軟,緊接著再來杯紅酒,簡單的美味,卻令人回味無窮。
