As Easy as Muffins?

I always worry when the word “easy” appears in a recipe. What makes it “easy” and why don’t cookbook authors use the word “difficult?” To be fair, I have seen some recipes with disclaimers, along the lines of “this is time-consuming, but worth it” or “be patient and you’ll be rewarded.” Easy makes it seem like a no-brainer and if/when you fail at an easy titled recipe, well, it doesn’t do much for your kitchen confidence. 483 more words
